반응표면분석법에 의한 가공버터 제조의 최적화 및 Rheology 분석 (Optimization of the Manufacturing of Process Butter by Response Surface Methodology and Its Texture and Rheological Properties)

  • Using central composite design, we have designed optimization of the manufacturing of processed butter. And response surface analysis by least-square regression was used Statistical Analysis System(SAS). Central composite design can be achieved by response surface techniques that allow flexibility in modeling and analysis. Response surface methodology(RSM) was used to optimize hardness(%) using as independent variables; the content of butter($X_1$), ranging from 50 to 90(%), the content of soybean oil($X_2$), from 0 to 20(%), and the hydrogenated soybean oil($X_3$) from 0 to 4(%). The results on the regression coefficients calculated for overrun by response surface by least-square regression(RSREG) were followed. It was considered that the linear regression was significant(p<0.01). As for the processed butter, the regression model equation for the hardness(Y, %) to the change of an independent variable could be predicted as follow: $Y=60.88-8.92X_2-{29.3X_2}^2$. The optimal for the manufacturing of processed butter were determined at the content of butter of 88.22%, soybean oil of 6.71% and hydrogenated soybean oil of 2.36%, respectively. Optimum compositions were resulted in hardness of 65.78 N. Finally the reference sample(Butter in the morning, Seoul Dairy Co-op.) and processed butter manufacturing under the optimal conditions were compared with spreadability test. The spreadability scores result from reference sample and butter under optimal conditions was not found a significant difference.

착유 시간 및 유처리 공정이 우유 내 멜라토닌 함량에 미치는 영향 (The Effects of Milking Time and Dairy Processes on Melatonin Contents in Milk)

  • 본 연구는 숙면 유도 호르몬으로 알려진 멜라토닌의 원유 및 유제품 내 함량을 방사면역측정법으로 분석하였으며, 그 결과는 다음과 같다. 1. 착유 시간에 따른 멜라토닌 함량은 새벽 4시에 착유한 원유 샘플의 멜라토닌 함량이 평균 $6.90{\pm}3.55pg/mL$로 나타났으며, 저녁 7시 및 낮 12시 착유 원유 샘플은 각각 $2.01{\pm}1.47pg/mL$$0.16{\pm}0.04pg/mL$로 나타나 새벽 착유 원유 내 멜라토닌 함량이 유의적으로 높은 결과를 나타내었으며, 이는 로봇 착유기를 사용하는 농가에서도 심야 및 새벽 착유 원유에서 멜라토닌 함량이 가장 높게 나타나 2개 목장 모두 비슷한 결과를 나타내었다. 2. 일반 우유 제품과 나이트 밀크 제품 간 멜라토닌 함량비교 시, 나이트 밀크의 멜라토닌 함량이 약 5배 정도 높은 결과를 보였다. 3. 일반 우유를 대상으로 원유, 균질 및 살균 등의 공정이 멜라토닌 함량에 영향을 미치지 않는 것으로 나타났으나, 그 수준은 매우 낮은 농도로 존재하였다.

파노라마방사선사진에서 환자의 머리 위치가 하악 수직, 수평 확대율에 미치는 영향 : 전후방 및 좌우 이동 (Effect of Head Positioning in Panoramic Radiography on the Vertical and Horizontal Magnification : Displacement along the Sagittal and Transverse Plane)

  • 이 연구의 목적은 환자의 머리 위치에 따른 파노라마방사선사진의 수평 및 수직 확대율을 비교 평가하는 것이었다. 직경 4 mm인 금속구를 건조 두개골의 하악 전치부와 우측 대구치부의 치조골 상방에 위치시켰다. 수평 및 수직적 위치의 변화를 재현하기 위해 수직, 수평 이동량을 조절할 수 있는 두개골 고정장치를 이용하여, 전방, 후방, 좌측 및 우측으로 이동시킨 후 파노라마방사선사진을 OP-100D를 이용하여 획득하였다. 촬영된 영상은 DICOM 형식으로 저장되었고, INFINITT PACS software를 이용하여 금속구의 폭과 높이의 평균값을 구하였다. 적절한 위치에서 촬영된 파노라마방사선사진에서 금속구의 수평 확대율은 1.224-1.439였고, 수직 확대율은 1.286-1.345였다. 건조 두개골의 위치 변화에 따른 수평 확대율은 0.798-6.297로 통계적으로 유의한 차이를 보인 반면(P<0.05), 수직 확대율은 1.245-1.418 정도로 수평 확대율에 비해 차이를 보이지 않았다.

Exopolysaccharide 생성 유산균을 이용한 Stirred Yogurt 특성에 관한 연구 (Studies on the Properties of the Stirred Yogurt Manufactured by Exopolysaccharide Producing Lactic Acid Bacteria)

  • 본 연구에서는 EPS 생성 유산균인 S. thermophilus St-Body 1을 발효 온도 및 시간별로 EPS를 분리하여 발효 조건이 EPS 생성에 미치는 영향과 EPS 생성량이 stirred 요구르트의 점도, syneresis, 물성, 관능검사에 미치는 영향에 대하여 조사하였다. pH와 유산 함량 변화는 온도에 따라 다른 경향을 보였으며, 발효 온도가 높을수록 pH 감소가 빠르게 진행되고, 6, 12시간에 많은 유산이 생성되었다. 유당 함량은 발효 6시간 동안에 20∼40%가 이용되었고, 유산균수는 31℃에서 발효한 요구르트가 상대적으로 유산균수가 높은 것으로 나타났다. S. thermophilus St-Body 1은 발효 온도가 낮을수록 더 많은 EPS를 생성하고, 발효 12시간과 24시간에 많은 EPS를 생성하는 것으로 관찰되었다. 점도는 발효 시간이 증가할수록 점도가 증가하였으며, syneresis는 37℃에서 30시간 발효한 stirred 요구르트가 가장 적은 것으로 나타났다. 경도와 접착성은 발효가 진행될수록 증가하는 경향을 보였고, 점착성과 탄력성은 발효가 진행될수록 감소하였다. S. thermophilus St-Body 1로 발효한 요구르트의 관능검사 결과, 37℃, 24시간 발효한 요구르트가 풍미 6.25, 조직 4.25, 외관 3.50으로 가장 높은 수치를 나타내었다.

당근 종모 형질 관련 EST profiling과 이를 이용한 EST-SSR 및 SNP 마커 개발 (EST Profiling for Seed-hair Characteristic and Development of EST-SSR and SNP Markers in Carrot)

  • 당근($Daucus$ $carota$ L. var. $sativa$)은 세계적으로 널리 이용되는 작물 중 하나이다. 또한 Vitamin A의 전구체인 ${\beta}$-carotene의 함량이 높아 영양적으로도 주요한 작물이다. 하지만 종자 표피세포에서 생성되는 종자모는 종자발아시 흡수를 저해하며 발아를 억제하여 기계적인 제모작업을 거쳐 상품화되고 있다. 이러한 과정에서 발생하는 여러가지 단점을 보완하기 위해 무모종자 당근 품종의 육종이 필요하다. 따라서 본 연구는 단모종자 표현형 CT-ATR615 OP 666-13 개체와 control 유모종자 표현형 CR-ATR615 OP-CK1-9개체의 종자 cDNA library를 작성하여 EST sequence비교를 통해 표현형의 차이에 따라 종자모 형성에 관련하여 발현양상을 비교 분석하였다. BlastX 결과를 바탕으로 개체간 동일한 결과를 제외한 EST sequence를 각각 FunCat 기능별 category로 분류하였다. Metabolism category에서 단모종자 표현형 개체가 오히려 유모종자 표현형 개체보다 높은 발현량을 보이는 것을 확인하였으며, 단모 및 장모종자 개체간의 protein folding and stabilization, subcellular localization category에서 나타난 뚜렷한 발현량 차이는 종자모 형성에 많은 영향을 미치는 것으로 예측되었다. 또한 분석된 EST sequece를 바탕으로 개체별로 각각 50개 및 59개의 SSR site를 확인하였으며, 각각 2개씩의 SNP site를 확인하였다. 이들 SSR 및 SNP site의 primer 작성하여 마커로 개발하였으며, 이를 종자모 형성에 관련된 분자마커 개발에 이용하는 것은 물론 당근의 계통 분류 및 여러가지 형질 관련 분자 마커 연구에 활용 가능할 것으로 기대된다.

Statistical patterns of lipase activities on the release of short-chain fatty acids in Cheddar cheese slurries

  • Twenty-five commercial food grade and alalytical grade lipases were used to study the patterns of release of short-chain free fatty acids (FFA) from milk fat in cheese slurries. Principal component Analysis showed that there were four distinctive groups by the FFA ratios and five groups by the FFA concentrations. However, Average Linkage Cluster Analysis showed that the patterns of FFA released were dependent upon distance defined between groups of lipases. All the lipases tested with both statistical analysis had distinctive specificities in hydrolyzing short-chain FFA from milk fat. Lipases from ruminant-animal origins produced an extremely high ratio (>40%) of butyric acid and a low ratio (<26%) of capric acid to total short chain FFA. Lipases from porcinepancreas and some microbial origins showed balanced production in both bytyric and capric acid. However, most lipases from microbial origins released a high ratio of capric acid but similar ratios to other origin enzymes for short-chain free fatty acids. Ruminant-animal origin lipases produced short-chain FFA much higher in concentration than other lipases. Lipases from porcine pancreas as well as microbial origins showed different concentrations of the fatty acids. Ratios of short-chain FFA in each sample were not significantly changed during incubation periods (4 wk), whereas concentrations of the FFA increased considerably.

저가형 교류전동기 벡터제어 인버터를 위한 새로운 전류측정 방법 (A Novel Current Sensing Method for Low-Cost Vector-Controlled Inverter of AC Motor)

  • This paper proposes a new low-cost current detection method to implement vector-controlled inverter of 3-phase induction motor or permanent-magnet synchronous motor using 2 shunt resistors instead of expensive Hall current sensors. The proposed method can detect perfect phase currents without current-immeasurable area in all operating conditions of motor. This method uses 2 shunt resistors in Hall current sensor positions conventionally used to detect phase currents. Therefore, it requires accurate analog differential amplifiers to detect voltages across shunt resistors at high electric potential to ground. We show the good solutions which are implemented by voltage-divider resistors networks and the instrumentation amplifiers using several Op Amps at cheap price. Computer simulations and experiments were performed to confirm the effectiveness of proposed method. These results show that proposed method can perfectly detect phase currents without current-immeasurable area in all operating conditions of motor.

What Kind of Job Characteristics are Important for Improving Students' Competencies in Co-op Education : KoreaTech IPP Case

  • The purpose of this study was to examine the effect of on-site training environments and goals on learning outcomes of trainees. For this purpose, the study analyzed survey data collected from 752 students who participated in KOREATECH's Industry Professional Practice (IPP) on-site training program from 2017 to 2018. The following summarizes some important findings from the study results: First, on examining whether the effect of job characteristics on the academic competencies differs according to the characteristics of the group, it was found that the factors that affect the whole group were job content, coaching, and welfare benefits, but the effect of job scope was statistically significant. Second, on examining whether the effect of job characteristics on job competencies differs according to the characteristics of the group, it was found that the factors that affect the whole group were job content, coaching, and job scope, but the effect of welfare was statistically significant. Analyzing by training goals, it was found that the major influencers were job content in the Recruitment-intended group; and job content, coaching and job scope in the Training-intended group. Based on the results, the implications of the study and follow-up studies are suggested.

농촌 공동체 협업활동의 사회연결망분석 - 충남 홍성군 홍동 지역을 중심으로 - (Social Network Anaylsis of Collaborative Activity in Rural Community - Case study of Hong-Dong area in Chungman Province, South Korea -)

  • Rural development policy has changed from hardware based development to community revitalization. The purpose of this study is to analyze social network of collaborative activity among rural organizations as fundamental of community. The material used in this study is a record of collaborative activites in the community newsletter of Hong-Dong area. 161 of collaborative activities (links) and 75 of organizations (nodes) are investigated in network. 6 collaborative activity type ('Education', 'Socializing', 'Meeting', 'Culture', 'Event' and 'Labor') is classified. 'Socializing' is inclusive of approximately half of whole network (50.67%). Closeness centraization, degree centralization and betweenness centralization are measured on top in 'Education', 'Meeting' and 'Event' type. Scatter plot analysis using degree and betweenness centrality index, 'Maeul Revitalization Center', 'Balmak Library', 'Woori-Maeul Medical Co-op', 'Support Center for Female Farmers', 'Hongdong Middle School' and 'Mundang Sustainable Agriculture Education Center' are resulted as the core organization in network. Geographical distribution of collaborative activity is not only concentated in Hong-Dong Myeon but also networked with adjacent administrative district. This study finds its purpose in the detailed analysis of network characteristics of collaborative activity within Hong-Dong area which is representative developed rural community in Korea.

소비자의 친환경농산물 구매확대 결정요인 분석 (Determination factors of Purchase Expansion for Environment friendly Agricultural Products on Consumers)

  • This study was designrd to determination factors of purchase expansion for environment-friendly agricultural products on consumers. The 310 subjects formatted questionnaires were analyzed to frequency, percentage, descriptives, T-test and logistic regression by SPSS WIN 10.0. The results were as follows : First, it is proved that degree of cognition, standard of information acquisition, basis of valuation were significant variables, Second, it is revealed that the producer and the direct deal, the consumer organization's co-op and the food floor of large-sized discount hoarded goods for purchase places of environment-friendly agricultural products were significant variables. Third, it is proved that reduction in a price the improvement matter for purchase expansion of environment-friendly agricultural products was determination factors. Forth, it is proved that age and income for purchase expansion of environment-friendly agricultural products was determination factors. Accordingly, we should find the positive factors of purchase and consumption that it will become an important subject for environment-friendly agricultural products on consumers.
