김치를 이용한 스테이크소스의 휘발성 향기성분 (Analysis of Volatile Compounds in Kimchi-Flavored Steak Sauce)

  • 김치를 이용한 고기 스테이크 소스를 동시 증류 추출법을 이용해 얻은 휘발성 성분을 분석한 결과 23종의 성분이 분리 동정되었다. 분리동정된 화합물들 중에서 aldehydes가 5종으로 가장 많았고, alcohols 4종, acids가 4종, 함황화합물이 3종, ketone 1종 그외 기타화합물 6종으로 나타났다. 분리 동정된 성분들 중 eugenol 성분이 39.40%로 가장 많았고, 다음은 dodecanoic acid 4.91%, acetic acid 1.70%, methyl 2-propenyl disulfide 1.52%, hexanal 1.51%, 2-pentylfuran 1.18%를 차지하는 것으로 나타났다. 김치의 휘발성 성분 중 김치의 휘발성 향기 성분에는 diallyl disulfide, dimethyl trisulfide등의 sulfide류와 acetic acid, decanoic acid, dodecanoic acid 등의 acid류가 영향을 많이 미치는 것으로 나타났다. 시료를 3배씩 희석하여 실시한 olfactory 검사에서는 RI 값 1030에서 1357까지는 대체적으로 달콤한 사탕의 향기가 강하게 나타났고, RI 1561에서는 좋지 않은 냄새가 나타났으며, RI 2000에서는 alkane향이 GC/O에서 강한 시큼한 김치 냄새가 나타났다. RI 2057에서는 sweet한 냄새가 났었고, RI 2122에서는 clover향이 나타나 eugenol 화합물로 확인되었다. RI 2251에는 rancid 향이 강하게 나타났다. 따라서 김치를 주재료로 한 스테이크용 소스는 김치를 담근지 2주 정도가 경과된 $pH\;4.0{\sim}4.7$, 총산도 $0.5{\sim}0.8%$ 김치를 이용하여 소스로 만들었을 경우에 휘발성 성분의 품질에 영향을 미치며, 이를 이용하여 상품화한다면 우리나라 전통식품을 이용한 수출용 산업대체 식품으로 더욱 더 폭넓게 이용될 수 있을 것으로 사료된다.

생송이 버섯과 냉동송이 버섯의 품질 및 향기 성분 특성 (Characteristics of Quality and Volatile Flavor Compounds in Raw and Frozen Pine-mushroom (Tricholoma matsutake))

  • 등급별 송이 버섯과 $-20^{\circ}C$$-70^{\circ}C$에서 급속냉동한 후 저장한 송이버섯의 일반성분과 AromaScan 및 GC/MSD에 의한 향기 특성을 비교 조사하였다. 일반성분의 경우 냉동하지 않은 송이 버섯은 수분 함량 $89.48{\sim}90.77%$, 회분은 건물량으로 환산하여 등외품인 D시료를 제외하고 6.81%, 단백질 $16.19{\sim}20.01%$, 지방 $2.24{\sim}2.52%$로 등급에 따라 차이가 없었고, $-20^{\circ}C$$-70^{\circ}C$에서 6개월 저장한 냉동송이 버섯도 냉동하지 않은 송이 버섯과 각 성분에 있어서 큰 차이가 없었다. 전자코에 의한 향 패턴 분석과 다차원 판별 분석을 실시한 결과 생송이 버섯은 등급별 차이가 거의 없게 나타났으나, 냉동 저장한 등급별 송이 버섯의 경우 분별화되는 경향을 보였다. 또 등급별 송이 버섯 및 냉동 송이 버섯을 GC/MSD에 의한 향기 성분 분석 및 동정한 결과 50여개의 peak가 검출되었으며, 이중에서 29개의 성분이 동정되었다. 동정된 휘발성 향기 성분중 1-octen-3-ol, 2-octen-1-ol, 3-methy-butanal이 공통적인 성분이었고, 등급이 낮아질수록 1-octen-3-ol 함량이 감소하였다. 각 등급별 생송이 버섯 및 냉동 송이의 이취, 향미 등의 관능검사 결과 생송이 버섯은 등급간에는 차이가 없었으나, 냉동 송이는 A(1등급), B(2등급), C(3등급) 시료에 비하여 D(등외품)시료를 낮게 평가하였다.

젖산 처리에 따른 천마의 불쾌취 감소 및 Gastrodin 함량 변화 (Decrease in Intrinsic Objectionable Odors and Change of Gastrodin Contents in Lactic acid Treated Gastrodia elate Blume)

  • 전통적인 포제 방법을 이용하여 천마의 불쾌취 및 쓴맛, 비린맛 등을 제거하고, 천마의 주된 유효성분인 gastrodin과 p-hydroxybenzyl alcohol을 증가시키기 위한 연구를 시도하였다. 포제법의 일환으로 생천마와 건천마를 쌀뜨물과 젖산발효액에 침지하였으며 유의적인 결과를 얻었다. 이러한 결과가 침지액 중의 유기산 등에 의한 효과에 기인한 것으로 판단되어 대표적 유기산 10종을 선별하여 0.5%로 제조 한 후, 24시간동안 침지시켰다. 그 결과 젖산에 침지된 천마에서 가장 좋은 관능평가를 얻을 수 있었으며, 농도별로 젖산액 처리하였을 경우 1.0%에서 가장 좋은 관능평가를 얻었다. 또한 1.0% 젖산에 침지한 후 4시간 증자한 후 천마의 유효성분인 gastrodin, p-hydroxybenzyl alcohol의 함량이 약 20%가 증가되었으며, 기타 유효성분의 대부분 유의적 변화를 나타내지 않았다. 또한 젖산 침지에 따른 천마의 휘발성 향기성분을 측정한 결과 천마 불쾌취의 주성분이라고 판단되는 4-methylphenol과 butanal 등 총 11종을 분리하였다. 이러한 결과로 부터 천마의 관능 및 유효성분의 향상을 위한 전처리 방법으로 1.0% 젖산액에 생천마를 24시간 침지한 후 $98^{\circ}C$에서 4시간 증자 후 건조하는 방법이 가장 우수한 것으로 나타났다.

Comparison of reducing sugar content, sensory traits, and fatty acids and volatile compound profiles of the longissimus thoracis among Korean cattle, Holsteins, and Angus steers

  • Objective: This study was performed to compare fat content, reducing sugar contents, sensory traits, and fatty acid (FA) and volatile compound profiles in longissimus thoracis (LT) among Korean cattle (KC), Holstein (HO), and Angus (AN) steers. Methods: Twelve LT samples (about 500 g each) of KC with an average age of $31{\pm}0.42months$, an average carcass weight of $431{\pm}12.5kg$, and a quality grade (QG) of 1+ were obtained from the joint livestock products market. Twelve LT samples of HO cattle with an average age of $24{\pm}0.54months$, an average carcass weight of $402{\pm}7.81kg$, and a QG of 2 were also obtained from the same market. Twelve LT samples of AN steers with an average age of about 20 months and a QG of choice were purchased from a beef delivery company. After slaughter, samples were kept at $4^{\circ}C$ for 42 days and prepared for immediate analysis or stored at appropriate conditions. The chemical composition, color, pH, shear force, collagen content, reducing sugars, sensory evaluation, FA composition, and volatile compound content for each LT sample were analyzed. Results: The LT of KC had the highest (p<0.05) fat content, the highest reducing sugar content, and the highest scores in the sensory evaluation (flavor, tenderness, juiciness, and overall acceptance). All the sensory traits were positively correlated (p<0.001) with intramuscular fat and reducing sugar content. Several FAs and volatile compound profiles varied among the breeds. KC LT had the highest (p<0.05) concentrations of acetaldehyde, 3-methyl butanal, and 3-hydroxy-2-butanone, and these volatile compounds were positively correlated (p<0.05) with all the sensory traits. Conclusion: Variations in fat content and reducing sugar contents and FA and volatile compound profiles may contribute to differences in the sensory quality of LT among breeds.

쌀의 품질평가 현황과 금후 연구방향 (Trend and Further Research of Rice Quality Evaluation)

  • Rice quality is much dependent on the pre-and post harvest management. There are many parameters which influence rice or cooked rice qualitys such as cultivars, climate, soil, harvest time, drying, milling, storage, safety, nutritive value, taste, marketing, eating, cooking conditions, and each nations' food culture. Thus, vice evaluation might not be carried out by only some parameters. Physicochemical evaluation of rice deals with amy-lose content, gelatinizing property, and its relation with taste. The amylose content of good vice in Korea is defined at 17 to 20%. Other parameters considered are as follows; ratio of protein body-1 per total protein amount in relation to taste, and oleic/linoleic acid ratio in relation to storage safety. The rice higher Mg/K ratio is considered as high quality. The optimum value is over 1.5 to 1.6. It was reported that the contents of oligosaccharide, glutamic acid or its derivatives and its proportionalities have high corelation with the taste of rice. Major aromatic compounds in rice have been known as hexanal, acetone, pentanal, butanal, octanal, and heptanal. Recently, it was found that muco-polysaccharides are solubilized during cooking. Cooked rice surface is coated by the muco-polysaccharide. The muco-polysaccharide aye contributing to the consistency and collecting free amino acids and vitamins. Thus, these parameters might be regarded as important items for quality and taste evaluation of rice. Ingredients of rice related with the taste are not confined to the total rice grain. In the internal kernel, starch is main component but nitrogen and mineral compounds are localized at the external kernel. The ingredients related with taste are contained in 91 to 86% part of the outside kernel. For safety that is considered an important evaluation item of rice quality, each residual tolerance limit for agricultural chemicals must be adopted in our country. During drying, rice quality can decline by the reasons of high drying temperature, overdrying, and rapid drying. These result in cracked grain or decolored kernel. Intrinsic enzymes react partially during the rice storage. Because of these enzymes, starch, lipid, or protein can be slowly degraded, resulting in the decline of appearance quality, occurrence of aging aroma, and increased hardness of cooked rice. Milling conditions concerned with quality are paddy quality, milling method, and milling machines. To produce high quality rice, head rice must contain over three fourths of the normal rice kernels, and broken, damaged, colored, and immature kernels must be eliminated. In addition to milling equipment, color sorter and length grader must be installed for the production of such rice. Head rice was examined using the 45 brand rices circulating in Korea, Japan, America, Australia, and China. It was found that the head rice rate of brand rice in our country was approximately 57.4% and 80-86% in foreign countries. In order to develop a rice quality evaluation system, evaluation of technics must be further developed : more detailed measure of qualities, search for taste-related components, creation and grade classification of quality evaluation factors at each management stage of treatment after harvest, evaluation of rice as food material as well as for rice cooking, and method development for simple evaluation and establishment of equation for palatability. On policy concerns, the following must be conducted : development of price discrimination in conformity to rice cultivar and grade under the basis of quality evaluation method, fixation of head rice branding, and introduction of low temperature circulation.
