Quality Characteristics of Sun-dried Salt and added with Cheongyang Hot Pepper (Capsicum annuum L.) Juice (청양고추 착즙액을 첨가한 천일염의 품질특성에 관한 연구)

  • This study was conducted to investigate the quality characteristics of sun-dried salt prepared with added Cheongyang hot pepper juice(CPJ). The moisture, crude protein, crude lipid, and crude ash contents of the CPJ were 84.36%, 2.27%, 1.41%, and 0.67% respectively. The moisture content, yellowness, capsaicin, and dihydrocapsaicin of sun-dried salt increased according to the level of added CPJ, whereas the NaCl, pH, lightness, and redness value increased. The sensory evaluation results showed that preferences for the sun-dried salt increased as CPJ, approached their optimum value and decreased as they exceeded optimum levels. Consequently, the proposed optimum level in the ingredient formulation for manufacture of the standard sun-dried salt was 30% CPJ, as based on analyses. Ultimately, this study was expected to contribute to the commercialization of sun-dried salt of high quality.

Analysis of Physiological Activity and Cytotoxicity of Residue Extracts after Pepper Harvest (고추 수확 후 잔재물 추출물의 생리활성과 세포독성 분석)

  • The purpose of this study was to investigate the value of residue discarded after harvesting a species of pepper (Capsicum annuum L.). This study analyzed the physiological activity and cytotoxicity of a fermented extract and a hot water extract gathered from the residues of the Cheongyang pepper and the Nokkwang pepper. The total nitrogen, phosphoric acid, potassium, calcium, and magnesium contents of the fermented extract of the Nokkwang pepper were approximately twice as high as those of the Cheongyang pepper, while the hot water extracts had similar levels of these components across both peppers. Among the microelements, only boric acid, iron, and silicon components were detected, whereas zinc, manganese, molybdenum, and copper components were not detected in either extract. The total polyphenol and flavonoid contents of the fermented extracts were more than two times higher than those of the hot water extracts for both peppers. The DPPH radical scavenging ability (indicating antioxidant activity) of the fermented extract was higher than that of the hot water extract, while the ABTS radical scavenging ability (indicating antioxidant activity) of the hot water extract was higher than that of the fermented extract. A cytotoxicity test was conducted on the extracts using an MTT assay. Both extracts exhibited weak cytotoxicity at all concentrations for both peppers. These results suggest that the extract of residue discarded after harvesting these peppers could be suitable for functional feed or agricultural materials.

Determination of Capsaicin and Dihydrocapsaicin in Various Species of Red Peppers and Their Powdered Products in Market by GC-MS Analysis (GC-MS 분석에 의한 고추 품종별 및 시판고춧가루의 capsaicin 및 dihydrocapsaicin 함량조사)

  • In this research, the contents of capsaicin and dihydrocapsaicin in various species of red pepper produced in the Goesan-gun County were determined by GC-MS. Further, the contents of capsaicin and dihydrocapsaicin in powdered red pepper products with very hot, hot, normal and mild taste were analyzed to present the degree of hot taste in their products based on contents of capsaicin. The contents of capsaicin in each species of red pepper were from 25.18 mg%(Daetong) to 123.62 mg%(Cheongyang). In the powdered red pepper sold in the market, the contents (mg%) of capsaicin in very hot, hot, normal and mild taste products were 101.98, 67.63, 37.74, and 14.73, respectively. Based on this result, the classification of hot taste by contents of capsaicin was presented in the 7 grades. Namely, the products currently sold in the market were classified into very hot, hot, normal and mild taste. In this research, the degree of hot taste was classified based on contents of capsaicin into 1st grade over 120 mg%, 2nd grade in 100-120 mg%, 3rd grade in 80-100 mg%, 4th grade in 60-80 mg%, 5th grade in 40-60 mg%, 6th grade in 20-40 mg% and 7th grade below 20 mg%. Thus, it is expected that the problem which arises when preparing the products such as kimchi, gochujang and seasoning sauces by using powdered red pepper, namely, the inconsistency of hot taste can be improved and maintained.

Quality Characteristics of Wet Noodles Combined with Cheongyang Hot Pepper (Capsicum annuum L.) Juice (청양고추 착즙액 첨가에 따른 생면의 품질특성)

  • We conducted this study to investigate the quality characteristics and antioxidant activity of noodles combined with Cheongyang hot pepper juice (CPJ). The noodles were evaluated for cooking properties (weight, volume, water absorption, and turbidity), Hunter's color values, texture characteristics, sensory characteristics, capsaicin, dihydrocapsaicin, polyphenol contents, and antioxidant activity. The cooked weight, volume, and turbidity of the cooked treated noodles were not significantly different from the cooked control noodles but water absorption decreased. The Hunter's color L value of the cooked noodles was not significantly different between treatment types, but there was a significantly higher b value with increasing concentrations of CPJ. The texture characteristics (hardness, adhesiveness, springiness, gumminess, and chewiness) of the cooked treated noodles were not significantly different from the cooked control noodles. A sensory evaluation indicated that cooked noodles treated with 2% CPJ were significantly (p<0.05) better than the cooked control noodles. Capsaicin, dihydrocapsaicin, and polyphenol contents, and antioxidant activity were significantly (p<0.05) increased with increasing concentrations of CPJ. In conclusion, CPJ could be used as an ingredient to increase the sensory and antioxidant properties of wheat flour noodles without affecting their quality characteristics.

Quality Characteristics of Tofu (Soybean Curd) Added with Cheongyang Hot Pepper (Capsicum Annuum L.) Juice (청양고추 착즙액을 첨가한 두부의 품질 특성)

  • This study was conducted to investigate the quality characteristics of tofu (soybean curd) prepared with added Cheongyang hot pepper juice (CPJ). The moisture, crude protein, crude lipid, and crude ash contents of the control tofu were 82.98%, 10.26%, 4.86%, and 0.41%, respectively. The moisture content of tofu decreased according to the level of added CPJ, whereas the crude protein, crude lipid, and crude ash contents increased. The yield of tofu prepared with 5% CPJ significantly increased relative to that of control tofu. The turbidity and acidity increased with increasing concentration of CPJ, whereas pH decreased. The Hunter's color values of the tofu were significantly lower in L and a values and significantly higher in b values with increasing concentration of CPJ. The hardness, adhesiveness, and springiness of the tofu samples did not differ significantly according to the level of added CPJ. Capsaicin, dihydrocapsaicin, total polyphenol contents, and antioxidant (DPPH radical and ABTS radical scavenging activity) activities were significantly increased with increasing concentration of CPJ. Sensory evaluation indicated that the tofu prepared with 5% CPJ was not significantly different from the control tofu. Overall, CPJ could be used as an effective ingredient to improve the sensory and antioxidant properties of tofu without affecting the quality properties.

Effect of the Seedlings Difference in Cylindrical Paper Pot Trays on Initial Root Growth and Yield of Pepper (원통형 종이포트 고추 묘의 생육 차이가 초기 뿌리 생육과 수량에 미치는 영향)

  • This study investigated the possibility of application of the recently introduced cylindrical paper pot seedlings in hot pepper (Capsicum annuum L.) cultivation. The seedling growth, initial rooting after planting and accumulated fruit yield were investigated with the treatments of tray type (paper pot and plug) as a main factor, tray cell number (40 cell and 50 cell) as a sub-factor, and fertigation method (continuous fertigation and fertigation after 35 days sowing) as a sub-sub factor, respectively. The growth of pepper seedlings was significantly affected by tray type and fertigation method showing the highest value at 50 cell plug tray with continuous fertigation, and the effect of fertigation was greater than that of trays. 'Cheongyang', 'Daekwonseoneon' and 'Longgreenmat' cultivar showed all the same pattern in seedling growth. These three-cultivar seedlings were planted in plastic house and in open field in Jeonju area, respectively, and another 'Daekwonseoneon' seedlings raised Yeongyang local area was also planted at the same area. There was no difference in the rooting of 'Cheongyang' pepper at 2 weeks after planting in plastic house. The accumulated fruit weight was not significantly different between paper pot seedlings and plug seedlings in three cultivar grown in plastic house. However, that of 'Cheongyang' pepper showed higher at paper pot seedlings than plug seedlings and the other two cultivar were higher at plug seedlings in open field. 'Daekwonseoneon' pepper yield grown in open field in 'Yeongyang' area was not significant between paper pot seedlings and plug seedlings. In conclusion, the pattern of seedlings growth grown in the cylindrical paper pot was the same as those of the conventional plug seedlings and also fruit yield was similar between paper pot seedlings and plug seedlings even though minute difference among cultivars. These results suggest that pepper seedlings grown in paper pot should be highly applicable to pepper cultivation.

Bulk Properties of Red Pepper Powder by Drying Method and Variety (품종과 건조방법에 따른 고춧가루의 집단 특성)

  • This study investigated the bulk properties of red pepper powders according to drying method and variety. Bulk density, compressive characteristics, irrecoverable work, dynamic angle, and stress relaxation were investigated. Loose bulk density ranged between 0.420 $g/cm^3$ for Cheongyang cultivar and 0.427 $g/cm^3$ for Hanbando cultivar by hot-air drying. The highest tapped bulk density was 0.586 $g/cm^3$ for Hanbando cultivar by far-infrared drying and the lowest value was 0.523 $g/cm^3$ for Hanbando cultivar by sun drying. Hausner ratio reached a maximum value of 1.370 for Hanbando cultivar by far-infrared drying. Compressibility ranged between 0.0016 for Cheongyang cultivar by sun drying and 0.0023 for Hanbando cultivar by far-infrared drying. Compression ratio reached a maximum value of 1.032 for Hanbando cultivar by hot-air drying. Dynamic angle of repose ranged between 37.47 and $42.97^{\circ}$. Irrecoverable work ranged between 76.0 and 81.7%. Relaxation reached a maximum value of 24.31% for Cheongyang cultivar by far-infrared drying.

Optimization of the Processing of Seasoning Sauce for Seasoned Broughton's Ribbed Ark Scapharca broughtonii Products Using Response Surface Methodology (반응표면분석법을 활용한 피조개(Scapharca broughtonii) 조미가공품용 조미 소스의 공정 최적화)

  • This study was conducted to optimize the processing conditions of seasoned broughton's ribbed ark Scapharca broughtonii products (S-BRA-P) using response surface methodology (RSM). The concentrated oyster extract content (X1, w/w), amino-based seasoning powder content (X2, w/w), and enzyme-treated stevia content (X3, w/w) were selected as independent variables, and amino nitrogen (Y1) and overall acceptance in a sensory evaluation (Y2) were selected as dependent variables. The optimal conditions of X1, X2, and X3 were 97.5%, 20.0%, and 0.9%, respectively, and the predicted values of the multiple response optimal conditions were Y1 (1,030 mg/100 g) and Y2 (8.3). Under the optimum conditions, the experimental values of Y1 and Y2 were 1,034 ± 6.0 mg/100 g and 8.5 ± 0.4, respectively, which was no significant difference from the predicted values (P<0.05). In conclusion, the optimized models of X1, X2, and X3 for the preparation of soy sauce-based sauce were suitably fitted. The optimum amount of seasoning sauce was 13% for the preparation of S-BRA-P. The S-BRA-P, which was prepared by adding the seasoning sauce and the other subsidiary material [finely chopped spring onion (3.8%) and cheongyang hot pepper (4.6%)], had a superior taste, color, and odor.
