A Study on the Contents of Some Minerals in Vegetable Foods by Neutron Activation Analysis (중성자 방사화 분석법에 의한 식물성 식품의 무기질함량에 관한 연구)

  • The objective of this study was to investigate the contents of some minerals in vegetable foods by a highly sensitive Neutron Activation Analysis. Chinese Chives, Amaranth, Mugwort, Ginger, Garlic, Root of bellflower, Cultured Duduk, Wild Duduk and Cortinellus-edodes were chosen as experimental materials for this study. The contents of potassium, copper, molybdenum, and bromum were 7099.1mg%, 104.8 ppm, 45.4ppm and 40.4ppm in Chinese Chives. Chinese Chives, Amaranth and Mugwort were more abundant with iron, coppr and cobalt other than vegetable foods. The ratio of sodium to potassium for Chinese Chives was 1 to 796, for Mugwort : 1 to 147 and for Garlic : 1 to 148. As the Neutron Activation Analysis Technique was able to detect gold, samarium, bromum, lanthanum and scandium from vegetable foods, this technique is very useful to analyse the infinitestimal elements in foods.

The Long Term Effect of Buchu (Chinese chives) Diet on ROS Formation in the Liver and Skin Tissue of ICR mice (장기간의 부추식이가 ICR 마우스의 간과 피부조직의 활성산소종 생성에 미치는 영향)

  • To investigate the long term effect of buchu (Chinese chives) diet on ROS formation in the liver and stin tissue of ICR mice, one of control, 2% or 5% buchu-added diet was fed to ICR mice for 12 months. Superoxide anion (O2ㆍ), hydrogen peroxide($H_2O$$_2$) and hydroxyl radical (ㆍOH) contents were measured in cytosol, microsome, mitochondria of liver and skin of mice, respectively. Behu diet showed a significant decrease of superoxide anion, hydrogen peroxide and hydroxyl radical contents in liver and skin tissues compared to control diet, and this effect is especially higer at 5% than at 2% buchu diet level. ICR mice showed an age-dependent increase in ROS contents, while the group fed buchu diet decreased its ROS contents significantly and ROS contents of liver appeared to be 2 fold higher than skin. The results of the present study suggest that antioxidative components and sulfur-compounds in buchu diet appear to be responsible for the inhibition of ROS formation in ICR mice.

Effect of Crude Extracts from Allium spp. on Growth of Several Crop Seedling (파속 식물의 조추출물이 몇가지 작물의 유묘생육에 미치는 영향)

  • This study was conducted to find out the effects of crude extracts from welsh onion, onion, chinese chives and garlic on the seedling growth of chrysanthemum, lettuce, rice, radish, chinese cabbage, cucumber and oriental melon. The crude extracts from Allium spp. inhibited the growth of chrysanthemum and lettuceseedlings at low concentration, the effect increased as the concentration grew higher, and especially in lettuce, the radicle growth was inhibited greater than the hypocotyl growth.The root extracts from welsh onion, chinese chives, and stem-leaf extracts from welsh onion, chinese chives and garlic significantly promoted the root growth of rice seedlings at 300∼700ppm and at 500∼1,000ppm, respectively, and the leaf sheath was elongated at low concentration of all extracts. The stem-leaf extracts from garlic and onion promoted the root and hypocotyl growth of chinese cabbage up to 2,000ppm or 3,000ppm. Root extracts from all Allium spp. promoted the elongation of chinese cabbage root up to 300∼700ppm, but they didn't influence its hypocotyl elongation. At low concentration of onion, garlic and chinese chives extracts, the growth of radish seedlings was highly promoted. The promotive effect, however, declined as the concentration increased. Only, extracts of chinese chives promoted the growth of radish seedling up to 5,000ppm. The stem-leaf extracts from onion and garlic promoted hypocotyl growth in pepper, up to 5,000ppm, but had little effect on other treatments. All of the extracts markedly promoted both root(main and lateral root) and hypocotyl growth in cucumber seedlings. A higher degree of promotion was made in the cucumber lateral root by onion and garlic extracts. The seedling growth of oriental melon was slightly increased by low concentration, but high concentration inhibited the root and hypocotyl growth.

A Study on the Sensory Optimization of Home made Pasta with the addition of Chives (차이브를 첨가한 홈 메이드 파스타 제조의 최적화)

  • To determine the optimum mixing conditions of home made pasta with chives, samples were prepared with various compounding ratios of Durum wheat semolina (99, 198 and 297g), chive paste (27, 45 and 63g) and egg (72, 81 and 90g) using a central composite design, and sensory evaluations were performed and considered using a response surface methodology. The optimum mixing rates of Durum wheat semolina, chive paste and egg were 191.10, 45.53 and 80.98g for color, 149.00, 47.00 and 73.24g for flavor, 185.06, 43.99 and 81.18g for elasticity, and 188.69, 42.32 and 82.36g for overall quality. These results show that Chive paste effect the color and flavor, and Durum wheat semolina and egg effect the elasticity and overall quality.

Phylogenic Relationship of Allium Species in Subgenus Rhizirideum by PCR DNA Fingerprint

  • Allium is one of the largest genera, which has more than 700 species. PCR by URP (universal rice primer) primers was carried out to get phylogenetic information on 26 species, 62 accessions of subgenus Rhizirideum. The accessions were divided into seven groups at 0.76 similarity level. A. tuberosum (Chinese chives) and A. ramosum represented high similarity of 0.91. A. montanum, A. nutans, A. senescens, A. libani, A. odorum, A. austrosibiricum, and A. narcissiflorium grouped at 0.80 similarity. Some of the wild species, such as A. prostratum, A. polyrhizum, A. odorum, and A. mongolicum, showed different band patterns according to polyploidy, occurrence of B-chromosome, collection site, and origin.

Simultaneous Molecular Detection of Cryptosporidium and Cyclospora from Raw Vegetables in Korea

  • Cryptosporidium and Cyclospora are well-known coccidian protozoa that can cause waterborne and food-borne diarrheal illnesses. There have been a few reports regarding contamination in different vegetables with Cryptosporidium, but no data are available regarding the sources of Cyclospora infections in Korea. In the present study, we collected 6 kinds of vegetables (perilla leaves, winter-grown cabbages, chives, sprouts, blueberries, and cherry tomatoes) from July 2014 to June 2015, and investigated contamination by these 2 protozoa using multiplex quantitative real-time PCR. Among 404 vegetables, Cryptosporidium and Cyclospora were detected in 31 (7.7%) and 5 (1.2%) samples, respectively. In addition, Cryptosporidium was isolated from all 6 kinds of vegetables, whereas Cyclospora was detected in 4 kinds of vegetables (except perilla leaves and chives). Cryptosporidium (17.8%) and Cyclospora (2.9%) had the highest detection rates in chives and winter-grown cabbages, respectively. Cryptosporidium was detected all year long; however, Cyclospora was detected only from October to January. In 2 samples (sprout and blueberry), both Cryptosporidium and Cyclospora were detected. Further investigations using TaqI restriction enzyme fragmentation and nested PCR confirmed Cryptosporidium parvum and Cyclospora cayetanensis, respectively. In conclusion, we detected C. cayetanensis in vegetables for the first time in Korea. This suggests that screening should be employed to prevent these protozoal infections in Korea.

Evaluation of Susceptibility to 10 kinds of Acaricides Against Two-Spotted Spider Mites (Tetranychus urticae) in Hooker Chives (삼채에 발생하는 점박이응애에 대한 10종의 살비제 감수성 평가)

  • The susceptibility and control efficacy evaluated for 10 kinds of commercialized acaricides, to obtain basic data for the chemical control strategy of Two-spotted spider mite (Tetranychus urticae) in Hooker chives. The susceptibility evaluation of T. urticae female adults, Abamectin EC, Pyflubumide SC, Cyenopyrafen SC, and Acequinocyl SC showed 100% mortality, and Pyflubumide SC, Acequinocyl SC, and Etoxazole SC showed zero hatching rate, i.e. 100% mortality of eggs. As a result of evaluating the field test for Abamectin EC, Pyflubumide SC, Cyenopyrafen SC, Cyflumetofen SC, and Acequinocyl SC, which had excellent mortality in the laboratory conditions, all treatment plots showed more than 90.3% control efficiency on after 7 days.

Changes of Chlorophyll and SOD-like Activities of Chinese Chives Dehydrated at Different Heat Treatments (부추의 건조 온도 조건별 클로로필, Superoxide Dismutase 유사활성의 변화)

  • Allium tuberosum Rotter (Liliaceae, Chinese chives) is a perennial herb of which leaves are used for food. This study investigated the effect of pretreatment on quality of dehydrated Chinese chives. Chinese chives was blanched at $80^{\circ}C$ for 20 sec, followed by drying at $70^{\circ}C$, $80^{\circ}C$, $100^{\circ}C$, or drying at $100^{\circ}C$ for 30 min and subsequent drying at $70^{\circ}C$, or $100^{\circ}C$ for 60 min and subsequent drying at $70^{\circ}C$. Optimum drying temperature and time was $100^{\circ}C$ for 30 min and subsequent drying at $70^{\circ}C$, or $100^{\circ}C$ for 60 min and subsequent drying at $70^{\circ}C$. These conditions were shortened time for dehydration and showed smaller decrease than others in Hunter color L, a, b. Dehydrated Chinese chives showed a constant decrease in greenness with storage, probably due to destruction of chlorophyll by light. In the measurement of Hunter color L, a, b, these conditions showed smaller decrease than others in Hunter color for 15 week storage. Chlorophyll content and SOD (superoxide dismutase)-like activity in that condition was higher than others. It was assumed that a phenolic compound that forms its thermostable activity. The fitness of drying models was conducted in order to explain reducing chlorophyll loss and SOD (superoxide dismutase)-like activity loss. Based upon the chlorophyll content, SOD-like activity, and retention of green color of the vegetable, optimum drying conditions was $100^{\circ}C$ for 30 min followed by $100^{\circ}C$ for 30 min and subsequent drying at $70^{\circ}C$, or $100^{\circ}C$ for 60 min and subsequent drying at $70^{\circ}C$.

Evaluation of Antioxidant, Anti-Inflammatory, Antithrombotic, and Antiobesity Activities in Cultured Edible Plants to Increase Farm Income (농가소득 창출을 위한 식용식물의 항산화, 항염, 항혈전 및 항비만 효과 탐색)

  • We studied the antioxidant, the anti-inflammatory, antithrombotic, and antiobesity activities of seven different kinds of edible plants. 2,2-diphenyl-1-picrylhydrazyl (DPPH) and ABTS radical scavenging activities were determined as a measurement of antioxidant activity. NO production inhibition by the macrophage cell line (Raw 264.7) treated with lipopolysaccharide (LPS) was carried out to assess anti-inflammatory activity. Thrombin inhibitory activity was measured for its antithrombotic function and inhibition of 3T3-L1 cell differentiation was evaluated as a measurement of antiobesity activity. Total phenolic components and total flavonoid contents were measured to determine functional materials in medicinal plants. Common sage, Japanese lady bell, and hairy agrimony showed high antioxidant activity ($IC_{50}$) of less than $100{\mu}g/mL$. All samples used in this study showed anti-inflammatory activity. Common sage, hairy agrimony, and hooker chives showed antithrombotic effects. Hairy agrimony showed the highest antithrombotic effect (98.1%). Common sage, Japanese lady belly, hairy agrimony, and hooker chives showed reduced 3T3-L1 cell differentiation and hooker chives strongly inhibited lipid accumulation in the cells compared to other medicinal plants. Common sage and hairy agrimony contained more than 1 mg GAE/g of phenolic compounds and more than 1 mg CE/g of flavonoids. Functional activities were different by plant part and extraction method from each sample. These results suggest that common sage, Japanese lady belly, hairy agrimony, and hooker chives may be used as healthy food sources with antioxidant, anti-inflammatory, antithrombotic, and antiobesity activities, and appropriate extracting methods from each plant need to be developed.
