This study compared aroma compositions and sensory aroma attributes of raw and cooked Tenebrio molitor larvae (mealworms). Main sensory aroma attributes of raw mealworms were strong wet-soil-like, and less-intense oily, shrimp-like and sweet-corn-like. Quantitatively, the major aroma components of raw mealworms were hydrocarbons and aldehydes. As cooking proceeded, sweet-corn-like, roasted, and fried-oil-like sensory attributes were increasingly perceived with steaming, roasting, and frying, respectively. Some pyrazines, pyrrolidines, and carbonyls increased or appeared in roasted and fried mealworms. Partial least squares regression also showed differences in raw and cooked mealworms based on aroma components and their sensory attributes. Unlike raw mealworms, steamed mealworms had a relatively strong sweet-corn-like aroma attribute, which was related to 2,4,6-trimethyl-heptane, 2,4-dimethyl-dodecane, and 3,5-dihydroxy-6-methyl-2,3-dihydropyran-4-one. In comparison, roasted and fried mealworms exhibited roasted, shrimp-like, and fried-oil-like aroma attributes, which were associated with intermediates of the Maillard reaction and lipid oxidation, such as pyrazines, alcohols, and aldehydes. This result during thermal reactions was very similar to those of meat and/or seafood. The use of mealworms as a savory-type flavor enhancer can be expected.
Seven potentially harmful bifunctional carbonyls were measured in particulate and gaseous phases at a roadside site and a suburban site in an area about 30 km north-northwest from Tokyo metropolitan area in the Kanto region in Japan. For the first time, these compounds were measured in both phases with a time resolution of 2 h. We found that wind direction is an important parameter that affects the collection of these compounds near the source, and it can cover the effects of other important variables. Our results confirmed that motor vehicles and especially diesel fuelled vehicles are important sources of these compounds. Photochemical generation is also an important source of these compounds in the gaseous phase. Transportation from the urban area is also important, particularly in the aerosol phase.
The present study examined the inhibitory effect of licorice compounds glycyrrhizin and a metabolite $18{\beta}$-glycyrrhetinic acid on the neurotoxicity of 1-methyl-4-phenyl-1,2,3,6-tetrahydropyridine (MPTP) in the mouse and on the 1-methyl-4-phenylpyridinium ($MPP^+$)-induced cell death in differentiated PC12 cells. MPTP treatment increased the activities of total superoxide dismutase, catalase and glutathione peroxidase and the levels of malondialdehyde and carbonyls in the brain compared to control mouse brain. Co-administration of glycyrrhizin (16.8 mg/kg) attenuated the MPTP effect on the enzyme activities and formation of tissue peroxidation products. In vitro assay, licorice compounds attenuated the $MPP^+$-induced cell death and caspase-3 activation in PC12 cells. Glycyrrhizin up to $100{\mu}M$ significantly attenuated the toxicity of $MPP^+$. Meanwhile, $18{\beta}$-glycyrrhetinic acid showed a maximum inhibitory effect at $10{\mu}M$; beyond this concentration the inhibitory effect declined. Glycyrrhizin and $18{\beta}$-glycyrrhetinic acid attenuated the hydrogen peroxide- or nitrogen species-induced cell death. Results from this study indicate that glycyrrhizin may attenuate brain tissue damage in mice treated with MPTP through inhibitory effect on oxidative tissue damage. Glycyrrhizin and $18{\beta}$-glycyrrhetinic acid may reduce the $MPP^+$ toxicity in PC12 cells by suppressing caspase-3 activation. The effect seems to be ascribed to the antioxidant effect.

The beeswax sample was collected from the beehives, isolated and then refined. The first step of producing beeswax was to separate honey from beehives. The beehives which were cut put in hot water. The upper layer was crude beeswax, which was treated with phosphoric acid. The crude beeswax was purified through the bleaching. The objectives of this study are to identify headspace volatile compounds and to know the contents of ${\alpha}$-carotenes and ${\beta}$-carotenes of korean beeswax. Headspace volatile compounds of Korean beeswax were measured by using the combination of dynamic headspace sampler (DS 5000, Donam System Inc.), gas chromatography and mass selective detector (HP5890 & 5971, Hewlett Packard). Seventy five compounds identified from about 100 peaks by analyzing the purified beeswax were 60 hydrocarbons, 8 carbonyls, 4 essential oils, 3 esters. Carotenes of Korean beeswax were analyzed by using High Performance Liquid Chromatography (Waters Inc.). As A result, the content of ${\alpha}$-carotenes and ${\beta}$-carotenes were 0.07ppm, 0.011ppm individually.

We performed this study to investigate the spatial, seasonal, and daily variations of the concentrations of volatile organic compounds (VOCs) in Pohang, where large steel industrial complexes are located. Ambient air sampling was undertaken at 4 sites during 4 seasons. Each sample was taken for 4 hours continuously for 8 consecutive days per season at each site. Three sites were located within the Pohang city, but one as a control site in Gyeongju. A total of 72 individual VOCs were determined by thermal desorption coupled with GC/MS, including aliphatics, aromatics, carbonyls and halides. The most abundant VOC was toluene, being followed by ethylbenzene and xylenes. Benzene concentrations(c.a. 0.7 ppb) were found to be much lower than the national ambient standard of 1.5 ppb. Overall, the VOCs levels in Pohang appeared to be lower than other national industrial complexes in Korea such as Shiwha-Banwol, Yeosu-Gwangyang, Gumi, and Ulsan. This implies that steel industry may not give significant impacts on the atmospheric levels of VOCs as much as petrochemical, electronic, and/or textile industries, where large amounts of organic solvents are used.
Alzheimer's disease(AD) is a neurodegenerative disorder characterized pathologically by senile plaques, neurofibrillary tangles, and synapse loss. Especially, extracellular beta-amyloid (Abeta) deposition is a major pathological hallmark of Alzheimer's disease (AD). In AD senile plaques, high level of iron and car-bonylated Abeta were detected. Iron has a Lewis acid property which can increase the electrophilicity of carbonyls, which may react catalytically with nucleophiles, such as amines. Hence, this study investigated whether or not iron could promote the carbonylation of amine with malondialdehyde (MDA) in the physiological condition. As the basic study, we examined that iron might promote the conjugation reaction between propylamine, monoamine molecule and MDA in the physiological condition. As the concentration of iron increased, the fluorescence intensity produced from the conjugation reaction increased in a dose-dependent manner. Instead of propylamine, we applied the same reaction condition to Abeta 1-40 peptide, one of major components founded in AD senile plaques for the conjugation reaction. As the result, the fluorescence intensity produced from the conjugation reaction between Abeta 1-40 peptide and MDA showed the similar trend to that of the reaction used with propylamine. This study suggests that iron can accelerate the conjugation reaction of MDA to Abeta 1-40 peptide and play an another important role in deterioration of AD brain.
Group 6 $M(CO)_4$(2, 2'-bipyridine)[M=Cr, Mo, W] was synthesized by substituting CO ligand of $M(CO)_6$ with strong electron donating ligand, 2, 2'-blpyridine, in the presence of phase transfer catalyst. The effective of catalyst and solvent on the product yield were discussed according to concentration and kinds of catalyst, kinds of center cation and anion, type of alkyl and aryl groups attached to the center cation, and different chain length.

Objective: Diabetes mellitus (DM) is the most common metabolic disorder that defined by chronic hyperglycemia for the deficiency in insulin secretion or resistance. Hyperglycemia could induce non-enzymatic glycation of proteins. It has been suggested that some traditional plants can improve blood glucose and inhibit glycation process. This work evaluates and compares the anti-glycation activities of four Iranian plant extracts in vitro. Methods: The methanolic extract of "Fumaria officinalis, Stachys lavandulifolia, Salvia hydrangea and Rosa Damascene" was prepared in three different concentrations. Phenolic, flavonoids content and antioxidant activity were evaluated. The multistage glycation markers- fructosamines (early stage), protein carbonyls (intermediate stage) and ${\beta}$ aggregation of albumin were investigated in the bovine serum albumin (BSA)/ glucose systemt. Results: All plants showed the high potency of scavenging free radicals and glycation inhibition in the following order: Fumaria officinalis> Rosa Damascene> Stachys lavandulifolia > Salvia hydrangea. There was a significant correlation between antioxidant and anti-glycation activity. Also, the antioxidant and anti-glycation capacity of extracts correlated with total phenolic and flavonoids content. Conclusion: Our findings demonstrated that the studied plants are good sources of anti-glycation and antioxidant compounds and, these properties can primarily attributable to phenolics, particularly flavonoids.
This study was conducted to evaluate the effects of clove extract (CE) (0.25%, 0.5%, 1%, and 2%) on the oxidative stability and quality deterioration of Chinese-style sausage stored for 21 d at $4^{\circ}C$. The addition of clove extract to sausages significantly retarded increases in Thiobarbituric Reactive Substances (TBARS) values (p<0.05), while also controlling the production of protein carbonyls (p<0.05). However, the addition of clove extract promoted reduced thiol group content in sausages (p<0.05). Sausages amended with clove extract also had decreased $L^*$ values (p<0.05) and increased $a^*$ values (p<0.05) when compared with the control. Similarly, texture deterioration was retarded in sausage containing added clove extract when compared with the control during refrigerated storage. Moreover, the addition of clove extract had no negative effects on the sensory properties of sausages. These results suggested that clove extract was effective at protecting sausages from oxidation and quality deterioration during refrigerated storage for 21 d.
We have investigated the complex forming behavior of cucurbit[6]urils(CB6) and cucurbit[7]urils(CB7) with 7-diethylamino-4-methylcoumarin(C460) in water. The electronic absorption maximum of C460 shows bathochromic shift with the addition of CB7 and fluorescence intensity is greatly increased, while CB6 has no noticeable effects on the spectroscopic properties of C460. It is noted that CB7 interacts more strongly with C460 than CB6 does. Fluorescence lifetime also significantly increased for the CB7 complex, which is attributed to reduced polarity surrounding C460 and/or C460 being in a restricted environment. The stoichiometry for the complex formation determined from the fluorescence titration measurement indicates that 2:1 complex in which two CB7 molecules bind to C460 is formed. Thus, two step equilibrium processes are suggested for the complex formation and the binding constants are estimated. The semi-empirical electronic structures calculations indicate that C460 is not included in the CB7 cavity but interacts noncovalently with the portal carbonyls of CB7.
