흑임자 분말을 첨가한 양갱의 품질특성 및 항산화활성 (Physicochemical and Antioxidant Properties of Yanggaeng Incorporated with Black Sesame Powder)

  • 흑임자 분말 첨가량을 0~12%로 달리하여 양갱을 제조하고 이화학적 품질, 항산화특성 및 소비자 기호도를 조사하였다. pH는 흑임자 분말 첨가량이 증가할수록 유의적으로 증가하였다(p<0.05). $L^*$값과 $b^*$값은 유의적으로 감소하였고, $a^*$값은 증가하였다(p<0.05). 한편 흑임자 분말 첨가량이 증가함에 따라 양갱의 경도는 유의적으로 증가하였다(p<0.05). 항산화활성을 나타내는 총 폴리페놀 함량과 전자 공여능은 흑임자 분말 첨가량이 증가함에 따라 유의적으로 증가하는 경향을 나타내었고(p<0.05), 전자 공여능에서 보다 현저한 증가를 보였다. 소비자 기호도검사 결과 6% 첨가군이 모든 평가항목에서 유의적으로 높은 평가를 받아 양갱의 관능적 품질을 최대한 유지하면서 흑임자 분말의 기능적 이점을 최대한 활용하기 위한 최적 첨가 농도는 6%가 가장 적합한 것으로 판단된다.

  • 진피 분말의 첨가량을 달리하여 양갱을 제조한 후 이화학적 특성 및 관능적 특성을 알아보았다. 진피 분말의 첨가량이 증가할수록 양갱의 pH는 유의적으로 감소하는 경향을 나타내었으나(P<0.05), 가용성 고형분의 변화에 직접적인 영향을 미치지 않는 것으로 나타났다. $L^*$, $a^*$, $b^*$ 값은 진피 분말의 첨가량이 증가할수록 유의적으로 증가하였다(P<0.05). 진피양갱의 경도는 진피 분말 첨가량(3~12%)에 따라 $0.08{\sim}0.16kg_f$로 유의적으로 증가하였다(P<0.05). 항산화 활성을 나타내는 총 폴리페놀 함량과 전자공여능은 진피 분말 첨가량이 증가함에 따라 유의적으로 증가하는 경향을 나타내었고(P<0.05) 상호 간에 높은 상관관계를 보였다. 전반적인 소비자 검사 결과에 의하면 양갱의 관능적 품질을 최대한 유지하면서 진피 분말의 항산화성 이점을 최대한 활용하기 위한 최적 첨가 농도범위는 3~6%가 가장 적합한 것으로 판단된다.

크랜베리 농축액을 첨가한 젤리의 품질 및 항산화 활성 (Quality and Antioxidant Properties of Gelatin Jelly Incorporated with Cranberry Concentrate)

  • 크랜베리 농축액의 첨가량을 0~15%로 달리하여 젤리를 제조한 후 물리화학적 품질, 항산화 특성 및 소비자 기호도를 비교하였다. 크랜베리 농축액의 첨가 비율이 증가함에 따라 젤리의 pH와 경도는 감소하였고, 가용성 고형분 함량은 증가하는 경향을 보였다(P<0.05). 밝기를 나타내는 $L^*$값은 농축액의 첨가량이 증가할수록 유의적으로 감소하였고, 적색도를 나타내는 $a^*$값은 현저하게 증가하였다(P<0.05). 황색도를 나타내는 $b^*$값은 농축액 첨가에 따라 현저하게 감소하였으나, 첨가 농도와 직접적인 연관관계는 발견되지 않았다. 한편 농축액의 첨가량이 증가함에 따라 항산화 활성을 나타내는 DPPH와 ABTS 라디칼 소거능은 유의적 차이를 나타내며 증가하였다(P<0.05). 소비자 기호도 검사 결과 6% 첨가군이 대부분의 평가항목에서 유의적으로 높은 점수를 얻었고, 특히 전체적인 기호도 측면에서도 유의적으로 가장 높게 평가되어 젤리의 관능품질과 건강기능성 효과 등을 고려할 때 최적 첨가 농도로 6%가 가장 적합한 것으로 판단된다.

Fat replacement by pecan nut and oregano oil and their impact on the physicochemical properties and consumer acceptability of frankfurters

  • Objective: A study was conducted to determine the physicochemical quality and consumer acceptability of beef frankfurter-type sausages formulated with pecan nut paste and Mexican oregano oil (MO) of two varieties, Poliomintha longiflora Gray (Mexican oregano Poliomintha, MOP) or Lippia berlandieri (Mexican oregano Lippia, MOL). Methods: Frankfurters were processed under six treatment conditions: control (10.67% pork fat), MOP (control + 0.01% MOP), MOL (control + 0.01% MOL), MOP-N (control + 0.01% MOP + 6% pecan nut paste), MOL-N (control + 0.01% MOL + 6% pecan nut paste), and C-N (control + 6% pecan nut paste). The physicochemical properties and the consumer acceptability were determined. Results: The addition of MO and nut did not influence the water holding capacity, drip loss, and luminosity of frankfurters, but those ingredients increased pH and shear force (p<0.05) and decreased redness (p<0.05) of frankfurters. Frankfurters were generally well accepted by consumers. However, general acceptability of sausages decreased with the addition of MO. Control sausages showed the highest acceptability. Conclusion: The MO and pecan nut paste do not affect drastically the quality of frankfurters. These results provide evidence that partial replacement of pork fat by pecan nut in frankfurters maintain a consistent physicochemical quality and its commercialization looks promising given consumers' acceptance.

복숭아 분말 첨가 젤리의 품질특성 (Quality Characteristics of Jelly added with Peach(Prunus persica L. Batsch) Powder)

  • 본 연구에서는 복숭아 분말의 첨가량을 달리하여 젤리를 제조한 후 젤리의 물리화학적 품질특성(pH, 색도, 외관색상, 경도)과 소비자 기호도(색, 향미, 씹힘성, 맛, 전체적 기호도)를 비교 분석하였다. 젤리의 pH는 증가하였다(p<0.001). 명도를 나타내는 $L^*$값은 복숭아 분말의 첨가량이 증가할수록 유의적으로 감소하였고(p<0.001), 적색도를 나타내는 $a^*$값과 황색도를 나타내는 $b^*$값은 유의적으로 증가하였다(p<0.001). 복숭아 분말 첨가 젤리의 DPPH 라디칼 소거능에 대한 결과는 복숭아 분말 첨가량이 많을수록 DPPH 라디칼 소거능이 증가하였다. 소비자 검사결과, 15% 첨가군이 모든 평가항목에서 유의적으로 높은 평가를 받아 젤리의 관능적 품질을 최대한 유지하면서 복숭아 분말의 기능적 이점을 최대한 활용하기 위한 젤리의 최적첨가 농도는 15%가 가장 적합한 것으로 판단된다.

몽골 소비자 라이프스타일과 광고모델 속성이 한국 화장품 광고태도에 미치는 영향 (The Effects of Mongolian Consumer's Lifestyle and Advertisement Properties on Advertisement Behavior of Korean Cosmetics)

  • Purpose - Korean Wave that overspreads around Asia and America, especially the Korean beauty wave, has reached Mongolia and Mongolian consumers. Mongolia consumers usually prefer foreign cosmetic brands to local brands, because the local brands cannot satisfy fast changing needs and wants of local consumers. Research design, data, and methodology - Based on previous studies about life style of Mongolian consumers, advertisement properties and consumer behaviors, we propose a research model and related hypothesis. In order to test hypotheses, we analyzed 366 survey data out of 376 by eliminating improper 10 responses. Factor analysis and reliability analysis was conducted by SPSS 22.0. We used multiple regression analysis and parameter analysis to test the relation between variables. Results - As exploring the Mongolian consumers' current usage of cosmetic products, we found that the customers' focus is how the products fit with their skin. Mongolian consumers often get the information about cosmetic products through TV and internet. Mongolian consumers show positive attitudes on the appearance of Korean celebrities in responsibility, while there is no significant effect on attractiveness. Mongolian consumer's behaviors toward brand have positive effect on both responsibility and attractiveness of Korean commercial celebrities. Responsibility and attractiveness of Korean commercial celebrities have positive effect on the behaviors toward advertisements of cosmetic products. Conclusions - Behaviors toward advertisements of cosmetic products have positive effect on both purchase intention and loyalty of customer. Responsibility and attractiveness of Korean commercial celebrities have positive effect on mediating variable of behavior toward advertisement and independent variable of purchase intention. Responsibility and attractiveness of Korean commercial celebrities have positive effect on mediating variable of behavior toward advertisement and independent variable of loyalty of customer. In order to improve the effect of advertisements, firms need to consider not only the technique of the model but also the image of model in regard to trust and professionalism appealing to consumers. In addition, firms need to choose the model who fits in with the image of the firms and the products and service of the firms. Finally, Mongolian consumers tend to acquire the shopping information through TV advertisements, especially featuring Korean popular stars, thus, TV advertisements can be a wise option in Mongolian cosmetic market.

Consumer Acceptance of Three Rice Varieties Formulated by a Simplex-Lattice Mixture Design

  • A simplex-lattice mixture design was applied to blend three varieties of rice; Ilpum (IP), Goami2 (G2) and Baegjinju (BJJ) all of which have very different physicochemical properties from one another. G2 and BJJ are mutant rice developed from IP. Increasing G2 portions in a rice blend increases indigestible carbohydrate contents. Blending at least 33.3% of G2 to either IP or BJJ increased indigestible carbohydrates, which were approximately $3.55{\pm}1.31\;to\;4.57{\pm}0.37$(g/100 g), respectively. Consumers rated higher than 6.0 (=like slightly) for the IP alone and binary blends of IP and BJJ, whereas less than 5.0 (=dislike moderately) for the blends containing G2 rice, indicating that consumers would not accept rice blends containing higher G2 portions. However, although blends with G2 were given lower consumer ratings, a rice blend with G2 could have health benefits in terms of nutritional and functional properties due to the higher indigestible carbohydrate contents.

Comparison of Physicochemical Properties of Korean and Australian Wheat Flours Used to Make Korean Salted Noodles

  • The effect of using Korean wheat flour versus Australian wheat flour on noodle quality as a result of differing physical and chemical properties of the flours was investigated. The results provided appropriate technical information for selection of wheat varieties to produce high quality Korean salted noodles. Noodle quality was quantified based on measurement of the appearance and texture of noodles. When consumer preference tests were conducted, a firmer and more elastic texture was preferred for Korean white salted noodles, however, when appearance was included in the consumer tests, noodles made with Australian wheat were favored over Korean wheats. Korean flour was found to produce firmer and more elastic noodles, whereas Australian flour produced brighter, creamier colored noodles. In flour quality tests, Korean flours were found to have a higher setback viscosity and lower swelling power than Australian flour. Additionally, Korean flours had higher water absorption values. Protein content of flour was an important parameter affecting the firmness of Korean noodles, whereas setback viscosity and swelling power were the major determinants of elasticity. Overall, the important parameters for determination of the quality of Korean salted noodles were high setback viscosity, low swelling power, and high protein content.

Effects of the Addition of Ecklonia cava Powder on the Selected Physicochemical and Sensory Quality of White Pan Bread

  • Physicochemical properties and consumer perception of white pan bread as influenced by the addition of Ecklonia cava powder (ECP) were investigated. Freeze-dried Ecklonia cava were ground, sieved through a laboratory sieve and a fraction with particles less than $250{\mu}m$ was used. Amount of ECP added (0~3%) to the bread was found to affect the bread quality significantly (P<0.05). pH, bread height, and volume of the control was significantly higher than others (P<0.05) and decreased significantly (P<0.05) with the addition of ECP. Moisture content showed no significant differences (P>0.05). There were distinctive color changes with the addition of the powder: $L^*$- and $a^*$-values decreased but $b^*$-value increased significantly (P<0.05). The hardness of bread was found to increase but both cohesiveness and springiness showed a reverse trend with the addition of the powder. Consumer acceptance test indicated that ECP content 1% on wheat flour could be the recommended supplementation level for the consumers without sacrificing sensory quality.

피자 크러스트의 특성과 소비자 기호 유도 인자 (Sensory Properties and Drivers of Liking for Pizza Crust)

  • This study identified the sensory properties of samples of pizza dough at three pizza companies and three masonry oven pizzerias from Seoul, Korea and compared consumer acceptability among panels of university students. Six pizza dough samples were prepared (pan pizzas from Pizza Hut, Mr.pizza, and Dominos pizza, masonry oven baked pizzas from Appleteen, Mr.Lee's, and Pizza factory). Consumer tests were employed involving 97 Korean consumers. Consumers evaluated overall liking (OL), liking of appearance (APPL), odor (ODL), flavor (FLL), and texture (TXTL), willing to try (WT), and willing to recommend (WR) for the samples using a nine-point hedonic scale. Analysis of variance (ANOVA) indicated that HutP, MrP, and DomP samples had significantly (p<0.05) high scores for roughness, porosity, crust color, grain size, brownness, dairy food aroma, savory taste, and yeast aroma, which had the highest OL, ODL, and FLL scores. LeeP, ATeenP, and PFacP samples had high elasticity, cohesiveness, and adhesiveness. Consumers favored the appearance characteristics and color, dairy product flavor, and savory flavor of the pan pizza and preferred cohesiveness, toughness, and stickiness of masonry oven baked pizza.
