포도 품종간 송이 부위별 생리적 특성과 수확 후 냉각과 유통성 관계 (Physiological properties of grape cluster portions between cultivars and the effect of postharvest cooling on the marketability)

  • Rapid loss of grape berry quality after harvest occurs due to poor postharvest management. Understanding physiological properties between cultivars is required to develop practical technologies to control fast quality deterioration of tables grapes. Physiological characteristics of whole cluster, rachis and berries were examined to find their effects on postharvest behaviour of table grapes. 'Tamnara' showed high respiration rate and browning of rachis compared to 'Campbell Early'. Weight loss of rachis of 'Cheongsoo' was highest of three cultivars. Berry decay in 'Cheongsoo' begins at the connection portion between peduncle and berry, and berry decay of 'Cheongsoo' was the most severe among three cultivars. Precooling at $0^{\circ}C$ showed better results than cooling at $10^{\circ}C$ regardless of cultivars but cooling effect decreased when simulated marketing period increased up to 10 days. Plastic film wrapping was effective on reducing decay in general but not at higher marketing temperature. For successful commercialization of newly developed grapes, the inhibition technology of rachis browning in 'Tamnara' is required and decay control in 'Cheongsoo' through establishment of cold chain system is recommended.

Effect of Thymol and Linalool Fumigation on Postharvest Diseases of Table Grapes

  • Several postharvest diseases of table grapes (Vitis vinifera) occur during storage, and gray mold rot is a particularly severe disease because the causal agent, Botrytis cinerea, grows at temperatures as low as $0^{\circ}C$. Other postharvest diseases, such as those caused by Penicillium spp. and Aspergillus spp., also often lead to deterioration in the quality of table grapes after harvest. The use of plant essential oils such as thymol and linalool, to reduce postharvest diseases in several kinds of fruits, including table grapes and oranges, has received much attention in European countries. However, to the best of our knowledge there has been no report of the use of thymol fumigation to control gray mold in table grapes in Korea. Thymol ($30{\mu}g/mL$) and linalool ($120{\mu}g/mL$) significantly inhibited mycelial growth and conidia germination of B. cinerea. The occurrence rate of gray mold rot of B. cinerea and other unknown fungi was significantly reduced by fumigation with $30{\mu}g/mL$ thymol in several table grape cultivars, such as Campbell early, Muscat Bailey A, Sheridan, and Geobong. In this study, fumigation with $30{\mu}g/mL$ thymol, had no influence on the sugar content and hardness of grapes, but reduced fungal infection significantly. This suggests that $30{\mu}g/mL$ thymol could be utilized to reduce deterioration of grapes due to gray mold and other fungal infections during long-term storage.

Factors Predictive of Treatment by Australian Breast Surgeons of Invasive Female Breast Cancer by Mastectomy rather than Breast Conserving Surgery

  • Background: The National Breast Cancer Audit Database of the Society of Breast Surgeons of Australia and New Zealand is used by surgeons to monitor treatment quality and for research. About 60% of early invasive female breast cancers in Australia are recorded. The objectives of this study are: (1) to investigate associations of socio-demographic, health-system and clinical characteristics with treatment of invasive female breast cancer by mastectomy compared with breast conserving surgery; and (2) to consider service delivery implications. Materials and Methods: Bi-variable and multivariable analyses of associations of characteristics with surgery type for cancers diagnosed in 1998-2010. Results: Of 30,299 invasive cases analysed, 11,729 (39%) were treated by mastectomy as opposed to breast conserving surgery. This proportion did not vary by diagnostic year (p>0.200). With major city residence as the reference category, the relative rate (95% confidence limits) of mastectomy was 1.03 (0.99, 1.07) for women from inner regional areas and 1.05 (1.01, 1.10) for those from more remote areas. Low annual surgeon case load (${\leq}10$) was predictive of mastectomy, with a relative rate of 1.08 (1.03, 1.14) when compared with higher case loads. Tumour size was also predictive, with a relative rate of 1.05 (1.01, 1.10) for large cancers (40+ mm) compared with smaller cancers (<30 mm). These associations were confirmed in multiple logistic regression analysis. Conclusions: Results confirm previous studies showing higher mastectomy rates for residents of more remote areas, those treated by surgeons with low case loads, and those with large cancers. Reasons require further study, including possible effects of surgeon and woman's choice and access to radiotherapy services.

반응표면분석을 이용한 농축 포도즙의 알코올발효 조건 최적화 (Optimization for The Alcoholic Fermentation of Concentrated Grape Juice Using Response Surface Methodology)

  • 포도즙의 알코올 발효 시 당 농도와 교반속도, 발효시간이 알코올함량과 총산도에 미치는 영향을 알아보기 위해 반응 표면분석을 이용하여 알코올발효 조건을 최적화하였다. 알코올함량은 10%, 총산도는 최소화되는 것을 목적으로 하여 알코올 발효조건을 최적화한 결과 $19.98^{\circ}Bx$로 농축한 국내산 Campbell early 포도즙에 효모를 접종시킨 후 교반속도 104.1 rpm으로 89.67시간 동안 발효시켰을 때 목적값에 가장 근접한 결과를 나타내었다. 알코올 발효 시 포도즙의 당도가 증가할수록 알코올함량과 총산도는 증가하는 경향을 나타내었고, 교반속도는 알코올함량과 총산도에 큰 영향을 주지 않는 것으로 나타났다. 또한 발효시간이 길어질수록 알코올 함량과 총산도가 증가하는 경향을 나타내었다.

포도나무 뿌리혹병 발생생태 및 포도 재배포장의 Agrobacterium 속의 밀도 조사 (Ecology of Crown Gall Disease and Population of Agrobacterium spp. in Vineyard Soils)

  • 한국 포도나무의 뿌리혹병에 의한 발생생태를 조사하기 위하여 뿌리혹병이 발병주율 및 포도나무 재배포장에서 병원균을 측정하였다. 노지와 하우스재배 '거봉'의 뿌리혹병 발병주율은 각각 $0.4{\sim}97.9%$$1.4{\sim}3.8%$, '캠벨얼리'의 발병주율은 각각 $1.2{\sim}2.1%$$0{\sim}1.8%$이었다. Agrobacterium 속의 밀도는 뿌리혹병이 발생한 포장의 토양이 뿌리혹병이 발생하지 않은 토양보다 많이 분리되었다. 플레이트상에서 콜로니 형태와 크기로 21개의 포도나무 토양 샘플로부터 Agrobacterium spp. 480균주를 선발하였다. 이들 중 포도나무에 접종하였을 때 13균주만이 뿌리혹을 형성하였다.

활성건조효모를 이용한 양조주의 이화학적 특성 (Physicochemical Properties of Red Wine using Active Dry Yeast Strains)

  • 포도주 양조에 있어서 가장 중요한 효모배양을 효과적으로 하기 위하여 대표적인 활성건조효모 5종을 선정하여 포도주 특성과 제조공정에 적합한 활성건조 효모를 찾는 기준을 연구한 결과는 다음과 같다. 활성건조효모의 내성시험으로, 17% 에탄올 용액에서 72시간 후에 Lalvin W15 균주의 생존율이 0.007%로 가장 높았고, 1% 구연산 용액에서 72시간 후에 Pasteur Champagne 균주의 생존율은 2.85%로 가장 높았고, 또한 아황산 200ppm 용액에서 72시간 후에 Lalvin W15 >Prise de Mousse > Epernay II > Pasteur champagne > Montrachet 균주 순으로 생존율이 높았고 41.1%, 12.3%, 5.15%, 4.38%, 0.11%이었다. 적포도 Campbell Early 양조시험으로, 총산은 Lalvin W15 균주로 발효중인 must가 가장 높은 0.93g/100ml 이었으며, 에탄올 함량은 Epernay II 균주로 발효중인 must가 13.8%로 가장 높았다. 또한 유기산 함량은 주석산 > 사과산 > 구연산 순으로 많았고, Prise de Mousse 균주로 발효된 포도주가 주석산 1,897mg/l, 사과산 2,204mg/l로 가장 많았다.

아로니아 와인의 품질 특성 및 휘발성 향기성분 (Quality Characteristics and Volatile Flavor Components of Aronia Wine)

  • This study investigated the quality characteristics and volatile flavor components of aronia wine (Aronia melanocarpa (0~100%)). After 12 days of fermentation, the alcohol contents of aronia wines ranged between 9.0~12.0%. The pH level and total acidity of aronia wines were 3.20~3.68 and 0.57~0.76 g/100 mL, respectively. The organic acid analysis of wine containing 100% aronia, revealed malic acid content at 3.70 mg/mL, followed by tartaric acid, lactic acid, and citric acid. As the aronia content increased, both the total polyphenol content and the antioxidant activity (the DPPH radical scavenging activity) also significantly increased. The total polyphenol content was the highest in the wine with 100% aronia (461.33 mg%), and the antioxidant activity showed the highest values in the wine with 100% aronia (91.91%). Volatile flavor component analysis of aronia wines identified 8 alcohols, 12 esters, 4 ketones, and 7 other compounds. In the sensory evaluation, the color, flavor, and taste of wine with 20% aronia showed higher values than other aronia wines. Based on the results of the present study, we suggest that 20% aronia is most beneficial in improving the quality as well as sensory characteristics of the wine.

포도흰얼룩증상의 발생생태적 특성 (Ecological Characteristics of White Stain Symptom on the Grape in Korea)

  • BACKGROUND: The white stain symptom of grape clusters and canes by dust-like particles occurred in many vineyards recently. This study was conducted to investigate the ecological characteristics of white stain symptom in grapevines and vineyards. METHODS AND RESULTS: Optimal climate condition for white stain symptom was $25^{\circ}C{\sim}30^{\circ}C$ with 60% of humidity. Moreover, closed condition with same humidity showed higher incidence rate of white stain symptom than ventilation condition. Grape varieties with black berry skin such as Campbell-Early and Kyoho were more sensitive to white stain symptom compare to varieties with green and red berry skin. Although the pathogens were not detected until March, they increased from April, and increased sharply from mid of July. The pathogens may overwinter in the infected stems and/or on the bark as a mycelium. According to the increase of sugar content of grape from August to September, the mycelium which was parasitic on the bark grew to move to the fruits through the stems, and finally reached the fruit stalk to detach berries from the clusters. CONCLUSION: Well ventilation is recommended inside the vineyard since mid-July with roll up an insect net. In addition, infected stems and fruits should be removed out from grapevines infected with pathogens in the vineyards.

포도 품종을 달리한 한국산 포도주의 제조 및 기호도 분석 (Development of Korean Red Wines Using Various Grape Varieties and Preference Measurement)

  • 국내산 거봉, 캠벨, 머스켓 베일리 A, 쉐레단 품종을 이용하여 일반 적포도주와 스위트 와인을 제조하였으며, 사이벨 품종을 이용하여 백포도주, 네오머스켓 품종의 화이트 스위트 와인을 제조하였다. 본 실험의 결과 적포도주 제조에는 캠벨과 머스켓 베일리 A 품종이 타 품종과 비교해 적합한 산도 및 색도를 보였으나, 캠벨의 경우 당 함량이 다소 낮고 신 맛이 강한 결함이 있어 이를 위한 향후 가당 방법 및 포도재배 연구가 필요할 것으로 보인다. 백포도주 제조용 품종인 사이벨의 경우 산도가 매우 높아 발효에 적합하지 않았으며, 신맛의 증가로 인해 기호도가 떨어져 이를 보완할 수 있는 감산 연구가 요구된다. 기호도 조사 결과 품종 별로는 캠벨, 머스켓 베일리 A로 제조된 포도주의 기호도가 높게 나타났다. 향후 선별된 품종을 이용한 포도주의 고품질화 연구가 수행될 예정이며 축척된 제조 기술로 현지의 기술 지도를 통하여 제품의 산업화 및 상품화에 기여하고자 한다.

머루포도 씨 추출물의 $\alpha$-Melanin Stimulating Hormone으로 자극한 B16세포에서 melanin 생성억제 효과 (Inhibitory Effect of Muscat Bailey A Seed Extract on Melanin Production in $\alpha$-Melanin Stimulating Hormone-stimulated B16 Cell)

  • 한국에서 주요하게 재배되는 세 개의 품종(켐벨, 청포도, 머루포도)을 대상으로 껍질과 씨 추출물의 미백효능을 검색하였다. Mouse melanoma인 B16세포에 $\alpha$-MSH와 샘플을 처리하여 melanin 생성을 측정하였다. 세 품종의 껍질은 효과가 없었으며 켐벨과 청포도의 씨 추출물은 세포독성이 매우 강하였다. 머루포도 씨 추출물은 $50{\mu}g/ml$에서 대조구에 비해 melanin 생성은 $51.6{\pm}20.5%$ 이었으며 세포 생존율은 $90.4{\pm}11.3%$ 이어서 약간의 세포 독성에도 불구 melanin 생성 억제 효과가 뚜렷하였다. 머루포도 씨 추출물은 B16세포에서 $\alpha$-MSH에 의한 tyrosinase 발현량 증가를 억제하였다. 이후 연구는 1) 머루포도 씨의 생리활성 단일물질 검색과 2) $\alpha$-MSH의 신호전달 과정에 추출물 및 생리활성 단일물질이 어떻게 영향을 미치는지 하는 점이고 현재 실험에 진행 중에 있다.
