During two years, four samples per year were collected in Vietnam from rice bran, cassava residue, brewer's grain, tofu residue, soybean meal, coconut cake, sweet potato vines and water spinach for chemical analysis and assessment of water holding capacity (WHC). The selected feedstuffs represent fibre-rich plant sources and agro-industry co-products commonly used in pig feeding in Vietnam. The content (g/kg DM) of crude protein (CP), ether extract (EE) and non-starch polysaccharides (NSP) varied between feedstuffs and ranged from 21 to 506 for CP, from 14 to 118 for EE and from 197 to 572 for NSP. Cassava residue had a high starch content of 563 g/kg DM, while sweet potato vines, water spinach, coconut cake and soybean meal had a high content of sugars (63-71 g/kg DM). The content of individual neutral sugars varied between feed ingredients, with the highest content of arabinose, galactose and glucose in tofu residue, the highest content of xylose in brewer's grain and the highest content of mannose in coconut cake. The content of uronic acid was high for cassava residue, tofu residue, sweet potato vines and water spinach (57-88 g/kg DM). The content of soluble non-cellulosic polysaccharides (S-NCP) was positively correlated ($r^2$ = 0.82) to the WHC. The content (g/kg DM) of CP, NDF, neutral sugars, total NSP, total NCP, S-NCP and total dietary fibre in tofu residue, water spinach and coconut cake varied (p<0.05) between years. In conclusion, diet formulation to pigs can be improved if the variation in chemical composition of the fibre fraction and in WHC between potential feed ingredients is taken into account.

Four rumen-fistulated dairy steers were randomly assigned according to a $4{\times}4$ Latin square design to investigate effects of supplementation levels of sodium dl-malate in concentrates on rumen ecology, ruminal fermentation, nitrogen balance, feed intake and digestibility of nutrients and ruminal microbial protein synthesis. The dietary treatments were cassava concentrate-based, containing sodium dl-malate supplementation at 0, 9, 18 and 27 g/hd/d with urea-treated rice straw (UTS) fed ad libitum. The experiment was conducted for four periods, each period lasting 21 days. Ruminal pH increased with incremental addition of malate (p<0.05). Additionally, molar proportions of propionate were higher in supplemented groups and was highest at 18 g/hd/d of malate supplement (p<0.05). Microbial protein synthesis tended to be higher in dairy steers receiving sodium dl-malate supplements and also was the highest at 18 g/hd/d. Variable bacterial populations, such as amylolytic, proteolytic and cellulolytic species were increased (p<0.05). Furthermore, protozoal populations were decreased significantly (p<0.05), while fungal zoospores were dramatically increased in dairy steers receiving sodium dl-malate supplement (p<0.05). These results suggested that supplementation of concentrate containing a high level of cassava chip at 18 g/hd/d with UTS in dairy steers could improve rumen fermentation efficiency and rumen microbial protein synthesis.
The objectives of this study were to develope the economical process for bioethanol production from domestic triticale and investigate optimal fermentation conditions such as temperature, time, and enzyme concentration used to pre-treatment process. Triticale mash, containing 148 g of total sugar per 1 L of mash, was fermented with Saccharomyces cerevisiae CHY1011 at $33^{\circ}C$. Fermentation of mash supplemented with enzyme was completed within 48-60 hours, and the ethanol yield was 410.9 L/tonne of dry base. On the other hand, fermentation of mash without enzyme addition was completed within 36-48 hours, but the ethanol yield was 342.2 L/tonne of dry base. For optimal bioethanol production from triticale, viscosity reduction enzyme was added in the pre-treatment process, and the fermentation rate of triticale was 92.0-94.2%. In addition, the results showed that bioethanol production of triticale by low-temperature pre-treatment would provide higher ethanol production efficiency and lower operating costs.
To enhance the value as a feedstuff of distiller's dried grain (DDG) and develop fermented feedstuff, we investigated the effects of the culture conditions affecting glucoamylase activity, such as pH in submerged culture and moisture content in solid-state culture. Also, we investigated the optimal mixing ratio of DDG and wheat bran for the production of fermented feedstuff containing high content of amino acids. In culture conditions for high fermented activity, pH and moisture were optimum at pH 4 and 60%, respectively. In the case of mixing ratio, the glucoamylase activity was decreased with increase of DDG content. On the other hand, the content of crude protein was increased slowly. For the development of fermented feedstuff, the optimal mixing ratio of DDG and wheat bran was 1 to 4. Finally, we could produce approximately 1 ton (dry matter) of trial product in incubator of pilot-scale. The glucoamylase activity and the crude protein content were 1,024 U/g and 33.6%, respectively.

The effect of different tropical feed sources on rumen ecology, cellulolytic bacteria, feed intake and digestibility of beef cattle was investigated. Four fistulated, castrated male crossbred cattle were randomly allocated to a $4{\times}4$ Latin square design. The treatments were: T1) urea-treated (5%) rice straw (UTS); T2) cassava hay (CH); T3) fresh cassava foliage (FCF); T4) UTS:FCF (1:1 dry matter basis). Animals were fed concentrates at 0.3% of body weight on a DM basis and their respective diets on an ad libitum basis. The experimental period was 21 days. The results revealed that the use of UTS, CH, FCF and UTS:FCF as roughage sources could provide effective fiber and maintain an optimal range of ruminal pH and $NH_3-N$. Total viable and cellulolytic bacterial populations were enhanced (p<0.05) with UTS as the roughage source. Animals fed FCF had a higher rumen propionate production (p<0.05) with a lower cellulolytic bacteria count. Moreover, three predominant cellulolytic bacteria species, namely Fibrobacter succinogenes, Ruminococcus albus and Ruminococcus flavefaciens, were found in all treatment groups. Roughage intake and total DM intake were highest with UTS (2.2 and 2.5% BW, respectively) as the roughage source (p<0.05). Nutrient intake in terms of organic matter intake (OMI) was similar in UTS, CH and UTS:FCF treatments (8.0, 6.8 and 8.7 kg/d, respectively), while crude protein intake (CPI) was enhanced in CH, FCF and UTS:FCF as compared to the UTS treatment (p<0.05). Digestion coefficients of DM and organic matter (OM) were similar among treatments, while the CP digestion coefficients were similar in CH, FCF and UTS:FCF treatments, but were higher (p<0.05) in CH than in UTS. CP and ADF digestible intakes (kg/d) were highest (p<0.05) on the CH and UTS treatments, respectively. It was also observed that feeding FCF as a full-feed resulted in ataxia as well as frequent urination; therefore, FCF should only be fed fresh as part of the feed or be fed wilted. Hence, combined use of FCF and UTS as well as CH and FCF were recommended.
Sixteen multiparous Holstein-Friesian crossbred cows in mid-lactation were blocked according to days in milk (DIM) and previous lactation and randomly assigned according to a Randomized Complete Block (RCB) design with four replications to receive four dietary treatments. The dietary treatments consisted of T1: No cassava hay (CH) or stylo 184 hay (SH) supplementation, supplementation of concentrate to milk yield at 1:2 (control), T2: Supplementation of 1 kg of CH/hd/d, supplementation of concentrate to milk yield at 1:2, T3: Supplementation of 1 kg of CH+SH/hd/d, supplementation of concentrate to milk yield at 1:2, T4: Supplementation of 2 kg of CH+SH/hd/d, supplementation of concentrate to milk yield at 1:3. All animals received Ruzi grass from a cut-and-carry system as roughage source. The feeding trial lasted for 9 weeks. The results revealed that DMI of concentrate of supplemented treatments were significantly lower (p<0.05) than those in the control, but there was no significant difference between T2 and T3. There was no significant difference in forage DM intake between the control and supplemented treatments. CP and NDF digestibility of supplemented treatments were significantly (p<0.05) greater than the control and there were no significant differences among supplemented treatments. Milk yield and 3.5% FCM (14.3, 14.5, 14.7 and 14.8; 13.9, 14.3, 14.3 and 14.6 kg/hd/d, respectively) were not significantly different among treatments. Milk protein percentage of supplemented treatments was significantly (p<0.05) higher than the control, but there were no significant differences among supplemented treatments. There was no significant difference in milk fat percentage between the control and supplemented treatments. However, milk fat percentage tended to be higher for supplemented animals as compared to the control group. There were also no significant differences in lactose, solids-not-fat and total solids percentages among treatments. Cows in supplemented treatments gave incomes over supplement cost (IOSC) of 2.72, 2.74 and 2.93 US$/hd/d, respectively which were greater than for cows on control treatment. Furthermore, IOSC were greatest for cows in T4 as compared to other treatments. Based on this study it was concluded that, feeding cassava hay solely or in combination with stylo 184 hay as a supplemental protein source could be a potential valuable strategy in small-holder dairy farming systems in the tropics. This strategic supplementation significantly reduced concentrate use, which resulted in improved milk yields and milk quality for the supplemented cows. Moreover, it resulted in higher economical returns through increased productivity and lower ratios of concentrate to milk yield, from 1:2 to 1:3.

A 3${\times}$4 factorial field experiment with a complete randomised split-plot design with four replicates was conducted from June 2002 to March 2003 at the experimental farm of the Nong Lam University, Ho Chi Minh City, Vietnam, to determine effects of different harvesting heights (10, 30 and 50 cm above the ground) and cutting intervals (45, 60, 90 and 285 days) on yield of foliage and tubers, and chemical composition of the foliage. Cassava of the variety KM 94 grown in plots of 5 m${\times}$10 m at a planting distance of 30 cm${\times}$50 cm was hand-harvested according to respective treatments, starting 105 days after planting. Foliage from the control treatment (285 days) and all tubers were only harvested at the final harvest 285 days after planting. Dry matter and crude protein foliage yields increased in all treatments compared to the control. Mean foliage dry matter (DM) and crude protein (CP) yields were 4.57, 3.53, 2.49, and 0.64 tonnes DM $ha^{-1}$ and 939, 684, 495 and 123 kg CP $ha^{-1}$ with 45, 60, 90 and 285 day cutting intervals, respectively. At harvesting heights of 10, 30 and 50 cm the DM yields were 4.27, 3.67 and 2.65 tonnes $ha^{-1}$ and the CP yields were 810, 745 and 564 kg $ha^{-1}$, respectively. The leaf DM proportion was high, ranging from 47 to 65%. The proportion of leaf and petiole increased and the stem decreased with increasing harvesting heights and decreasing cutting intervals. Crude protein content in cassava foliage ranged from 17.7 to 22.6% and was affected by harvesting height and cutting interval. The ADF and NDF contents of foliage varied between 22.6 and 30.2%, and 34.2 and 41.2% of DM, respectively. The fresh tuber yield in the control treatment was 34.5 tonnes $ha^{-1}$. Cutting interval and harvesting height had significant negative effects on tuber yield. The most extreme effect was for the frequent foliage harvesting at 10 cm harvesting height, which reduced the tuber yield by 72%, while the 90 day cutting intervals and 50 cm harvesting height only reduced the yield by 7%. The mean fresh tuber yield decreased by 56, 45 and 27% in total when the foliage was harvested at 45, 60 and 90 day cutting intervals, respectively. It is concluded that the clear effects on quantity and quality of foliage and the effect on tuber yield allow alternative foliage harvesting principles depending on the need of fodder for animals, value of tubers and harvesting cost. An initial foliage harvest 105 days after planting and later harvests with 90 days intervals at 50 cm harvesting height increased the foliage DM and CP yield threefold, but showed only marginal negative effect on tuber yield.
The annual income (gross margin) in 1989/90 of a sample of 274 farmers in seven milk cooperatives was analyzed in the sugar cane, cassava, and horticulture areas in East Java. On average dairying contributed 42%, crops 29% and off-farm revenue 29%. Dairy income was highest in the cassava area, where it compensated for the low crop income, and lowest in the sugar cane area. Farm area and average milk yield per day per cow correlated positively with farmer's income, whereas crop income increase significantly with farm area and with the number of cows. The level of total cost per cow had a negative impact on dairy and with the number of cows. The level of total cost per cow had a negative impact on dairy and on total income. Government officials and other professionals engaged in dairying had a significantly higher total income than those with their main occupation in dairying, cropping or working as farm labourers. Uneducated farmers obtained a significantly larger income through crops, whereas farmers with tertiary education obtained more income through off-farm work, This study suggests that more attention must be paid to the actual use of labour and the improvement of the dairy output/cost ratio.
An experiment was conducted to determine the apparent total tract digestibility (ATTD) and standardized total tract digestibility (STTD) of phosphorus (P) in copra expellers (CE), palm kernel expellers (PKE), and cassava root (CR). Eight barrows (initial BW of 40.0 kg, SD = 4.5) were individually housed in metabolism crates. A replicated $4{\times}3$ incomplete Latin square design was employed involving 4 dietary treatments, 3 periods, and 8 animals. Three experimental diets contained 40% CE, PKE or CR as the only source of P. A P-free diet mainly based on corn starch, sucrose, and gelatin was also prepared to estimate the basal endogenous loss of P. The marker-to-marker method was used for fecal collection. Values for the ATTD of P in the CE and PKE were greater than in the CR (46.0 and 39.7 vs -14.0%; p<0.05). However, the STTD of P did not differ greatly among the test ingredients (56.5, 49.0, and 43.2% in the CE, PKE, and CR, respectively). In conclusion, the ATTD of P values in CE and PKE were greater than that in CR, but the STTD of P did not differ greatly among CE, PKE, and CR.
