국내 패스트푸드점에 대한 소비자의 의견조사 -제 1보 : 햄버거체인점을 중심으로- (Consumer Opinions on Fast Foods and Foodservice -I. Hamburger Chain Restaurants-)

  • Fast food restaurants are growing in numbers in Korea since they were introduced abot a decade ago. To develop an effective marketing strategy for fast foods, it is important to assess consumer's acceptability and identify demorgraphic, environmental, and managerial factors which influence consumer's perception on the fast food restaurants. A total of 595 customers were surveyed at thirty hamburger chain restaurants in Seoul from November 7 to 15, 1988. Analyses of the collected data revealed that adolescents, females, and the people with high income were the major customers and visited more than once or twice a week; frequent visitors rated meals more favorably in terms of the quality, service and cleanliness, and they also rated meals of foreign brand more favorable than those of domestic one; the female group perceived the change in their dietary habits more than any other groups; cleanliness, convenience, atmosphere, courtesy, and the taste of foods were significant factors in purchasing fast foods; and customers were most satisfied with convenience, while least satisfied with the price and the quantity of foods. From these findings, it is sggested that the manager of the fast food restaurant must consider the consumer's perception of fast foods in terms of pros and cons in order to operate her/his restaurant successfully.

Influence of Buckwheat Flour on Physicochemical Properties and Consumer Acceptance of Steamed Bread

  • Buckwheat flour was incorporated into steamed breads by adding the flour in the range of 0~9% based on the Baker's percentages and the physicochemical properties and consumer acceptance were investigated. After mixing, kneading, proofing, and molding, bread dough was steamed for 15 min using a steam tray and boiling water. The samples were cooled to room temperature for 15 min and packed in airtight bags for further analyses. pH of the steamed bread decreased slightly while titratable acidity increased significantly from 1.02 to 1.37 mL with the incorporation of more buckwheat flour in the formulation (p<0.05). Water activity was not affected by the buckwheat flour level (p>0.05). Moisture content slightly decreased from 43.72 to 42.30% while soluble solids content increased from 0.63 to 0.85 as the buckwheat flour concentration increased. As a result of the addition of buckwheat flour, the specific volume decreased from 3.31 to 2.57 mL/g; on the other hand, the spread ratio ranged from 2.17 to 2.21 without significant differences among them (p>0.05). At the higher level of buckwheat content, lower scores of all color parameters ($L^*$, $a^*$, and $b^*$-values) were observed. Firmness increased significantly with an increase in buckwheat flour content (p<0.05). Consumer acceptance tests indicated that incorporation of up to 3% buckwheat flour in the formulation of steamed breads did not significantly influence the consumers' acceptability in all attributes tested, except for color and elasticity.

선택 모형을 통한 소비자에 대한 전기자동차 수용성 및 선호도 연구 (A Study on the Acceptability and Preference of Electric Car for Consumers through the Selective Model)

  • 우리나라의 자동차 산업은 국가 경제에 미치는 비중이 매우 큰 산업분야이다. 현재는 전 세계적으로 저탄소 녹색성장에 대한 관심이 날로 커지면서 자동차 산업의 미래경쟁력에 적극적인 확보를 해야 할 시대가 도래 하였다. 따라서, 기술적 사회적 변화가 예상되는 시점에서 전기 자동차에 대한 소비자의 구매 태도 및 의도에 관한 연구는 반드시 필요하다. 본 논문은 250명을 대상으로 전기자동차에 대한 수용성 및 선호도를 조사하였으며 결과는 다음과 같다. 월소득이 적을수록, 거주자 수가 많을수록 전기자동차를 수용하겠다고 결정하였으며, 전기자동차가 소비자에게 미치는 영향이 클수록, 전기자동차는 소비자가 전기자동차에 대한 관심이 클수록 전기자동차를 수용하겠다고 결정하였다. 그리고, 인구통계학적 특성 중 세 가지(월소득, 거주수, 거주형태)는 전기자동차의 만족도에 대한 차이는 있는 것으로 나타났다. 전기자동차의 만족도를 분석한 결과, 전기자동차는 소비자에게 미치는 영향이 크면 클수록 전기자동차에 약 3.5배 만족하며, 전기자동차에 대한 소비자의 관심이 크면 클수록 전기자동차에 약 2.1배 만족하는 것으로 나타났다.

율피분말 첨가가 돈육 패티의 항산화 활성과 품질특성에 미치는 영향 (Effects of Chestnut Inner Shell Powder on Antioxidant Activities and Quality Characteristics of Pork Patties)

  • 본 연구에서는 돈육의 육류 함량 일부를 율피분말로 대체하여 0, 1, 3, 5%의 패티를 제조하여 항산화 활성과 이화학적 품질특성을 측정하고 관능평가를 실시하였다. 율피 패티의 총 페놀 함량과 DPPH 라디칼 소거능은 율피 함량에 따라 유의적으로 증가하였다. 패티의 pH와 수분 함량은 율피분말에 따른 유의적인 차이가 없었으며 가열손실율은 율피분말 첨가량에 따라 유의적으로 감소하였고, 직경감소율은 유의적이진 않았지만 첨가량에 따라 감소하는 경향을 보였다. 가열 전후 모두 패티의 L값은 유의적으로 감소했으며 a값은 유의적으로 증가했다. 그러나 b값의 경우 가열 전에는 율피분말 첨가량에 따라 증가하였으나 가열 후 패티의 b값은 첨가량과 반비례하여 감소하는 경향을 보였다. 조직감 측정 결과 율피분말 첨가량에 따라 경도, 씹힘성, 검성, 응집성이 유의적으로 증가하였다. 소비자 기호도 검사 결과 향미와 맛을 제외한 전반적인 기호도, 외관, 색도, 조직감에서 유의적인 차이를 나타냈는데, 1% 첨가군이 가장 높은 점수를 받았으며 3% 첨가군은 조직감을 제외한 항목에서 대조군보다 높은 점수를 받았다. 이러한 결과로 보아 돈육 패티 제조시 1~3%의 율피분말의 첨가는 패티의 항산화 활성뿐 아니라 품질특성을 향상시키고 기호도를 증가시키는 것으로 사료된다.

수크랄로스의 상대당도 및 수크랄로스를 함유한 저열량 과자의 품질 특성 (Relative Sweetness of Sucralose in a Cookie System and Physicochemical and Sensory Properties of Low Calorie Cookies Containing Sucralose)

  • This study was conducted to evaluate sensory properties of sugar cookie containing sucralose. Relative sweetness of sucralose to sucrose in a cookie system was examined with paired comparison tests and the result was applied to low calorie cookie preparation using polydextrose as a bulking agent. Physical and sensory properties and consumer acceptability of sugar cookies containing various levels of sucralose and polydextrose were evaluated. Relative sweetness of sucralose to sucrose was 700 times in sugar cookie. Instrumental hardness and fracturability increased as the levels of replacement with sucralose increased. Spread ratios of sugar cookies where sucrose was partially and totally replaced with sucralose and corresponding amount of polydextrose were higher than that with sucrose only. Intensities of bitter taste, salty taste, hardness and molar packing of sugar cookies where sucrose was entirely replaced with sucralose and polydextrose were higher than that those of the other cookies. Acceptability test indicated 75% replacement with sucralose and adequate amount of polydextrose can be used without harming overall, appearance and flavor acceptability while texture acceptability was slightly lower.

친환경오이와 일반오이의 이화학적 특성 및 소비자 기호도 (Physicochemical Analyses and Korean Consumers' Acceptability of Environment-Friendly and Conventionally Grown Cucumber)

  • 친환경농산물이 많이 소비되고 있는 반면에 소비자의 기호도에 관한 연구는 부족한 실정이다. 본 연구의 목적은 국내에서 시판되는 오이를 생식으로 섭취할 경우 소비자의 기호도에 차이가 있는지를 알아보고, 친환경오이와 일반오이에 대한 소비자 외관 기호도 차이가 있는지, 그리고 친환경오이와 일반오이의 물리화학적 특성을 연구하고자 하였다. 9점척도법을 이용하여 백다다기오이, 가시오이, 무농약미니오이, 유기농가시오이, 유기농조선오이에 대한 소비자의 기호도를 조사하였고, 전반적인 기호도에서는 백다다기오이, 유기농조선오이, 유기농가시오이를 선호하였다. 그러나 오이에 대한 기호도와 선호도가 다른 소비자의 소그룹이 있었다. 외관 기호도를 평가하였을 때, 친환경농산물 여부에 관계없이 유기농가시오이를 가장 선호하였다. 물리화학적 특성으로 껍질과 과육의 색도, 오이의 길이, 둘레, 무게, 수분활성도, 당도, 조직감(경도, 부서지는 정도)을 측정한 결과, 수분활성도와 경도를 제외한 모든 특성에서 시료간에 유의적인 차이가 있었다(p<0.05). 백다다기오이의 당도는 3.8 brix로 오이 시료 중 가장 높았고, 그 다음으로는 무농약미니오이와 유기농조선오이의 순이었다. 백다다기오이, 유기농조선오이, 유기농가시오이는 부서지는 정도가 다른 시료보다 높았다. 명도는 백다다기오이가 가장 높았으며, 무농약미니오이, 유기농가시오이, 가시오이 사이에는 유의적인 차이가 없었다.

Physicochemical and Sensory Properties of Appenzeller Cheese Supplemented with Shrimp Powder

  • The effects of adding shrimp (Periclimenes imperator) powder to Appenzeller cheese on quality and characteristics during ripening were investigated. Cheese samples were prepared containing 1.0%, 2.0%, and 3.0% shrimp powder. Changes in the lactic acid bacterial populations, pH, water-soluble nitrogen concentrations, consumer acceptability, colour and texture were monitored during ripening. The addition of shrimp powder did not affect the appearance or consumer sensory characteristics of the cheeses. Likewise, cheese cohesiveness, fracturability, and springiness were not significantly altered. It was concluded that the quality of the Appenzeller cheese was not affected by adding shrimp powder.

  • Generally, noise from a indoor air conditioner has been measured by overall sound pressure level, dB. Customers evaluation, however, of the noise from an air conditioners should not be depend on the only overall level but also the sensory feeling. Moreover, in this sensory evaluation, irregular, time-varying and uneven sounds which are difficult to describe itself by overall level are more affectable. Unfortunately however the formal evaluation method for this kinds of noise is not determined yet. In this research, the evaluation method for tonal noise, which is one of the unmeasurable sounds by overall level, is proposed to evaluate its acceptability based on the consumer's sense of hearing. To consider the consumer's sense, several times of Jury evaluation are carried out. The proposed approach could be applied to the other sound, which acoustical characteristics are similar to the tonal noise .

Physicochemical and Sensory Characteristics of Sponge Cakes with Rubus coreanus Powder

  • To develop new type of sponge cake, the effects of partial (0~40%) replacement with Rubus coreanus powder (RCP) on the quality characteristics of sponge cakes were investigated. The pH level and moisture content ranged from 4.05~8.23 and 28.49~36.59, respectively, and significantly decreased upon addition of RCP (P<0.05). Baking loss rate and cake firmness significantly increased with higher RCP content in the formulation, whereas morphological characteristics of cakes such as height, volume, and symmetry indices significantly decreased (P<0.05). For crumb color values, $L^*$-and $b^*$-values significantly decreased while $a^*$-value significantly increased as a result of RCP substitution (P<0.05). Hedonic sensory results indicated that sponge cakes supplemented with 30~40% RCP showed the most favorable acceptance scores for most of the sensory attributes evaluated. Overall, Rubus coreanus sponge cake could be developed with comparable physicochemical qualities without sacrificing consumer acceptability.

  • Usability has become a primary factor in determining the acceptability and consequent success of consumer product. It is common that the product usability is evaluated by objective performance measures and/or subjective user preference measures. This study is concerned with objective evaluation of the product usability using 3-dimensional motion analysis. We evaluated car-audio position using 3-dimensional motion analysis. The parameters investigated in this experiment were height of car-audio, left-right angle, and front-end angle. The experimental results showed that the usability evaluation method using motion analysis was consistent with user's subjective assessment. This objective method can be applied to not only car-audio position evaluation but also various consumer products'usability evaluation.
