Proximate Composition and Mineral Content of Laver Porphyra yezoensis from the Korean Coast (한국 연안산 방사무늬김(Porphyra yezoensis)의 일반성분 및 미네랄 함량)

  • To measure the proximate composition and mineral content of laver Porphyra yezoensis, we collected 30 raw and 30 dried laver from the major production area of the south coast of Korea (Busan, Goheung, Haenam, Wando). The approximate composition of a 100 g edible portion of raw laver was $89.9{\pm}1.4$ g moisture, $3.7{\pm}1.0$ g protein, $0.5{\pm}0.2$ g lipids, $2.1{\pm}1.8$ g carbohydrate and $3.9{\pm}0.6$ g ash. The approximate composition of a 100 g portion of dried laver was $8.9{\pm}1.6$ g moisture, $31.5{\pm}6.5$ g protein, $1.9{\pm}0.3$ g lipids, $48.4{\pm}6.5$ g carbohydrate and $9.3{\pm}1.1$ g ash. No clear regional variation in laver composition was observed. The mineral content of laver was expressed as dry weight. The mean macro mineral content per 100 g portion of raw laver was (in descending order): K ($1,979{\pm}863.0$ mg), Na ($1,063.2{\pm}498.8$ mg), P ($658.7{\pm}101.8$ mg), Mg ($432.3{\pm}83.5$ mg) and Ca ($394.2{\pm}136.5$ mg). In comparison, the mean micro mineral content of raw laver was (in descending order): Fe ($243.72{\pm}154.75\;{\mu}g/g$), Zn ($72.76{\pm}30.61\;{\mu}g/g$), Mn ($41.53{\pm}15.33\;{\mu}g/g$), Cu ($4.16{\pm}1.66\;{\mu}g/g$) and Ni ($0.43{\pm}0.70\;{\mu}g/g$) No clear regional variation in the mineral content of laver was observed; however, raw laver contained a higher mineral content than dried laver.

Effect of the Dietary Composition (quantitative ratio between carbohydrate and protein) and the Rearing Temperature during the 4th Moulting Period on Proteinase Activity of Digestive Juice and Sucrase Activity of Midgut Tissue in the Silkworm, Bombyx mori L.   • This study has been carried out to investigate proteinase activity of digestive juice and sucrase activity of midgust tissue in the 5th day of the 5th instar influenced by the dietary composition (quantitative ratio between carbohydrate and protein) and tile rearing temperature during the 4th moulting period. The larvae grew on three kinds of semi-synthetic diet. The A-diet has more carbohydrate than the others, the B-diet has carbohydrate in 1 : 2 with protein, and the C-diet has more protein than the others. All the diets were kept at 16$^{\circ}C$, 25$^{\circ}C$ and 33$^{\circ}C$ during the 4th moulting period. Proteinase activity of digestive juice at the 5th day of the 5th instar was analyzed by Anson's hemoglobin method. Sucrase activity of midgut tissue at the 5th day of 5th instar was analyzed by Somogyi-Nelson's method. The results were as follows. 1. The dietary composition influencing contents of blood sugar was not related to the rearing temperature during the 4th moulting period. The contents of blood sugar appeared to increase in A-diet, B-diet and C-diet order, while proteinase and sucrase activity were stronger in C-diet, B-diet and A-diet order. 2. All kinds of diets showed almost the same fact that proteinase activity at 16$^{\circ}C$ was stronger than that at 32$^{\circ}C$. 3. It was found that sucrase activity became gradualy stronger at 32$^{\circ}C$, 25$^{\circ}C$ and 16$^{\circ}C$ in order in all kinds of diets. 4. There was an interaction in proteinase activity between the dietary composition and the rearing temperature in male larval digestive juice during the 4th mouiting period. On the other hand, there was an inter-acion in sucrase activity between the dietary composition and the rearing temperature in both female and male larval midgut tissue during the 4th moulting period.

  • Lotus seed(Nelumbo nucifera Gaertner), known as traditional medicine as an antifebrile, antipsychotic, and cantihypertensive agent, was analyzed the chemical composition of lipid and protein. The seed com posed of 12.2% moisture, 2.3% crude lipid, 19.5% crude protein, 61.3% carbohydrate, 2.1% crude fibre, and 4.1% ash. The lipid showed iodine value of 97.9 that is lower than that of soybean oil and sesame oil, and similar to peanut oil and cotton seed oil. The fatty acid composition of the oil were the highest in content of linoleic acid which occupied 58.3% and saturated vs unsaturated fatty acid was 20.9:79.1. Especially behenic acid content, 6.9%, was higher than other plant oils. Sixteen amino acids were detected in the protein from the seed and glutamic acid content was the highest as 4.5% in dehulled kernel. The portion of essential amino acid was 31.1%.

  • The purpose of this study was to investigate the possibility of Meles moles application as an edible functional food resource. This study was conducted to estimate the general nutrition composition, amino acid and minerals contents, fatty acid composition of Meles meles oil and the added fermented medicinal herbs liquid, and examine the cell toxicity effects in normal liver and kidney cells. The approximate composition of Meles moles oil was crude fat, 97.64%, crude ash, 1.99% and crude protein, 0.37%. In the fermented liquid, the approximate composition was moisture, 96.08%, Carbohydrate, 1.53%, crude ash, 0.92%, dietary fiber, 0.65%, crude protein, 0.54% and crude fat, 0.28%. The amino acid contents were 2.67 and 80.9mg% in the oil and liquid, respectively. The singularity of the unsaturated fatty acid contents attracted our attention. Especially, the polyunsaturated fatty acid compositions were 32.28 and 54.98% in oil and liquid, respectively. Negative effects were not found form the results of the cell toxicity respection. These results imply that Meles effects oil and the added fermented medicinal herbs liquid can be used as possible food resources and functional food materials.

  • The author investigated the effects of dietary composition upon the work efficiency of Splague Dowley rat at high altitude, and obtained the following results: 1. At high altitude a carbohydrate-rich diets worked more favorably upon work efficiency of the animal then a protein and or fat-rich diets did. 2. It may be recommended that fibrous components be excluded from the diets. 3. Ingestion of large amounts of sugars prior to the onset of work load is highly recommended.

  • Stems of Pinus thunbergii Parl. grown with high salinity were analyzed for chemical characteristics. Stem of 2 years was rich in soluble compounds and stem of 3 years reduced the amount of the soluble compound. But, the lignin content have not seen a large change. Also, Klason lignins of stem of 2 and 3 years has not changed in nitrogen and hydrogen content. In Klason process, it was significantly increased the carbon concentration due to the hydrolysis of the carbohydrate. In addition, the accumulation of xylan from Pinus thunbergii Parl. with salinity treatment were increased noticeably. Finally, functional group of Pinus thunbergii Parl. with salinity treatment were not changed.

  • To evaluate short rotation forestry candidates, seven clones of Salix hultenii were investigated as focused on chemical compositions and energy contents. There were significant variations in chemical compositions and energy contents among different clones. Variations in hot-water extractives content were 6.6-16.0% and 19.6-25.4% variation in lignin content. In carbohydrate compositional analysis, xylan contents were 7.5-13.1% with variation among different clones. Higher heating values were 17.69-20.02 MJ/kg.

  • In this study, the nutritional composition of colostrum milk obtained from 22 mothers delivering perterm infants and 17 mothers delivering term infants was analyzed. The energy content of colostrum was yielded based on nitrogen, lactose, and lipid data. Preterm milk is more close the nutritional needs of the preterm infant than dose other breast milk. The results are as follows : 1) Protein concentration was significantly higher, but carbohydrate and lipid concentration were lower in preterm milk than fullterm milk. Energy content yielded from total nitrogen, lactose and lipid concentration was higher in the fullterm milk than preterm milk. 2) Calcium was higher in the preterm milk than fullterm colostrum. Phosphate was lower in fullterm milk than pretem milk. Calcium/Phosphate ratio were 2.61/1 in the preterm and 2.06/1 in the fullterm milk. Magnesium was higher in the preterm milk than fullterm milk. Zinc, Copper and Manganese concentrations were tended to lower in the preterm milk than fullterm milk.

  • This study was aimed at evaluating the lipid status of 122 pregnant women, who were attending peripheral community clinics in low-income areas and were vulnerable in terms of public health, by anthropometric measurements, estimating dietary intakes and analyzing serum lipids content and fatty acids composition. Regarding the skinfold thickness, it has increased more significantly in suprailliac than in triceps, biceps, subscapular, which means body fat has been accumulated in central parts more than in distal parts of the pregnants. It is found that intakes of energy, protein, lipid and carbohydrate are desirable while calcium, zinc and copper are low and sodium is excessive. Regarding dietary fat intake, the energy $\%$ of fat was within the same range as RDA(20%) for adults, but energy $\%$ intake from each fatty acid was usually low, especially energy % of monoun-saturated fatty acid intake was below RDA for adult women. And intake ratio of $\omega$6$\omega$3 fatty acids was desirable. Accordingly, it is thought that dietary fat intake was balanced in quality. Serum lipids concentrations were increased with the length of pregnancy and were higher as compared with non-pregnant women. Polyunsaturated fatty acids, especially $\omega$6 fatty acids, have gradually decreased with the length of pregnancy. Serum lipids content and fatty acids composition were not greatly influenced by dietary fat but serum free fatty acid level was negatively related to energy, carbohydrate, fatty acids and cholesterol intake. On the basis of the above results, it can be predicted that lipid metabolism for mother and fetus is changed by pregnant status and multilateral research on maternal nutrition in terms of areas and income levels will have to be made. Effects of rehydration fluid temperature and composition on body weight retention upon voluntary drinking following exercise-induced dehydration

  • The purpose of this study was to determine the effects of beverage temperature and composition on weight retention and fluid balance upon voluntary drinking following exercise induced-dehydration. Eight men who were not acclimated to heat participated in four randomly ordered testing sessions. In each session, the subjects ran on a treadmill in a chamber maintained at $37^{\circ}C$ without being supplied fluids until 2% body weight reduction was reached. After termination of exercise, they recovered for 90 min under ambient air conditions and received one of the following four test beverages: $10^{\circ}C$ water (10W), $10^{\circ}C$ sports drink (10S), $26^{\circ}C$ water (26W), and $26^{\circ}C$ sports drink (26S). They consumed the beverages ad libitum. The volume of beverage consumed and body weight were measured at 30, 60, and 90 min post-recovery. Blood samples were taken before and immediately after exercise as well as at the end of recovery in order to measure plasma parameters and electrolyte concentrations. We found that mean body weight decreased by 1.8-2.0% following exercise. No differences in mean arterial pressure, plasma volume, plasma osmolality, and blood electrolytes were observed among the conditions. Total beverage volumes consumed were $1,164{\pm}388$, $1,505{\pm}614$, $948{\pm}297$, and $1,239{\pm}401$ ml for 10W, 10S, 26W, and 26S respectively ($P$ > 0.05). Weight retention at the end of recovery from dehydration was highest in 10S ($1.3{\pm}0.7kg$) compared to 10W ($0.4{\pm}0.5kg$), 26W ($0.4{\pm}0.4kg$), and ($0.6{\pm}0.4kg$) ($P$ < 0.005). Based on these results, carbohydrate/electrolyte-containing beverages at cool temperature were the most favorable for consumption and weight retention compared to plain water and moderate temperature beverages.
