A Study on the Status of Onion and Nutrients Intake and Distribution of Serum Lipid Levels for Muan-gun Inhabitants (무안군 주민의 양파와 영양소 섭취 실태 및 혈청 지질 농도의 분포에 관한 연구)

  • The purpose of this study was to investigate the anthropometric variables, dietary behaviors, nutrient intakes and distribution of serum lipid levels for Muan-gun inhabitants. The subjects was consisted of 212 men and 317 women. There were significant differences in the height, weight, BMI and fat mass with ages. In the onion intake status. 90.6(79.9)% of men(women) liked. 56.8(46.4)% of men(women) intakes 3 times per day, 29.6(40.8)% of men(women) 50g per one time and 83.1(87.5)% of men (women) after cooking. The mean energy intake of the subjects were 2,043㎉ for men and 2,105㎉ for women. Men (women) consumed 88(90)g protein. 34(38)g lipid, 340(355)g carbohydrate, 10.5(11.7)g fiber, 655(757)mg calcium. 1,396(1,421) mg phosphorous. 14.7(15.9)mg iron. 7.061(7,244)mg sodium, 3.597(3,704)mg potassium, 1.983(1,369)RE retinol, 1.4(1.5)mg thiamin. 1.1(1.4)mg riboflavin. 19.4(20.4)NE niacin. 172(160)mg ascorbic acid and 232(239) mg cholesterol. respectively. The level of triglyceride(TG) was 136.0(114.2)mg/dl, total cholesterol(TC) was 179.1(174.9)mg/dl HDL-C was 43.3(43.3)mg/dl, LDL-C was 109.6(107.9)mg/dl. VLDL-C was 26.8(22.8)mg/dl and AI was 3.2(3.0) And 68.1(79.0)% of men(women) were assessed as Normocholesteroiemia(NC) and 66.2(69.9)% of men(women) as Normotriglyceridemia (NTG). Most of the subjects in Muan-gun preferred and ate onions routinely and had normal range of serum cholesterol and triglyceride level. Therefore it is suggested that intake of onions is effective for decreasing the serum cholesterol and TG levels.

Effects of a Low-Calorie Raw Juice Diet on the Level of Serum Ferritin in Korean Adults (저열량 생즙 식이가 성인의 혈청 페리틴 농도에 미치는 영향)

  • This study examines the effects of a low-calorie raw juice diet on the level of serum ferritin in adults and analyzes nutrient intake from the diet. There were significant differences between juices; the highest calorie was provided by pear juice, highest crude protein, vitamin A, and vitamin B2 levels were from green Juice 1; and highest vitamin C and vitamin B1 levels were from fruit juices. The ratio of estimated energy requirements (EER) for the participants was 56.2% from the raw juice diet. The percentages of recommended intake (RI) from the raw juice diet of protein (57.9%), dietary fiber (19.1%), niacin (6.2%), calcium (0.1%), and magnesium (0.2%) were lower than 75%. However, those of RI of vitamin A, vitamin B1, vitamin B2, vitamin B6, and vitamin C were 1796.5%, 7481.7%, 1915.5%, 30858.7%, and 7500%, respectively, exceeding the tolerable upper intake level (UL) for vitamin A, vitamin B6, and vitamin C. There were significant decreases in weight, the body mass index (BMI), body fat mass, and skeletal muscle mass in males and females. After the diet program, serum iron and SOD (superoxide dismutase) showed significant decreases, whereas RBC, hemoglobin, hematocrit, and serum ferritin showed significant increases. There were negative correlations between serum ferritin and weight and between serum ferritin and skeletal muscle mass for all participants. There were negative correlations between serum ferritin and skeletal muscle mass for males and between serum ferritin and body fat mass for females. These results suggest that a raw juice diet can supplement a regular diet to prevent excess or deficient nutrient intake.

A Survey on Nutrient Intakes by Infant Formula and Supplemental Foods of Formula-Fed Infants (인공영양아의 조제유 및 이유식 섭취에 따른 영양소섭취 실태조사)

  • This study was to investigate the nutrient intakes from infant formula and supplemental foods of 129 infants(boys 69, girls 60) fed formula, aged from 5 to 12 months. Subjects were divided into $5{\sim}6\;months,\;7{\sim}8\;months,\;9{\sim}10\;months,\;and\;11{\sim}12\;months$ by ages. Dietary assessment was carried out by using 24-hour-recall method. The average intakes and feeding frequency of infant formula were $702m{\ell}$, 4.4 times in boys and $815m{\ell}$, 4.8 times in girls, respectively. Supplemental foods were introduced at the age of $4{\sim}6\;months$ in 86% of the infants. Foods introduced first as the supplemental food were rice gruel soup, commercial weaning foods, fruit juice. Energy intakes were similar to RDA. Daily intakes of calcium at all age groups were higher than the RDA, therefore, calciun overnutrition were elucidated. Average intakes of protein, phosphorus, iron, zinc, vitamin A, vitamin $B_1,\;vitamin\;B_2$, niacin, vitamin $B_6$, vitamin C were above RDA, folate did not meet RDA of infants at all ages. In conclusion, the average status of nutrient intakes of infants was fairly good, however, nutrient intakes from supplemental foods were lower in girls than in boys of $10{\sim}12$months, and folate status seemed to be poor. Therefore, mothers feeding infant formula to their infants should be educated for the importance of supplemental foods and its practice to support good nutrition.

Quality Characteristics of Sulgidduk by the Addition of Tofu (두부를 첨가한 설기떡의 품질 특성)

  • We prepared Tofu-sulgi by adding tofu and then analyzed the final product in terms of its nutritional quality, rheological characteristics and sensory tests. While the calorie quantity of Sulgi with Tofu was relatively low compared to that of Baeksulgi, it contained the dietary fiber, calcium and iron that were not present in Baeksulgi. Since Baeksulgi holds a large amount of carbohydrates, it shows a higher weight due to its dense fiber. On the other hand, Sulgi with Tofu showed a relatively low level of tofu protein despite the increased amount of tofu protein. This demonstrated the soft characteristics of Sulgi with Tofu. Also, the results of the sensory test showed that Sulgi with Tofu exhibited a higher preference than Baeksulgi in terms of its taste, flavor and fiber content. The preparation method of Sulgi with Tofu in this study used the natural grinding of tofu without removing the moisture. Also the use of both non-glutinous and glutinous rice flour that can be obtained easily in the public market, are convenient due to their characteristics of easy storage and no property change. Therefore, the preparation method of Sulgi with Tofu is quite convenient as compared to that of traditional Dduk (Korean rice cake) including Baeksulgi. From the perspectives of nutritional content, rheological characteristics and taste preference, Sulgi with Tofu fared better than Baeksulgi. Considering the overall quality characteristics of Sulgi with Tofu, we believe that the addition of tofu could contribute positively toward the quality characteristics of Sulgi.

Effect of dietary gamma-linolenic acid on milk production in cow

  • Recently, research has been focusing on high quality and safer animal production by utilizing natural functional materials. The aim of this study was to evaluate the effect of administration of natural Evening Primrose Oil (EPO) on gamma linolenic acid (GLA) levels in milk from Holstein dairy cows. Quality and quantity of milk as well as blood and fatty acids from Holstein cow fed diets supplemented with 2.7-4% calcium-salted EPO coated with palm stearin oil were analyzed. There was no significant difference in yield and composition of milk between control and EPO treatment. However, EPO treatment lowered blood aspartate aminotransferase (AST), somatic cell count (SCC), and cholesterol levels (p < 0.05) compared to untreated control. Blood urea nitrogen (BUN) level was decreased (p < 0.05) in GLA 1 and GLA 2 group when compared with control group. Non-esterified fatty acids (NEFA) concentration was lower (p < 0.05) in GLA 1 and GLA 2 groups than in control group. The level of GLA in milk was increased in EPO group when compared to control. Therefore, results from the present study demonstrate that supplementary EPO has beneficial effects on cow health, showing a decrease in somatic cell count and levels of blood cholesterol, alanine aminotransferase (ALT), and AST. Furthermore, supplementation of EPO improves milk quality with increased amounts of GLA.

Evaluation of Dietary Behavior among Elementary School Students in Seoul Area Using Nutrition Quotient for Children (어린이 영양지수를 이용한 아동의 식행동 특성 평가 - 서울지역 일부 초등학생을 중심으로 -)

  • This study investigated the food behavior and nutritional status of children using the Nutrition Quotient (NQ). The subjects for this study were 974 students and their parents who lived in Seocho-gu, Gwanak-gu, and Dongjak-gu, Seoul. The average NQ score of the subjects was 68.3, which was a medium grade. The mean scores for balance and moderation were above the thresholds, whereas the mean scores for diversity, regularity, and practice did not reach the thresholds. According to the results of evaluation by NQ, the subjects may have insufficient intake of calcium, iron, potassium, zinc, vitamin A, and vitamin C. NQ and NQ factors were different according to the general characteristics and home background characteristics of the subjects. The mean scores for the moderation factor was significantly lower as the eating out frequency increased (p<0.001). The mean scores for balance, moderation, and regularity factors were significantly higher, with higher parents educational level. It is necessary to choose diverse side dishes, vegetables and also foods with balanced nutrition when eating out.

A Study on Nutrition Intake Related to Food Habit and Family Environmental Factor of High School Girls in Seoul (서울시내 일부 여고생의 食行動 및 家族環境과 관련된 營養攝取樣相 조사연구)

  • The purpose of this study was to investigate nutrition intake of high school girls related to food habit, physical status, family environmental factor. The survey of 216 high school girls, aged 15 to 17 years old in Seoul area was conducted from April, 21 to 30, 1986. Food habit and family environmental factor were researched by means of questionnaires and nutrition intake was surveyed. by recording the kinds, amounts and ingredients of foods taken by the girls for two days, and height and weight were also measured during the period. The findings are summarized as follows: 1. Mean value of height and weight of the girls were 157.6cm and 50.9kg. 2. Number of family members per household was 5.2. Mean value of father's age was 47.1 and mean value of mother's age was 43.6. 44.9% of the girls had fathers who graduated the college, 41.6% of the girls had mothers who graduated the high school and 29.2% of the girls had mothers who had the job. 3. Breakfast missing rate was high, most of the reason for breakfast missing was 'have no time to eat' and time for breakfast was short. 64.4% of the girls had meal irregularly. 4. Mean daily intake of all nutrients except vitamin A and riboflavin was higher than Recommended Dietary Allowances. Mean caloric intake was 89.8% of R.D.A.. Breakfast intake of energy and most of nutrients was less than snack. Mean meal balance score was 47.9 and mean food diversity score was 13.4. 5. Mother's education level was related to intake of protein and calcium and height. Breakfast and lunch missing and number of snack intake were related with nutrition intake.

Nutritional Evaluation of Full-fat Sunflower Seed for Broiler Chickens

  • Two experiments were conducted to evaluate the use of various levels of full-fat sunflower seeds (FFSS) on broiler performance and carcass characteristics. In the first experiment, FFSS was included in a basal diet at 70, 140, and 210 g/kg and the $AME_n$ values of the experimental diets were determined. The linear regression equation of $AME_n$ values on rate of inclusion was calculated. Extrapolation value for the $AME_n$ of FFSS at 100% inclusion was 14.22 MJ/kg. In the second experiment, diets containing various levels (0, 70, 140, and 210 g/kg) of FFSS were given to broilers (Ross strain) from 0 to 49 d. At 28 days of age, blood parameters and digestive enzyme activities were determined and carcass parameters were evaluated at 49 days of age. Weight gain, feed intake and feed conversion ratio (FCR) were improved (p<0.05) when broilers were fed various levels of FFSS in the starter and finisher diets. Breast, thigh, gastrointestinal tract and gizzard weight percentages were not affected by dietary treatments; however, liver weight percentage was decreased significantly (p<0.05) and weight of abdominal fat decreased but this effect was not significant. The activities of digestive enzyme (protease and ${\alpha}$-amylase) were not influenced by the treatments. Activity of alkaline phosphatase, concentrations of calcium, phosphorus, glucose, triglyceride, protein, high density lipoprotein (HDL) and low density lipoprotein (LDL) were not affected by incorporation of FFSS in the broiler diet. Although concentration of HDL increased and LDL decreased, these effects were not significant. The results of this study indicate that FFSS can be used at up to 21% in broiler diets without adverse effects on performance or other parameters of chickens.

Effects of xylanase supplementation to wheat-based diets on growth performance, nutrient digestibility and gut microbes in weanling pigs

  • Objective: This study was designed to investigate the effects of an Aspergillus sulphureus xylanase expressed in Pichia pastoris on the growth performance, nutrient digestibility and gut microbes in weanling pigs. Methods: A total of 180 weanling pigs (initial body weights were $8.47{\pm}1.40kg$) were assigned randomly to 5 dietary treatments. Each treatment had 6 replicates with 6 pigs per replicate. The experimental diets were wheat based with supplementation of 0, 500, 1,000, 2,000, and 4,000 U xylanase/kg. The experiment lasted 28 days (early phase, d 0 to 14; late phase, d 15 to 28). Results: In the early phase, compared to the control, average daily gain (ADG) was higher for pigs fed diets supplemented with xylanase and there was a quadratic response in ADG (p<0.05). In the entire phase, ADG was higher for the pigs fed 1,000 or 2,000 U/kg xylanase compared to the control (p<0.05). The gain to feed ratio was higher for pigs fed diets supplemented with 1,000 or 2,000 U/kg xylanase compared to the control (p<0.05). Increasing the amount of xylanase improved the apparent total tract digestibility of dry matter, crude protein, neutral detergent fiber, calcium, and phosphorus during both periods (p<0.05). Xylanase supplementation (2,000 U/kg) decreased the proportion of Lachnospiraceae (by 50%) in Firmicutes, but increased Prevotellaceae (by 175%) in Bacteroidetes and almost diminished Enterobacteriaceae (Escherichia-Shigella) in Proteobacteria. Conclusion: Xylanase supplementation increased growth performance and nutrient digestibility up to 2,000 U/kg. Supplementation of xylanase (2,000 U/kg) decreased the richness of gut bacteria but diminished the growth of harmful pathogenic bacteria, such as Escherichia-Shigella, in the colon.

Role of Vitamin D Deficiency and Lack of Sun Exposure in the Incidence of Premenopausal Breast Cancer: a Case Control Study in Sabzevar, Iran

  • Background: Vitamin D has been suggested as one of the critical factors for female reproductive health with protective activities against different cancers but there are conflicting facts regarding its role on breast cancer without any clear data on premenopausal cases. This study aimed to evaluate the role of vitamin D from dietary sources and sunlight exposure on the incidence of premenopausal breast cancer. Materials and Methods: We conducted a case control study on 60 newly diagnosed premenopausal breast cancer patients and 116 normal women who lived in Sabzevar and surrounding villages in Razavi, Khorasan, a rural and conservative area of Iran. Results: The mean concentrations of 25-OH vitamin D in cases and controls were $15.2{\pm}8.15$ vs $15.5{\pm}7/45ng/ml$, both well below normal values elsewhere. In fact 50% of analyzed individuals showed very severe or severe vitamin D deficiency and the rest (25%) were detected in suboptimal levels. Although the lack of vitamin D and calcium supplementation increased slightly the risk of premenopausal breast cancer (p=0.009, OR=1.115, CI 95%=1.049-1.187), higher prevalence of weekly egg consumption (86.66% vs 96.55%, p=0.023, OR=0.232, CI 95% 0.065-0.806) showed a slight protective role. The last but the most important risk factor was lack of sunlight exposure because the breast cancer patients had total body coverage from sun (p=0.007, OR=10.131, CI 98% 0.314-78.102). Conclusion: This study pointed out the role of vitamin D and other possible risk factors on the development and growth of breast tumors in this special geographical region. Although this study has revealed the interactions between hormonal and environmental factors in this province of Iran, understanding the deficiency pattern and its contribution to other lifestyle factors elsewhere is also necessary.
