Effects of Various Calcium Powders as Replacers for Synthetic Phosphate on the Quality Properties of Ground Pork Meat Products

  • The aim of this study was to identify the optimal and superior type of natural calcium for replacing phosphate in cooked ground pork products. To achieve this, 0.5% eggshell calcium (ESC), oyster shell calcium (OSC), marine algae calcium (MAC), or milk calcium (MC) was added to ground pork meat products. The effect of this substitution was studied by comparing the substituted products with products containing 0.3% phosphate blend (control). ESC was considered an ideal phosphate replacer for minimizing the cooking loss, which likely resulted from the increase in the pH of the product. Among the other natural calcium types, OSC treatment did not cause a significant increase in pH, but it lowered the cooking loss. CIE $L^*$ values were higher (p<0.05) in products treated with OSC or MC than the control, and lowest (p<0.05) in the products with ESC. However, products with ESC had higher (p<0.05) CIE $a^*$ and CIE $b^*$ values than the control and products treated with other powders. Compared to the control, products treated with ESC and OSC had similar substitution effects on the textural properties of the products. Therefore, the results of this study suggested that the combined use of ESC and OSC could be a potentially effective method for replacing synthetic phosphate in ground pork products.

  • This study aimed to investigate the combined effect of using natural calcium mixtures and various binding ingredients as replacers for synthetic phosphate in ground pork products. We performed seven treatments: control (0.3% phosphate blend), treatment 1 (0.5% natural calcium mixtures [NCM, which comprised 0.2% oyster shell calcium and 0.3% egg shell calcium powder] and 0.25% egg white powder), treatment 2 (0.5% NCM and 0.25% whey protein concentrate), treatment 3 (0.5% NCM and 0.25% concentrated soybean protein), treatment 4 (0.5% NCM and 0.25% isolated soybean protein), treatment 5 (0.5% NCM and 0.25% carrageenan), and treatment 6 (0.5% NCM and 0.25% collagen powder). All the treatment mixtures had higher pH and lower cooking loss than the control, which was treated with phosphate. We found that NCM and binding ingredients had no negative effects on the moisture content, lightness, and yellowness of the cooked ground pork products. Treatments 3 and 4 showed significantly lower CIE $a^*$ values than the control. Treatments 2 and 6 improved the textural properties of the products. In conclusion, the combination of NCM with whey protein concentrate or collagen powder could be suitable for producing phosphate-free meat products.

  • Purpose: The aim of this study was to evaluated biphasic calcium phosphate applied in surgically created 1-wall periodontal intrabony defects in dogs by histometrical analysis. Material and Method: Critical sized($4\;mm\;{\times}\;4\;mm$), one wall periodontal intrabony defects were surgically produced at the proximal aspect of mandibular premolars in either right and left jaw quadrants in four canines. The control group was treated with debridement alone, and experimental group was treated with debridement and biphasic calcium phosphate application. The healing processes were histologically and histometrically observed after 8 weeks. Results: In biphasic calcium phosphate group, more new bone and cementum formation, less epithelium and connective tissue attachment were observed compared to other groups. But there was no statistical significance. Conclusion: Though the statistically significant difference could not be found, it seemed that there was more new bone and cementum formation with applying biphasic calcium phosphate in 1 wall intrabony defects in dogs by preventing junctional epithelium migration.

전복패각을 침전법의 원료로 이용한 calcium phosphates의 합성 (Synthesis of calcium phosphates from abalone shells via precipitation)

  • 전복패각을 Ca원으로 이용하여 바이오 소재로 중요한 인산칼슘(calcium phosphates)들을 침전법을 통해 합성하였다. 전복패각에서 유래한 수산화칼슘(Ca(OH)2)을 칼슘 공급원(전구체)으로 사용하였다. 수용액상에서 수산화칼슘과 인산(H3PO4)을 반응시켜 침전반응을 유도하여 인산칼슘화합물로의 합성을 유도하였다. 초기 전구체 Ca/P 비율을 1.50, 1.59 및 1.67로 조절하였으며 이 조성변화와 침전물에 대한 열처리가 분말 및 소결체의 물성에 미치는 영향에 대해 조사하였다. 초기 전구체 Ca/P 비율을 조절함으로써 소결체 상합성의 조절이 가능하였고, 1150℃에서 소결한 소결체에서(hydroxyapatite(HAp), β-tricalcium phosphate(β-TCP) 및 HAp와 β-TCP가 혼합된 2상 인산칼슘(BCP, HA/β-TCP))들이 합성되었다. 이러한 결과는 저비용, 고가용성을 가지는 경제적인 출발물질로부터 고부가가치 인산칼슘을 합성할 수 있는 가능성을 보여주었다.

Wet preparation of calcium phosphates from aqueous solutions

  • Calcium phosphates such as HA (hydroxyapatite), β-TCP (tricalcium phosphate) and biphasic HA/β-TCP, were synthesized by wet chemical precipitation in aqueous solution combined with ball milling process. Nanosize powders of the calcium phosphates were synthesized using Ca(OH)2 and H3PO4. The effects of initial precursor Ca/P ratio (1.30, 1.50 and 1.67), ball milling process and post heat-treatment on the phase evolution behavior of the powders were investigated. The phase of resulting powder was controllable by adjusting the initial Ca/P ratio. HA was the only phase for as-prepared powders in both cases of Ca/P ratios of 1.50 and 1.67. The single HA phase without any noticeable second phase was obtained for the initial Ca/P ratio of 1.67 in the overall heat-treatment range. Pure β-TCP and biphasic calcium phosphate (HA/β-TCP) were synthesized from precursor solutions having Ca/P molar ratios of 1.30 and 1.50, respectively, after having been heat-treated above 700 ℃. The β-TCP phase has appeared on the pre-existing DCPD (dicalcium phosphate dihydrate) and/or HA phase. Dense ceramics having translucency were obtained at a considerably lower sintering temperature. The modified process offered a fast, convenient and economical route for the synthesis of calcium phosphates.

Complications after craniofacial reconstruction with calcium phosphate cements: a case report and review of the literature

  • Among different graft materials for craniofacial reconstruction, calcium phosphate cements have the advantages of alloplastic grafts and wide use. The authors report a case of foreign body reaction following frontal reconstruction with JectOS (an injectable calcium orthophosphate cement; Kasios) and reviewed the literature on complications of this material after craniofacial reconstruction from 2002 to 2017. Complications were categorized into two groups: immunologic reactions (consisting of seroma collection, chronic sinus mucosa swelling, and foreign body reaction) and non-immune events (infection, fragmentation, and ejection). It is wise to use calcium phosphate-based material only in selected cases with small defects, and long-term follow-up is needed to observe their consequences.

Machined 티타늄 임플란트와 calcium phosphate coated 티타늄 임플란트의 조직형태계측학적 연구 (Histomorphometric study of machined titanium implants and calcium phosphate coated titanium implants)

  • 연구목적: 본 연구는 machined 임플란트와 골유도능이 있는 calcium phosphate를 electron-beam deposition으로 coating처리한 임플란트의 골/임플란트 접촉률을 조직형태계측학적으로 비교하는 것이다. 연구 재료 및 방법:여섯 마리의 수컷 New Zealand white rabbit과직경3.3 mm, 길이 5 mm의 임플란트 24개를 준비하였다. Machined 임플란트 (대조군)와 calcium phosphate coated 임플란트(실험군)를 좌, 우 경골에 2개씩 총 4개를 식립하고 임플란트 주위에 부하가 가해지지 않도록 하여 3주, 6주의 치유기간을 두었다. 식립 3주와 6주후, 각각 3마리의 토끼를 희생하여 조직시편을 제작하였다. 제작된 시편을 광학현미경 하에서 골/임플란트 접촉률 (BIC ratio)을 계산하고 paired t-test로 두 군을 비교하였다. 결과:골/임플란트 접촉률은 임플란트 식립 3주후, 대조군에서 평균과 표준편차는$44.1{\pm}16.5%$ 이었고 실험군은 $70.8{\pm}18.9%$로 실험군이 통계적으로 유의하게 높았다 (P= 0.0264). 6주후의경우, machined 임플란트는 $78.6{\pm}15.1%$, calcium phosphate coated 임플란트는 $79.0{\pm}26.0%$로 두 군 간 통계적으로 유의한 차이는 없었다. 결론: Calcium phosphate coated 임플란트는 machined 티타늄 임플란트에 비해 빠른 초기 골반응을 나타냈다. 그러므로, 임상적으로 calcium phosphate coated 임플란트를 사용했을 때, 수술 후 치유 기간을 단축하여 조기 부하가 가능할 것으로 사료된다.

  • 옥수수 글루텐을 식물성 효소인 파파인으로 가수분해하여 글루텐 펩타이드를 생산하였다. 생산된 글루펜 펩타이드류는 인이온 존재하에서 인이온과 칼슘이온과의 침전형성을 방지하여 칼슘의 용해성을 증진시켰다. 칼슘이온의 용해도는 8.3mg의 펩타이드 존재시 대조구에 비해 5.2배 증대되었다. 산성 아미노산의 함량이 매우 높은 이들 펩타이드류를 Delta pak 칼럼을 이용하여 분획하였으며 이들 분획 가운데 3번째 분획이 가장 높은 칼슘 용해성을 보였다.

Ca(OH)$_2$ 현탁액과 각종 인산 수용액으로부터 인산칼슘 초미분말의 제조 (Synthesis of Ultra-fine Calcium Phosphate Powders from Ca(OH)2 Suspension and Various Phosphoric Aqueous Solutions)

  • Ultra-fine calcium phosphate powders were synthesized by the reaction of Ca(OH)2 suspension with various phosphoric aqueous solutions such as (NH4)2HPO4, H4P2O7 and H3PO4, and the characterization of powders was examined for each synthetic condition. When (NH4)2HPO4 and H3PO4 were used, hydroxyapatite powders with poor crystallinity were obtained. In the case of H4P2O7, amorphous calcium phosphate was obtained up to 0.3 mol/ι Ca(OH)2 suspension, but above the concentration, poor crystalline hydroxyapatite was produced. Crystalline phases of powders heat-treated at 80$0^{\circ}C$ were hydroxyapatite, $\beta$-tricalcium phosphate and $\beta$-tricalcium phosphate for the case of (NH4)2HPO4, H4P2O7 and H3PO4, respectively. SEM observation revealed that the shapes of synthesized powders were vigorously agglomerated spherical with the size below 100 nm, but TEM observation revealed that primary shapes of particles were rod for (NH4)2HPO4 and H3PO4 and were sphere for H4P2O7. There was no dependence of the concentration of Ca(OH)2 suspension. In the case that reaction temperature and pH of the suspension were raised, the inclination to the hydroxyapatite were remarkable. The amorphous calcium phosphate synthesized in this experiment contained water about 20% , and was crystallized to $\beta$-tricalcium phosphate at 69$0^{\circ}C$.

투영기반 마이크로 광조형 기술을 이용한 3 차원 인산칼슘 인공지지체 제작 및 골 분화 영향 (Fabrication of Calcium Phosphate Scaffolds Using Projection-based Microstereolithography and Their Effects on Osteogenesis)

  • 인산칼슘 재료는 하이드록시 아파타이트(Hydroxyapatite)와 트리칼슘 포스페이트(Tricalcium-phosphate)를 포함하고 있으며, 인체 골 조직의 무기성분으로 세포 독성이 없고 생체 적합한 성질을 가지고 골 전도성이 있다. 또한 두 재료가 혼합되어 있는 이상 인산칼슘(Biphasic calcium phosphate) 재료는 골 유도성이 있다고 알려져 있다. 이러한 골 조직 재생에 많은 장점을 가지고 있는 인산칼슘 재료는 파우더 타입으로, 3 차원 자유형상의 인공지지체를 제작하는 데 어려움이 있어 고분자 재료에 첨가하여 사용되었다. 본 연구에서는 자유형상 제작 기술을 이용하여 원하는 내/외부 형상을 가지는 3 차원 인산칼슘 인공지지체를 제작하고, 골 조직 재생용 인공지지체로의 사용이 적합한지를 확인하기 위해 MC3T3-E1 를 이용한 세포 증식, 골 조직 분화 실험을 수행하였다.
