  • The purpose of this study was to investigate changes in dietary life, lifestyle factors, and stress status of Chinese students who came to study abroad to South Korea. A total of 143 Chinese students were recruited from Seoul Women's University and Wonkwang University in 2013. We used SPSS 20 for statistical analyses in this study. The mean length of residence was 2.9 years for Chinese students. Most subjects aged 20~29 years immigrated to South Korea to obtain an academic degree (bachelor, master, or doctorate). We found a significant decrease in the frequency of eating fruits and vegetables among Chinese students in South Korea after migration. Further, there was a significant increase in fast food consumption and frequency of late-night snacking and eating out. In addition, their preferred beverage changed from soft drink or tea to coffee after migration. Stress level significantly (P<0.05) increased in male students compared to female students. The high stress group watched more TV when eating compared to the low stress group. In addition, there were more students who perceived their health status as bad in the high stress group. Overall results give us useful information for targeting the most vulnerable subjects and planning nutrition intervention programs.

  • This study was analyzed the syllable structure of Korean and Chinese using subjective sound similarity judgement tasks with both Korean-chinese and Chinese students in Shenyang, China. 86 college students were administered with the tasks which lasted about 20 min. in a small group setting. Both Korean-chinese and Chinese students showed the sensitivity for the CV sub-syllabic unit and the CV+C was the building block for phonetic representation for both languages. This syllabic similarity of Korean and Chinese may be a help for Korean-chinese to become horizontal bilinguals. Further studies are needed to specify the mechanism that will explain the syllabic perception of CV+C in both Korean and Chinese which was different from that of C+VC structure dominance in English.

For the research method, we examined the differences in clothes preference and fit between Korean and Chinese students, and then the corresponding differences in body image and body satisfaction. The result showed significant differences in the categories of skirt length, pants length, upper garment fit, and lower garment fit. Korean students preferred slim fit clothes, while their counterparts preferred natural fits. A comparison of body image between Korean and Chinese female students showed that the Korean students had lower body satisfaction levels, and viewed themselves as fat even though they were slimmer than their counterparts. The conclusion of the analysis was that compared to Korean students the Chinese students pursued a more comfortable and casual style, preferring unique and diverse designs instead of simply following a fashion trend.

  • Acculturation may manifest dietary behavioral changes of students from overseas. This study investigated the dietary attitudes, food intakes, and dietary behaviors of 121 Chinese college students residing in Busan, Korea. Using a focus group interview and structured survey, subjects were divided into two groups (SG, LG) based on their self-rated acculturation status. The SG (n=70) and LG (n=51) groups consisted of participants that had resided in Korea for shorter than 18 months versus 18 months or longer, respectively. The SG group was more likely to point out the taste of Korean foods as being too sweet, salty, and spicy but less greasy. A food frequency questionnaire was developed to assess normal intake of Korean ethnic, Chinese ethnic, and common foods. The LG group consumed more Korean foods such as rice cake, dried laver, and radish kimchi but less Chinese foods such as bread glue ball and kidney bean. The LG group consumed more salty and fatty foods and Korean liquors, whereas the SG group consumed more fruits and noodles. Based on the exploratory factor analysis, the SG group showed significantly higher scores for "dietary regularity" but lower scores for "indulgence of unhealthful food" factors. In summation, the LG group became more accustomed to Korean foods and adopted less desirable dietary behaviors compared with the SG group. Findings suggest that the residential period of Chinese college students may be associated with their self-rated acculturation status and food acculturation process, and therefore tailored nutrition education programs are needed to support Chinese students' healthier dietary behaviors and food acculturation process.
