저온살균과 대기압플라즈마의 병용처리에 의한 고춧가루 중 대장균의 저감화 효과 및 관능적 품질 (Combined Effects of Low-Temperature Heating and Atmospheric Plasma on the Populations of Escherichia coli and Sensorial Quality of Red Pepper Powder)

  • 본 연구는 저온살균(60℃, 5-20분)과 대기압플라즈마(5-20분)를 병용한 고춧가루 중의 E. coli 저감화 및 시너지 효과를 조사하였다. 저온살균 단일처리시 대장균의 불활성화는 최대 2 log10 CFU/g(=99% 감소) 이상 나타내었으며, 대기압플라즈마 5, 10, 15, 및 20분간 단일처리 하였을 때 각각 0.4, 0.8, 0.9 및 1.4 log10 CFU/g 감소되었다. 저온살균 및 대기압플라즈마 단독 처리만으로는 만족할 만한 미생물 저감화효과를 얻을 수 없었기에 저온살균 처리 후, 대기압플라즈마를 병용처리 하여 대장균의 불활성화는 1-6 log10 CFU/g 이상 감소되었다. 그러나, 저온살균과 대기압플라즈마 병용처리에 따른 관능적 품질 (색, 이취, 맛, 조직감 및 전체적인 기호도)에 대한 유의적인 차이는 관찰되지 않았다(P>0.05). 따라서 고춧가루의 미생물학적 안전성 확보를 위해 저온살균과 대기압플라즈마 단독처리보다 이 둘의 병용처리가 E. coli의 확실한 저감화 효과를 유도하고 식품 고유의 품질특성을 유지하는데 효과적이었음을 본 연구를 통해 확인되었다.

가정간편식(Home Meal Replacement, HMR) 샤브샤브 밀키트의 원료별 미생물 오염도 분석 (Microbial Contamination Levels in the Raw Materials of Home Meal Replacement Shabu-Shabu Meal Kit Distributed in Markets)

  • 본 연구에서는 국내 유통중인 가정간편식 샤브샤브 밀키트를 원료별(쇠고기, 숙주, 쌈추, 새송이버섯, 배추, 단호박)로 구분하여 미생물 오염도를 알아보기 위해 일반세균수(total aerobic bacteria), 대장균군(coliform)/대장균(E. coli), 효모 및 진균류(fungi), 황색포도상구균(S. aureus), 및 바실러스세레우스(B. cereus)에 대한 정량적 분석을 실시하였다. 아울러, 살모넬라(Salmonella spp.)와 리스테리아 모노사이토제네스(L. monocytogenes)에 대한 정성적 분석을 실시하였다. 샤브샤브 밀키트 원료의 일반세균수(총균수)는 3.98-6.50 log CFU/g로 검출되었다. 특히, 쇠고기의 경우 6 log CFU/g 이상의 균이 검출되었으며 숙주, 단호박, 배추의 경우 5 log CFU/g 이상의 균이 검출되었다. 진균류 (곰팡이/효모)의 오염도는 2.78-3.52 log CFU/g 수준으로 검출되었다. 대장균군은 일반세균수와 마찬가지로 쇠고기에서 3.28 log CFU/g으로 가장 높게 검출되었으며 기타 신선야채류의 경우 2 log CFU/g 수준으로 검출되었다. 대장균은 6가지 원료 모두에서 검출되지 않았다. S. aureus는 쇠고기와 쌈추를 제외한 숙주, 배추, 새송이버섯, 단호박에서 1.33-1.71 log CFU/g의 수준으로 검출되었다. B. cereus는 쌈추를 제외한 모든 원료에서 1.15-2.01 log CFU/g의 수준으로 검출되었다. L. monocytogenes는 새송이버섯을 제외하곤 모든 원료에서 25-50%의 양성검출을 보였고 Salmonella는 모든 원료에서 음성으로 나타났다. 본 연구 결과의 종합적 분석시, 쇠고기 원료에서 일반세균수와 대장균군 기준치를 초과하였고 황색포도상구균과 바실러스세레우스는 대부분의 원료에서 식품안전을 위협할 만한 위험한 수준은 아니었으나 검출되었고 저온성식중독균인 리스테리아모노사이토제네스 역시 일부 원료에서 양성을 보였기 때문에 본 제품의 원료별 생산단계에서의 살균·소독의 적절한 공정과 섭취시 충분한 열처리를 통해 잔존미생물을 사멸하는 것이 긴요하다. 또한 조리기구 및 조리 종사원 손에 의해 최종 식품을 공정하면서 미생물이 전파될 가능성이 있으므로 최종 식품의 안전성을 확보하기 위해 오염된 접촉면에 의한 교차오염을 최소화하며, 개인위생수준의 개선, 조리기기의 분리사용과 세척 및 소독을 통한 조리기기의 청결유지가 무엇보다도 중요하다. 아울러 본 연구의 미생물오염수준 자료는 가정간편식밀키트의 미생물위해평가(Microbial Risk Assessment)의 기초자료로 활용될 수 있을 것으로 사료된다.

닭 정액 동결 시 동결 보호제가 정액 성상에 미치는 영향 (Effects of Kinds of Cryoprotectants on the Characteristics of Frozen Fowl Semen)

  • 본 연구는 닭 정액 동결 보존을 위하여 동결 보호제로 7%의 DMA, DMF 그리고 7.5%의 MA를 이용하여 동결 융해 후 정자의 생존율, 정상 첨체율 및 미토콘드리아의 활성도를 FACS를 이용하여 평가하고, 수정률과의 상관관계를 조사하고자 수행하였다. 닭 정액을 동결한 결과, DMF를 사용하였을 때 생존율은 $52.1{\pm}5.52%$로 DMA와 MA에 비해 유의적으로 높았으며(P<0.05), DMA $46.94{\pm}5.06%$, MA $36.56{\pm}4.66%$순으로 나타났다(P<0.05). 첨체막이 파열되고 죽은 정자는 이와 반대로 MA를 이용하여 동결한 정액이 $61.16{\pm}1.86%$로서 가장 높았고, DMA $47.48{\pm}1.9%$ DMF $36.56{\pm}1.42%$순으로 유의적 차이를 보였다(p<0.05). 정자 미토콘드리아 막이 손상되지 않은 생존 정자는 DMF를 이용하여 동결한 정액에서 $52.68{\pm}1.07%$로 가장 높게 나타났고, DMA $44.46{\pm}1.04%$, MA $38.36{\pm}1.88%$순으로 유의적 차이를 나타냈다(p<0.05). 7% DMF를 사용하여 동결하였을 때 수정률은 유의적인 차이가 없었지만, 생존율 및 미토콘드리아 활성도가 유의적으로 가장 높았으며, 정상 첨체율이 유의적으로 높았다. 이는 DMF를 이용한 닭 정자 동결법이 정자의 세포막과 첨체의 손상에 미치는 영향이 가장 낮은 동결 보호제인 것으로 사료된다.

모자반 에탄올 추출물의 항균활성과 열 및 pH 안정성 (Antimicrobial Activity of the Sargassum fulvellum Ethanol Extract and the Effect of Temperature and pH on Their Activity)

  • 본 연구에서는 국내 자생 해조류인 모자반의 항균활성을 조사하기 위하여 paper disc법과 MIC(Minimum Inhibitory Concentration) test를 이용하여 식품의 부패 및 식중독 관련 미생물 16종에 대한 항균활성을 조사하였다. 그 결과 물추출물에서는 항균효과를 나타내지 않았으나 에탄올 추출물은 4 mg/mL 농도에서 실험에 사용된 모든 그람 양성균, Saccharomyces cerevisiae와 Candida tropicalis에 대해 항균활성을 나타내었는데, 특히 Bacillus subtilis, Clostridium perfringens, Listeria inoccua 및 Listeria monocytogenes 및 C. tropicalis에 대하여 높은 항균활성을 보였다. 그러나 그람 음성균, Candida albicans 및 곰팡이 2종에는 항균 효과가 나타나지 않았다. 모자반 에탄올 조추출물에 대한 MIC test를 실시한 결과, 0.0063% 농도에서 C. perfringens와 C. tropicalis의 생육을 억제하였으며, 0.0125% 농도에서 L. monocytogenes의 생육을 억제하였다. 또한 0.025% 농도에서 B. subtilis, L. inoccua 및 Lactobacillus plantarum의 생육을 효과적으로 억제하였다. 열 및 pH 안정성 실험결과, $121^{\circ}C$에서 15분간 열처리와 pH 2-10 처리에도 항균활성이 감소하지 않는 것으로 보아 모자반 에탄올 추출물은 열과 pH에 비교적 안정하다고 사료된다.

수중글라이더를 활용한 동해 최초 연속 물성 단면 관측 보고 (Report about First Repeated Sectional Measurements of Water Property in the East Sea using Underwater Glider)

  • 동해에서 수행된 국내 최장기 수중글라이더 운용 및 연속 단면 관측 결과를 보고한다. 본 연구팀은 수중글라이더를 활용하여 2020년 9월 18일부터 12월 21일까지 총 95일 동안 국립수산과학원(NIFS) 정선 관측 106 라인에 거의 일치하는 37.9 °N 위도선을 따라 동경 129.1 °E ~ 131.5 °E 사이를 6회 왕복하는 국내 최초의 연속 물성 단면 관측을 성공리에 수행하였다. 본 수중글라이더는 2020년 9월 18일 129.1 °E 위치에서 투하되어 9월 19일부터 88일간의 비행 관측을 수행하였고, 2020년 12월 15일부터 6일간 129.2 °E 위치에서 위치 제어 유지(Virtual Mooring)후 회수되며 전체 운용을 마무리하였다. 표층부터 800 dbar 수심까지 톱니형태의 궤적을 그리면서 총 수평거리 2550 km를 비행하는 동안 글라이더의 경로 이탈은 RMS 거리 262 m를 벗어나지 않을 정도의 매우 안정적인 경로 추종 모드를 보여줬다. 비행 관측을 통해 획득한 총 12개의 고해상도 물성 횡단면 자료로부터 수온과 염분의 연속적인 변동이 보이는 아중규모 특성을 확인하였고, 국립수산과학원(NIFS)의 격월 선박 관측 자료와 비교함으로써 시공간 해상도 차이에 따른 뚜렷한 특성을 발견하였다. 첫째는 공간 해상도 차이에 따른 결과로 표층 전선역의 세기 및 이동, 수온약층 강화현상 등 아중규모 현상들이 글라이더 횡단면 자료에서만 뚜렷하게 관찰되었다. 이러한 아중규모 구조는 현행 선박 관측 자료의 정점 간격(25 km) 보다 작다는 특징이 있었는데, 동해 내 아중규모 구조의 이해를 위해서는 고해상도 관측이 필요함을 의미한다. 둘째는 시간 해상도 차이에 따른 결과로 글라이더 자료에서 추출한 평균 7일 간격의 수온과 염분 시계열이 대략 6주 주기를 갖는 월중변동(Intramonthly variation) 특성을 보인다는 것과 대략 1주 동안 급격한 관측치의 변동이 나타난다는 것을 확인하였다. 이는 격월 정선 관측 자료에는 확인되지 않는 특징이다. 따라서, 정선 관측해역의 물성 변동을 이해하기 위해서는 선박 관측과 비교하여 상대적으로 비용이 저렴하고 효율적인 글라이더 관측을 통한 보완이 필요하다고 여겨진다. 마지막으로 두 플랫폼 간 관측치의 편차를 확인하였는데, 이러한 편차의 요인을 공간 규모에 기초한 정점의 정의 및 시간 규모에 따른 변동성, 그리고 각 플랫폼의 CTD 측정 장비의 교정 관점에서 논하였다.

High Resolution HC$_3$N Observations toward the Central Region of Sagittarius B2

  • The wall shear stress in the vicinity of end-to end anastomoses under steady flow conditions was measured using a flush-mounted hot-film anemometer(FMHFA) probe. The experimental measurements were in good agreement with numerical results except in flow with low Reynolds numbers. The wall shear stress increased proximal to the anastomosis in flow from the Penrose tubing (simulating an artery) to the PTFE: graft. In flow from the PTFE graft to the Penrose tubing, low wall shear stress was observed distal to the anastomosis. Abnormal distributions of wall shear stress in the vicinity of the anastomosis, resulting from the compliance mismatch between the graft and the host artery, might be an important factor of ANFH formation and the graft failure. The present study suggests a correlation between regions of the low wall shear stress and the development of anastomotic neointimal fibrous hyperplasia(ANPH) in end-to-end anastomoses. 30523 T00401030523 ^x Air pressure decay(APD) rate and ultrafiltration rate(UFR) tests were performed on new and saline rinsed dialyzers as well as those roused in patients several times. C-DAK 4000 (Cordis Dow) and CF IS-11 (Baxter Travenol) reused dialyzers obtained from the dialysis clinic were used in the present study. The new dialyzers exhibited a relatively flat APD, whereas saline rinsed and reused dialyzers showed considerable amount of decay. C-DAH dialyzers had a larger APD(11.70${\pm}$1.32mmHg/min)compared to CF dialyzers(4.32${\pm}$0.55mmHg/min)(p<0.05). However, there was no observable difference in the UFR between the two dialyzers. Neither APD nor UFR showed any significant increase with an increasing number of reuses for up to more than 20reuses. A substantial number of failures observed in APD(larger than 20mmHe/min)on the reused dialyzers(2 out of 40 CP and S out 26 C-DAK) were attributed to the Possible damage on the fibers. The CF 15-11 HFDs which failed APD test did not show changes in the UFR compared to normal dialyzers indicating that APD is a more sensitive test than UFR test to evaluate the integrity of the fibers. 30527 T00401030527 ^x For quantitative measurement of reflected light from a clinical diagnostic strip, a prototype old reflectance photometer was designed. The strip loader and cassette were made to obtain more accurate reflectance parameters. The strip was illuminated at 45˚c through optical fiber and the intensity of reflected light was determined at rectanguLat angle using a photodiode. The kubelka-munk coefficient and reflection optical density were determined ar four different wavelengths(500,550,570 and 610nm) for blood glucose strip. For higher concentration than 300mg/41 about glucose, a saturation state of abforbance was observed at 500,550 and 570nm. The mice were divided into two groups. One group was injected with Photofrin II, intravenously (2.5mg/kg body weight). The other group received no Photofrin II. Mice from both groups were irradialed for approximately 15 minutes at 100,300, or 500 mW/cm2 with the argon (488nm/514.5 nm), dye(628nm) and gold vapor (pulsed 628 nm) laser light. A photosensitizer behaved as an added absorber. Under our experimental conditions, the presence of Photolfrin II increased surface temperature by at least 40% and the temperature rise due to 300 mW/cm2 irradiation exceeded values for hyperthermia. Light and temperature distributions with depth were estimated by a computer model. The model demonstrated the influence of wavelength on the thermal process and proved to be a valuable tool to investigate internal temperature rise. 30536 T00401030536 ^x We investigated the structural geometry of thirty-eight Korean femurs. The purpose of this study is to identify major geometrical differences between Korean femurs 3nd others that we believe belong to Caucasians so that we would be able to get insights into the femoral component design that fits Asians including Koreans. We utilized computerized tomography (CT) images of femurs extracted from cadavers. The CT images were transformed into bitmap data by using a film scanner, and then analyzed by using a commercially available software called Image v.1.0 and a Macintosh IIci computer.The resulting data were compared with already published data. The major results show that the geometry of the Korean femurs is significantly different from that of Caucasians: (1) the anteversion angle and the canal flare index are greater by the amount of approximately 8˚ and 0.5, respectively, (2) the shape of the isthmus cross section is more round, and (3) the distance between the teaser trochanter and the proximal border of the isthmus is shelter by about 15 mm. The results suggested that the femoral component suitable for Asians should be different from the currently-used components designed and manufactured mostly by European or American companies. 30537 T00401030537 ^x It is well known that nonlinear propagation characteristics of the wave in the tissue may give very useful information for the medical diagnoisis. In this paper, a new method to detect nonlinear propagation characteristics of the internal vibration in the tissue for the low frequency mechanical vibration by using bispectral analysis is proposed. In the method, low frequency vibration of f0( = 100Hz) is applied on the surface of the object, and the waveform of the internal vibration x (t) is measured from Doppler frequency modulation of silmultaneously transmitted probing ultrasonic waves. Then, the bispectra of the signal x (t) at the frequencies (f0, f0) and (f0, 2f0) are calculated to estimate the nonlinear propagation characteristics as their magnitude ratio, w here since bispectrum is free from the gaussian additive noise we can get the value with high S/N. Basic experimental system is constructed by using 3.0 MHz probing ultrasonic waves and the several experiments are carried out for some phantoms. Our department has developed an information system for routine hematology using down-sized computer system. We have used an IBM 486 compatible PC with 16MB main memory, 210 MB hard disk drive, 9 RS-232C port and 24 pin dot printer. The operating system and database management system were SCO UNIX and SCO foxbase, respectively. For program development, we used Xbase language provided by SCO foxbase. The C language was used for interface purpose. To make the system use friendly, pull-down menu was used. The system connected to our hospital information system via application program interface (API), so the information related to patient and request details is automatically transmitted to our computer. Our system interfaced with fwd complete blood count analyzers(Sysmex NE-8000 and Coulter STKS) for unidirectional data tansmission from analyzer to computer. The frame and leaflet of the polymer valve were made from polyurethane, To evaluate the hemodynamic performance of the polymer valve a comparative study of flow dynamics past a polymer valve and a St. Jude Medical prosthetic valve under physiological pulsatile flow conditions in vitro was made. Comparisons between the valves were made on the transvalvular pressure drop, regurgitation volume and maximum valve opening area. The polymer valve showed smaller regurgitation volume and transvalvular pressure drop compared to the mechanical valve at higher heart rate.   • The wall shear stress in the vicinity of end-to end anastomoses under steady flow conditions was measured using a flush-mounted hot-film anemometer(FMHFA) probe. The experimental measurements were in good agreement with numerical results except in flow with low Reynolds numbers. The wall shear stress increased proximal to the anastomosis in flow from the Penrose tubing (simulating an artery) to the PTFE: graft. In flow from the PTFE graft to the Penrose tubing, low wall shear stress was observed distal to the anastomosis. Abnormal distributions of wall shear stress in the vicinity of the anastomosis, resulting from the compliance mismatch between the graft and the host artery, might be an important factor of ANFH formation and the graft failure. The present study suggests a correlation between regions of the low wall shear stress and the development of anastomotic neointimal fibrous hyperplasia(ANPH) in end-to-end anastomoses. 30523 T00401030523 ^x Air pressure decay(APD) rate and ultrafiltration rate(UFR) tests were performed on new and saline rinsed dialyzers as well as those roused in patients several times. C-DAK 4000 (Cordis Dow) and CF IS-11 (Baxter Travenol) reused dialyzers obtained from the dialysis clinic were used in the present study. The new dialyzers exhibited a relatively flat APD, whereas saline rinsed and reused dialyzers showed considerable amount of decay. C-DAH dialyzers had a larger APD(11.70$\pm$1.32mmHg/min)compared to CF dialyzers(4.32$\pm$0.55mmHg/min)(p<0.05). However, there was no observable difference in the UFR between the two dialyzers. Neither APD nor UFR showed any significant increase with an increasing number of reuses for up to more than 20reuses. A substantial number of failures observed in APD(larger than 20mmHe/min)on the reused dialyzers(2 out of 40 CP and S out 26 C-DAK) were attributed to the Possible damage on the fibers. The CT images were transformed into bitmap data by using a film scanner, and then analyzed by using a commercially available software called Image v.1.0 and a Macintosh IIci computer.The resulting data were compared with already published data. The major results show that the geometry of the Korean femurs is significantly different from that of Caucasians: (1) the anteversion angle and the canal flare index are greater by the amount of approximately 8˚ and 0.5, respectively, (2) the shape of the isthmus cross section is more round, and (3) the distance between the teaser trochanter and the proximal border of the isthmus is shelter by about 15 mm. We use combination of MLP and fuzzy filter for pattern recognition to estimate the direction of a muscle and Hogan's method for the force estimation. EMG signals are acquired by using a amputation simulator and 2 dimensional joystick motion. The simulation results of proposed prosthetic arm control system using the EMf signals show that the arm is effectively followed the desired trajectory depended on estimated force and direction of muscle movements. 30638 T00401030638 ^x A new neural network architecture for the recognition of patterns from images is proposed, which is partially based on the results of physiological studies. 류마티스 관절염에 대한 한약의 면역학적 연구동향 (Recent Trends of Immunologic Studies of Herbal Medicine on Rheumatoid Arthritis)

  • Objective : Rheumatoid arthritis is an autoimmune disease that pathogenesis is not fully understood and one of the most intractable musculoskeletal diseases. The concern in the immunopathogenesis of rheumatoid arthritis has been increased since 1980's and many immunotherapeutic agents including disease-modifying antirheumatic drugs (DMARDs) were developed and became the mainstay of treatment of rheumatoid arthritis. However, the cure of the disease has hardly been achieved. In oriental medicine, rheumatoid arthritis is related to Bi-Zheng(痺證), that presents pain, swelling, andlor loss of joint function as major clinical manifestations, and also known to be deeply involved in suppression of immune function related to weakness of Jung-Ki(正氣). The herbal medicine, empirically used, could be a potential resource of development of new immunotherapeutic agents for rheumatoid arthritis. Methods : We developed a search strategy using terms to include "rheumatoid arthritis and herbal medicine" combined with "Chinese medicine" and/or "Oriental medicine". The search was focused on experimental studies of herbal medicine (January 1999 to May 2004), which is known to have effects on immune function of patients with rheumatoid arthritis. Computerized search used Internet databases including KISS and RISS4U (Korea), CNKI (China), MOMJ (Main Oriental Medicine Journal, Japan), and PubMed. The articles were selected from journals of universities or major research institutes. Results : The literature search for experimental studies on effects of herbal medicine on immunity of rheumatoid arthritis retrieved a total of 21 articles (Korea; 8, China ; 12, Japan ; 1). Of 21 articles, 10 were related to single-drug formula, 2 to drug interaction, and 9 to multi-drug formula. Single-drug formula was mainly used for aqua-acupuncture and researches on active components. Studies of drug interaction emphasized harmony of Ki-Hyul(氣血) and balance of Han-Yeul(寒熱). Multi-drug regimen was mainly found among formulas for Bo-Ki-Hyul(補氣血) and Bo-Sin(補腎). Conclusion : Studies on rheumatoid arthritis were performed both in vitro and in vivo in vitro study, LPS-stimulated splenocytes and synoviocytes were treated with herbal medicine, resulting in proliferation and activation of immune cells and suppression of cytokine activities in vivo study CIA animal model demonstrated that herbal medicine decreased antibody production and improved function of immune cells. In cellular and molecular study herbal medicine showed profound effects on the level of mRNA expression of certain cytokines related to immune function. This study revealed that herbal medicine has significant immune modulatory action and could be used for recovery of immune dysfunction of rheumatoid arthritis patients.

  • SOO-BAL(Hair Style) is a method Which match hair style to face and clothes with using hair covering and protecting the head. Also SOO-BAL includes personal ornaments using to avoid one's hair be disheveled. In a standpoint of beauty and spirit, etiquette SOO-BAL is a very important thing as one being dressed up. Until now, since just a form of hair style have been studied, hair styling process is nothing to be known and studied. Time after time, our unique traditional SOO-BAL is forgotten with clothes and then this th-esis will be classified hair styling form follow-ing a form of hair style in royal palace of the C-hosun dynasty. According to the record of HAE DONG HISTORY, it shows the same of attire between Ko-rean and chinese style in ae of the chosun. The reason in that there were no any certain boundary border and the interaction of culture between two countries was happened spontaneously at ancient time like the GOCHO-SUN age. Until the period of the three states, the korean attire be changed had gone with chinese one s-imilarly. The chinese form gave to influence on the EONJIN MEURI·POON-GI-MYEONG MEURI·JJO-CJIN MEURI·MOOK-EUN GOONG-BAL MEURI·OL-LIN MEURI·SSANGSANG-TU ME-URI be drawn wall painting in the KOKUR-YU. Kids at CHO-SUN age had BA-DUK-PANMEURI and JONG-JONG MEURI. The ornament things are GACHE, DDERL JAM with EON-JIN M-EURI, and all kinds of rod-like hairpin and chignon accessory used in JJOK MEURI. IN DANGGE, JE-BI-BURI DANGGI used by ummarried women. DO-TOO-RAK DANGGI and AP DANGGI on a dress suit, and BE-SSI DANGGI used by 3∼4 years ungrown kids etc. were used. And at palace, kinds of CHUPJI used with JJOK MEURI showed social rank. In CHOSUN age, women want to keep shiny hair washed at TA-NO festival day, a treatment of bald hair used a forked remedy. In CHOSUN age, woman Soo-Bal hair style has DAE-SOO·DDEU-KOO-JI MEURI·CHO-P-GI MEURI·EON-JIN MEURI·SAE-ANG MEURI· and so on. We could find out Soo-Bal was developed very well by these variety hair styles. 단호박을 첨가하여 제조한 막걸리의 품질특성 및 항산화 활성 (Quality Properties and Antioxidant Activities of Korean Traditional Rice-Based Wine, Makgeolli Added with Sweet Pumpkin)

  • 본 연구에서는 항산화 효능과 관능적 특성이 강화된 막걸리 제조를 위해 통단호박을 직접 찐 후 비율별로 첨가하여 막걸리를 제조하였다. 단호박 막걸리 제조를 위해 단호박을 쌀 중량의 5%, 10%, 20% 및 30%를 첨가하였으며 발효 및 담금 후 9일간 단호박 막걸리의 이화학적(pH, 총산 및 알코올), 미생물학적(유산균 및 효모수) 및 항산화 활성을 조사하였다. pH의 경우 모든 실험군에서 발효 및 저장기간이 늘어날수록 점차 낮아졌으며 9일차에는 단호박 무첨가군인 대조군(3.27)에 비해 단호박 첨가군(3.28-3.52)이 다소 높은 결과를 보였다. 총산도는 1일차(0.09-0.55) 및 3일차(0.81-0.86)에 급격히 증가하였으며, 그 후 서서히 증가하여 9일차에는 단호박 첨가군에서 1.16-1.32의 결과를 보였다. 알코올 함량은 9일차에 대조군 0%가 4.59로 가장 낮았고 단호박 5-30% 첨가군에서 5.20-5.77%로 단호박 첨가량이 많아질수록 알코올 함량이 높았다. 유산균수 측정의 경우 발효초반에 증가하는 양상을 보이다가 5일차부터 다소 감소하거나 유사하여 9일차에는 단호박 첨가 0-30% 첨가군에서 7.95-8.09 log CFU/g로 나타났으며, 효모수의 경우 발효가 진행될수록 증가와 감소를 다소 반복하였으며 9일차에는 7.68-7.99 log CFU/g으로 측정되었다. DPPH 및 ABTS 라디칼 소거능은 단호박 30% 첨가군에서 85.96 및 78.97%로 각각 측정되어 단호박 무첨가군의 DPPH (48.29%) 및 ABTS (62.12%) 결과와 비교 시 높은 항산화 활성도를 보였다. 따라서 추후 단호박 첨가에 따른 각종 비타민류, 무기질 및 β-carotene 등의 영양·기능성 성분의 분석과 더불어 소비자의 관능평가 등을 통해 항산화 기능이 강화된 단호박 막걸리의 실용화를 위한 구체적인 연구개발의 확대가 필요할 것으로 사료된다.
