Changes in Methyl Pyrazines of Cocoa Beans during Microwave Roasting (Microwave Roasting에 의한 Cocoa Bean의 Methyl Pyrazine류의 변화)

  • Flavor components focused on the methyl pyrazines(2,3-dimethyl pyrazine, 2,3,5-trimethyl pyrazine, tetramethyl pyrazine) of microwave-roasted cocoa beans were determined and compared with those of conventionally-roasted cocoa beans. Domestic microwave oven was modified to design the microwave roasting system. Temperature measurement technique using thermocouple probes was developed to determine the center temperature of cocoa beans during microwave roasting. Microwave roasting was carried out under two different conditions. Under the first condition, roasting time was fixed to 30 min, while roasting temperature was varied to $110^{\circ}C,\;120^{\circ}C,\;130^{\circ}C,\;140^{\circ}C,\;and\;150^{\circ}C$ Under the second condition, roasting temperature was fixed to $130^{\circ}C$, while roasting time was varied to 5 min, 10 min, 20 min, and 30 min. Conventional roasting was done at $120^{\circ}C$ for 15 min as a reference. Amount of methyl pyrazines and their ratios were influenced by microwave roasting temperature and roasting time. The most suitable methyl pyrazine ratio of cocoa beans was obtained at $140^{\circ}C$ for 30 min of microwave roasting.

Production of Hypoallergenic Cocoa Beans by a Pregermination Treatment Method

  • Pregermination treatment of cocoa beans either with the testa, group PCB (+T), or without the testa, group PCB (-T), was studied here to determine whether this treatment (incubation up to 120 h at $25^{\circ}C$) has any effect on the levels of allergenic proteins or on chemical composition. Our proximate analysis included carbohydrates, proteins, and lipids. We used western blotting to measure changes in the amounts of allergenic proteins in the cocoa beans during the pregermination treatment. The protein and carbohydrate content of both groups (with or without the testa) decreased slightly during this treatment, whereas lipid content increased. Group PCB (-T) showed more rapid metabolic processes than did group PCB (+T) during the pregermination treatment. Western blot analysis showed that the cocoa beans contained an allergenic protein of ~28 kDa. Removal of the testa strongly reduced the amount of this allergenic protein after 72 h of the pregermination treatment. Generally, the pregermination treatment increased antioxidant activity in both groups. Significant differences in the antioxidant activity were observed between groups PCB (-T) and PCB (+T). Particularly, group PCB (-T) showed high antioxidant activity at 72 h of the pregermination treatment. Thus, the combination of cocoa beans without the testa and pregermination treatment (72 h) seems to be the optimal method for production of hypoallergenic cocoa beans rich in antioxidants for patients with allergic disorders.

Grading of Fermented and Dried Cocoa Beans Using Fungal Contamination, Ergosterol Index and Ochratoxin a Production

  • Sixty four samples of cocoa beans replicated in quadruplicates were collected from five warehouses from southwest Nigeria and examined for fungal loads, ergosterol and eohratoxin A The levels of all the variables obtained were further used as indices for cocoa grading into food quality, FoQ (erg < 5 mg/kg; OTA < $1{\mu}g$/kg), feed quality, FeQ (erg = $5{\sim}10\;mg$/kg; OTA in the range of $1.1{\sim}3.11{\mu}g$/kg), Screen for mycotoxin, SFM (erg = $10{\sim}20\;mg$/kg; OTA from $3.12{\mu}g$/kg and above) with fuel quality, FuQ having erg > 20 mg/kg and OTA > $6.12{\mu}g$/kg. Using these ergosterol indices, 18.75% of the cocoa beans examined was classified with the FoQ, 18.75% with the FuQ while 31.25% was classified with both the FeQ and the SFM, respectively. In conclusion, ergosterol can be used as a rapid index to grade fermented, dried cocoa beans meant for export.

Changes in Chemical Components of Cocoa Beans during Microwave Roasting (마이크로웨이브 Roasting 중 Cocoa Bean의 이화학적 성분 변화)

  • The physicochemical properties of microwave-roasted cocoa beans such as color, degree of browning, pH, titrable acidity, organic acid, and sugar content were determined and compared with those of conventionally-roasted beans. Microwave roasting temperatures were 110, 120, 130, 140 and $150^{\circ}C$. Roasting times were 0, 5, 10, 20, and 30 min. Conventional roasting was done at $120^{\circ}C$ and 15 min as a reference. The pH had no relations with roasting temperature or roasting time. As roasting time and roasting temperature were increased, the titrable acidity values of roasted cocoa beans became higher than those of raw bean. But there were no differences among each condition. Color, degree of browning, and sugar content changed as roasting temperature and roasting time increased. The organic acid content of roasted beans increased but the degree of increase was different from organic acid to organic acid. Roasting by microwaves resulted in higher inner temperature of samples than the surface temperature. To increase roasting efficiency, the other heat sources should be used together with microwave.

  • Lipase specific activity in cocoa beans varied from 70 to 40 ${\mu}mol/min/mg$ protein during six days of fermentation. At the end of this period most parts of the cotyledon has turned to brown color which would be more distinguishable after drying. The beans were slightly swollen thus causing its testa to disintegrate. During fermentation there was a decrease in pH from 6.4 to 5.8. Whereas the percentage of acetic acid was increased by 0.04% of wet weight beans on the third day but decreased progressively with time.

  • Gabensis village is one of the biggest village In the Wampar Local Level Government area within the Huon Gulf District of Morobe Province with a population of around 3,000. The major staple food is banana which is well complemented by minor staples yam, cassava, Singapore/Chinese taro and sweet potato. Apart from gardening for own consumption, the villagers engage in selling of vegetables, garden staples, cocoa beans, coconuts, timber, chicken, fish and pig meat to supplement their livelihood. Livestock like pigs and chickens are also kept for meat and for commercial purpose. Bettlenut which was once one of the main cash crops has now been overtaken by cocoa due to a disease that had attacked almost the entire bettlenut tree population in the area. Even though the Wau-Bulolo highway cuts through the village and all have access to transport infrastructure, the majority of the population still encounter problems in communication due to poor telecommunication coverage. On average most people earn not more than K50 per week due to constrains in production and marketing among others. Gabensis village has the potential to develop a tourism industry given its natural attraction of Lake Wanam. Beside there is also the natural eel farming and the fish pond at the nearby Potsie village. These natural attractions pose huge tourism potential for the community. As part of government services delivery and development, education and health issues is very much important in the community however there is lack of infrastructural development and poor service delivery especially in the area of health. However, the responsibility is on the community to organize themselves to realize that potential. A well developed agro-ecotourism investments would have positive spillover effects to the community thus contributing towards improving the livelihoods of the many farming families.

  • This study was performed to survey and evaluate the contents of caffeine in commercial palatability foods by HPLC. The contents of caffeine in commercial palatability foods were 9.0~49.2 mg in black tea, 35.9~141.4 mg in coffee, 12.4~48.0 mg in green tea, 7.1 ~16.5 mg in brown rice green tea, 22.8 mg in cocoa tea, 10.3~25.0 mg in cola and 10.0~48.2 mg in ice bar(coffee) respectively. The contents of caffeine extracted from black tea, coffee(roasted beans) and green tea were rapidly increased for five minutes from the extraction initiation, and were not nearly changed after ten minutes. Moreover, the caffeine contents were increased until 10$0^{\circ}C$ of extraction temperature.
