A Survey of the Nutrients and a Price Comparison of Korean Style Full Course Meals - Based on Korean Restaurants in Changwon City and in Luxurious Hotels in Seoul - (한정식업소에서 제공되는 1인분 영양소와 가격 비교조사 - 서울시 특급호텔과 창원시를 중심으로 -)

  • The objectives of this study were to conduct preliminary research to investigate full course meals in Korean style restaurants in order: i) to analyze the nutrient contents of full course meals per servings, and ii ) by analyzing the above, to examine the amount and the quality of the foods served in the full course meals by two different types of Korean style restaurants. A total of 27 restaurants participated in this study, 7 restaurants from the luxurious hotels in Seoul and 20 restaurants from the City of Changwon. A key finding was that restaurant patrons tended to overconsume nutrients as compared to the Korean Recommended Daily Allowance (RDA), and restaurants generated large amounts of food wastes due to the excess food served. Other findings were as follows: 1) Compared with 1/3 or the Korean RDA, all the nutrients were oversupplied. The average nutrient ratios were about 3.7 times higher than 113 of the Korean RDA in calories, about 9 times higher in proteins, 10 times higher in phosphorus, 7 times higher in Vitamin Bl, and 12 times higher in Vitamin E. 2) Seventy-five percent (n = 20) of the restaurants served within the range of thirty to forty dishes, whereas most of the hotel restaurants (70%) served twenty dishes or fewer. 3) The average carbohydrate: protein: fat (CPF) ratio of caloric nutrients was 40:26 : 34. This study concluded that: i) Korean style full course meals provide too much food, nutrients, and calories, resulting in an over- or unbalanced nutrient intake, and ii ) the Korean style full course meals consisted of a high-protein, high-fat and high-caloric intake, which is similar to a westernized caloric nutrient pattern. Such over -or unbalanced nutrient intake could cause chronic degenerative problems such as cancer and cardiovascular disease. These findings indicate that restaurants serving Korean style full course meals should carefully plan their menus in order to provide their customers with balanced meals. They should also be strongly encouraged to play an active role in improving their customers' nutritional status, as well as reducing the restaurants wastage of food. Studies on the Catalytic Pyrolysis Products of Hardwood (활엽수재(闊葉樹材)의 촉매적(触媒的) 열분해(熱分解) 생성물(生成物)에 관한 연구(硏究))

  • This study was carried out to investigate on the catalytic pyrolysis products of hardwood (Alnus hirsuta (Spach) Rupr. Quercus acutissima Carruters, Robinia pseudoacacia L., and Populus tomentaglandulosa T. Lee) and comparing the rate of catalytic pyrolysis from untreated wood (ordinary wood) with that of treated wood with catalizer (Ammonium phosphate, Ammonium sulfate, Ammonium chloride and Urea). The results were summerized as follows; 1) It is the Populus tomentiglandulosa T. Lee that the species has the most content of holocellulose and pentosan. And Populus tomentiglandulosa exhibited high yield of the distillate in pyrolysis products by Ammonium phosphate with catalizer. 2) The distillate of pyrolysis products is decreased in accordance with increasing catalytic concentration. And untreated wood (ordinary wood) with catalizer has the most distillate of pyrolysis products. 3) The yield of charcoal in pyrolysis products is increased in accordance with increasing catalytic concentration and lignin content of species. 4) The caloric values of charcoal in pyrolysis products is decreased with increasing catalytic concentration. And untreated wood (ordinary wood) with catalizer had the most caloric values, but the caloric values of charcoal did not show statistically significent difference at 5% levels in catalizer.

  • The nutrition intake status of one hundred pre-school children, 5-year-old boys and girls, in Sok-Cho was surveyed. Subjects had two and half brothers and sisters. Breast-fed boys and girls were 48% and 40%, respectively. At the age of Six months, 70% of Subjects were Weaned. Percentage of total income spent for foods was $30{\sim}39%$. A varying number of foods were selected from 40 items. The food which children likeed best was fruit and icecream. Selected as liked food were straw berry, orange, apple, icecream, peach, grape, chocolate, youghurt and milk. Disliked foods were ginger, green onions, garlic, mushrooms and boiled rice mixed with orther cereals. Items which children have taken never before were kidney, slices of raw meat, liver, lotus rhizome and frech water fish. Insufficient caloric intakes were shown comprising 69~70% daily recommended dietary allowences for boys and girls. The total caloric intakes was composed of carbohydrate 65%, protein 11% and fat 23%, respectively. The cereal consumption was the highest (32.8%). There was a significant relationship (P<0.05) between the mother's knowledge on nutrition and the calorie. protein and calcium intake of boys. There was a significant relationship (P<0.05) between the mother's knowledge on nutrition and the caloric intake of girls.

Effects of caloric restriction on the expression of lipocalin-2 and its receptor in the brown adipose tissue of high-fat diet-fed mice

  • Obesity causes inflammation and impairs thermogenic functions in brown adipose tissue (BAT). The adipokine lipocalin 2 (LCN2) has been implicated in inflammation and obesity. Herein, we investigated the protective effects of caloric restriction (CR) on LCN2-mediated inflammation and oxidative stress in the BAT of high-fat diet (HFD)-fed mice. Mice were fed a HFD for 20 weeks and then either continued on the HFD or subjected to CR for the next 12 weeks. CR led to the browning of the white fat-like phenotype in HFD-fed mice. Increased expressions of LCN2 and its receptor in the BAT of HFD-fed mice were significantly attenuated by CR. Additionally, HFD+CR-fed mice had fewer neutrophils and macrophages expressing LCN2 and iron-positive cells than HFD-fed mice. Further, oxidative stress and mitochondrial fission induced by a HFD were also significantly attenuated by CR. Our findings indicate that the protective effects of CR on inflammation and oxidative stress in the BAT of obese mice may be associated with regulation of LCN2.

  • The interest on the utilization of landfill gases and biogases for energy production has been increasing due to environment concerns and global warming caused by burning fossil fuels, renewable nature of these gases. Using those synthesis gases to generate energy with engine encourages more efficient collection reducing emissions into the atmosphere and generates revenues for the operators. However the lower calorific value of synthesis gases than that of LPG or CNG affects the combustion stability and power output. Thus it becomes necessary to address disadvantages involved by studying synthesis gases in technological perspective. This paper discussed synthesis gas as a fuel for 60kW dual-fuel engine to produce power in an effective way. The methane diluted with $N_2$ was used as a fuel and developed ECU and injector driver facilitated the investigations with diesel fuel.

Development of Emission Factors for Greenhouse Gas (CO2) from Bituminous coal Fired Power Plants (에너지사용시설의 온실가스 배출 특성 연구 -유연탄 화력발전소의 이산화탄소를 중심으로-)

  • The main purpose of this study is to develop the greenhouse gas emission factor for power plant using bituminous coal. The power plant is a major source of greenhouse gases among the sectors of fossil fuel combustion, thus information of its emission factors is very essential to the establishment of control strategies for the greenhouse gas emissions. These emission factors derived in this study were compared with those of U. S. EPA, AGO and CCL. The $CO_{2}$ concentrations in the flue gas were measured using NDIR analyser and the GC-FID with a methanizer. The amount of carbon (C) and hydrogen (H) in fuel was measured using an elemental analyzer. Calorific values of fuel were also measured using a calorimeter. Caloric value of bituminous coal used in the power plants were 5,957 (as received basis), 6,591 (air-dried basis) and 6,960 kcal/kg (dry basis). Our estimates of carbon emission factors were lower than those of IPCC. The CO2 emission factors for the power plants using bituminous coal were estimated to be 0.791 Mg/MWh (by carbon contents and caloric value of the fuel) and 0.771 Mg/MWh (by $CO_{2}$ concentration of the flue gas). The $CO_{2}$ emission factors estimated in this study were $3.4\sim 5.4\%$ and $4.4\sim 6.7\%$ lower than those of CCL (2003) and U. S. EPA (2002).

Effects of chronic caloric restriction on kidney and heart redox status and antioxidant enzyme activities in Wistar rats

  • Caloric restriction (CR) has been associated with health benefits and these effects have been attributed, in part, to modulation of oxidative status by CR; however, data are still controversial. Here, we investigate the effects of seventeen weeks of chronic CR on parameters of oxidative damage/modification of proteins and on antioxidant enzyme activities in cardiac and kidney tissues. Our results demonstrate that CR induced an increase in protein carbonylation in the heart without changing the content of sulfhydryl groups or the activities of superoxide dismutase and catalase (CAT). Moreover, CR caused an increase in CAT activity in kidney, without changing other parameters. Protein carbonylation has been associated with oxidative damage and functional impairment; however, we cannot exclude the possibility that, under our conditions, this alteration indicates a different functional meaning in the heart tissue. In addition, we reinforce the idea that CR can increase CAT activity in the kidney. Moreover, CR caused an increase in CAT activity in kidney, without changing other parameters. Relation of Body Fat Distribution to Calorie Intake, Blood Glucose, and Exercies in Female Diabetics (성인 여성 당뇨병 환자의 체지방 분포와 열량 섭취, 혈당 및 운동과의 관계)

  • This study was aimed to investigate whether abdominal obesity is associated with non-insulin dependednt diabetes. The distribution of body fat patterns was observed in 181 female patients with diabetes, aged 33 to 83 years, living in the Taegu area, Korea. The following anthropometric measuremetns were made on all participants from October 1 to November 25, 1991 : weight, height ; waist and hip circumferences in standing position. The waist hip circumference ratio was used as an index of abdominal obesity. The results were as follows; 1) The mean fasting blood glucose of diabetic subjects was 145$\pm$50.3mg/dl and the mean duration of diabetes was 4.7$\pm$7.5 years. 2) Obese subjects above the ideal body weight body weight of 120% in the investigation are presently 52%, but 63% of subjects were reported to be obese in the past. The mean BMI of the subjects is 24.57$\pm$3.15 and the past mean BMI was 27.13$\pm$3.26. One year after reaching their highest body weight, 47% of the subjects developed diabetes. Two years after reaching their peak body weight, 74% of diabetic subjects developed diabetes. 3) Using the waist-hip circumference ratio, subjects beloing to the upper body obesity(WHR>0.84) were 65.5%. 4) The average daily energy intake did not differ between the obese and non-obese diabetic subjects, whether they were assessed with BMI or with RBW. 5) The average daily energy intake was higher in the upper body obesity subjects than in the lower body obesity subjects. 6) Diabetics withing the regular exercise group had lower fasting blood glucose levels than the non-regular exercise group. Exercise did not effect the RBW, BMI, and WHR. 7) The waist-to-hip circumference ratio correlated significantly in positive with waist-circumference, but did not correlated with hip-circumference. Therefore, WHR may depended on the increased accumulation of abdominal fat in female diabetics. In conclusion, these findings suggest that caloric intake is more associated with abdominal fat accumulation in diabetic women. Blood glucose concentration is independently effected by exercise, and exercise does not affect the WHR. Therefore, control of caloric intake and development of specific exercises to change the WHR seems important for controling diabetes in female subjects.

A literature Review;More Effective Approach for Postpartum Obesity (산후비만의 효과적인 접근을 위한 문헌적 고찰)

  • Objective Weight change in the postpartum period is a dominant concern of new mothers recently. Postpartum weight retention has important public health implication as well, because retention of gestational weight can be a significant contributor to long-term obesity and associated health risks. This study was designed to collect the latest papers and find more effective approach for postpartum obesity. Methods We searched 81 papers in English from PubMed and selected 41 in favor of our study. In addition to that, we searched 11 papers in Korean and 2 papers in Chinese. Results are as follows. Results and Conclusions These papers show that many different factors were related with postpartum weight retention. This study suggests that moderate weight gain during pregnancy is important to prevent postpartum obesity. Adequate caloric restriction and exercise are needed to prevent from postpartum weight retention. In addition, husbands, some relatives and friends are primary sources for postpartum female to lose and keep up weight. The effect of weight loss associated with lactation significantly differs from paper to paper. There are not many treatments for postpartum weight retention. So, more effective treatments using Korean traditional medicine must be improved even from now on. This study can offer many ideas to treat postpartum weight retention.
