  • Hanwoo, a Korean native cattle (Bos taurus coreana), has great economic value due to high meat quality. Also, the breed has genetic variations that are associated with production traits such as health, disease resistance, reproduction, growth as well as carcass quality. In this study, next generation sequencing technologies and the availability of an appropriate reference genome were applied to discover a large amount of single nucleotide polymorphisms (SNPs) in ten Hanwoo bulls. Analysis of whole-genome resequencing generated a total of 26.5 Gb data, of which 594,716,859 and 592,990,750 reads covered 98.73% and 93.79% of the bovine reference genomes of UMD 3.1 and Btau 4.6.1, respectively. In total, 2,473,884 and 2,402,997 putative SNPs were discovered, of which 1,095,922 (44.3%) and 982,674 (40.9%) novel SNPs were discovered against UMD3.1 and Btau 4.6.1, respectively. Among the SNPs, the 46,301 (UMD 3.1) and 28,613 SNPs (Btau 4.6.1) that were identified as Hanwoo-specific SNPs were included in the functional genes that may be involved in the mechanisms of milk production, tenderness, juiciness, marbling of Hanwoo beef and yellow hair. Most of the Hanwoo-specific SNPs were identified in the promoter region, suggesting that the SNPs influence differential expression of the regulated genes relative to the relevant traits. In particular, the non-synonymous (ns) SNPs found in CORIN, which is a negative regulator of Agouti, might be a causal variant to determine yellow hair of Hanwoo. Our results will provide abundant genetic sources of variation to characterize Hanwoo genetics and for subsequent breeding.

  • The purpose of this study was to investigate the effect of dietary addition of pegmatite for Hanwoo steers on the carcass characteristics. Based upon the findings yielded by the research referenced above, the results may be summed up as follows : Oleic acid was for the most part, higher as T2 plots (45.40%) and T3 plots (44.20%) compared with Con. plots (42.50%). As well, this study has shown that the treatment plots in unsaturated fatty acid (UFA), monounsaturated fatty acid (MUFA) and polyunsaturated fatty acid (PUFA) were largely higher than that of Con. plots, and of them all, T2 plots were highest. As for the melting point of fat, T2 plots ($29^{\circ}C$) were largely lower than that of Con. plots ($31.9^{\circ}C$). This study has shown that the treatment plots were significant higher as the content of total essential amino acid and total amino acid and inosine monophosphate in the nucleotide compound for the Hanwoo beef was treatment plots when compared with Con. plots.

  • This study was conducted to determine the effects of dietary supplementation with probiotics on the growth and meat quality of finishing pigs. A total of forty eight ($Landrace{\times}Yorkshire{\times}Duroc$) pigs ($55.3{\pm}1.5 kg$ average initial body weight) were randomly assigned to four groups and fed on a diet supplemented with 0, 0.2, 0.5 or 1% probiotics for 58 days. The pigs were slaughtered at approximately 105 kg live weight. Supplementation with 0.2% probiotics significantly (p<0.05) increased daily gain compared to the control. The daily gain of pigs in the 0.2% probiotic group was 0.95 kg whereas that of the control was 0.85 kg. The average feed intake was 2.79-2.84 kg and there were no significant differences in feed intake between the control and test groups. The feed conversion of the 0.2% probiotic group was 2.96 kg whereas the control showed a feed conversion of 3.28 kg. The results of this study imply that supplementation with 0.2% probiotics may improve the feed conversion of pigs. There were significant differences in carcass weight, carcass ratio, backfat thickness, and frequency percentage of A grade carcasses between the control and probiotic test groups. In addition, the moisture, crude protein and crude ash contents of the probiotic treated groups did not differ significantly from the control group, however the crude fat values of the 0.2% probiotic test group was significantly tower than the other groups. The muscle pH levels of all samples ranged from 5.63-5.67 which is the normal pH of pork. The supplementation of probiotics resulted in decreased lightness ($L^*$) values and increased redness ($a^*$) values. Furthermore, the saturated fatty acid contents of the 0.2% and 0.5% probiotic test groups decreased and the unsaturated fatty acid contents increased relative to the control.

  • An experiment was conducted to investigate the effects of dietary supplementation of a silicate mineral (D Lite) on growth performance, nutrient retention, carcass characteristics and meat quality in broiler chicks. A total of 640 broiler chicks were randomly allotted to four dietary treatments in a randomized complete block design. Each treatment had four replicates comprising 40 broilers in each replicate. Dietary treatments were as follows: control (0% D Lite), and diets supplemented with 0.15%, 0.30% and 0.45% of D Lite. The starter and finisher diets were fed from d 0 to 21 and d 21 to 35, respectively. Body weight gain during starter (p<0.05), finisher (p=0.057) and overall (p<0.001) experimental period and feed intake (p<0.05) during starter period decreased quadratically with increasing dietary D Lite levels. The birds fed 0.15% D Lite showed the greatest (p<0.05) overall weight gain, feed intake and retention of gross energy and calcium. There were no differences (p>0.05) in carcass characteristics, organ weights and breast meat composition. However, as the level of D Lite was increased in the diet there was a linear decrease in the TBARS values of breast meat (p<0.05) at d 12 of storage. These results suggest that D Lite supplementation at the level of 0.15% is shown to be effective in improving performance and nutrient retention in broilers.

  • The current study was conducted to determine the relationships of vitamin A on meat quality of Hanwoo as a basic study to manipulate vitamin A contents in feeds to produce high quality beef. Concentrations of vitamin A in serum and liver of Hanwoo steers(n=328) were analyzed and correlation coefficients with carcass properties were evaluated. Mean vitamin A concentration in the serum of Hanwoo steers in the early fattening period was 212.0$\pm$32.7 IU/dl, and that in the late fattening period was 117.56$\pm$43.15 IU/dl. Mean vitamin A concentration in the liver of Hanwoo steers in the late fattening period was 143.62$\pm$110 IU/g expressing large variations might be depended on animals, feeds and farms. There were negative correlations between serum vitamin A concentration and marbling degree(r=-0.24, P<0.01), fat contents in M. Logissimus dorsi (r=-0.21, P<0.01), and beef quality grade(r=-0.20, P<0.01). Vitamin A-palmitate in liver also expressed negative correlations with fat contents in M. Logissimus dorsi (r=-0.18, P<0.01) and beef quality grade(r=-0.16, P<0.05). From the results obtained in the current study, we concluded that it might be possible to produce high quality beef in Hanwoo by manipulating vitamin A contents in the feeds. Further detailed studies, however, are necessary to determine vitamin A contents in feeds, feeding levels, and feeding periods.

  • This study was conducted to elucidate the characteristics of equine meat traits and to evaluate the utilization of dried-citrus pulp abundantly produced in Jeju Island as feed ingredient in the diet of finished meat horses. Treatment groups consisted of wheat bran (A) and the dried-pellet mixture of citrus pulp (20%) and wheat bran (80%) (B). Feeding of agricultural by-products were 2 times in a day at the level of 1.5% of body weights. Water and dried-grass forage was not restricted. The average daily gain was similar in both groups. Feed conversion of treatment B showed lower level than that of A. Carcass rate of B was relatively lower than that of A, but meat yield grade of B was higher than that of A. For meat color traits, $L^*$ of B was lighter than that of A, and $b^*$ of group B was lower than that of group A. From the analysis of physical characteristics of equine meats, shearing force had decreased in the treatment B but the levels of drip loss and water holding cavity had increased in the treatment B compared to A. The level of crude fat is lower in the treatment B than the treatment A. For the mineral contents, the treatment B showed higher levels of Ca, K, Mg, Cu and Mn than that of A. For the fatty acid contents, the treatment B showed increased levels of stearic acid, oleic acid, eicosenoic acid, and arachidonic acid compared to A. Consequently, these results suggested that dried-citrus pulp might be utilized as replacement material for equine forage. • The objective of this study was to investigate the relationship between color grade in Korea Institute for Animal Products Quality Evaluation (KAPE) and instrumental color values ($L^*$, $a^*$, $b^*$, ${\Delta}C$ and H) in porcine longissimus dorsi muscle. A total of 538 pigs were selected to classify and to measure the instrumental color values from commercial public slaughter house. All of the instrumental color traits were decreased with increase of color grade (p<0.05). The color grade 1 group had the highest $L^*$ value (65.23) and the color grade 6 group had the lowest $L^*$ value (45.29) among the color grade groups (p<0.05). The color grade had the negative correlation with all the instrumental color traits (p<0.001) and the correlation coefficient between color grade and $L^*$ value was -0.83. In conclusion, instrumental color traits is highly related to color grade, and especially $L^*$ value is an important indicator for both porcine carcass grading and color grading systems in KAPE.

  • The present study was undertaken to investigate the effects of slaughter weight (SW) of finishing pigs fed a low-energy diet on growth efficiency and carcass quality and thereby to assess the optimal SW. (Yorkshire $\times$ Landrace) $\times$ Duroc-crossbred gilts and barrows were fed a diet containing 3,060 kcal DE/kg from 80-kg BW and slaughtered at 110, 125, or 135 kg, after which the belly, the most preferred cut in Korea, as well as the least preferred cuts ham and loin were subjected to physicochemical and sensory analyses. Both ADG and ADFI were greater (P<0.05) in the group slaughtered at 125 or 135 kg than in the 110-kg-SW group, whereas the opposite was true for gain:feed (P<0.01). Backfat thickness (BFT), which increased with increasing SW (P<0.01 and P<0.05), was greater in barrows than in gilts (P<0.01); BFT of barrows at 125 kg (24.6 mm) was comparable to that of gilts at 135 kg (24.2 mm). Physicochemical characteristics of the belly, ham and loin were minimally affected, if not affected, by SW; of note, however, the redness of the ham increased between 110- and 125-kg SW (P<0.05). In sensory evaluation of the belly, the fat:lean balance, which is a most important quality trait in this cut, was best (P<0.05) at 125 kg of SW, but the overall acceptability of this cut was not changed by SW. In the ham and loin, the marbling score increased (P<0.01) between 110- and 125-kg SW, whereas color, aroma, off-flavor, and drip were unaffected by SW. In addition, the acceptability of the loin increased (P<0.05) between 110- and 125-kg SW. In cooked meats, none of color, aroma, off-flavor, juiciness, tenderness, taste, and acceptability was changed by SW, except for an increase (P<0.05) in darkness of loin color between 110- and 125-kg SW. In conclusion, the optimal SW for the present subpopulation on the present low-energy diet lie in between 125 and 135 kg for gilts and at 125 kg for barrows.

  • Examination of correlation between blood compositions and economic traits is very important to improve selection accuracy and predict performance ability of Hanwoo, which may be impacted into the determination of feeding management as well as marketing places. This study was aimed to provide possible procedures of Hanwoo improvement as of early individual selection based on the phenotypic correlation between blood compositions and economic traits using 866 of Hanwoo managed at National Livestock Research Institute. Phenotypic correlation between blood compositions and economic traits was estimated for steer and bulls. BUN in steer and albumin and IGF-1 in bull were highly correlated with 24 mo of weight. Average daily gain of 21 to 24 mo was highly correlated with calcium in steer and albumin in bull. Back-fat thickness and marbling score were highly correlated with BUN in steer and bull, and meat yield index was highly correlated with calcium in steer and testosterone in bull. However, BUN, which is highly correlated with meat quality, was negatively correlated with meat yield index in steer and bull.

  • Objective: The objective of this study was to evaluate the effect of different levels of lycopene supplementation on the carcass traits, meat quality, concentration of lipid oxidation products and antioxidant potential in the meat and liver of finishing barrows and gilts. Methods: A total of 40 barrows and 40 gilts were allotted in a completely randomized block design, arranged in a 2×5 factorial scheme, consisting of two sexes (barrows and gilts) and five dietary levels of lycopene (0, 12.5, 25.0, 37.5, and 50.0 mg/kg). In addition, four storage times (0, 24, 48, and 72 h), at 4℃, were added to the model to evaluate the longissimus lumborum muscle. Results: An interaction (p = 0.010) was observed between storage periods and dietary lycopene levels. The unfolding of the interaction (lycopene×period) showed a decreasing concentration of malondialdehyde concentration as the dietary lycopene increased, at all storage periods. No interactions (p>0.050) were observed for the 2,2 diphenyl 1 picrylhydrazyl (DPPH) in the pork. However, the percentage of DPPH radical inhibition reduced (p = 0.001) up to 72 h. Additionally, there was a linear increase (p = 0.001) in the capture of DPPH radicals by antioxidants, as the dietary lycopene increased. No interactions were observed (p>0.05) between the evaluated factors in liver. However, lipid oxidation was reduced by supplementing lycopene in pig diets. The capture of the DPPH radical, resulted increase in the antioxidant power exerted by lycopene in the liver (p = 0.001). The concentrations of the thiobarbituric acid reactive substances and DPPH in the liver were affected by sex (p = 0.001). Conclusion: Dietary supplementation of lycopene reduced the water loss during thawing and was effective in protecting against oxidation of the longissimus lumborum muscle and liver until 72 hours of storage, and the best results were obtained by supplementing with 50.0 mg of lycopene/kg of diet.
