This study was conducted to evaluate the effects of adding unrefined oil on the antioxidant activity of a tuna oil-enriched emulsion by determining DPPH radical scavenging activity, reducing power, and inhibition of low-density lipoprotein (LDL) oxidation in vitro. The emulsion consisted of tocopherol-stripped canola (18.3 g) and tuna (9.1 g) oil, one of the unrefined oils (4.6 g), such as extra virgin olive, mustard, perilla, or sesame oil, 0.5% acetic acid (64 g), and egg yolk powder (4 g). The control emulsion contained only canola (21.4 g) and tuna oil (10.6 g), as oil sources,with the same composition of the remaining ingredients. The emulsion with added unrefined oil, particularly mustard oil, showed higher radical scavenging activity and reducing power than those of the control emulsion. The radical scavenging activity and reducing power of the emulsion with added unrefined oil were higher at 1,000 ppm than at 500 ppm thus, the effect was concentration-dependent. Adding sesame or perilla oil to the tuna oil-enriched emulsion resulted in higher inhibition of LDL oxidationwhereas adding olive oil increased LDL oxidation. The results clearly showed that adding roasted mustard, sesame, or perilla oil improved the antioxidant activity of a tuna oil-enriched emulsion by increasing free radical scavenging activity, reducing power, and inhibiting LDL oxidation. The results also suggest that adding unrefined oils produces a healthier fish oil-enriched salad dressing recipe.
Biodiesel was produced from Canola, soybean and Jatropha oils combined methanol using continuously recycled membrane reactor. The membrane served to react and separate the unreacted oil from the product stream, producing high-purity fatty acid methyl ester (FAME). Two ceramic tubular membranes having different nominal pore sizes of 0.2 and 0.5 ${\mu}m$ were used. Permeate was observed at 0.5, 1.0 and 2.0 bar with a given flow rate, respectively. The permeate flux for 0.2 ${\mu}m$ membrane at 0.5 bar and 400 mL/min flow rate was 15 L/$m^2{\cdot}hr$. Also FAME content in permeate was the highest at 0.5 bar, and decreased with increasing operating pressure.

Dietary approaches using structured lipids, including medium-chain fatty acids and diacylglycerols, have been adopted for the prevention of obesity-induced chronic inflammation. In an extension to previous studies, medium-chain fatty acid-diacylglycerol enriched dietary oil (MCDG) was prepared by interesterification of canola oil and medium-chain fatty acid-triacylglycerols. The consequent MCDG product was applied to RAW264.7 macrophages followed by the assessment of multiple inflammatory responses. Compared with conventionally used canola and olive oil controls, MCDG suppressed macrophage phagocytosis, as assessed by the uptake of microsphere beads. Furthermore, the production of IL-6 and $TNF-{\alpha}$, transcription of COX-2 and iNOS, and expression of CD80 on cell surfaces were downregulated by MCDG in LPS-stimulated macrophages. Subsequently, differentiated 3T3-L1 adipocytes were evaluated for proinflammatory cytokine production and lipid accumulation. IL-6 production was marginally affected and lipid accumulation was inhibited by MCDG. Taken together, these results suggest that MCDG has potential as an alternative oil for cooking in order to prevent obesity-induced inflammation.

Lipase-catalyzed interesterification of canola (CO) and fully hydrogenated soybean oil (FHSBO) at different weight ratios (70:30, 75:25, and 80:20) was performed in a batch type reactor to produce low-trans solid fats. Each reaction was conducted in the shaking water bath for various reaction times (1, 3, 6, 18 and 24 hr) at 70oC and 220 rpm using Lipozyme TLIM (20 wt% of total substrate) from Thermomyces lanuginosus. After 24 hr reaction, solid fat content (SFC) by differential scanning calorimetry (DSC), fatty acid and triacylglycerol (TAG) composition of low-trans solid fats were determined. SFC of the products was reduced when the content of canola oil in the reaction mixture was increased. Major fatty acids were stearic acid (C18:0), oleic acid (C18:1) and linoleic acid (C18:2). Trans fatty acid content in the low-trans solid fats showed less than 0.3 wt%. In the HPLC analysis, major TAG species showed LOO (linoleyl-oleoyl-oleoyl), OOO, POO/SOL, SOO, and SOS.
This study was conducted to investigate the effect of plant oils or egg white powder and wheat fiber on the quality properties of hamburger patties. Beef patties were manufactured from the control oil (tallow, 10%), CP (canola oil, 10%), OP (olive oil, 10%), COP (corn oil, 10%), and SP (sunflower oil, 10%). The patties that contained plant oils had lower cooking loss than the control patties. The CIE $L^{\ast}$-values before cooking were highest for the SP treatments and lowest for the control patties. In terms of the fatty acid composition, the plant oil treatments, regardless of cooking, had higher monounsaturated/saturated fatty acid (M/S) ratios than the control patties, but had lower trans fatty acid contents than the control samples. In the sensory evaluations, the color and overall acceptability were more highly evaluated in the control patties than in the patties that contained plant oils.

Bioenergy production from lignocellulosic biomass and agriculture wastes have been attracted because of its sustainable and non-edible source. Especially, canola is considered as one of the best feedstock for renewable fuel production. Oil extracted canola and its agriculture residues are reuseable for bioethanol production. However, a pretreatment step is required before enzymatic hydrolysis to disrupt recalcitrant lignocellulosic matrix. To increase the sugar conversion, more efficient pretreatment process was necessary for removal of saccharification barriers such as lignin. Alkaline pretreatment makes the lignocellulose swollen through solvation and induces more porous structure for enzyme access. In our previous work, aqueous ammonia (1~20%) was utilized for alkaline reagent to increase the crystallinity of canola residues pretreatment. In this study, significant factors for efficient soaking in aqueous ammonia pretreatment on canola residues was optimized by using the response surface method (RSM). Based on the fundamental experiments, the real values of factors at the center (0) were determined as follows; $70^{\circ}C$ of temperature, 17.5% of ammonia concentration and 18 h of reaction time in the experiment design using central composition design (CCD). A statistical model predicted that the highest removal yield of lignin was 54% at the following optimized reaction conditions: $72.68^{\circ}C$ of temperature, 18.30% of ammonia concentration and 18.30 h of reaction time. Finally, maximum theoretical yields of soaking in aqueous ammonia pretreatment were 42.23% of glucose and 22.68% of xylose.
바이오디젤은 동식물성 기름과 메탄올의 트랜스에스테르화 반응에 의해 생산되는 지방산메틸에스테르(FAME, fatty acid methyl esters)로서, 트랜스에스테르화 공정에는 KOH, NaOH, $NaOCH_3$등의 균질계 화학촉매를 이용한 방법, 무촉매 공정인 초임계 메탄올 이용 방법, 그리고 효소촉매를 이용한 방법이 있다. 초임계 공정은 에너지 소비와 장치비가 커서 경제성이 떨어지는 것으로 보고되며 화학촉매 공정은 반응 효율이 높다는 장점을 가지고 있지만, 반응 및 정제단계가 복잡하고 정제과정에 폐수를 발생시키는 문제점을 가지고 있다. 고정화 효소를 사용하는 효소 공정은 에너지 비용의 절감, 후 처리 공정의 단순화, 고 순도의 글리세롤을 얻을 수 있는 장점이 있지만, 반응 속도가 느리고 효소 가격이 비싸다는 단점이 있어 현재까지 상업화되지 못하고 있다. 반응속도가 높고 재사용이 가능한 효소 촉매 공정 개발을 위해 본 연구에서는 Candida rugosa, Rizhopus oryzae 2종을 실리카에 동시 고정화하였다. 고정화 Lipase의 제조는 실리카겔을 과산화수소를 이용하여 전처리를 하고 Acetone과 3-APTES의 혼합용액을 첨가한 후 실리카겔과 (silanization)을 진행 하였다. 그리고 glutaraldehyde를 첨가 하여 공유 결합을 형성 한 후에 증류수를 사용하여 실리카겔을 회수하여 lipase(Rizhopus oryzae, Candida rugosa 10% 용액)를 고정화 하였다. 고정화 효소의 효소 활성을 측정한 결과 3000-3500 Unit(${\mu}mol/g{\cdot}min$)으로 측정되었다. 제조된 고정화 효소를 이용하여 Canola Oil을 바이오디젤로 전환하는 실험을 진행하였으며 생성물로부터 고정화 효소를 분리한 후에 상층의 에스테르층을 취하여 수세한 뒤 원심분리하여 FAME 함량을 측정한 결과 83%의 바이오디젤을 얻을 수 있었다. 그리고 효소 촉매 트랜스에스테르화 반응의 Enzyme, Water, Methanol 투입량의 반응 변수들에 대하여 반응표면분석법(Response Surface Methodology)을 적용하여 최적 반응조건을 도출하는 연구를 수행하였다.

In this research, organic extracts from roots of platycodon grandiflorum was tested to see the possibility for cosmetic natural surfactant. Interfacial properties of extracts of Platycodon grandiflorum was checked for interfacial tension, forming force, dispersion force, emulsion force, emulsion activity, and emulsion stability. At 0.005 wt% concentration, the interfacial tension against the caster oil was 11.5 dyn/cm which was lower than that of Tween 40 and quillaja bark. Extracts of Platycodon grandiflorum showed excellent emulsification activity and stability for cosmetic oils such as olive oil, soybean oil, and canola oil. In patch test using 2-5% of the extract and glycerin, the extract showed mild skin irritation. From the experiment, the extracts of platycodon grandiflorum root showed good interfacial properties as a cosmetic agent with minor skin irritation.

Canola is a crop globally used for production of oil and biofuel. Cultivation area and import volume of living modified (LM) canola have been increasing every year. As canola import dependence has reached 100% in Korea, efforts have been made for safety management of LM canola and ecological risk assessment. We developed a set of multiplex PCR method for simultaneous detection of 5 LM canola events (Topas 19/2, Rf3, Ms8, RT73 and T45) approved in Korea. The multiplex PCR assay developed allows amplification of estimated products of 5 LM canolas from event specific primer sets. Primer extension time was skipped for a time-consuming process and two annealing steps (20 cycles at $55^{\circ}C$ and 20 cycles at $60^{\circ}C$) were performed for yielding the best result which was sufficient to distinguish five LM canolas. Our results suggest that multiplex PCR method provides a cost and time-effective approach for LM canola detection.
