저열량 메밀맛국수의 조리특성 (Cooking Properties of Low Caloric Buckwheat Taste Noodle)

  • 비만방지 및 성인병 예방식품의 일환으로 메밀국수를 제조하는 과정에서 glucomannan, RS전분 등을 처리하여 열량까지 낮춘 새로운 타입의 메밀국수 제조조건을 확립하고자 하였다. 밀가루 단독으로 제조한 생면에 비하여 몇 가지 원료를 처리한 메밀생면의 열량은 약 $30\%$ 수준의 감소효과가 있었다. 제조된 메밀국수를 조리 후 최근 웰빙식품의 일환으로 각광 받고 있는 올리브유를 coating하여 퍼짐성을 방지하고 90일까지 상온에서 유통이 가능한 즉석국수 타입의 메밀국수를 제조할 수 있었다. 원재료 배합비율은 4종의 시료 중 RS전분 함유 밀가루, 메밀가루, glucomannan을 주원료로 하여 여기에 활성글루텐과 유화제를 처리한 것이 가장우수하였으며, 식염은 처리하지 않은 것의 품질특성이 우수하였다. 포장재질은 6종을 검토한 결과 단독재질보다는 OPP/Al/PE의 복합다층필름을 포장재로 이용하는 것이 가장 우수한 것으로 밝혀졌다.

Effects of Caloric Restriction on Endocrine Functions and Body Fat Distribution in Overweight Premenopausal Women, Related to their UCP3 (Uncoupling Protein 3) Genotypes

  • A mutation in the promoter region of uncoupling protein 3 (UCF3), specifically the -55C longrightarrow T transition, may influence an individual's energy metabolism and body weight. The objective of this study was to investigate the effect of a weight reduction program on endocrine functions and body fat distribution, related to UCP3 promoter genotype. Ninety overweight pre-menopausal female subjects participated in the weight reduction program at Yonsei University Hospital, and were placed on a calorie-restricted diet (300 kcal less than their daily requirements) for 12 weeks. After 12 weeks, all subjects on the program lost approximately 5% of their initial body weights and had lower Body Mass Index (BMI) values. Among the 90 women, 56 had a normal (without mutation) UCP3 genotype, while 34 women had mutations in the promoter region of UCP3. Despite similar weight reductions in both groups, a significantly higher decrease in abdominal adipose tissue was observed in the normal UCP3 genotype group, compared to the group with mutations. In particular, there was a significant reduction of fat at the lumbar 1 (Ll) level in the without-mutation group. Serum levels of total cholesterol, apolipoprotein Al were significantly decreased in the without-mutation group, by 4.4% and 5.7% respectively. Serum levels of hormones were not significantly changed in both groups artier the intervention. However, in the group without the mutations, the leptin level significantly reduced by 23.4% (p<0.001). Serum free fatty acid (FFA) concentration was significantly increased in the group with mutation following the weight reduction program. On the other hand, FFA responses were shown similar increases in both groups. In conclusion, although no difference was found in the magnitude of weight reduction in both groups, there were significant differences in body fat distribution and in endocrine function between the groups.

A Study on Applying PID Control to a Downdraft Fixed Bed Gasifier using Wood Pellets

  • Biomass is material that is comprehensive of carbonaceous materials from plants, crops, animals, and algae. It has been used as one of heating fuel since the beginning the emergence of human beings. Since biomass is regarded as carbon-neutral energy source, it has recently been attracting attention as an energy source that can replace fossil fuels. The most widely applied field is distributed power generation, and a method of generating electric power by driving an internal combustion engine with syngas produced by gasifier is chosen. While the composition of the syngas produced in gasifiers changes depending on the air flowing into the reactor, commercialized gasifiers so far do not control the air flowing into the reactor. When the inner pressure in reactor increases, the air sucked into the reactor is reduced. That change of amount of air makes the composition of syngas varied. Those variations of composition of syngas cause the incomplete combustion hence the power output of engine drops, which is a critical weakness of the gasification technology. In this paper, to produce the uniformly composed syngas, PID control is applied. The result was shown when the amount of air into the reactor is supplied with the constant amount using PID control, the standard deviation of caloric values of syngas is around 2[%] of its average value. Meanwhile the gasifier without PID control has the standard deviation of caloric values is around 7[%]. Therefore, Adopting PID control to supply constant air to the gasifier is highly desirable.

한국여자대학(韓國女子大學) 기숙사생(寄宿舍生)의 계절별(季節別) 영양실태(營養實態) 조사(調査) (Seasonal Dietary Survey of Woman's College Students Living in a Dormitory in Korea)

  • 여자(女子) 대학생(大學生)의 대다수(大多數)가 기숙사(寄宿舍)에서 단체(團體) 급식(給食)에 의하여 식사(食事)를 하고있는 성심여자대학(聖心女子大學)의 기숙생(寄宿生) 360명(名)에 대한 계절별(季節別) 영양(營養) 실태(實態)를 파악하기 위하여 1967년(年) 추동(秋冬)과 1968년(年) 춘하(春夏) 사계절(四季節)에 걸쳐 각(各) 계절(季節)마다 1주일간(週日間)의 식사(食事) 섭취 상태를 조사 하였다. 그 결과(結果)를 요약(要約)하면 피실험자(被實驗者)의 연령(年齡) 분포(分布)는 만(滿) 19세(歲) 20세(歲) 21세(歲) 나는자(者)가 전원(全員)의 70% 이상(以上)을 차지하고 있었다. 식사(食事) 섭취량(攝取量)은 사계절(四季節)을 통(通)해서 Calorie를 저량(低量) 섭취하고 있었으며 기중(其中)에서 가장 많이 섭취한 계절(季節)은 봄철이고 다음으로는 여름 가을 겨울의 순위(順位)로 되어있다. 각(各) 영양소량(營養素量)도 봄철이 가장 많었고 겨울은 가장 낮았다. 단백질은 권장량에 가까웠고 그중(中)의 약(約) $1/2{\sim}1/3$은 동물성(動物性) 급원(給源)에서 오고 있다. 칼슘과 vitamin A 역시 다른 계절(季節)에 비(比)해서 겨울에는 상당(相當)히 낮았다. Vitamin C와 niacin은 사계절(四季節)을 통(通)해서 전반적(全般的)으로 충분(充分)한 양(量)을 보이고 있다. 겨울철만 제외하고는 $vitamin\;B_1$$B_2$의 섭취량은 상당(相當)한 수치(數値)를 보이고 있다. 사계절(四季節) 식사(食事) 섭취량(攝取量)의 차이를 나타내는 주요(主要)한 원인은 식단(食單)의 질(質)과 다양성(多樣性)에 관계(關係)되고 있고 부수적 원인으로는 외식(外食)을 하기 때문이다. 즉(卽) 매식사시(每食事時)에 충분(充分)한 양(量)을 섭취하지 않기 때문이다. 그리고 상당수(相當數)의 학생(學生)이 기분에 좌우 되어서 외식(外食) 간식(間食)을 하고 있는 것으로 본다.

Formulation and Shelf Life of a Nutritional Supplement for Undernourished Elderly People

  • A nutritional supplement was developed aiming at correcting the most common nutrient and caloric deficiencies encountered in elderly people (${\geq}60$ years old). The protein source was a mixture of whey protein isolates (WPI) and bovine collagen hydrolysate (BCH) with high nutritional and functional qualities making up 12% of the formulation. The carbohydrate fraction was composed of sucrose, inulin (soluble fiber), and fructo-oligosaccharide (prebiotic). The most commonly deficient essential minerals and vitamins were also included. Acceptance of the product was good according to both an elderly panel and a laboratory panel composing of both sexes and various ages. The stability of the formulations was evaluated and the estimated shelf life at room temperature (ca. $27^{\circ}C$) was approximately 4 months.

Effect of Feeding Bypass Protein on Rumen Fermentation Profile of Crossbred Cows

  • The effect of three varying ratios (high, medium and low) of Rumen Degradable Protein (RDP) to Undegradable Dietary Protein (UDP) of 37:63, 52:48 and 70:30 in iso-nitrogenous and iso-caloric concentrate mixtures on rumen fermentation profile was studied using rumen fistulated Jersey crossbred cows. Rumen pH and ammonia nitrogen concentration were found to be lower with a concentrate mixture containing a higher UDP level of 63.38% when compared with those having medium and low UDP levels of 47.55 and 29.75%, respectively, at all post feeding intervals. Total volatile fatty acid concentration as well as concentrations of individual fatty acids viz., acetate, propionate and butyrate were also found higher in animals fed concentrate mixture with the highest UDP level.

  • Objective : We report a case of BPPV responded to the Guibitang, Spleen Tonifying Sa-Am Acupuncture and Canalith Reposition Therapy. Methods : 1. Diagnosis and Evaulation: Bithermal Caloric test, Video Nystagmography, Dix-Hallpike test, VAS 2. Treatment: Guibitang, Acupuncture, Canalith Reposition Therapy. Results : We can observe remarkable improvement evaulated by VAS. Conclusion : It is considered that Guibitang and Acupuncture can be applied to the treatment of BPPV.

석탄가스화 연료의 정적 예혼합 연소특성 (Premixed Combustion Characteristics of Coal Gasification Fuel in Constant Volume Combustion Chamber)

  • The coal gasification fuel is important to replace petroleum fuel. Also they have many benefits for reducing the air pollution. Measurements on the combustion characteristics of synthetic gas from coal gasification have been conducted as compared with LPG in constant volume combustion chamber. The fuel is low caloric synthetic gas containing carbon monoxide 30%, hydrogen 20%, carbon dioxide 5%, and nitrogen 45%. To elucidate the combustion characteristics of the coal gasification fuel, the combustion pressures, combustion durations, and pollutants(NOx, $CO_2$, CO) are measured with equivalence ratios($\phi$), and initial pressures of fuel-air mixture in constant volume chamber. In the case of the coal gasification fuel, maximum combustion pressure and NOx concentration are lower rather than LPG fuel. However CO and $CO_2$ emission concentration are similar to that of LPG fuel.

퍼지추론을 이용한 비만평가 시스템 (Obesity Evaluation System using Fuzzy Inference)

  • 최근 섭취열량의 증가 및 운동부족으로 인한 비만이 사회적인 문제로 되었으며, 여러 가지 성인병의 위험인자로 알려져있다. 비만을 예방하고 치료하기 위해서는 우선적으로 비만평가가 이루어져야 하며, 이러한 평가에는 BMI, WHR, 허리둘레 등이 이용되고 있다. 본 논문에서는 제안되는 비만평가 시스템에서는 BMI와 허리둘레를 가지고 퍼지추론을 하여 비만을 평가하였다. 이를 위하여 BMI와 허리둘레에 대한 소속함수와 추론규칙을 결정하였으며, 추론 결과는 서술식 문장으로 나타냈다.

반고체 이유(離乳) 보충식(補充食)에 관한 연구(硏究) (I)- Formulation과 그 영양가(營養價) 분석(分析) - (Studies on Semisolid Infant Foods (I) - Formulation and Their Nutritive Values -)

  • Three types of infant food were experimentally prepared based on the average caloric requirement for, Koreans : Formula A, with 1/3 RDA for 4-6 month, formula B, with 1/2 RDA for 7-9 month, and formula C, with 2/3 RDA for 10-12 month old infants. Into each formula was added approximately 50% of rice. Analysis of the nutritive values on these formula showed no deviance Com the expected values in case of general nutrients while the percent of essential amino acids in protein was muck higher except methionine. Since iron content was found to be below the half of except values, a sufficient amount of iron as required in RDA should be additionally supplied, for example, in iron drops. The infant preference test on each formula showed much favorable acceptability : 50% of them responded as moderate, 33.3% as favorable, 12.5% as disliking, and 4.2% as disgusting. The test also showed no noticeable change in both feces and appetite.
