The applicability of chitosan, a biodegradable natural polymer, as the coating material to prevent the dispersal of the spores of the apple white rot agent Botryosphaeria dothidea, was investigated. The physical properties of mixed chitosan/polyvinyl alcohol(PVA) film showed the increased physical properties for film formation, such as tensil strength, elongation, and viscosity, compared to either chitosan or PVA film. The FT-IR spectra of chitosan/PVA film indicated that the film was formed by simple blending not by any new synthetic bond. The chitosan and chitosan/PVA film showed effective antifungal activity on B. dothidea. The formed films were well decomposed by ASTM strains used for biodegradability test, on the other hand, the PVA film could not be decomposed by above standard strains. The field test at apple orchard showed that the dispersal of B. dothidea spores could be effectively reduced by coated film, especially by chitosan/PVA film. The spore dispersal was reduced upto 97.0% by 1.0% chitosan/5.0% PVA film during 4 months.

The tensile properties, acetic acid solubility and degree of swelling in distilled water of cellulose/chitosan and sericin/chitosan film blended by mixing chitosan acetic acid solution with cellulose solution or sericin solution were investigated and the effect of crosslinking agent on solubility and degree of swelling were also considered. From the experimental results, the model of intermolecular bond is proposed. Tensile modulus of 100% cellulose film is high but the tensile strength and elongation are low. The elongation of 100% chitosan film is high but tensile modulus and strength is low. But it is possible to make film having same or higher tensile strength and modulus compared to that of 100% cellulose film by mixing cellulose and chitosan or by mixing sericin and chitosan. Chitosan is solved in 5vol % acetic acid solution but cellulose and sericin are not solved. Degree of swelling of chitosan in distilled water is higher than that of cellulose and sericin. Lower than 40wt% chitosan content, the solubility of cellulose/chitosan film in 5vol % acetic acid solution shows lower expected value but higher in case of sericin/chitosan film.

Chitin was isolated from red snow crab (Chinonecetes japonicus) and deacetylated by boiling alkaline solution to produce chitosan. The physical properties of chitosan solution and its film properties was examined, As the molecular weights of chitosan was increased from 297Kpa to 319Kpa, the tensile strength, degree of elongation and water permeability of chitosan film were increased. As the degree of deacetylation of chitosan was increased, the tensile strength, the degree of elongation and water permeability of chitosan film were increased. As the concentration of chitosan solution was increased, the degree of elongation and water permeability of film were increased, whereas the tensile strength of film was decreased, As the pH of chitosan solution was increased, the tensile strength and water permeability of film were decreased, whereas the degree of elongation of film was increased.
The antimicrobial activity of PHB/chitosan films and the quality of white bread packaged with the films were investigated. Chitosan film showed the highest antimicrobial activity and PHB(L) film also showed high antimicrobial activity against Fusarium solani KCTC 6636 and Penicillium citreonigrum KCTC 6927. White bread packaged with chitosan film had good moisture retention. $L^*\;and\;b^*$ of white bread increased but $a^*$ did little change during storage regardless of the film kind. The TBA values of white bread packaged with chitosan or PHB(L) film slowly increased during storage. The springiness of white bread packaged with PHB(M), PHB(L) and chitosan film was high. The colony forming units of microorganisms for white bread packaged with chitosan film were low during storage. Therefore, PHB(M), PHB(L) and chitosan films were superior to PHB(H) and PHB films as package material for white bread.
Chitin was isolated from the residue of enzymatically hydrolyzed crab, Portunus trituberculatus, and further deacetylated by alkaline boiling to make chitosan. The physical properties of chitosan solution and its film forming properties were examined. The functional characteristics of chitosan film were compared to those of cellophane, polyvinyl chloride (PVC) and polyethylene (PE) films. The proximate chemical composition of chitin obtained from crab residue was 6.95% nitrogen, 0.3% crude ash and 4.57% moisture and the product yield was 12.8% based on a dry material basis. The degree of deacetylation of chitosan was $79{\sim}92%$ and $70{\sim}86%$ as determined by IR spectroscopy, and $70{\sim}86%$ as determined by colloid titration method each respectively. The chitosan at 1% acetic acid solution showed distinct pseudoplastic flow behavior. The flow behavior index and consistency index were 0.8886, 0.2084 $MPa{\cdot}s^n$ for 0.4% solution and 0.8498, 0.6190 $MPa{\cdot}s^n$ for 0.8% solution, respectively. The chitosan film had the highest tensile strength $(888 kg/cm^2)$ and water permeability $(100\;g/m^2{\cdot}24\;hrs)$ among the tested films, but relatively low elongation property (49%). It showed the similar tear strength (90kg/cm) and light permeability (87.7%) to other films tested in spite of the relatively high haze value (12.5%). As the thickness of chitosan film increased from 0.025 to 0.050 mm, the tensile strength of film decreased distictively, and the degree of elongation, tear strength, and water permeability of film also decreased slightly. Whereas the light permeability of film did not change and the haziness of film slightly increased by the increase of film thickness.
Wheat gluten-chitosan composite film (WGCCF) can prevent moisture migration and enhance the antimicrobial properties of gluten in intermediate-moisture foods like sandwiches. To mimic the structure of actual sandwich-type products we developed multi-layer food models, where moisture content and water activity differ. Water activity gradients direct moisture migration and therefore determine product characteristics and product stability. A 10% wheat gluten film-forming solution was mixed with chitosan film-forming solution (0-3%, w/w) and evaporated to generate WGCCF. Addition of 3% chitosan enhanced the mechanical properties of the film composite, lowered its water vapor permeability, and improved its ability to protect against both, Streptococcus faecalis and Escherichia coli, in a 24 hr sandwich test (reduction of 1.3 and 2.7 log cycles, respectively, compared to controls). Best barrier and antimicrobial performance was found for 3% chitosan WGCCF at pH 5.1. Film of this type may find application as barrier film for intermediate-moisture foods.
In order to utilize the processing wastes of squid, chitosan was prepared by intermittent deacetylation treatment of ${\beta}-chitin$ richly contained in the pen of squid, and then their characteristics of chitosan and N-acetylchitosan film were studied. The acetylation time of N-acetylchitosan film-1 (N-ACE-1) manufactured from chitosan solution by treating with acetic anhydride was about 12 hrs. In SEM photomicrographs, the surface of chitosan film was regularly arranged netlike, and that of N-acetylchitosan film-2 (N-ACE-2) was rough like snowflake and larger than chitosan film. The chitosan film (thickness 0.02 mm, time 60 min) had the highest tensile strength ($1,240 kg/cm^2$) and elongation ($58.25{\%}$), N-ACP-1 (thickness 0.02 mm, time 60 min) had the highest water permeability ($539 g/m^2{\cdot}24 hrs$), oxygen permeability ($20,000 cm^3/m^2{\cdot}24 hrs{\cdot}atm$) and water uptake ($350{\%}$) among the tested films.
Chitosan-based nanocomposite films were prepared using a solution intercalation method incorporating varying amounts of organically modified montmorillonite (Cloisite 30B) from 0 to 30 wt%. The nanocomposite films prepared were optically clear despite a slight decrease in the transmittance due to the spatial distribution of nanoclay. X-ray diffraction patterns indicated that a certain degree of intercalation or exfoliation formed when the amount of clay in the film was low and that microscale tactoids formed when the clay content in the sample was high (more than 10 wt%). The tensile strength (TS) of the chitosan film increased when the clay was incorporated up to 10 wt% and then decreased with further increases in the clay content of the film. The elongation at break (E) increased slightly upon the addition of low levels of clay up to 5 wt% and then decreased with further increases in the amount of the clay in the film. The water vapor permeability (WVP) decreased exponentially with increasing clay content. The water solubility (WS) and swelling ratio (SR) of the nanocomposite films decreased slightly, indicating that the water resistance of the chitosan film increased due to the incorporation of the nanoclay.

Polyelectrolyte complex films were prepared with two compounds, chitosan and poly(ethylene glycol)-monosuccinate, using a casting in order to synthesize a polyelectrolyte complex film with various mole ratios of chitosan and poly(ethylene glycol)-monosuccinate. The solution properties of isolated PEC were investigated for the effects of FTIR, pH value, Brookfield viscosity and cell viability assay using MTT staining. The PEC films were evaluated for mechanical properties by typical stress-strain curve, far thermal properties by DSC and TGA and for surface morphology Properties by SEM. Furthermore, the surface resistance, moisture regain and water content of the films were characterized. The solution properties were affected by several factors including the chitosan content in the PEC, the mixing ratio of PEG and chitosan, and pH. Several PEC in acidic conditions exhibited film formation under appropriate conditions of mixing ratio and chitosan concentration in the mixing process. These PEC films were found to have sufficiently flexible and stable properties due to their hydrophilic structure, which was farmed by the oppositely charged interaction between PEG-MS and chitosan matrix. The results showed the potential applicability of chitosan and poly(ethylene glycol)-monosuccinate films as a biocompatible polymer.

Blend films of poly(3-hydroxybutyric acid) (PHB) with chitosan were prepared, and their Physical properties and crystallization were investigated. The degree of crystallinity of PHB/chitosan films by X-ray diffraction decreased with increasing chitosan concentration. In the fourier-transformed infrared spectra, carbonyl peak of PHB became lower with increasing the amount of chitosan. The addition of chitosan to PHB film decreased thermal stability and crystallinity of the blend films. The granular sizes of the films were reduced with the addition of chitosan to the film in the microstructural observation by a scanning electron microscope. Mechanical properties, including tensile strength and percent elongation, of the blend films increased with increasing chitosan ratio in the films. For color of the films, L and b values generally decreased with increasing chitosan ratio, but transparency of the films increased.
