신선편의화된 김치제조용 배추의 품질 유지 (Quality Maintenance of Minimally Processed Chinese Cabbage for Kimchi Preparation)

  • The objective of this study was to investigate the effectiveness of preservatives for extending storage life and maintaining the quality of minimally processed Chinese cabbage. Cut Chinese cabbage was treated with either 1% CaCl2, 1% NaCl, 3% sucrose, 1% Ca-lactate, 1% vitamin C, 0.05% chitosan+1% vitamin C, 0.1% Sporix+1% vitamin C or hot water(6$0^{\circ}C$) and then packed with polyethylene film(60${\mu}{\textrm}{m}$) and stored at either 2$0^{\circ}C$ or 4$^{\circ}C$. To evaluate biochemical changes and quality of minimally processed Chinese cabbage, the samples were tested to determine the amount of vitamen C, titratable acidity, organic acid and fiber contents. Changes in color were also examined. The quality of kimchi prepared form minimally processed cabbage was affected by the treatments. REsults indicate that the minimally processed Chinese cabbage treated with either 1% CaCl2 at 2$0^{\circ}C$ and 4$^{\circ}C$ or 1% NaCl at 2$0^{\circ}C$ minimized biochemical changes in plant tissue and those treatments were most effective in maintaining product quality. The cabbage treated with 1% vitamin C or 1% NaCl at 4$^{\circ}C$ resulted in kimchi with improved color, texture, flavor and the best overall acceptability, as determined by a sensory test.

  • 농업은 타 산업 대비 기상환경에 큰 영향을 받는 산업이다. 기상 상태는 수시로 변화하며, 지역에 따라 서로 다른 특성을 보인다. 또한 이러한 지역적 특성은 그 지역의 농산물의 재배환경에도 영향을 주게 된다. 이러한 특성 때문에 기상이 농업에 미치는 영향에 대해서는 그동안 많은 연구가 이루어져 왔다. 그러나 대부분의 연구가 농작물의 생산에만 초점이 맞춰져, 농작물이 생산에서 유통과정에서 기상요인이 미치는 영향을 통합적으로 살펴본 연구는 매우 부족한 실정이다. 본 연구에서는 대표적인 농작물인 배추를 중심으로, 기상요인이 농산물 유통에 미치는 영향을 분석하였다. 배추는 우리 식탁에서 빼놓을 수 없는 식재료이면서, 기상 변화에 영향을 많이 받는 품목이다. 기상이변으로 배추의 가격이 폭등하게 되면 서민가계에 직접적으로 영향을 받게 된다. 이러한 관점에서 생산과 유통단계별로 기상요인이 배추에 어떠한 영향을 미치는지를 분석하였다. 본 연구에서는 배추의 재배유형별 거래량과 거래가격에 대한 실거래 데이터와 재배시기와 판매지역에 따른 기상요인에 대한 자료를 수집하여, 배추의 도매시장 거래량과 거래가격에 영향을 미치는 기상요인을 파악하고자 하였다. 연구 결과 배추의 생산지 기상요인보다 판매지역 기상요인의 영향이 배추의 거래량과 거래가격에 상대적으로 더 큰 영향을 미치는 것으로 확인되었다. 본 연구의 결과를 바탕으로, 향후 기상요인을 고려한 출하시기와 반입량에 대한 정책적 가이드라인을 제시하여 농산물 수급에 대한 선제적이고 체계적인 대응체제가 구축된다면, 기상변화에 민감한 농산물의 가격안정에 기여할 수 있을 것으로 기대된다.

배추 부산물의 식이섬유를 첨가한 글루텐프리 튀김 프리믹스의 품질특성 (Quality Characteristics of Gluten-free Frying Pre-mix with Insoluble Dietary Fiber Powder from Chinese Cabbage By-product)

  • Purpose: The purpose of this study was to determine the quality characteristics of gluten-free frying pre-mix with insoluble dietary fiber powder (IDFP) from Chinese cabbage by-product. Methods: Frying powder mix was prepared with 0.5, 1.0, 1.5 or 2.0% IDFP. Fried powder mix only whit brown rice powder was used as a control. Spreadability, pick-up ratio and color of batter, texture, moisture and oil contents, oil absorption and sensory evaluation of fried sweet potato were determined. Results: L and a-values of batter decreased with increasing amount of IDFP, whereas b-value increased with IDFP addition. Hardness and crispiness of fried sweet potato increased with IDFP addition until 1.5%. Moisture content of fried sweet potato increased with higher IDFP addition whereas oil content and oil absorption decreased with increasing amount of IDFP. Sensory evaluation of fried sweet potato showed the best results in the 0.5% of IDFP addition group. Conclusion: Overall preference of IDFP samples was significantly higher than that of control. Based on the study, the optimal amount of IDFP for gluten-free fried powder mix was determined to be 0.5-1.5%.

구연산과 에탄올 세척에 의한 배춧잎의 미생물 저감화 (Microbial Reduction in Kimchi Cabbage Leaves by Washing with Citric Acid and Ethanol)

  • 배추즙을 유산균 배양 배지로 사용하기 위하여 배춧잎을 구연산 3%, 에탄올 7% 혼합용액으로 10분간 교반하여 세척하고 3분간 탈수하여 착즙한 결과, 세척수율은 80.82%, 착즙수율은 79.32%로 전체수율이 64.11% 이었고, 배추즙의 일반세균수가 3.69 log CFU/g으로 2.84 log CFU/g 감소하였고 유산균수가 2.01 log CFU/g으로 2.43 log CFU/g 낮아졌으며, 염도가 0.26%였고, pH가 2.98로 변화하여 상온에서 8일간 보관하면서 pH와 미생물수의 변화가 유의적이지 않아서 유산균 배양용 배지로 적합할 것으로 보인다. 또한 배춧잎은 구연산-에탄올 용액으로 세척하는 것이 구연산-에탄올-소금 용액으로 세척하는 것보다 수율과 미생물 감균효과가 더 높았다.

배추 첨가 청국장의 제조 및 품질특성 (Fermentation and Quality Characteristics of Cheonggukjang with Chinese Cabbage)

  • 김치 제조과정 중 발생되는 배추 부산물의 활용방안을 모색하기 위해 청국장의 제조시 배추를 첨가하여 배추 혼합 청국장의 발효 및 품질 특성을 비교 검토하였다. 배추 첨가량을 달리하여 10%(A10), 20%(A20) 혼합하여 제조한 청국장의 발효 및 품질특성을 조사한 결과, 배추 첨가 청국장의 pH는 발효 전 기간 동안 대조구보다 낮았으며, 배추 첨가량에 따라서는 큰 변화가 없었다. 청국장의 발효 후 총균수는 8.65~9.11 log CFU/mL이었으며, 유산균수는 A10, A20이 각각 5.62 log CFU/mL와 5.87 log CFU/mL이었으며, 대조구는 발효 전 기간 동안 유산균이 검출 되지 않았다. 배추 혼합 청국장의 아미노태 질소량과 점질물량은 발효 전 기간 동안 대조구보다 낮았다. 총 폴리페놀 함량은 발효 후 모든 군이 증가하였으며, A10의 증가량이 가장 우수하였다. DPPH radical 소거능은 발효 후 A10이 대조구와 A20보다 높은 활성을 나타내었다. 관능검사 결과는 A10이 맛, 색상, 종합적 기호도에서 가장 우수하였다.

A research on the introducing the waterproof corrugated cardboard box for the efficient shipment of chinese cabbages and radishes: Focusing on Garak-dong wholesale market as the center

  • It is possible to use pallet for forwarding as chinese cabbages and radishes are general large-scale trading items at the agricultural wholesale market though, however, most of these are forwarded as it have packed in net bags or in P·E bags. Thus, it is still hard for palletizing. The type of packing the product in the net bag makes it difficult for palletizing. It is not a stable shape enough and easily collapsed for pallet loading. Because of this collapsibility, the corrugated cardboard box is being used to enhance forwarding efficiency, but the existing corrugated cardboard box could be crushed easily by moist what is from the agricultural product's property and it also could be squashed by the mass of the loaded box layers on itself. In contrary, the functional waterproof corrugated cardboard box is not collapsed through palletizing and it is efficient for product management with it's ventilation function in respond to pre-cooling effect. Furthermore, because it has various functional shapes as the open type, the partition type and so on, it is effective for maintaining freshness of the product and standardizing the distribution of agricultural product. It is well-known that it is possible to introduce this box to cargo-works of agricultural product. Consequently, the recognition of main distributors about the pallet distribution of the chinese cabbage and the radish was apprehended in this study for activating mechanization of loading and unloading. The survey was conducted to the main distributors such as the forwarder, the auction dealer and the commission merchant with Garak-dong wholesale market as the center. The appropriate packing materials and problems of the existing method for loading and unloading were derived through the survey. Especially, it was focused on analyzing the difference of recognition between the subject groups for the way of using waterproof cardboard corrugated box to deal with the difficult product for packing in normal corrugated box because of the box's absorption of moist from the agricultural product like a chinese cabbage and a radish. Total In the cases of the forwarders and the commission merchants, the net was highly responded as 45%, 74% from each groups for the best packing material for mechanization of distribution and the waterproof corrugated cardboard box was responded as 20%, 22% from each groups as much preferable than multi-stage wooden box. However, for the radish, the waterproof corrugated cardboard box was the best material as 56%, and the auction trader group supported it for 80%. So, the using the waterproof corrugated cardboard box for mechanization of distribution was negative for the chinese cabbage, but it was positive for the radish. The average was 2.42, the standard deviation was 1.24. The negative response(about 55%) was prevailing more than positive response(about 23%). It could be analyzed that even there was the positive recognition for using the waterproof corrugated cardboard box for the radish though the preference for low price of net bag in the chinese cabbage forwarding procedure. Still now, it seems that is a burden for using the waterproof corrugated cardboard box with high price. In the analysis on the recognition differences about using the waterproof corrugated cardboard box for the chinese cabbages and the radish between the forwarders and the commission merchants, generally the negative recognition was prevailing, but the forwarders(2.696) were more positive for using the waterproof corrugated cardboard box than the commission merchants(2.145).

무, 배추 및 고추종자의 분쟁사례연구 (The Study on the Disputes Originated from the Seeds of Radish, Chinese Cabage, and Pepper)

  • '농산종묘법'하에서 1968년부터 1970년 사이에 발생한 채소 종자분쟁은 177건 이었다. 이중 발아불량에 대한 종자분쟁은 46건(26%)으로 가장 많았으며 불량종자는 43건(24.3%), 수입종자에 대한 분쟁은 42건(23.7%) 이형주에 대한 분쟁은 27건(15.6%) 순이었다.'종묘관리법'하에서 모든 채소로부터 발생한 종자분쟁은 1976년부터 1995년 사이에 175건 이었는데 무가 53건(30%)으로 비교적 많았으며 배추 19건(11%), 고추 17건(10%) 순이었다. 무에서 발생한 종자분쟁의 유형은 추대(36%), 파종기불이행(21%), 순도불량(19%) 등이었으며 배추는 미량원소 결핍(27%), 발아불량(21%), 결구불량(16%), 병해(16%) 등이었고 고추는 착과불량(6%), 기형과발생(5%), 병해(3%) 등이었다.

Unusual Orientation of cDNAs Found in a cDNA Library

  • Many cloning vectors in which cDNAs can be inserted to the sense orientation have been developed. Uni-ZAP XR vector (Stratagene) should contain clones that are oriented to sense direction with respect to T3 RNA polymerase primer. Unexpectedly, large portions of cDNAs in Chinese cabbage cDNA library showed unusual insertions, antisense orientation and a hybrid of two different clones. Using two clones, 4H03 and 53-B10, derived from different cDNA libraries, we proposed and demonstrated the possibility of unusual-construct formation by in vitro translation and northern blot analysis. The 4H03 clone was inserted with inverse direction, and its transcript and translation product could be produced by T7 RNA polymerase, indicating that this clone is definitely inserted into inverse orientation. The 53-B10 that contains two independent genes was turned out to be a hybrid in which two genes are inserted to opposite direction each other. All unusual constructs might be due to the presence of small fragments of DNA, like adapter. However, the mechanism underlined the formation of unusual constructs is still remain to be solved.

김치식빵의 제조와 품질에 관한 연구 (Studies on Preparation and Quality of Kimchi-Bread)

  • This study was conducted to investigate the effect of homogenized kimchi product (HKP) on dough characteristics and quality of bread. Fermented homogenized Chinese cabbage kimchi product was added 0.10, 20 and 30% to wheat flour. The pH of dough decreased with an increase in the amounts of HKP, which showed at PH 4.9 for the dough added 30% HKP. Fermentation time of the dough was reduced as much as 9~23 minutes as compared with the control products. Loaf volume index of the bread prepared by adding 10 ~30% HKP increased also by 12.7 ~ 19.0%. Hardness, cohesiveness, springiness and gumminess of the bread added with 30% HKP were lower than those of the control. The gas forming cell of the bread added with 30% HKP were good and regular. Crust and internal color of the bread with more HKP had tendency to redness. Sensory quality of the kimchi-bread estimated by shape, flavor and overall quality was better than that of control product, especially the kimchi-bread qualify at addition of 30% HKP was best.

유기성 자원과 혼합유기질비료 혼합물의 특성 및 처리 후 엽채류의 생육 효과 (Physicochemical Properties of Mixtures with Mixed Organic Fertilizer and Various Organic Sources and Their Influences on Growth of Two Leaf Vegetables)

  • 본 연구는 유기성 자원 중 가축분퇴비(LMC), 가공계분(CPM), 음식물류폐기물건조분말(FWP) 및 아미노산발효부산액(ABF)등과 혼합유기질비료(MOF)의 혼합물의 이화학적 특성의 변화와 작물에 대한 생육을 조사하였다. LMC, FWP 및 MOF의 혼합물(MLF)의 질소, 인산 및 칼륨의 함량은 각각 3.6~3.9%, 2.1~2.2% 및 1.3~1.4%의 범위를 나타내었다. MLF3 처리구(60% MOF + 10% LMC + 30% FWP)는 대조구(MOF)보다 약 29% 상추의 건물중이 증가하였다. CPM, FWP, ABF 및 MOF의 혼합물인 MCFA의 질소, 인산, 칼륨의 함량은 각각 4.5~4.7%, 1.7~1.9% 및 1.3~1.4%의 범위를 나타내었다. MCFA를 상추와 배추에 처리하였을 경우 MOF와 통계적으로 유의적인 차이를 나타내지 않았다. 이러한 결과는 유기성 자원과 혼합유기질비료의 혼합물인 MLFs와 MCFAs의 시비는 상추와 배추 재배에서 혼합유기질비료(MOF)와 유사한 작물생육특성을 나타내어 LMC와 ABF는 유기질비료의 원료로 가능성을 나타내었다.
