모과분말을 첨가한 절편의 항산화활성 (Antioxidant Activity of Jeolpyun Containing Chaenomeles sinensis Koehne Powder)

  • 최근 식품산업에 있어 다양한 식재료들을 이용하고 있는데 그중에서 떫은맛과 신맛을 가지고 있는 모과의 일반성분과 모과분말의 첨가량을 달리하여 절편을 만들어 수분함량, 색도, 항산화활성을 분석한 결과는 다음과 같다. 모과의 수분함량은 73.8%이고 모과분말의 수분함량은 10.2%였다. 모과분말의 지방함량은 모과에 비해 0.9% 증가하였고, 회분함량도 0.9% 상승하였다. 모과분말 함량을 달리하여 제조한 절편의 수분함량은 60.15~41.03%로 감소하였으며, 분말의 첨가량이 많아 질수록 명도는 낮아지고(p<0.05), 적색도를 나타내는 a값은 첨가량이 증가할수록 적색을 띠는 것을 알 수 있었다. 황색도를 나타내는 b값은 3% 모과절편이 35.94로 가장 높았다. 모과분말 첨가량이 증가할수록 총페놀함량과 DPPH, FRAP의 항산화활성의 결과도 높은 값을 보였으며 유의적으로 증가하는 것을 알 수 있었다(p<0.05). 우리는 이상의 결과 전통떡인 절편을 만들 때 항산화 활성이 우수한 기능을 갖춘 모과분말을 첨가하여 떡을 만들 때 기초자료로 활용하는데 도움이 될 수 있을 것이라 생각한다.

더덕과 일부 한약재 열수추출물의 혼합 비율에 따른 생리활성 (Physiological Functionalities of Hot Water Extract of Codonopsis lanceolata and Some Medicinal Materials, and Their Mixtures)

  • The aim of this study was to investigate the physiological functionalities of Codonopsis lanceolata, Glycyrrhiza uralensis, Chaenomeles sinensis, Crataegus pinnafida, and their mixtures. We also determined their antioxidative, fibrinolytic, and ${\alpha}-glucosidase$ inhibitory activities. The antioxidative activities of Codonopsis lanceolata, Glycyrrhiza uralensis, Chaenomeles sinensis, and Crataegus pinnafida were 79%, 88.3%, 89.9%, and 89.3% respectively. Their fibrinolytic activities were 0.80plasmin unit/mi, 0.57 plasmin unit/mi, 0.52 plasmin unit/mi, and 0.53 plasmin unit/mi respectively. The ${\alpha}-glucosidase$ inhibitory activity of Codonopsis lanceolata was 25%. The 10-fold diluents of Glycyrrhiza uralensis, Chaenomeles sinensis, and Crataegus pinnafida showed ${\alpha}-glucosidase$ inhibitory activities of 93.6%, 65.3%, and 61.3% respectively. In antioxidative activity tests of the medicinal plants mixtures at various ratios, the mixtures of Glycyrrhiza uralensis, Chaenomeles sinensis, and Crataegus pinnafida with Codonopsis lanceolata showed antioxidative activities of approximately 90%. In fibrinolytic activity tests mixtures(1:1) of Codonopsis lanceolata with Chaenomeles sinensis and Crataegus pinnafida exhibited increases of 23% and 24% in activity respectively. In ${\alpha}-glucosidase$ inhibitory activity tests, a mixture (4:1) of Codonopsis lanceolata and 10-fold diluted Glycyrrhiza uralensis showed an inhibitory activity of 98%, a mixture (3:1) of Codonopsis lanceolata and 10-fold diluted Chaenomeles sinensis showed an inhibitory activity of 69.6%, and a mixture (1:1) of Codonopsis lanceolata and 10-fold diluted Crataegus pinnafida showed an inhibitory activity of 50.2%. In conclusion, the mixtures of Glycyrrhiza uralensis, Chaenomeles sinensis, and Crataegus pinnafida with Codonopsis lanceolata will be used as a material for the development of biofunctional foods.

모과의 추출조건에 따른 Protocatechuic Acid 함량 변화 및 활성 평가 (Protocatechuic Acid Content and Physiological Activities of Chaenomeles sinensis Extracts Prepared with Different Methods)

  • The aim of this study was to investigate the potential of Chaenomeles sinensis as a content of protocatechuic acid and physiological activities. The analyzed the content of protocatechuic acid of Chaenomeles sinensis water extract (CSW) according to different extract temperature and time for extraction. It was analyzed as 0.14±0.00 mg/g in the extract at 100℃ for 3 h. Protocatechuic acid content increased as extraction time and temperature increased. The activity of the CSW at 100℃ for 3 h was measured. As a result of measuring DPPH, ABTS radical scavenging activity and SOD activity, antioxidant activity was found and α-glucosidase inhibition activities. Cell viability was shown for RAW 264.7 cells, and NO (nitric oxide) production was also inhibited. Finally, content of protocatechuic acid increased with increasing extraction time and extraction temperature, and exhibited antioxidant activity, inhibition of NO production, and anti-diabetic activity. It is believed that the Chaenomeles sinensis is likely to be developed as a functional material.

  • Investigation of the fruits of Chaenomeles sinensis (Rosaceae) resulted in the isolation of a minor flavonoid. The structure of flavanone glycoside was determined to be as $2-hydroxynaringenin-7-O-{\beta}-glucoside$ on the basis of FAB-MS and spectral evidence, especially by 2D-NMR $(^1H-^1H\;COSY,\;HMQC,\;HMBC\;and\;NOESY)$.

  • Prunasin and pomolic acid together with a mixture of ursolic and oleanolic acids, (-)-epicatechin and ${\beta}-sitosterol$ glucoside were isolated from the roots of Chaenomeles japonica. Among these compounds, the isolation of pomolic acid and prunasin is the first report from the genus Chaenomeles.

약용식물의 Tyrosinase, Hyaluronidase 저해효과 및 항산화 활성 (Tyrosinase, Hyaluronidase Inhibitory Effect and Antioxidant Activity of Medicinal Plants)

  • This study was conducted to investigate tyrosinase inhibitory effect, hyaluronidase inhibitory effect and antioxidant activity by DPPH radical scavenging method on the MeOH extract of 50 species medicinal plant for screening of functional properties. As a result, Chaenomeles sinensis Koehne extract among 50 species medicinal plant turned out to be having tyrosinase, hyaluronidase inhibitory effect and antioxidant activity. The major component of tyrosinase and hyaluronidase inhibitory effect was isolated from EtOAc extract of Chaenomeles sinensis Koehne. And the component of antioxidant activity was isolated from n-BuOH extract of Chaenomeles sinensis Koehne. Their structure of compounds were identified as oleanolic acid and (-)-epicatechin by spectroscopic evidence, respectively.

  • Chaenomeles speciose Nakai (CSP) or Chaenomeles sinensis Koehne (CSS) (Rosaceae) has been used, traditionally, to treat muscle problems and gastric dampness in eastern Asia countries. Therefore, many studies have focused on investigating its active compounds and effects on muscle pain, arthritis and gastro-intestinal diseases. Recently, several studies reported that CSS extract degrade amyloid plaques and enhance synaptic acetylcholine level in vivo and in vitro. Although these two Chaenomeles species are used without differences, CSP is reported to contains more phenolic compounds which are known to enhance memory. Therefore, in this study, we investigated the memory ameliorating effects of CSP by employing the passive avoidance test, Y-maze task and novel object recognition test. CSP (30 or 100 mg/kg) ameliorated the declined memory induced by scopolamine injection and enhanced the brain-derived neurotrophic factor (BDNF) levels along with post synaptic density protein 95 (PSD 95) levels at the hippocampus of the scopolamine-injected mouse brain. These results suggested that CSP alleviates the cognition declines caused by cholinergic blockade via enhancing BDNF levels and PSD 95, and that it would enhance memory formation and be useful for treating memory declines.
