  • The purpose of this study was to examine the effects of dietary calcium supplementation and exercise on bone mineral density and bone mineral content of growing female rats. The exercise and control group were fed a diet containing 0.5% calcium and Ca supplementation group were fed a diet containing 1.0% calcium diet. The exercise group ran on a rodent treadmill (speed of 15m/min for 30 min) three days per week during the 3-week study period. Bone mineral density (BMD) and bone mineral content (BMC) of spine and femur were determined by using dual energy x-ray absorptiometry (FIXI-mus, GE Lunar Radiation Cooperation, Madison, WI, USA). The exercise group had significantly greater (6.25%) spine BMD compared to the nonexercise group and the exercise group had but not significantly greater spine BMC (7.1%) compared to nonexercisers. Femur BMD and BMC divided by the rats final body weight appears to have a higher BMD (7.5%) and BMC (4.5%) in the exercise group, which indicates that exercise had a positive influence on femur bone mineral density and bone mineral content. The supplementation of calcium did not significantly affect spine and femoral BMC and BMD for the 3 weeks experimental period. It can be concluded that when calcium intake meets the recommended, exercise is beneficial for acquisition of spine bone mineral density in young growing female rats. • Vegetables are liberally taken to enhance the mineral, vitamin, and rouphage value of the diet. And calcium is an essential mineral at all ages, although the daily requirement varies with physiological status of the individual. On the other hand, oxalic acid is an unwanted constituent of several clinical disorders. It is therefore necessary to take into account the calcium as well as the oxalic acid content of the various calcium, foods. Oxalic acid, calcium, calcium/oxalic acid ratio and available calcium have been determined in 31 kinds of the Korean common vegetables. The results are summarized as follows; 1. The highest content of oxalic acid has been recorded in Amaranth. spinach and beet. It is respectively 1,100mg%, 619mg%, 550mg% in fresh sample. It is comparatively high in Leek, leavels of perilla, Mugwort, Chyi-leaves, green red pepper, Burdock. 2. Many vegetables have been calculated as below 2.0 in the calcium/oxalic acid ratio. 3. Avaiable calciumis much in Malaolitoria, Lettuce, Green onion whole, Green garlic, Wild onion, Cabbage and Radish root. 4. A food calendar is suggested as a guide to the proper selection of food items for normal individuals and for those suffering from urolithiasis, cardiovascular disease or calcium deficiency status.

  • Within the elderly population, the use of calcium supplements and the intake of calcium from food are on the rise in order to maintain health. Calcium is absorbed as an ion in vivo, leading to speculation that absorption efficiency is affected by the solubility of the calcium consumed. In our study, the bioavailability of two types of calcium supplements with different solubilities was evaluated. Experimental animals were fed water-soluble or insoluble calcium supplements for 6 weeks. We found that blood alkali phosphatase activity, osteocalcin content, and urine crosslinks values were not different between the groups. Similarly, the degree of apparent calcium absorption between the two calcium supplements was not significantly different. The bone mineral density and bone mineral content of the femur and the tibia increased in the group that consumed insoluble calcium compared with those of the water-soluble calcium supplemented group. However, when considering body weight, the bone mineral density value for all areas, including the spine, was significantly higher in the group that consumed the water-soluble calcium supplement.

  • This study investigated the effects of water-soluble calcium supplements manufactured with eggshells and oyster shells on growing rats. The aim was to review the potential use of food wastes as materials for water-soluble calcium supplements as compared to water-soluble calcium supplements made from imported seaweed powder. When experimental animals were administered three types of water-soluble calcium supplements orally for six weeks, the serum calcium level of the seaweed calcium supplement group were significantly higher than that of eggshell or oyster shell-derived calcium, but blood alkali phosphatase activity, osteocalcin and urine crosslink levels were not different in the three types of calcium supplements. Bone mineral density and bone mineral content in spine, femur and tibia also were not significantly different among the groups. However, when considering body weight of each group, bone mineral density and bone mineral content of the femur were significantly higher in the oyster shell calcium supplement group. These results suggest that at least on a short-term basis, the effect of calcium supplements prepared from eggshell and oyster shell are similar to the effects of seaweed calcium supplements.

  • Two experiments were conducted to establish a program for the prevention of swine parakeratosis occurred recently in Korea. In the first experiment, 11 rations which were considered to be related clinico-pathologically to the incidence of parakeratosis and 5 rations not to be related were collected at farms during the period from June, 1979 to December, 1980. In addition, 23 commercial rations and 10 ingredients were also collected at feed dealers or farms. The feed samples were analyzed for calcium, zinc and unsaturated fatty acid. In the second experiment, the efficiencies of adding zinc carbonate (150mg/kg diet) with or without soybean oil (5ml/kg diet) to two control rations were tested using 20 weanling pigs. One of the control rations had low zinc (41mg/kg) and normal calcium (0.64%) and the other low zinc (57mg/kg) and high calcium (1.42%). The results obtained are as follow: 1. Content of zinc in the rations induced parakeratosis ranged from 35 to 80mg/kg with a mean of 49mg/kg; whereas those of rations not induced ranged from 97 to 182mg/kg with a mean of 182mg/kg. The difference between two means was highly significant (p<0.01). 2. The calcium content in rations related to parakeratosis was ranged from 0.56 to 1.80% with a mean of 1.30% whereas that of not related was ranged from 0.63 to 1.37% with a mean of 1.07%. The highly significant difference of calcium content between two rations were recognized (p<0.01). The calcium contents of both rations were markedly higher than that of generally recommended value of 0.40~0.80%. 3. The contents of unsaturated fatty acid in induced rations was a mean of 4.42% and it was significantly lower (p<0.01) compared with those in not induced rations with a mean of 6.70%. The content of unsaturated fatty acid of commercial rations was ranged from 5.25 to 7.81% with a mean of 6.29%. 4. Zinc content of 15 commercial ration samples among 23 were less than 97mg/kg and 21 rations contained more than 1.03% of calcium. 5. Addition of zinc carbonate to the two control rations which are low in zinc content or high in calcium content were resulted in preventive effect on the incidence of swine parakeratosis. 6. It may be concluded that the incidence of swine parakeratosis was closely related to the low zinc, excess calcium and low unsaturated fatty acid in rations, most of the commercial rations contained low in zinc and high in calcium as compared with the recommended contents. Content of Unsaturated fatty acids in the commercial rations, however, were sufficient for the prevention of parakeratosis in swine.

  • This study has investigated the bioavailability of calcium in eggshell powder (ESP) for the purpose of reutilizing eggshells as the calcium source. The experiment was designed 2 ${\times}$ 2 factorial method with two sources, CaCO$_3$ and ESP, and two levels, 0.2% and 0.4% calcium. Weanling SD rats were assigned randomly to one of 4 groups and provided by one of the isocaloric, 20% casein based 4 different experimental diets for 4weeks. Deionized water was given and environment was kept from any contamination of minerals. The body weight, diet intake, feed efficiency ratio (FER), bone growth, Ca contents of bones, and apparent absorption were measured. FER (0.38 - 0.40) and kidney weight were not different among groups and the weight and length, Ca content, strength of two bones Tibia and Femur were not affected by Ca sources except Femur Ca content. Ca content of Femur was greater in ESP groups than that of CaCO$_3$ groups. The body weight gain, bone growth, the Ca contents and strength of bones were significantly greater in 0.4% calcium groups suggesting 0.2% calcium is not sufficient for the optimum growth in the growing rats. These results indicate that ESP be a proper Ca source comparable or superior to CaCO$_3$. However the apparent absorption rate of final 3 days of feeding did not support the observed results showing lower rate in ESP than CaCO$_3$ groups. Further study be needed in the absorption aspect.

  • Taurine supplementation has been shown to have a beneficial effect on femur bone mineral content in ovariectomized rats. It therefore seemed desirable to find out whether the beneficial effect of taurine on ovariectomized rats fed calcium deficient diet could also be reproduced. Forty female Sprague-Dawley rats were divided into two groups, One group was OVX and the other group received sham operation (SHAM), and received either control diet or a taurine supplemented diet for 6 weeks. All rats were fed on calcium deficient diet (AIN-93: 50% level of calcium) and deionized water. Bone mineral density (BMD) and bone mineral content (BMC) were measured in spine and femur. The serum and urine concentrations of calcium and phosphorus were determined, Bone formation was measured by serum osteocalcin and alkaline phosphatase (ALP) concentrations, Bone resorption rate was measured by deoxypyridinoline (DPD) crosslinks immunoassay and corrected for creatinine. Urinary calcium and phosphorus excretion, osteocalcin in blood and cross link value were not significantly different among the groups. Within the OVX group, the taurine supplemented group had not higher femur bone mineral content than the control group. This study established the need for a study on the taurine effect on bone with different calcium levels.

  • Silk sericin protein was hydrolyzed by seven proteolytic enzymes in order to examine the effectiveness of the hydrolysates in binding calcium. The amino acid nitrogen content of hydrolysates from Flavourzyme was higher than that for other enzymes, and its calcium binding capacity showed a dose-dependent increase. We examined the effects of calcium binding peptide from sericin hydolysates on the bioavailability of Ca-deficient rats. Three-week-old male rats were fed an Ca-deficient diet for three weeks. Rats were divided into four groups (DD: non-treated group on calcium deficient diet; DD+MC: milk-calcium treated group; DD+OC: organic calcium made using sericin hydolysates; and DD+IC: inorganic calcium ($CaCl_2$). After oral administration of calcium supplements for one week, the calcium content of the serum and liver were significantly higher in DD+OC ($101.7{\mu}g$/mL and $49.3{\mu}g$/mL) and DD+MC ($83.6{\mu}g$/mL and $42.8{\mu}g$/mL) than DD ($86.3{\mu}g$/mL and $43.4{\mu}g$/mL). The alkaline phosphatase (ALP) content in the treated groups was significantly lower than DD, but no significant difference among groups was shown. Aspartate aminotransferase (AST) levels did not show any significant difference between groups. Alanine aminotransferase (ALT) levels were significantly reduced compared to the DD group. In conclusion, binding calcium to peptides from sericin hydrolysates seems to improve its bioavailability, and to hasten the cure of calcium deficiency in experimental rats.

  • This study was carried out to investigate the mineral content of the feces of the $5^th$ instar larvae in a few silkworm species such as a parent domestic silkworm (Jam134), a hybrid (Kumok-jam), the Japanese oak silkworm, and the Chinese oak silkworm. The major minerals of all silkworms throughout all $5^th$ instar larval period are K, P, Mg and Ca, and the result is consistent with the previous study of the mineral content in the mulberry leaves. Although the calcium content decreased sharply at $7^th$ day of the $5^th$ instar, the crude protein content significantly increased at the same age in both domestic silkworms, suggesting a direct relationship between feeding behavior of the silkworms at the larval period and mineral/protein contents. However, this trend was not observed in both oak silkworms. In the comparison of the mineral content among silkworm species, two domestic silkworms were significantly higher in the calcium content compared with two oak silkworms, and the hybrid Kumok-jam was further higher significantly than the feces of parental Jam 143. Excluding the calcium content, overall no significant content variation in other minerals was observed among four silkworm species studied in this study.
