국내산 영귤의 산지 및 수확시기에 따른 성분특성 (Physicochemical Properties of Korean Citrus sudachi Fruit by Harvesting Time and Region)

  • 영귤을 이용한 다양한 가공제품의 개발을 위한 기초자료로 영귤의 과피와 과즙을 분리하여 수확시기별 (9월 3일부터 11월 8일까지 약 20일 간격) 및 산지별(서귀포, 제주시)에 따른 물리화학적 성분특성을 조사하였다. 영귤의 평균중량은 서귀포산이 제주시산보다 2배 이상이었으며, 평균직경도 10mm 이상 큰 것으로 나타났다. 과피의 수분함량은 $74.0{\sim}78.7%$로 성숙함에 따라 높아지는 경향을 보였으나 과즙에서는 $90.1{\sim}91.9%$ 수준으로 차이를 보이지 않았다. 환원당은 과피와 과즙에서 모두 9월 3일에서 11월 8일 사이에 약 2배 가량 증가하였고, 조섬유는 과피와 과즙에서 모두 감소하는 경향을 나타냈으며 조단백질과 회분의 경우, 과피에서는 감소하는 경향을 나타냈으나 과즙에서는 뚜렷한 차이를 나타내지 않았다. pH와 비타민C는 성숙이 진행됨에 따라 과피 및 과즙에서 다소 감소하는 경향을 나타내었다. 또한 과즙의 경우 중요한 품질인자가 되는 transmittance는 9월 20일에서 10월 13일 사이에 급격히 증가하였다. 그리고 유리당의 함량은 과피의 경우 9월 3일에서 11월 8일까지 2배 가량 증가한 반면에 과즙은 4배까지 증가하였다. 무기질의 경우 과피에는 Ca과 K이 다량 함유되어 있었고 과즙에는 K이 가장 큰 비율로 함유되어 있었으며 각 무기질의 함량은 과실이 성숙함에 따라 감소하는 것으로 나타났다.

진피 플라보노이드 생물전환 균주 분리 및 췌장 베타세포에 대한 산화적 손상 억제 효과 (Isolation of Citrus Peel Flavonoid Bioconversion Microorganism and Inhibitory Effect on the Oxidative Damage in Pancreatic Beta Cells)

  • In this study, the optimum conditions of fermentation were determined by isolating the microorganisms with the ability to bioconvert the Citrus peel flavonoid, and the effect of the fermented Citrus peel extract which was bioconverted on the oxidative damage of HIT-T15 cell was investigated. The Aureobasidium pullulans Y-12 was isolated and identified with the strains having bioconversion activity. The fermentation conditions for bioconversion activity were confirmed to be optimal when culturing for three days at $25^{\circ}C$, 150 rpm in a culture medium containing 5% Citrus peel power and 0.8% casitone. As a result of bioconversion, 32.8 mg/g and 21.5 mg/g of naringenin and hesperetin, which were aglycone flavones, were produced respectively. Also in the flavonoid content, it was confirmed that FCP produced 154.8 mg/g while CP produced 33.7 mg/g, thus producing more by approximately 4.6 times. As a result of treating FCP and CP after inducing the oxidative damage for HIT-T15 cell by treating the deoxy-D-ribose with $IC_{50}$ (38 mM) concentration, the surviving rate was recovered to 90% for FCP treatments in the 0.01 mg/mL concentration and for CP treatments in the 0.025 mg/mL concentration. Also in the insulin secretion rate, FCP treatments increased by 206% and CP treatments by 132% when treated in the 0.1 mg/mL concentration. As the bioconverted FCP can inhibit the oxidative damage of HIT-T15 cell in the low concentration, it was considered its usability as the functional material for prevention of the type 2 diabetes.

제주산 만감류 청견의 저장 중 펙틴 및 펙틴분해효소 활성의 변화 (Changes in Pectin and Pectin Degrading Enzymes Activity during Storage of Kiyomi Tangor Produced in Jeju)

  • Kiyomi tangor(Citus unshiu x sinensis) was stored at 3$\^{C}$ and 85% relative humidity, and the changes in firmness, pectin degrading enzymes activity and other physicochemical properties of citrus fruits during storage were investigated. Decay ratio and weight loss during 180 days’ storage were increased gradually to 13.0% and 12.9%, respectively. Firmness of fruits with 2 mm probe was decreased gradually from 808.7 g-force to 406.4 g-force, and moisture of peel and flesh were decreased from 76.5% to from 89.6% to 87.6% during storage, respectively. Exo-polygalacturonase activity of peel after 150 days’ storage were increased gradually to 558.09 units/100g. Pectin methylesterase activity of peel and flesh were increased from 14.7 units/g to 2.3 units/g, and from 9.4 units/ml to 2.7 units/ml at 150days’ storage, respectively. Endo-polygalacturonase activities were not changed notably during storage. Alcohol-insoluble solid(AIS) of peel was not changed notably. During storage of the fruits water soluble pectin(WSP) of peel and flesh were increased from 474.49 mg/100g to 614.29mg/100g, and from 66.91mg/100g to 92.74mg/100g as wet basis, respectively. Hexameta-phosphate soluble pectin(HMP) of peel were decreased from 405.5mg/100g to 270.43mg/100g, hydochloric acid soluble pectin(HSP) of peel was also decreased from 544.02mg/100g to 412.64mg/100g during storage. Total pectin substance(TPS) of peel and flesh were decreased from 1,424.01mg/100g to 1,297.36mg/100g, and from 165.51mg/100g to 171.54mg/100g, respectively. Composition ratio of pectin was in order of WSP > HSP > HMP.

제주산 궁천조생의 특성과 젤리화 식품의 제조 (Physicochemical Properties of Citrus miyakawa wase Produced in Cheju, and Citrus Jam-making)

  • Soluble solids and total carbohydrates of Citrus miyakawa wase harvested middle of November 1993 Topyung-Dong, Seogwipo-si, and Cheju were 10.7 and 8.57%, and carbohydrate was consisted of about 1/2 sucrose, 1/4 glucose and 1/4 fructose, respectively. Acid content of citrus Juice was 1.04%, and citric acid was 74.27% of total organic acids. Fruit weight, peel thickness, soluble solids, pH, hardness and edible part ratio had a good correlation in linear function with increasing fruit size. Total carbohydrate, reducing sugar and vitamin C of citrus jam made on optimum conditions were 65.33%, 27.98%, and 51.40mg/100g , respectively. Microbial growth on the products were not recognized at 3$0^{\circ}C$ for a month. Compared with other related citrus jellying products, the test sample was excellent in appear ance, taste and total preference degree on sensory evaluation.

감귤과피분말 및 건 표고버섯을 첨가한 돈육 소시지의 관능적 특성 (Sensory Characteristics of Pork Sausages with Added Citrus Peel and Dried Lentinus edodes Powders)

  • 감귤과피 및 건 표고버섯을 첨가하지 않은 소시지를 대조군으로, 감귤과피분말 0.5%(C1), 1.0%(C2), 2.0%(C3), 건표고버섯 0.5%(L1), 1.0%(L2), 2.0%(L3) 그리고 감귤과피분말 및 건표고버섯 혼합군 0.5%(CL1), 1.0%(CL2), 2.0%(CL3)를 첨가하여 소시지의 품질 및 관능 특성에 미치는 영향을 살펴보았다. 수분함량은 대조군에 비하여 첨가군에서 유의하게 낮게 나타났으며, 회분 함량은 높게 나타났다. pH와 색도 적색도는 감소하고 황색도는 증가하는 경향을 보였다. 기계적 특성을 이용한 조직감은 유의한 차이를 나타내지 않았다. 소시지 관능특성 중 8개의 특성들이 유의한 차이를 나타냈다. 제1주성분(PC1)과 제2주성분(PC2)의 변동은 58.96%와 23.08%로 총 변동의 82.04%가 설명되었다. 관능적 특성에 따른 제1주성분은 향미 특성인 짠맛, 신맛, 감귤향과 부서짐성, 돼지고기향, 단맛 그리고 부패취 3부분으로 관찰되었다. 제2주성분은 향미와 부패취와 관련이 있는 것으로 나타났다. 주성분분석(PCA)결과 소시지 제조 시 0.5~1% 건 표고버섯 첨가는 단맛과 돼지고기향과 관련되어 있으며, 감귤과 피분말 첨가는 신맛과 짠맛을 만드는 주요한 성분과 연관성이 있는 것으로 평가되었다. 관능적 특성과 기계적 물성 강도 간 부분최소평방회귀분석(PLSR) 수행 결과, 제1주성분(T1)과 제2주성분(T2)이 각각 총 변동의 46.98%와 14.75%를 설명하여 총 변동의 61.73%를 설명되었으며 관능적 특성인 감귤향과 신맛, 짠맛, 색상이 양의 방향으로 높게 부하되어 있고, 감귤과피 분말 2.0%(C3) 및 감귤과피 분말 및 건표고버섯 혼합군 2.0%(CL3) 또한 T1에 대하여 양의 방향으로 부하되어 있었다.

Potentials of Chenpi on Metabolic Syndrome: A Review

  • Objectives: Metabolic Syndrome (MetS) is strongly related with central obesity, hypertriglyceridemia, low high-density lipoprotein-cholesterol (HDL-C), hyperglycemia, and hypertension. This study reviewed the potential of Chenpi in treatment of MetS through amelioration of co-related diseases, such as diabetes mellitus, hyperlipidemia, obesity, hepatic steatosis, and inflammation. Methods: Six electronic databases (Oriental Medicine Advanced Searching Integrated System (OASIS), Korean Traditional Knowledge Portal, Korea Institute of Oriental Medicine (KIOM), Research Information Sharing Service (RISS), PubMed, and Embase) were used to search for in vitro, in vivo, and clinical research that discusses the potential effects of Chenpi (Citrus unshiu Markovich, Citrus reticulata Blanco) on diabetes mellitus, hyperlipidemia, obesity, hepatic steatosis, and inflammation. Results: This review suggests the potential of Chenpi as a candidate for the treatment of metabolic syndrome through improvement of co-related diabetes, hyperlipidemia, obesity, hepatic steatosis, and inflammation. However, comparison of the results of each study was limited by a lack of quantification of the experimental materials.

Chemical profiles and biological activities of essential oil of Citrus hystrix DC. peels

  • Essential oil (EO) was extracted from the peel of Citrus hystrix DC. originating from Tinh Bien, An Giang province (Vietnam), using steam distillation. The study aimed to determine some physicochemical properties of Citrus hystrix peel EO (ChpEO), including the acid value (AV), saponification value (SV), ester value (EV), density, specific gravity, and freezing point. The chemical composition was also analyzed by gas chromatography-mass spectrometry (GC-MS). Compounds like β-pinene (30.19%), D-limonene (22.15%), and sabinene (21.37%), with antioxidant and antibacterial properties, had a relatively high content. The EO was also capable of inhibiting the growth of both Gram-positive and Gram-negative bacteria, including Pseudomonas aeruginosa (ATCC 27853), Staphylococcus aureus (ATCC 25923), Salmonella typhimurium (ATCC 13311), and Bacillus cereus (ATCC 11778) specifically.

The Volatile Composition of Kiyomi Peel Oil (Citrus unshiu Marcov×C. sinensis Osbeck) Cultivated in Korea

  • The volatile composition of Kiyomi peel oil cultivated in Korea was studied by using gas chromatography and gas chromatography-mass spectrometry. The peel oil from the Kiyomi fruit was prepared by using a cold-pressing extraction method. Among the 65 components quantified in Kiyomi oil, 25 terpene hydrocarbons and 40 oxygenated compounds were identified, with peak weight percentages measuring 94.5% and 4.9%, respectively. Limonene was the predominant compound (87.5%), followed by myrcene (2.4%), sabinene (0.9%), $\alpha$-pinene (0.8%), $\beta$-sinensal (0.8%), (Z)-$\beta$-farnesene (0.7%), neryl acetate (0.6%), valencene (0.5%), $\alpha$-farnesene (0.5%), and $\alpha$-sinensal (0.5%). A unique characteristic of the volatile profile of the Kiyomi oil was the proportion of aldehydes (2.7%), which resulted from the relative abundance of $\alpha$- and $\beta$-sinensal. Another unique characteristic of the Korean Kiyomi oil was its relative abundance of $\beta$-sinensal, (Z)-$\beta$-farnesene, neryl acetate, valencene, $\alpha$-sinensal and nootkatone. Valencene and $\alpha$- and $\beta$-sinensal were regarded as the influential components of Korean Kiyomi peel oil.

Effect of Harvesting Season on the 6-Cryptoxanthin in Shiranuhi Mandarin Fruit Cultivated in Jeju Island

  • [ $\beta-Cryptoxanthin$ ] content was determined in Shiranuhi mandarin fruits harvested at monthly intervals from October to February in Jeju Island. Crude carotenoids were extracted from both peel and flesh of Shiranuhi mandarin fruits and analyzed using TLC and HPLC; $\beta-cryptoxanthin$ was indicated the Rr value of 3.2 and retention time of 23 min, respectively. $\beta-Cryptoxanthin$ contents in both peel and flesh were increased gradually as the citrus fruits ripened fully until harvesting season (February). According to the harvesting time, $\beta-cryptoxanthin$ contents in the peel were $0.15\;mg\%\;(October),\;0.28\;mg\%\;(November),\;0.38\;mg\%\;(December),\;1.23\;mg\%\;(January),\;and\;1.71\;mg\%\;(February).$In the flesh, $\beta-cryptoxanthin$ contents were lower than those of peels, having $0.06\;mg\%\;(October),\;0.08\;mg\%\;(November),\;0.19\;mg\%\;(December),\;0.26\;mg\%\;(January),\;and\;0.65\;mg\%\;(February).$ These results demonstrate that $\beta-cryptoxanthin$ in Shiranuhi mandarin fruits accumulated during ripening of the citrus fruits. In particular, the peels had much higher concentrations of $\beta-cryptoxanthin$ and have potential for use as a functional ingredient.

온주밀감의 성숙과 저장 중 펙틴 함량의 변화 (Changes in Pectin of Satsuma Mandarin during Ripening and Storage)

  • Changes in firmness and pectin contents during maturation and sotrage of Stsuma mandarin (Citrus Unshiu Marc. var. miyagawa) were investigated. Firmness of fruits was decreased quickly from 1,176.8g-force to 503.6g-dorce. Satsuma mandarin was stored at 3$^{\circ}C$ and 85%${\pm}$5% relative humidity. Firmness were decreased from 538.9g-force to 336.9g-force during storage. Alcohol-insoluble solid(AIS) of peel and flesh were decreased quickly from 27.04g/100g to 12.30g/100g, and from 2.67g/100g to 1.91g/100g during maturation of fruits. During storage of fruits, AIS of peel was decreased from 14.32g/100g to 12.06g/100g . During maturation of fruits, water soluble pectin (WSP) of peel were increased from 420.82mg/100g to 601.62mg/100g as wet basis. Hexametaphosphate soluble pectin (HMP) was also increased from 450.17mg/100g to 577/53mg/100g. hydrochloricacid soluble pectin (HSP) was decreased from 1938.30 mg/100g to 695.14mg/100g. During storage of fruits, HMP and HSP of peel was decreased from 507.82mg/100g to 695.14mg/100g. During storage of fruits, HMP and HSP of peel was decreased from 527.82mg/100g to 275.47mg/100g , and from 672.28mg/100g to 351.36mg/100g, respectively. WSP of peel was increased from 543.70mg/100g to 584.31mg/100g. Total pectin substance (TPS) of peel was decreased from 2809.79 mg/100g to 1874.29mg/100g during maturation, and from 1723.80mg/100g to 1211.14mg/100g during storage, respectively. Composition ratio of pectin was in order of WSP>HSP>HMP.
