한국 재래식 간장의 특징적 향기성분 (Characteristic volatile components of traditional Korean soy sauce)

  • 한국 재래식 간장의 많은 휘발성 향기성분 중에서 특징적인 향기성분을 규명하고자 하였다. 연속 수증기 증류 추출장치로 휘발성 향기성분을 추출하고 재래식 간장향을 나타내는 중성획분을 분획하여 농축하였다. 이를 GC-관능검사에 의해 각 peak성분의 방향성을 조사하고, 이 각 peak성분을 fraction collector APP-5가 부착된 preparative GC로 분획포집한 후, 이를 GC/MS로 분석 동정하였다. 그 결과 GC-관능검사에서 불쾌취를 나타내는 향기성분으로는 3-methyl-1-butanol을, 간장향을 나타내는 향기성분으로는 dimethyl trisulfide, benzeneacetaldehyde, benzeneethanol을 각각 동정하였다.

냉이의 식용부위별 휘발성 향기성분 (Volatile Flavor Components in Various Edible Portions of Capsella bursa-pastoris)

  • 냉이의 식용부위에 따른 휘발성 향기성분을 분석하기 위해 SDE방법으로 정유성분을 추출한 다음 GC 및 GC-MS를 이용하여 성분을 확인하였다. 전초에서는 탄화수소류 12종, 알데히드류 2종, 케톤류 2종, 알코올류 5종, 에스테르류 1종, 유기산류 10종 및 기타 2종이 확인되었고, 잎에서는 탄화수소류 11종, 알데히드류 5종, 케톤류 4종, 알코올류 5종, 에스테르류 1종 및 기타 2종, 뿌리에서는 탄화수소류 5종, 알데히드류 1종, 케톤류 2종, 알코올류 6종, 에스테르류 2종, 유기산류 1종 및 기타 7종이 확인되었다. 전초에서 다량 함유된 유기산류는 잎 부위에서는 확인되지 않았고 뿌리 부위보다 잎 부위에 케톤류 및 알코올류가 더욱 다량 함유되어 있었다. 잎 및 뿌리에서는 지방취 및 약한 왁스냄새를 부여하는 성분들이 확인된 반면 전초에서는 신선하고 단내음을 발하는 성분들이 확인되었고 착향료로서 이용되는 성분들의 함량도 풍부하여 냉이를 조리 및 가공에 이용할 경우 전초를 사용하는 것이 향기 측면에서 가장 바람직하다고 생각된다.

금귤의 휘발성 향기성분 (Volatile Components of Kumquat(Fortunella margarita))

  • 감귤의 향기성분을 분석코져 SDE법에 의해 휘발성 정유성분을 분리한 다음 GC 및 GC-MS에 의해 성분을 확인하였다. 확인된 성분은 10개 성분이며 이 중 limonene이 전체 휘발성성분의 96.5%를 차지하였고 분리된 휘발성성분의 향기특성 역시 limonene에 의해 발현되는 향기가 주류를 이루었다. 그외 ${\beta}-pinene$(1.93%), ${\alpha}-terpineol$(0.42%) 등이 확인되었다. limonene을 제외한 미량성분을 확인하기 위해서 n-pentane과 diethyl ether 100 ml를 각각 용출시켜 휘발성 정유성분을 세분하였다. 이중 diethyl ether 분획에서 alcohol류 9종, terpene 및 terpene alcohol류 22종, aldehyde 및 ketone류 7종, ester류 7종과 기타 1종의 46개 성분이 확인되었다. 그중 양적인 면(peak area%)에서 ${\alpha}-terpineol$(31.98%), ${\beta}-terpineol$(7.37%), geranyl acetate(9.69%) 및 p-menthadien-9-ol(4.12%) 등이 diethyl ether 분획의 주류를 이루었다.

Comparison of Volatile Components in Fresh and Dried Red Peppers (Capsicum annuum L.)

  • Fresh, and sun- and oven-dried red peppers were analyzed for volatile components. Also, their odor-active compounds were determined using gas chromatography-olfactometry (GC-O). More diverse volatile components, such as aldehydes, ketones, acids, and esters, were found in dried samples than in fresh ones. They included hexanal, ethyl acetate, ${\alpha}$-ionone, and ${\beta}$-ionone. Some Strecker aldehydes, 2-methyl butanal and 3-methyl butanal, were found only in dried red peppers. More hydrocarbons of high volatility and terpene-type components, such as ${\gamma}$-terpinene and aromadendrene, were detected only in fresh red peppers. A considerable amount of naphthalene was formed during sun-drying, whereas 2-furancarboxaldehyde, 1-methyl-1H-pyrrole and benzeneethanol were detected only in oven-dried red peppers. Characteristic odor of fresh ones could be attributed to 3-penten-2-o1, 2-methyl-2-butenal, 2-methoxy phenol, 2-hydroxy-methyl-benzoate, and 2-phenoxy ethanol, whereas some odorants, including 2-pentyl furan, naphthalene, hexyl hexanoate, and ${\alpha}$-ionone, could be responsible for distinctive odor property of sun-dried red peppers. 2-Furancarboxaldehyde, benzeneethanol, 4-vinyl-2-methoxy phenol, and unknown played important roles in odor property of oven-dried red peppers.

한국산 밤꿀의 휘발성 향기성분 (Volatile Flavor Components of Chestnut Honey Produced in Korea)

  • 밤꿀과 밤꽃 향기성분의 연관성을 조사코자 밤꿀은 용매추출과 수증기 증류법을 병행하여, 그리고 밤꽃은 수증기 증류법에 의해 향기성분을 분리한 다음 GC, GC-MS에 의해 확인 비교하였다. 밤꽃으로 부터 14종의 방향족 화합물, 13종의 탄화수소류, 7 종의 지방산류, 4종의 테르펜류, 12종의 함산소 탄화수소류, 7종의 기타 성분 등 64종의 성분이 확인되었고, 밤꿀로 부터는 7종의 방향족화합물, 16종의 탄화수소류, 12종의 지방산류, 1종의 테르펜류, 2종의 함산소 탄화수소류, 3종의 기타 성분 등 41종이 확인되었다. 밤꽃 향기의 주요성분으로는 전체 향기의 49.02%를 차지하고 있는 2-phenyl ethyl alcohol, 1-phenyl ethyl alcohol, benzyl alcohol 등이 주를 이루었고 밤꿀 향기의 특징적인 성분으로는 2-phenyl ethyl alcohol, benzyl alcohol, 1-phenyl ethyl alcohol, 1-(2-aminophenyl) ethanone 등이었다.

The Volatile Composition of Kiyomi Peel Oil (Citrus unshiu Marcov×C. sinensis Osbeck) Cultivated in Korea

  • The volatile composition of Kiyomi peel oil cultivated in Korea was studied by using gas chromatography and gas chromatography-mass spectrometry. The peel oil from the Kiyomi fruit was prepared by using a cold-pressing extraction method. Among the 65 components quantified in Kiyomi oil, 25 terpene hydrocarbons and 40 oxygenated compounds were identified, with peak weight percentages measuring 94.5% and 4.9%, respectively. Limonene was the predominant compound (87.5%), followed by myrcene (2.4%), sabinene (0.9%), $\alpha$-pinene (0.8%), $\beta$-sinensal (0.8%), (Z)-$\beta$-farnesene (0.7%), neryl acetate (0.6%), valencene (0.5%), $\alpha$-farnesene (0.5%), and $\alpha$-sinensal (0.5%). A unique characteristic of the volatile profile of the Kiyomi oil was the proportion of aldehydes (2.7%), which resulted from the relative abundance of $\alpha$- and $\beta$-sinensal. Another unique characteristic of the Korean Kiyomi oil was its relative abundance of $\beta$-sinensal, (Z)-$\beta$-farnesene, neryl acetate, valencene, $\alpha$-sinensal and nootkatone. Valencene and $\alpha$- and $\beta$-sinensal were regarded as the influential components of Korean Kiyomi peel oil.

잎담배 중 neutral volatile flavor 화합물 분석 (The Analysis of Neutral Volatile Flavor Compounds in Tobacco)

  • This work has been conducted to develop a method for the analysis of neutral volatile flavors and their precursors in tobacco. The neutral volatile compounds and precursors in tobaccos have been investigated by Neutral Volatile scan method(NV scan) using Soxhlet extractor. The method has been used to analyze a range of different tobaccos and tobacco products. Neutral flavor compounds were classified as three sections(1st Volatile Fraction, Breakdown Flavor Products and Cembranoid Precursors). The major components of the First Volatile Fraction were 2-cyclohexene-1-one, 6-methyl-5-hepten-2-one, limonene and phenyl ethanol. The major components of Breakdown Flavor Products were isophorone, solanone, damascenone, 3-hydroxy-$\beta$-damascone, geranyl acetone, $\beta$-ionone, dihydroactinidiolide, norsolanadione, neophytadiene, hexahydrofarnesylacetone, farnesyl acetone and megastigmatrienone. The major cembranoid precursor compounds were dibutyl phthalate, duvatrenediols, 8,12-epoxy-14-labden-13-ol, 11-hydroperoxy-2,7,12(20)-cembratriene-4,6-diol, 12,15-epoxy-12,14-labadien-8-ol, 2,7,11-cembratrien-4,6-diol and 8,13-epoxy-14-labdien-12-ol. The NV scna results of tobacco types(flue-cured, burley and oriental) showed that each tobacco type has a characteristic flavor component profile.

소나무(Pinus rigida Miller) 잎 추출물의 휘발성 성분 (Volatile Compounds of Pine Needle(Pinus rigida Miller) Extracts)

  • This study was conducted to evaluate whether pine needle extracts can be used as tobacco flavors. Yield of essential oil, absolute and oleoresin extracted from pine needles is 0.07%, 1.20% and 6.08% respectively. The volatile compounds isolated from the three types of extracts were analyzed by gas chromatography(GC) and mass selective detector(MSD). Total 72 components were identified in the three type of extracts including 26 hydrocarbons, 16 alcohols, 13 esters, 9 acids, 4 phenols, 2 aldehydes and 2 ketones compounds. The major components were $\beta$-pinene, $\beta$-caryophyllene, $\delta$-cadinene and 4,5-dimethyl-1,3 -dioxol-2-one. There were 49 volatile components in the absolute, 44 components in the essential oil and 26 components in the oleoresin. The content of hydrocarbons and alcohols was higher in the essential oil extracted by simultaneous distillation extraction(SDE) than in others, while that of esters and acids was higher in the absolute than in others. Especially, phenols and ketones were identified only in the oleoresin. The components such as $\beta$-pinene, bornyl acetate, $\alpha$-terpineol and oxygenated terpenes have characteristic piney and fresh green odor. The contents of these components was higher in the essential oil and the absolute than in the oleoresin. Therefor, the essential oil and the absolute are expected to be more useful than the oleoresin as tobacco flavor.

저장조건과 포장재에 따른 야산더덕의 향기성분의 변화 (Change of Volatile Flavor Components of Codonopsis lanceolata Cultivated on a Wild Bill and Stored at Various Conditions)

  • We investigated the changes of volatile flavor components from Codonopsis lanceolata, which were packed in woven polypropylene(WP) film or low density polyethylene(LDPE) film and stored for 15 and 30 days at refrigerated($2{\∼}4^{\circ}C$ ) or room($18{\∼}20^{\circ}C$) temperature. A hundred and sixty seven volatile flavor components in the fresh C. lanceolata were identified by GC/MS analysis. When determining the flavor components from C. lanceolata cultivated on a wild hill and stored at 4 conditions for 30days, six volatile components such as 1-hexadecene, 2,6-dimethyl-2-octanol, 2-methyl-2-dodecanol, $\alpha$-guaiene, $\delta$-cadinene and trans-2-hexen-1-ol were detected as common components of all stored samples, and The types of common flavor components of C. lanceolata were different according to storage conditions. The numbers were 16 from refrigerated, 7 from room temperature stored, and 10 components from WP or LDPE packed conditions, respectively. The total peak area ratio of the major 10 compounds were $52.0{\∼}86.8\%$, and the percentage of trans-2-hexen-1-ol, which was the only common compound among the major 10 components, was the highest as $26.4{\∼}68.1\%$ The major flavor profile, describe by highly trained panel, were green, aldehydic, earthy and camphoreous. As the result from sensory evaluation, the freshness of C. lanceolata was maintained better by controlling storage temperature rather than selection of package materials. The best condition for characteristic flavor of C. lanceolata was packing with LDPE and chilling.

Terpenoid 분석을 통한 취나물류의 향기지표물질 비교 (A Comparison of Volatile Flavor Characteristics of Chwi-namuls by Terpenoid Analysis)

  • A comparison of essential oils composition of Aster tataricus L. (gaemichwi), Ligularia fischeri (gomchwi), Solidago virga-aurea var. asiatica Nakai (miyeokchwi), and Aster scaber (chamchwi) was performed by gas chromatography and mass spectrometry for the identification of volatile flavor characteristics in chwi-namuls. The essential oils were extracted by the hydro distillation extraction method. One hundred volatile flavor components were identified from gaemichwi essential oil. ${\alpha}$-Pinene (11.5%) was the most abundant compound, followed by myrcene (8.9%) and ${\beta}$-pinene (7.5%). Ninety-one volatile flavor components were identified from the essential oil of gomchwi. Aromadendrene (14.8%) was the most abundant component, followed by ${\beta}$-caryophyllene (7.6%) and 1-methyl-4-(1-methylethylidene)-cyclohexene (7.3%). Ninety-five volatile flavor constituents were detected in the essential oil of miyeokchwi, moreover, spathulenol (15.7%) was the most abundant component. Ninety-six volatile flavor constituents were detected in the essential oil of chamchwi. Epi-bicyclosesquiphellandrene (21.9%) was the most abundant component, followed by ${\beta}$-caryophyllene (9.5%) and ${\delta}$-terpinene (8.9%). The essential oil composition of gaemichwi was characterized by a higher contents of pinenes. The essential oil composition of gomchwi can be easily distinguished by the percentage of aromadendrene. Spathulenol and epi-bicyclosesquiphellandrene were regarded as the characteristic odorants of miyeokchwi and chamchwi, respectively.
