  • The purpose of this study is to analyze the proximate components (water, crude ash, crude protein, crude fat, and carbohydrates) and nutritive components (vitamin A, C, E, minerals, amino acids, and fatty acids) of rice flour and develop several rice bread recipes using rice flour. The water, crude ash, crude protein, crude lipid, carbohydrate contents of rice flour were measured to be 8.53%, 0.10 g, 6.80 g, 0.14 g and 84.43 g, respectively. No vitamin A was detected in the rice flour, and vitamin C and E contents were found to be 8.30 and 0.3467 mg/100 g, respectively. Calcium, potassium, magnesium, iron, and sodium contents were measured as 6.23, 65.05, 9.78, 0.17 and 2.84 mg/100 g; the large amount of potassium helps to discharge the sodium. Rice flour has nine kinds of essential amino acids in it; essential amino acids form 45.15% of rice flour's content. which is higher than 32.3%. Fatty acids were barely detected in the rice powder; saturated fatty acids were measured as 31.25 mg/100 g, and unsaturated fatty acids as 25.54 mg/100 g. Regarding essential fatty acids, linoleic acids were measured as 41.01 mg/100 g, and linolenic acids as 2.20 mg/100 g. The researcher used rice loaf bread as the base and developed rice bread recipes using rice flour to make a total of 11 items: 8 items with 75% rice flour (rice bagel, rice sweet red-bean bread, rice butter roll bread, rice mocha bread, rice buttertop bread, rice custard cream bread, and rice streusel), 2 items with 80% rice flour (stollen and rice hobbang), and 1 item with 85% rice flour (rice donut).

  • The amount of the milk clotting enzyme which is produced by Dothiorella ribis in wheat bran was 950 Soxhlet units per gram of wheat bran. The milk clotting activity of this enzyme was increased by the elevation of clotting temperature and by the increase of the addition of $CaCl_2$ to milk. It was also increased when the pH of milk was lower than that of the fresh milk. When milk was diluted by distilled water, the milk clotting activity of the enzyme was decreased. And its milk clotting activity was good when milk was pasteurized at low temperature. The enzyme of Dothiorella ribis has larger proteolytic activity per Soxhlet unit than that of the milk clotting enzyme of Mucor pusillus Lindt. This enzyme was rather stable between pH 6 and pH 8 when it was conditioned for ten minutes. The heat stability of enzyme was tested by treating it under the condition for $10{\sim}60$ minutes. And the enzyme was stable under the temperature of $45^{\circ}C$. Also the recovery of protein as a form of curd was 76.2 percent to the total protein content of milk.

  • A series of samples in the $Nd_{1-x}Ba_xFeO_{3-y}$ system has been prepared by heating the reactants to$1200^{\circ}C$ under an ambient atmosphere, and the solid solutions were identified by X-ray power diffraction analysis. The crystal systems of samples with x = 0.00 and 0.25 were found to be orthorhombic whose local symmetry is similiar to the distorted octahedral with orthoferrite type one, whereas those with x = 0.50 and 0.75 to be the cubic system. Since Fe ions in the solid solutions are a mixed valence state between $Fe^{3+}\;and\;Fe^{4+}$ ions, the nonstoichiometric chemical formulas could be determined from the mole ratio of $Fe^{4+}$ ion and oxygen vacacies. According to the Mossbauer spectroscopic analysis, the presence of 5-coordinated $FeO_5$ was evidenced only in the barium compounds along with $FeO_6,\;and\;FeO_4$, but not in the strontium and calcium compounds. The samples with x = 0.25 and 0.50 show a spectrum of superparamagnetism, which might be due to the formation of a domain of the ferromagnetic interaction between the $Fe^{3+}\;and\;Fe^{4+}$ ions. The electrical conductivities of all samples are within semiconducting range. Since the $Fe^{4+}$ ion acts as an electron acceptor level during the electron transfer between the Fe through intermediate $O^{2-}$ ions, the activation energy of the compounds decreases with the increment of $Fe^{4+}$ content.

  • This study was conducted to investigate the influence of dietary activated carbon(0.9%) and fish oil(0, 1, 2, 4%) addition on the feed efficiency, blood-cholesterol, proximate composition, pH and minerals in breast and thigh of chicken meat. Broilers were randomly assigned to one of the five dietary treatment: 1) Control (commercial feed) 2) T1(commercial feed supplemented with 0.9% activated carbon) 3) T2 (commercial feed with 0.9% activated carbon and 1% fish oil) 4) T3 (commercial feed with 0.9% activated carbon and 2% fish oil) 5) T4 (commercial feed with 0.9% activated carbon and 4% fish oil). They were fed with one of the experimental diets for five weeks and slaughtered. After that, the meat samples were vacuum packaged and stored over a period of 10 days at 4$\pm$1$\^{C}$. When broilers were fed with dietary activated carbon and fish oil, the feed efficiency of birds were higher compared with that of control diet. The blood cholesterol was tended to decrease in dietary activated carbon and fish oil(p<0.05). However, effects of diets containing graded levels of activated carbon and fish oil on proximate composition were not found(p>0.05). The pH of all treatments significantly increased during the storage periods. The activated carbon and fish oil diet increased the calcium, potassium and sodium content of chicken meat, and tended to increase total mineral contents.

  • To investigate sedimentary facies and environmental changes of the Nakdong River Estuary and its adjacent coastal area, the grain size analysis and measurement of organic matter, calcium carbonate, clay mineral and metallic elements were carried out for forty surface sediment samples. Based on regional distribution pattern and characteristics of the surface sediments, sedimentary facies in the study area can be divided into sand facies (TYPE I), mud facies (TYPE II) and sand-mud mixed facies (TYPE III). TYPE III is the transition of TYPE I and TYPE II in every aspects of sediment characteristics. It suggests that TYPE III may have been formed by the mixture of two different source of sediment : one derived from Nakdong River and the other resuspended fine-grained sediments from the Jinhae Bay by winnowing action during floods or storms. Among many aspects of environmental change after the construction of the Nakdong Barrage, the most significant is the increase of sand content off the sand barrier region. It could be explained by several reasons including decreased input of fine-grained sediment from river, increased hydrodynamic energy level off the sand barrier region and artificial effects such as dredging and dumping.

  • Simulated acid rain (pH 4.0, pH 2.0) containing sulfuric and nitric acid in the ratio of 60:40 (chemical equivalent basis) diluted with underground water, and underground water (pH 6.5) as control were treated on potted Pines koraiensis seeds during the growing season (May 1 to August 31) in 1985. The regime of artificial acid rain, in terms of spray frequency and amount per plot, was simulated on the basis of climatological data averaged for 30 years of records. The seedling growth, contents of chemical substances in needles and chemical properties of the tested soil were compared among the various pH levels of acid rain on October 31, 1985. Following results were obtained. 1. With decreasing pH levels of acid rain, S and $K_2O$ contents in leaf tissue were increased, but MgO and $P_2O_5$ contents were decreased. 2. Soil pH was dropped, and exchangeable aluminum content in the tested soil was dramatically increased as the pH levels of acid rain decreased. 3. Exchangeable calcium, magnesium, potassium contents, and base saturation degree of the soil were significantly decreased with decreasing pH levels of acid rain. 4. Sulfate concentrations in the soil were significantly increased as rain pH decreased, but total nitrogen and available phosphate contents were not influenced by acid rain.

  • Background: Ginsenoside Rd (GSRd), one of the most abundant ingredients of Panax ginseng, protects the heart via multiple mechanisms including the inhibition of $Ca^{2+}$ influx. We intended to explore the effects of GSRd on L-type $Ca^{2+}$ current ($I_{Ca,L}$) and define the mechanism of the suppression of $I_{Ca,L}$ by GSRd. Methods: Perforated-patch recording and whole-cell voltage clamp techniques were applied in isolated rat ventricular myocytes. Results: (1) GSRd reduced $I_{Ca,L}$ peak amplitude in a concentration-dependent manner [half-maximal inhibitory concentration $(IC_{50})=32.4{\pm}7.1{\mu}mol/L$] and up-shifted the current-voltage (I-V) curve. (2) GSRd ($30{\mu}mol/L$) significantly changed the steady-state activation curve of $I_{Ca,L}$ ($V_{0.5}:-19.12{\pm}0.68$ vs. $-6.26{\pm}0.38mV$; n = 5, p < 0.05) and slowed down the recovery of $I_{Ca,L}$ from inactivation [the time content (${\zeta}$) from 91 ms to 136 ms, n = 5, p < 0.01]. (3) A more significant inhibitive effect of GSRd ($100{\mu}mol/L$) was identified in perforated-patch recording when compared with whole-cell recording [$65.7{\pm}3.2%$ (n = 10) vs. $31.4{\pm}5.2%$ (n = 5), p < 0.01]. (4) Pertussis toxin ($G_i$ protein inhibitor) completely abolished the $I_{Ca,L}$ inhibition induced by GSRd. There was a significant difference in inhibition potency between the two cyclic adenosine monophosphate elevating agents (isoprenaline and forskolin) prestimulation [$55{\pm}7.8%$ (n = 5) vs. $17.2{\pm}3.5%$ (n = 5), p < 0.01]. (5) 1H-[1,2,4]Oxadiazolo[4,3-a]-quinoxalin-1-one (a guanylate cyclase inhibitor) and N-acetyl-$\small{L}$-cysteine (a nitric oxide scavenger) partly recovered the $I_{Ca,L}$ inhibition induced by GSRd. (6) Phorbol-12-myristate-13-acetate (a protein kinase C activator) and GF109203X (a protein kinase C inhibitor) did not contribute to the inhibition of GSRd. Conclusion: These findings suggest that GSRd could inhibit $I_{Ca,L}$ through pertussis toxin-sensitive G protein ($G_i$) and a nitric oxide-cyclic guanosine monophosphate-dependent mechanism.

  • Background: Blind and excessive application of fertilizers was found during the cultivation of Panax notoginseng in fields, as well as increase in root rot disease incidence. Methods: Both "3414" application and orthogonal test designs were performed at Shilin county, Yunnan province, China, for NPK (nitrogen, phosphorus, and potassium) and mineral fertilizers, respectively. The data were used to construct the one-, two-, and three-factor quadratic regression models. The effect of fertilizer deficiency on root yield loss was also analyzed to confirm the result predicted by these models. A pot culture experiment was performed to observe the incidence rate of root rot disease and to obtain the best range in which the highest yield of root and saponins could be realized. Results: The best application strategy for NPK fertilizer was $0kg/667m^2$, $17.01kg/667m^2$, and $56.87kg/667m^2$, respectively, which can produce the highest root yield of 1,861.90 g (dried root of 100 plants). For mineral fertilizers, calcium and magnesium fertilizers had a significant and positive effect on root yield and the content of four active saponins, respectively. The severity of root rot disease increased with the increase in soil moisture. The best range of soil moisture varied from 0.56 FC (field capacity of water) to 0.59 FC, when the highest yield of root and saponins could be realized as well as the lower incidence rate of root disease. Conclusion: These results indicate that the amount of nitrogen fertilizer used in these fields is excessive and that of potassium fertilizer is deficient. Higher soil moisture is an important factor that increases the severity of the root rot disease.
