갈색양송이 인지도 제고를 위한 소비 성향 분석 (Analysis of trends in brown button mushroom consumption for raising awareness)

  • 갈색양송이는 백색양송이보다 병에 강하고 재배관리가 쉬워 농가에서 재배를 하고 싶지만, 아직 국내 소비자들의 인식이 부족하여 일부 친환경 농가에서만 재배를 하고 있는 실정이다. 이에 갈색양송이에 대한 1분정도의 동영상으로 사전 정보를 준 후 인지도와 선호도를 SNS로 설문조사를 실시하였고, 설문 응답자의 200명을 임의로 선정하여 식미평가를 진행하였다. 설문 응답자의 83%가 갈색양송이를 접한 적이 없다고 했으며, 동영상으로 정보를 접한 후 98%가 '맛에 대한 호기심'(44%)의 이유로 구매 의사를 밝혔다. 식미평가에서는 갈색양송이가 32%가 '맛있다', 31%가 '식감이 좋다', 28%가 '향이 좋다'로 응답하였다. 또한 섭취 후에 95%가 갈색 양송이 구매를 원하는 것으로 확인되었다. 이 결과로 갈색양송이에 대한 대중적 인식, 선호, 식미와 버섯에 영양성분과 기능성에 대한 정보가 소비로 이루어 진다는 것을 확인하였다.

  • 신품종으로 육성된 갈색양송이 '호감'품종은 RAPD분석에 의해 선발된 동핵균주 ASI 1164-37과 ASI 1175-66 균주를 교잡하여 3차례 선발을 통해 육성된 C34계통이다. 이 품종의 '호감'품종의 CDA배지에서 균사생장은 $25^{\circ}C$에서 가장 좋았으며, 버섯발생온도와 버섯생육온도는 $14{\sim}18^{\circ}C$가 최적온도였다. 형태적 차이로는 갓과 대의 두께가 2010년도에 육성된 '다향'보다 두꺼웠으며, 갓은 밝은 갈색을 보였다. '호감' 품종은 '다향'에 비해 초발이일수와 수확기간이 3일 더 길었지만, 개체중은 1.35배 증수되었으며, 이 품종은 국내 양송이품종의 다양화에 기여할 것으로 여겨진다.

백색양송이와 갈색양송이의 영양성분 및 생리활성 성분 비교 분석 (Comparative Analysis of the Nutritional and Bioactive Components of White and Brown Button Mushrooms)

  • 전염병확산에 따라 건강에 대한 중요성이 높아지면서, 기능성이 소비자들의 버섯 구매에 중요한 요소로 작용하고 있다. 양송이 소비촉진을 위한 기능성 정보를 알리기 위해 백색 느티만가닥버섯를 대조구로 백색양송이와 갈색양송이로 구분하여 영양성분 및 생리활성 성분을 비교 분석하였다. 백색양송이는 갈색양송이에 비해 당도와 무기성분인 칼륨이 높았으며, 나트륨과 마그네슘, 비타민 C는 갈색양송이와 유의적인 차이가 없었다. 또한 Ergosterol 함량은 백색양송이가 갈색양송이 대비 약 2배정도 높은 것으로 확인되었다. 갈색양송이는 백색양송이에 비해 𝛽-Glucan, 유기산인 oxalic acid가 높았지만, 총 유기산 함량은 유의적 차이가 없었다. 또한, 아미노산은 Ergothionein, Isoleucine, Leucine, Glycine, Alanine, 비타민은 B 그룹, 그리고 총 폴리페놀 함량이 갈색양송이가 백색양송이보다 높았다.

  • This study was conducted to provide a fundamental information for commercial, medical usage and mushroom gene prezervation. The results of study are as following: 1. There were mushrooms of 53 families, 141 genus, 318 species at Mt. Palgong. 2. There were main edible mushroom of 63 species, main medicinal mushroom of 16 species, white rot fungus of 36 species and brown rot fungus of 4 species and Poisonous mushroom of 13 species at Mt. Palgong. 3. Poisonous mushrooms that are growing naturally at Mt. Palgong were Lampteromyces japonicus Sing, Amanita pantherina Krombh, Amanita phalloides Link, Naematoloma Krast and Amanita volvata Martin. 4. Numbers of mushroom species that are growing naturally at Mt. Palgong more than other regions.

팽이버섯 생육온도에 따른 자실체의 특성 변화 (The change on characterizations of fruiting body according to the growing temperature in Flammulina velutipes)

  • Total eight different winter mushroom (Flammulina velutipes) strains were characterized by comparisons of fruiting body morphology, hardness and color after growing at different temperature. Although variations depending on the strains were observed, in general, both stipe length and pilus diameter were shorter while pilus thickness was bigger as growing temperatures were decreased. No significant differences in stipe thickness were observed. The ASI4065 and 4151 had the tallest stipe and the ASI4021 had the shortest stipe. The ASI4103 strain had the biggest pilus diameter. The ASI4153 had most thick pilus, while the ASI 4021 had least thick pilus. Also, the ASI4166 had the most thick stipe and the ASI4065 had the most thin stipe. The hardness of white mushrooms were increased by decreasing growth temperatures, while no relationships between the hardness of brown mushrooms. In most strains, stipe were much stronger than pilei and white mushrooms were harder than brown ones. The strain having most strong stipe was ASI4021. Both ASI 4021 and ASI4166 had the most strong pilus. The color of pilus has much lighter than that of stipe. White mushrooms had high brightness value ranging from 70-90, while brown mushrooms showed low brightness value from 30-70. Saturation value was higher in brown mushrooms. Based on our study, it was shown that environmental conditions had some effects on winter mushrooms, but genetic differences among strains were more important factors to determine most characteristics of winter mushrooms.

Various Pathogenic Pseudomonas Strains that Cause Brown Blotch Disease in Cultivated Mushrooms

  • Brown blotch disease in cultivated mushrooms is caused by Pseudomonas tolaasii, which secretes a lipodepsipeptide, tolaasin. Tolaasin is a pore-forming toxin in the cell membranes, thus destroying the fruiting body structure of mushroom. In this study, we isolated pathogenic bacteria from mushrooms that had symptoms of brown blotch disease. In order to identify these bacteria, their 16S rRNA genes were sequenced and analyzed. Pathogenic bacteria identified as Pseudomonas species were thirty five and classified into five subgroups: P1 to P5. Each subgroup showed different metabolic profile measured by API 20NE kit. Fifty percent of the bacteria were identified as P. tolaasii (P1 subgroup). All five subgroups caused the formation of brown blotches on mushroom tissues and the optimum temperature was 25oC, indicating that they may be able to secrete causal factors, such as tolaasin and similar peptide toxins. These results show that there are at least five different pathogenic Pseudomonas species as blotch-causing bacteria and, therefore, strains from the P2 to P5 subgroups should be also considered and studied as pathogens in order to improve the quality and yield of mushroom production.

Characteristics and pathogenicity of Cladobotryum mycophilum isolated from cobweb disease of button mushroom (Agaricus bisporus) in Korea

  • Cobweb disease symptoms were observed in a mushroom farm in Buye, Korea during a disease survey in 2008-2011. Five isolates of Cladobotryum sp. were obtained from the infected caps and stipes. These isolates of Cladobotryum sp. were identified as C. mycophilum based on their morphological, cultural characteristics and analysis of the ITS sequences. Early symptoms were noticed as round, fleshy, yellowish brown lesions on mushroom caps. Late symptoms progressed when the parasitic fungus formed white cobweb circular colonies on dead or damaged pinheads, spread on the surface of the casing, and covered entirely fruiting bodies. Optimal temperature and pH for mycelial growth on MEA is $23^{\circ}C$ and 6.0. Microscopically the spores of the fungus are large and most 2~3 celled produced on vertically branched conidiophores. Mushroom caps turned dark brown and shrunk due to soft rot. Testing of sensitivity to selected fungicides showed that isolate was highly resistance to Mancozeb and Thiophanate-methyl, moderately sensitivity to Iprodione, and highly sensitivity to Benomyl, Prochloraz-Mn and Carbendazim.

감자갈색잎점무늬병균(Alternaria alternata)에 대한 버섯 배양액 추출물 15종의 생장 억제 효과 (Inhibitory effects of 15 mushroom culture extracts on the growth of Alternaria alternata causing potato brown spot)

  • The fungus Alternaria alternata, responsible for causing brown to black spotting on numerous fruits and vegetables globally, was identified in 2022 as the causative pathogen of brown spot disease in potatoes in Korea. In pursuing potential inhibitors against A. alternata growth, we evaluated 15 mushroom culture filtrates: eight from Trametes spp. and seven from Polyporus spp., known for their antibacterial and anticancer properties. Antifungal activity was assessed by exposing each filtrate to A. alternata on a paper disc. Four filtrates displayed inhibitory action against the fungus, albeit with mild effects. Our findings highlight the potential of Trametes and Polyporus fungi as emerging antifungal candidates, offering promise in preventing potato brown spots.

  • This study was conducted to determine the proximate compositions, nutritional components, and antioxidant effects of white and brown enoki mushrooms (Flammulina velutipes). The crude protein and carbohydrate contents were higher in the brown than white mushrooms, whereas the moisture, crude ash, crude lipid, and dietary fiber levels were lower. The mineral contents of the white mushroom was higher than levels obtained in the brown mushroom for the detected components (Ca, Cu, K, Mn, Na, and P). The amount of vitamin B3 in the brown mushroom was 1.51 mg/100 g, which was 4.5 times higher than that in the white mushroom. The major fatty acids detected were palmitic acid, linoleic acid, and α-linolenic acid. The total polyphenol and flavonoid contents were highest in 70% ethanol extracts of the white and brown mushrooms, respectively. For the 2,2-diphenyl-1-picrylhydrazyl (DPPH) radical scavenging activity, a 70% methanol extract of the white enoki mushrooms showed an activity of 76.4% (p<0.05). For the ferric-reducing antioxidant power (FRAP) activity, a 70% methanol extract of the brown enoki mushrooms showed the highest value. Further, the total flavonoid contents were significantly correlated with the DPPH and FRAP activities.

Identification and genetic characterization of bacterial isolates causing brown blotch on cultivated mushrooms in Korea

  • Fluorescent bacteria were isolated from sporocarps that browned into various mushrooms during survey at places of the production in Korea. We examined the pathogenicity, biodiversity, and genetic characteristics of the 19 strains identified as Pseudomonas tolaasii by sequence analysis of 16S rRNA and White Line Assay. The results emphasize the importance of rpoB gene system, fatty acid profiles, specific and sensitive PCR assays, and lipopeptide detection for the identification of P. tolaasii. As a result of these various analyses, 17 strains (CHM03~CHM19) were identified as P. tolaasii. The phylogenetic analysis based on the 16S rRNA gene showed that all strains were clustered closest to P. tolaasii lineage, two strains (CHM01, CHM02) were not identified as P. tolaasii and have completely different genetic characteristics as a result of fatty acids profile, specific and sensitive PCR, lipopetide detection, rpoB sequence and REP-PCR analysis. Pathogenicity tests showed 17 strains produce severe brown discolouration symptoms to button mushrooms and watersoaking of sporophore tissue within three days after inoculation. But two strains did not produce discolouration symptoms. Therefore, these two strains will be further investigated for correct species identification by different biological and molecular characteristics.
