Considerable beneficial effects on osteoporosis from soy intake in postmenopausal women are being reported (Murkies et al.1998, Arjmandi et al. 1996). Isoflavones(IF), one of phytoestrogenic substances in the soybean, have been suggested for the effect. Our preliminary study showed that even the young chicks fed IF-rich diet tended to have higher bone ash content than those fed IF-poor diet. IF have been reported to decrease bone ash content than those fed IF-poor diet, IF have been reported to decrease bone loss by reducing bone resorption. Soybean meal has been one of the most important protein sources in poultry diets. We assume that the IF intake through dietary soybean meal could give meaningful influences on the birds. This study was carried out to determine effects of dietary IF from soybean sources on bone development in young chicks. Soy protein concentrate (SPC, IF-poor)and an IF concentrate(Phyto-Nutramin) were formulated together with purified-type ingredients to provide three different levels(25, 240 and 480 mg/kg) of total IF. Control diet(240 mg/kg) was prepared with isolated soyprotein(ISP, IF-rich). The diets were fed to 96, 3-day old, layer-type, male chicks, divided into 4 treatments with 3 replications for 3 weeks. Chicks fed the ISP diet had better gain/feed ratios than fed the SPC diets. Birds fed the diets with higher levels of IF tended to show higher values in serum total and ionized Ca% and tibial bone density, length % ash, stiffness and strain. This trend however, appeared less significant at the end of third week. No noticeable differences in sizes of comb and testicle and serum alkaline phosphatase activities were observed among the dietary groups. These results suggest that dietary isoflavones from soybean sources could be associated with chemical composition and physical properties of bone in sizes of comb and testicle and serum alkaline phosphatase activities were observed among the dietary groups. 본 연구는 유기액비 관비가 '녹광(세미니스)' 고추의 생육과 수량에 미치는 영향을 구명코자 실시하였다. 유기액비 조성에 따라 대조구(화학비료시비), 유기액비 I(계분 : 어분 : 대두박, 2:1:1), 유기액비 II(계분 : 골분 : 대두박, 2:1:1), 유기액비 III(계분 : 골분, 1:1), 유기액비 IV(계분 : 쌀겨 : 대두박, 2:1:1) 등 5처리를 두었다. 유기액비 조성재료와 비율에 따른 액비의 pH와 EC는 각각 6.5~6.8와, $2.91{\sim}3.69dS{\cdot}m^{-1}$의 분포를 나타냈다. 유기액비 조성 비율에 따른 C/N율은 유기액비 IV가 5.75로 가장 높았으며, 그 외 처리는 처리간에 차이가 없었다. 주당 총과중은 유기액비 IV 처리구에서 1,558g으로 가장 무거웠으며 총과수는 대조구에 비해 23.7% 증가하였다. 홍고추의 캡사이신 함량은 유기액비 I과 II에서 대조구에 비하여 증가하였으며, 유기액비 III과 IV 관비구에서는 감소하였다. 당도는 유기액비 IV 관비구에서 $10.0^{\circ}Brix$로 가장 높았다.
현재 전 세계적으로 어분의 부족과 가격의 상승으로 인하여 양어사료의 값싼 어분 대체품의 개발이 시급한 실정이다. 따라서 이 연구는 이스라엘 잉어(Cyprinus carpio)에 있어서 성장 단계에 따른 값싼 어분 단백질 대체품의 이용 효과를 알아보기 위하여 수행되었다. 어분 대체품으로는 수지박(leather meal), 육골분(meat and bone meal), 우모분(feather meal), 오징어 간분(squid liver powder), 가금 부산물(poultry by-product)그리고 혈분(boold meal)이 사용되었고, 이것들을 혼합하여 실험 사료를 제조하였다. 4개의 실험사료는 조단백질 함량은 36%, 가용성 에너지는 15.4 kJ/g으로 동일하게 맞추어졌다; Diet 1, 100% WFM+0% FMA (0% FMA, control) ; Diet 2, 80% WFM+20% FMA (20% FMA) ; Diet 3, 60% WFM+40% FMA (40% FMA) ; Diet 4,40% WFM+60% FMA (60% FMA). 이 실험에 사용된 어류는 이스라엘 잉어로서 평균 중량이 43g인 것이 이용되었다. 실험은 총 12 주간 실시되었으며, 실험이 종료된후 각각 증체율, 사료계수, 일일 성장률 그리고 단백질 효율을 조사하였다. 이 실험에서 Diet 2 (20% FMA)는 증체율(WG), 사료계수(FC), 일일성장률(SGR) 및 단백질 효율(PER)에 있어서 대조구(100% WFM)에 비하여 유의적으로 차이가 없었으며(P>0.05), Diet 3 (40% FMA)은 PER만이 대조구에 비해 유의적으로 낮은 결과를 보였을 뿐 WG, FC 그리고 SGR에 있어서는 대조구에 대해 유의적으로 차이가 없었다(>0.05). 또한Diet 4 (60% FMA)의 경우도SGR는 대조구에 비해 유의적으로 낮았으나(P<0.05), WG, FC 및 PER에 있어서는 대조구(100% WFM)에 대해 유의적인 차이가 없었다(P>0.05). 따라서 성장기의이스라엘 잉어(43g)의 어분 대체품의 이용 효율은 어분 단백질의 60%까지 대체가 가능한 것으로 판단되며, 이보다 경제적으로 부가가치가 높은, 더 큰 어류에 관한 많은 연구가 필요할 것으로 사료된다.
This study was intended to investigate the effects of nutritional, physical and environmental conditions on the bone status of 102 pre and post menopausal women living in Ulsan area. The results of this study are summarized as follows : when subjects were classified into two groups by bone status, there were significant differences in age, calcium index, serum estrogen and physical activity between two groups. Average daily calcium intake of subjects was 682.9 (149.2)mg, which is almost same as RDA, but 41.1% of the subjects consumed calcium below RDA. Calcium index(p<0.05), serum estrogen(p<0.001), physical activity(p<0.001) of poor bone group were significantly lower than those of good bone group. Although there was not a significant difference between bone status and other influential factors, such as family type, skip meal, alcohol drinking, smoking and BMI, each has been shown to have an effect, if slight, on the bone status.
Two experiments were conducted to evaluate the performance of broilers and layers fed locally produced fish waste meal (LFWM) in Western Samoa. LFWM, which was produced by mincing and oven drying of rejects from filleted fish, was included in both broiler and layer diets at the complete expense of imported meat and bone meal (MBM). The experiments were of a completely randomised design. In experiment 1, 120 day-old Strabro broiler chicks were raised to 49 days of ages. In experiment 2, 80 Shaver 288 pullets, 20 weeks of age, were housed in pairs in cages and raised up to 72 weeks of age. There were no differences (p > 0.05) in performance of broilers as measured in terms of final bodyweights, feed intake, feed efficiency and carcass yield between the two diets. Similarly, no differences (p > 0.05) existed in egg production, egg weight and feed required per kilogramme of eggs. It is concluded that LFWM is nutritionally as good as imported MBM and could be used to completely replace MBM in broiler and layer diets.
Transmissible spongiform encephalopathies (TSEs), also termed prion diseases, are a threat to food safety and to human and animal health. Variant Creutzfeldt-Jakob disease (vCJD) in humans is caused by the consumption of meat contaminated with bovine spongiform encephalopathy (BSE, mad cow disease). The BSE epidemic in the United Kingdom was shown to be related with the extensive use of BSE-contaminated meat-and-bone meal (MBM) and bovine offal. Many countries worldwide use MBM, as well as meat from cows, for aquaculture feed. This raises concerns about the safety of farmed fish, a major protein source for humans. The present work reviews recent studies on fish prion protein and the transmissibility of mammalian prion agents to fish, providing insights into the future direction of fish prion research.
This study was conducted to determine the nutritional characteristics of horsemeat and bone meal in comparison with those of beef and pork presented by Dietary Reference Intakes For Koreans. Longissimus muscle and large metacarpal bone samples were collected from 20 fattened Jeju horses. Muscle samples were subjected to proximate analysis, assays for fatty acid profile and minerals, and bone samples to mineral assays. Horsemeal had similar levels of protein (21.1 vs 21.0 or 21.1%) and lower levels of fat (6.0 vs 14.1 or 16.1%) compared with beef or pork, respectively. Horsemeat had much higher levels of palmitoleic (8.2 vs 4.4 or 3.3%) and $\alpha-linolenic$ (1.4 vs 0.1 or 0.6%) acids than beef or pork, respectively. Linoleic acid was much higher in horsemeat (11.1%) and pork (10.1%) than in beef (1.6%). PUFA:SFA and n-6:n-3 ratios in horsemeat were 0.29 and 10.2, respectively. There were no big differences in mineral contents between horsemeat, beef and pork. For daily recommended mineral intakes of male adults (Dietary Reference Intakes For Koreans), phosphorus, sodium, potassium, iron, zinc and copper can be provided up to 24, 2.5, 6.7, 21, 26 and 40%, respectively, by 100 g raw horsemeat, but calcium and manganese levels are negligible. Horse cannon bone had much higher mineral contents especially in calcium (10,193 mg/100 g), phosphorus (5,874 mg/100 g) and copper (0.79 mg/100 g). Thiamin, riboflavin, niacin and retinol contents were 0.20, 0.21, 1.65 mg/100 g and $30{\mu}g/100g$, respectively. But ascorbic acid and beta-carotene were not detected. Our data demonstrated that higher levels of palmitoleic and $\alpha-linolenic$ acid in horsemeat than in beef and pork may be beneficial for human health. Horsemeat and bone meal are a good source of some minerals and vitamins.
The effect of meal service for home-staying, urban elderly with low income on their mineral status and prevalence of clinical symptoms was evaluated. One hundred. One hundred and eighty three subjects were assigned to meal-served(served) and non-served(non-served)groups. A meal containing approximately one half of the RDA for energy, protein, calcium and iron was served as lunch every day to served group at a welfare center. Dietary, biochemical and clinical data were collected before and after 6 months of meal service and the changes of parameters were analyzed with paired t-test. served female showed significantly increased intake of calcium. The mean hemoglobin, serum iron, TIBC and serum copper of female were significantly increase with meal service. The proportion of anemic female compared to reference data on hemoglobin, hematocrit and serum iron were 45.5$\%$, 29.1$\%$ and 16.4$\%$ respectively, but were lowered to 18.2$\%$, 7.3$\%$, and 5.5$\%$ after 6 months of meal service. served male showed significant increase in MCHC, serum copper, and urinary Na. The urinary Ca/Creatinine, which is often used as an index of bone resorption, was decreased significantly in served group. The decrease in the proportion of served women suffering from edema of ankle and diarrhea was most apparent and less women reported feeling clinical symptoms of dizziness, constipation, difficulty in hearing, and coughing after meal service. The symptoms of benumbness of hands and feet and coughing was lowered most among men after meal service. Clinical symptoms of non-served elderly did not show improvement in feeling clinical symptoms except slightly decreased frequency in coughing of female and buzzing sound in the ears and diarrhea of male.
저활용 단백질로부터 칼슘 결합물질을 분리하기 위해 돼지 육골분과 진주담치 단백질을 단백질 분해 효소인 alcalase를 이용하여 가수분해물을 제조하였고, 체내 흡수가 용이한 3 kDa 이하로 한외여과 하였다. 돼지 육골분 가수분해물은 Mono Q 컬럼을 통해 분리하였고, 진주담치 가수분해물의 경우 Q-Sepharose로 분리 하여 각각 2개, 3개의 peptide fraction을 얻어 각 fraction의 칼슘 결합력을 측정하였다. 그 결과 MBM F2와 Mussel F3에서 가장 높은 칼슘 결합력을 나타내었고, 따라서 본 연구 결과로 얻어진 가수분해물들은 칼슘 보충 소재로 활용될 수 있다고 판단된다.
