Mineral Phosphate Solubilization by Wild Type and Radiation Induced Mutants of Pantoea dispersa and Pantoea terrae

  • Three mineral phosphate solubilizing (MPS) bacteria where isolated from rhizosphere soil samples of common bean and weed plants. 16S rDNA analysis indicated that the isolate P2 and P3 are closely related to Pantoea dispersa while isolate P4 is closely related to Pantoea terrae. Isolates P2 and P3 recorded $381.60{\mu}g\;ml^{-1}$ and $356.27{\mu}g\;ml^{-1}$ of tricalcium phosphate (TCP) solubilization respectively on 3 days incubation. Isolate P4 recorded the TCP solubilization of $215.85{\mu}g\;ml^{-1}$ and the pH was dropped to 4.44 on 24 h incubation. Further incubation of P4 sharply decreased the available phosphorous to $28.94{\mu}g\;ml^{-1}$ and pH level was raised to 6.32. Gamma radiation induced mutagenesis was carried out at $LD_{99}$ dose of the wild type strains. The total of 14 mutant clones with enhanced MPS activity and 4 clones with decreased activity were selected based on solubilization index (SI) and phosphate solubilization assay. Mutant P2-M1 recorded the highest P-solubilizing potential among any other wild or mutant clones by releasing $504.21{\mu}g\;ml^{-1}$ of phosphorous i.e. 35% higher than its wild type by the end of day 5. A comparative evaluation of TCP solubilization by wild type isolates of Pantoea and their mutants, led to select three MPS mutant clones such as P2-M1, P3-M2 and P3-M4 with a potential to release >$471.67{\mu}g\;ml^{-1}$ of phosphorous from TCP. These over expressing mutant clones are considered as suitable candidates for biofertilization.

식도 및 기도이물의 통계적 고찰 (Clinical observation of the foreign bodies in the air and food passages)

  • 식도 및 기도이물은 연령, 성별, 민족에 관계없이 가끔 발생하는 이비인후과 질환으로 주위환경과 생활양식에 따라 중류나 발생기전이 다를 수 있다. 대부분의 경우 내시경적 방법으로 용이하게 제거할 수 있지만 경우에 따라 수술을 요하는 경우도 있고 사망례도 있다. 저자들은 1972년 1원 1일부터 1976년 3월 31일까지 4년 3개월 동안 한강성심법원 이비인후과에 내원했던 식도 및 기도이물 환자 205례에 대한 통계적 고찰을 하여 다음과 같은 결과를 얻었다. 1) 총 205례중 식도이물이 200례(97.6%로 대부분이고 기도이물은 5례이었다. 2) 종류 식도에서는 주화가 가장 많았고 (90%), 기도에서는 콩, 땅콩, 빨래집개, 플라스틱조각, 옥수수알 등이 있었다. 3) 이물의 부위는 식도의 제 1 협착부가 가장 많았다. (96.5%). 4) 남녀 발생빈도를 비교해보면 식도에서 1.4 : 1, 기도에서 3:2로 큰차이는 없었다. 5) 개재시간은 식도이물에서 3일 이내에 87%가 내원했고 기도이물에서는 1일 이내에 모두 내원했다.

  • 한국인의 상용식품, 특히 가공식품의 K 함량에 대한 원자흡광분광광도계의 분석결과 다음과 같다. (1) 곡류 중 라면류의 K 함량은 105~180 mg/100g 이고 스프의 K 함량은 500~10000mg/100g 이었다. (2) 과자류의 K 함량은 웨하스가 다소 낮은 40~60 mg/100g이었고 다른 과자는 80~135mg/100g 이었다. (3) 서류, 두류의 K 함량은 원재료보다 가공식품의 K 함량이 작아 가공 중 K 함량이 줄어듦을 볼 수 있고 두류 식품 중 비지의 K 함량이 유난히 높게 나타났다. (4) 채소류의 K 함량은 전반적으로 높아 오이 160~240 mg/100g이었고 , 호박 200~280mg/100g, 느타리 버석 370~375 mg/100g수준으로 나타났다. (5)육류의 K 함량도 비교적 높아 130~475 mg/100g이었고 육가공ㅍ무도 다소 낮았으나 80~260mg/100g이었다. (6) 어류의 K 함량은 100~400mg/100g, 어육연제품이 다소 낮은 100~150mg/100g이었으나 해조류의 K 함량은 말린 것의 경우 대부분이 1000mg/100g을 넘는 높은 함량을 보였다. (7) 우유의 K 함량은 대체로 130~165mg/100g이었고 프리마가 다소 높아 570~980mg/100g이었다. (8) 음료류 중 탄산음료의 K 함량야은 매우 낮았으나 커피의 K 함량은 매우 높아 2400~2600mg/100g이었다. (9) 당류 중 껌, 설탕, 캔디의 K함량은 매우 낮았고 쵸코릿이 다소 높은 395~440mg/100g이었다. (10) 조미료류의 K 함량은 종류별로 차이가 커서 식용유의 K 함량은 매우 낮고 후추가루는 1200~1300mg/100g으로 높았다. (11) 모든 식ㅍ무군에서 분석방법간 K 함량의 차이는 유의 하지 않은 것으로 나타났다.

성서에서 언급되는 농산물에 관한 연구 -곡물을 중심으로- (A Study on The Agricultural Products Mentioned in the Bible with Priority to the Cereals)

  • Varieties of the cereals produced in the Biblical times and the ways these cereal foods have been grafted into Korean food culture has been pursued, and the regulations of agricultural life and the metaphors or parables of cereals represented throughout the Bible have been studied. The word "grain" appears eight times in the KJV and one hundred seventeen times in the RSV. On the other hand, the word "corn" shows up one hundred and one times in the KJV but not in the RSV at all. Wheat, one of the earliest cultivated and the most important grains for food is mentioned fifty two times in KJV and generally the rich in those days lived on wheat in the parched state or in the form of bread. Barley, one of the staple cereal crops of Palestine is referred to thirty six times in the KJV. It was less expensive than wheat and so was used mainly for the food of such animals as horses, donkeys and cattle, but sometimes it was mixed with flour and used for making bread for men, mostly for Poor men. The spelt (in ASV and RSV) and the rie(in KJV) appearing in Exodus 9:32 is a kind of grain, which is translated into Na-mack (in Hangul Revised Bible ; HRB), Ssal-bori (in Hangul Common Translated Bible : HCB) and Ho-mil (in Hangul King James Bible; HKJB) but which should be put into Spelt-mil in Korean. The lentil appearing in Genesis 25 : 34 is translated into Pat (red-bean) and Bul-kong respectively in HRB and HCB but the same word in the Second Book of Samuel is translated into Pat in both HRB and HCB. HCB translates lentil into Bul-kong in Genesis and into Pat in the Second Book of Samuel (23:11). HCB and HKJB which put lentil into Pat in previous parts translate the word into Nok-tu in the Second Book of Samuel. The word, lentil here should be put into lentil-kong and parched pulse into "Poken-Chong-ja" not into Poken-Nok-tu. Millet which is translated into Cho should be put into Gui-jang. filches should not be classified as a grain or a cereal but as a flavor or a condiment, so the word filches should be put into So-Hoi-hyang or Hoi-hyang. Regulations in reference to agriculture are included in the Bible. That is, it is seen that the Bible regulates the observance of the sabbatical year and feasts, the partition of land, how to sow and so on. It is also observed that grains are used for metaphors or parables: wheat represents the peaceful times and straws are compared to trifles. As seen above, there should be more prudent examinations and standards for the translation of grains into Pat, Pul-kong, Nok-tu, Gui-ree, Ssal-bo-ri and Na-mack.i-ree, Ssal-bo-ri and Na-mack.

떡에 대한 인지도와 기호도 및 소비행동에 관한 연구 -부산·영남지역의 대학생을 중심으로- (A Study On Consumer Awareness, Preference, and Consumption Behavior Regarding Rice Cakes - With a Focus on College Students in Busan and the Yeongnam Region -)

  • The purpose of this study is to understand consumer awareness and preference regarding rice cakes by surveying the awareness, preference, and consumption behavior of college students regarding rice cakes, and to survey their perception and usage of rice cakes, thereby using the results as basic data to establish measures to develop Korea's rice cakes. To sum up the study's results, the survey included both male (54.5%) and female (45.5%) subjects. Those aged "20 to 23" accounted for the largest share (67.9%) of total respondents, and those majoring in "humanities and social studies" comprised the largest portion (47.8%). A majority of the respondents resided in "small and medium-sized cities", and most either lived at home or lived away from their families. A majority of the subjects received monthly allowances ranging from 200,000 to 300,000 won. In order of awareness, the most well-known type of rice cake was "injeolmi (rice cake made from glutinous rice and coated with bean flour)", followed by "songpyeon (half-moon-shaped rice cake)", "garaeddeok (bar rice cake)", and "baekseolgi (steamed white rice cake)". The women were better aware of "injeolmi", "baekseolgi", and "garaeddeok" than the men, and "soemeoriddeok" was not commonly known among either gender. In terms of preferences for rice cakes, overall, the subjects liked "injeolmi" and "songpyeon" the most. However, certain differences were found in preferences for rice cakes between the men and women. The women exhibited higher levels of preference for "injeolmi" and "songpyeon" than the men. On the other hand, the men revealed higher levels of preference for "baekseolgi", "jeolpyeon", and "garaeddeok" than the women. The most common answer to important factors for popularizing rice cakes was "a diverse assortment of rice cakes", followed by "the development of creative technologies" and "the taste of rice cakes reflecting consumer needs", in order of importance. Among the important factors to popularize rice cakes, "the development of unique packaging containers for rice cakes" (p<0.05) and "the development of proper packaging materials" (p<0.05) showed statistically significant differences. In the survey of consumption of rice cakes, the most frequent answer to the question "why do you like rice cakes? was "their tastes are good" with 146 respondents, followed by "I have been eating them for long" with 115 respondents. To the question "when do you use rice cakes", the most frequent answer was "I use them in daily life" with 133 respondents, followed by "I use them at special events" with 115 respondents. The women were found to use rice cakes frequently in daily life, whereas the men used them frequently at special events. When asked whether they had the intention to use rice cakes as a meal substitute, 100 men answered that they had no intention, whereas 96 women answered that they had the intention. When asked about the type of rice cake considered suitable for a meal substitute, the most popular answer was "injeolmi" with 108 respondents, followed by "baekseolgi" with 106 respondents.

펙틴분해물의 항균특성과 식품보존효과 (Antimicrobial Activity of Pectin hydrolysate and its Preservative Effect)

  • Citrus 펙틴을 효소로 가수분해시켜 얻은 펙틴 분해물이 35%가 되면서부터 항균력이 서서히 나타나기 시작하여 75% 이상에서는 급격히 증가하였으며 완전분해(100)%)된 펙틴 분해물을 배지에 2.0% 첨가하면 $35^{\circ}C$에서 24시간까지 Escherichia coli ATCC 11229의 생육을 완전히 억제하였다. 펙틴분해물의 항균력은 pH 4.9~5.5 범위에서 가장 좋았으며 균종별로는 젖산균을 제외한 대부분의 세균에 대하여 강한 항균력을 나타내었고 젖산균과 곰팡이류에 대해서는 항균효과가 약하였으며 효모에 대하여는 전혀 영향을 미치지 않았다. 즉, 대부분의 세균은 펙틴 분해물을 2.0~3.0% 첨가하므로써 $35^{\circ}C$에서 48시간까지 생육이 완전히 억제되었으나 Lactococcus Lactis ATCC 19435, Lactobacillus Bulgaricus, Pencillium funiculosum ATCC 11797은 대조구에 비하여 30~40% 만이 억제되었으며 Saccharomyces formosensis와 Saccharomyces cerevisiae는 전혀 영향을 받지 않았다. 한편, glycine, ethanol, sodium ascorbate, sodium chloride 또는 sodium acetate 등의 화학보존료를 병용하면 펙틴 분해물을 단독으로 사용하였을 때 보다 항균력이 상승하였다. 김치에 펙틴 분해물을 1.0% 첨가하여 $4^{\circ}C$에 저장하면 섭취하기에 알맞은 김치를 pH를 유지하는 기간이 대조군에 비하여 적어도 15일 이상 연장되었다. 또한 빵속에 펙틴분해물을 1.5% 첨가하면 $25^{\circ}C$에서 저장 4일째 대조구에 비하여 4 log cycles 그리고 저장 10일까지도 2 log cylces 정도 균의 성장이 억제되었다. 따라서, 펙틴 분해물은 천연식품보존제로 이용가능하며 특히, 젖산균이나 효모에 대해서는 항균작용이 미약하거나 없으므로 젖산균이나 효모를 이용하는 발효식품의 품질보존제로서 아주 유용할 것으로 생각된다. 또한 기존의 화학 보존료와 병용하므로써 화학 보존료의 첨가량을 감소시킬 수 있다는 점에서도 유용하다고 생각된다.

1998 - 2008 발생한 식품안전관련 사건.사고 분석 (The Analysis of Food Safety Incidents from 1998 to 2008 in Korea)

  • 식품안전관련 사건 사고는 점차 대형화되면서 지속적으로 계속 발생하고 있다. 이에 본 연구에서는 1998년 1월부터 최근 2008년 10월까지 국내에서 발생한 주요 식품안전사건사고와 관련하여 다양한 언론매체에서 발표된 자료를 수집하고 그 발생현황에 대한 분석을 시도하였다. 총 1,206건이 발생한 것으로 조사되었으며, 이중 중복내용과 순수 식품안전사건 사고와 관련이 없는 부분을 제외하면 약 11년간 총 569건이 발생한 것으로 조사되었다. 이를 연도별로 보면 평균 51.7건이, 월별로 보면 평균 4.9건이 발생하였다. 주요 원인식품군에 있어 수산식품과 식육 및 육가공품, 과자류, 음료류, 특수영양식품군, 다류, 면류, 장류, 우유 및 유제품 등의 순으로 나타났으며, 식품유형에 있어서는 즉석섭취편의식품, 육류, 과자, 건강보조식품, 침출차, 영아용 조제식 및 육가공품, 인삼제품, 체중조절용 조제식품 등의 순으로 나타났다. 위해요소(원인물질)별로는 화학적 위해요소가 247건(43.4%)으로 가장 많이 발생하였으며, 다음이 생물학적 위해요소로 126건(22.1 %), 물리적 위해요소는 97건(17.0%)의 순으로 나타났다. 위해요소의 발생단계에 대한 분석을 보면, 원료차원에서 가장 많은 364건(64%)이 발생하였고, 다음이 제조가공단계로 151건(26.5%), 유통 및 판매단계가 44건(7.7%)으로 나타났다. 본 연구에서와 같은 자료의 정리 및 분석은 추후 식품안전정책 및 HACCP의무적용 등에 있어 우선적으로 다루어야 할 품목을 선정하는 데 있어 중요한 기초자료로 활용될 수 있을 것이다.

한반도 비자나무림의 식생구조 (Vegetation Structure of the Torreya Nucifera Stand in Korea)

  • 한국에서 비자나무는 남해안 및 제주도의 온난 기후대에 주로 분포하고 있으며, 사찰과 향교 주변 등에서 주로 보호림으로 조성되어 오고 있다. 본 연구의 주된 목적은 한반도의 대표적 비자나무 임분에서 식생구조분석을 실시함으로서 현재 비자나무 식생군락의 동태를 파악하고 이로부터 적절한 임분 보전대책을 수립하는데 있다. 비자나무 임분 내에서 조사된 종수는 총 148종이었으며, 교목층 임분에서 출현수종 28종, 아교목층 출현수종 38종, 그리고 관목층 출현수종 82종의 목본 관속식물이 생육하고 있는 것으로 나타났다. 조사된 비자나무 임분에서 공통적으로 나타난 종은 쥐똥나무, 송악 및 마삭줄이었다. 조사지역 모든 층위에서 비자나무가 우점종 이었으나, 아교목층 및 관목층에서는 그 우점치가 다소 떨어져 임분 쇠퇴현상이 나타났는데, 이러한 사실은 교목층 임분의 수관발달 및 아교목층에서의 생장편의에 의한 결과이다. 비자나무림의 교목층과 아교목층은 천연발아에 의해 조성된 임분이 대부분이다. 따라서 조사된 우리나라 비자나무림에 대한 건강한 임분을 유도하기 위해서는 도태 간벌시업을 응용함으로서 과도한 수관경쟁의 조정이 필요할 것으로 판단되는 바이다.

농촌거주 외짝가족의 식생활관리 -부부가족과의 비교- (The Odd Pair Family's Dietary management in rural, Korea - Comparison with the Pair Family -)

  • Recently the rural Korea has been remarkedly changed of family and social value in accordance with the development of industry. The lower economic class made by social economic growth is widespread with increasing aged, specially odd pair family in rural. The purpose of this study was to investigate to help and keep improve health of rural lower economic class, family system by comparing and analyzing the dietary management, between pair and odd pair family, and to get the data helpful the right guidance for rural. The subjects 1870 collected in 9 provinces by sampling with probability proportional to size (PPS). Questionnaire about dietary habit, food cultivation, production and preservation survey was conducted by trained interviewers. The main results were as follows : 1) The characteristics of odd pair families, head of household was female(77%), over 65 years(84.9%), small family(1.76 persons) and lower education(male 7.5 years, female 3.1 years) status. 2) As the states of diets of odd pair family, having breakfast(87.1 %) but one or two kinds of side dishes(31.3 %) only possible to guess lower status of food intake balance. Nutritional supplements(21. 7 %) was lower than that of paired family. 3) The aspects of dietary habit of odd pair family, no instant foods(70.7%), no snack(38.4%) no dine out(69.2%) were common. 4) Dietary habit scores were 7.78 points of odd pair family compared 8.34 points of paired family. 5) Food purchase place of odd pair family was market(44.2%) but super-market(42.7%) of paired family. 6)In odd pair family, seldom traditional dish preparation(62.0%) but prepared winter kimchi(81.9%), comparing seldom traditional dish(38.6%) and winter kimchi(96.4%) in paired family. 7)The food cultivation state was surveyed, pepper( 42.2 %) and chinese cabbage( 43.9 %) were consumed after cultivation, but sesame(59.4%), bean sprout(90.2%), tofu(92.8%) and egg(93.3%) were consumed by purchase in odd pair family.8) Food cultivation score of odd pair family was 2.98/12points significantly lower than 4.50/12 points of paired family(p<0.01). 9) At the status of fermentation food production in odd pair family, Duenjang(72.1 %) and Gochujang(69.7%) Kanjang(68.3%) Kimchi(82.1 %) and Meju(68.3%) were high rate of production, but more frequently producted in pair family. 10) The score of fermentation food production of odd pair family was 8.57/12points but significantly lower than 10.24/12 points of pair family(p<0.0001). 11) Food preservation score 0.48/6 points in odd pair family was not significantly different than that of pair family(1.07/6points).

NIRS AS AN ESSENTIAL TOOL IN FOOD SAFETY PROGRAMS: FEED INGREDIENTS PREDICTION H COMMERCIAL COMPOUND FEEDING STUFFS

  • Directive 79/373/EEC on the marketing of compound feeding stuffs, provided far a flexible declaration arrangement confined to the indication of the feed materials without stating their quantity and the possibility was retained to declare categories of feed materials instead of declaring the feed materials themselves. However, the BSE (Bovine Spongiform Encephalopathy) and the dioxin crisis have demonstrated the inadequacy of the current provisions and the need of detailed qualitative and quantitative information. On 10 January 2000 the Commission submitted to the Council a proposal for a Directive related to the marketing of compound feeding stuffs and the Council adopted a Common Position (EC N$^{\circ}$/2001) published at the Official Journal of the European Communities of 2. 2. 2001. According to the EC (EC N$^{\circ}$ 6/2001) the feeds material contained in compound feeding stufs intended for animals other than pets must be declared according to their percentage by weight, by descending order of weight and within the following brackets (I :< 30%; II :> 15 to 30%; III :> 5 to 15%; IV : 2% to 5%; V: < 2%). For practical reasons, it shall be allowed that the declarations of feed materials included in the compound feeding stuffs are provided on an ad hoc label or accompanying document. However, documents alone will not be sufficient to restore public confidence on the animal feed industry. The objective of the present work is to obtain calibration equations fur the instanteneous and simultaneous prediction of the chemical composition and the percentage of ingredients of unground compound feeding stuffs. A total of 287 samples of unground compound feeds marketed in Spain were scanned in a FOSS-NIR Systems 6500 monochromator using a rectangular cup with a quartz window (16 $\times$ 3.5 cm). Calibration equations were obtained for the prediction of moisture ($R^2$= 0.84, SECV = 0.54), crude protein ($R^2$= 0.96, SECV = 0.75), fat ($R^2$= 0.86, SECV = 0.54), crude fiber ($R^2$= 0.97, SECV = 0.63) and ashes ($R^2$= 0.86, SECV = 0.83). The sane set of spectroscopic data was used to predict the ingredient composition of the compound feeds. The preliminary results show that NIRS has an excellent ability ($r^2$$\geq$ 0, 9; RPD $\geq$ 3) for the prediction of the percentage of inclusion of alfalfa, sunflower meal, gluten meal, sugar beet pulp, palm meal, poultry meal, total meat meal (meat and bone meal and poultry meal) and whey. Other equations with a good predictive performance ($R^2$$\geq$0, 7; 2$\leq$RPD$\leq$3) were the obtained for the prediction of soya bean meal, corn, molasses, animal fat and lupin meal. The equations obtained for the prediction of other constituents (barley, bran, rice, manioc, meat and bone meal, fish meal, calcium carbonate, ammonium clorure and salt have an accuracy enough to fulfill the requirements layed down by the Common Position (EC Nº 6/2001). NIRS technology should be considered as an essential tool in food Safety Programs.
