한우고기 육질등급 선호도에 따른 구매성향 특성 분석연구 (A Study on the Characteristics of Purchasing Propensity by Preferences Quality Grade of Hanwoo Beef)

  • 쇠고기 소비트랜드는 소비자 요구와 선호도 등에 따라 변화하고 있다. 본 연구는 한우고기 구매 소비자를 대상으로 구매성향 및 선호도 조사를 통해 쇠고기 등급제 보완방향에 대한 기초자료를 수집하였다. 조사대상자는 2017년 7월 24일부터 8월 14일에 걸쳐 서울, 경기도 및 5대 광역시에 거주하는 소비자를 대상으로 조사를 수행하였고, 무응답 등을 제외하고 최종 362명 데이터를 분석에 이용하였다. 위계적 회귀분석 결과 1등급 선호집단의 구매빈도 증가에는 마블링 형태가, 1+등급에서는 지방색이, 1++등급에서는 소득, 등급제 개선 의견, 마블링 함량, 마블링 형태가 각각 정의 영향(+)을 미치는 것으로 분석되었다. 반면, 선호등급이 없는 집단에서는 구매빈도 증가에 영향을 미치는 변수는 없는 것으로 분석되었다. 종합적으로 살펴볼 때 구매빈도 증가에 영향을 미치는 변수들이 집단별로 다른 것으로 분석되었는데, 소도체 등급기준은 축산농가 및 산업체의 경제적 이익과 소비자 구매력에 직접적으로 연관되어 있어 매우 중요한 제도이기 때문에 생산자와 소비자 의견을 적절하게 반영하여 합리적이고 과학적인 방향으로 앞으로도 보완되어야 할 것으로 생각된다.

한우 수정란의 육우 이식에 관하여 (Transfer of Korean Native Cattle Embryos to Beef Recipients)

  • This study was carried out to propagate Korean native cattle using beef recipients by embryo transfer. Seven Korean native cattle donors were superovulated with FSH 32mg and Embryos collected from donors were frozen and preserved in National Animal Breeding Institute. Frozen-thawed embryos were transferred to synchronized 40 beef recipients nonsurgically in Daekwanryeong Branch of National Animal Breeding Institute. The results obtained were as follows : 1. Total ova and transferable embryos per donor were 11.4 and 11.1 from 7 donors, respectively. 2. Among 40 recipients transferred with frozen-thawed embryos, 20 were pregnant(50.0%). 3. The pregnancy rate according to time from embryo thawing to transfer was higher when transferred within 3 hours than after 3 hours(57.6% vs. 14.3%). 4. The cow recipients showed slightly higher pregnancy rate than the heifer(53.3% vs. 48.0%). 5. Two grade embryos showed higher pregnancy rate than 1 grade(66.7% vs. 45.2%).

Distinguishing Aroma Profile of Highly-Marbled Beef according to Quality Grade using Electronic Nose Sensors Data and Chemometrics Approach

  • Fat deposition in animal muscles differs according to the genetics and muscle anatomical locations. Moreover, different fat to lean muscle ratios (quality grade, QG) might contribute to aroma development in highly marbled beef. Scientific evidence is required to determine whether the abundance of aroma volatiles is positively correlated with the amount of fat in highly marbled beef. Therefore, this study aims to investigate the effect of QG on beef aroma profile using electronic nose data and a chemometric approach. An electronic nose with metal oxide semiconductors was used, and discrimination was performed using multivariate analysis, including principal component analysis and hierarchical clustering. The M. longissimus lumborum (striploin) of QG 1++, 1+, 1, and 2 of Hanwoo steers (n=6), finished under identical feeding systems on similar farms, were used. In contrast to the proportion of monounsaturated fatty acids (MUFAs), the abundance of volatile compounds and the proportion of polyunsaturated fatty acids (PUFAs) decreased as the QG increased. The aroma profile of striploin from carcasses of different QGs was well-discriminated. QG1++ was close to QG1+, while QG1 and QG2 were within a cluster. In conclusion, aroma development in beef is strongly influenced by fat deposition, particularly the fat-to-lean muscle ratio with regard to the proportion of PUFA. As MUFA slows down the oxidation and release of volatile compounds, leaner beef containing a higher proportion of PUFA produces more volatile compounds than beef with a higher amount of intramuscular fat.

The Effect of Quality Grade and Muscle on Collagen Contents and Tenderness of Intramuscular Connective Tissue and Myofibrillar Protein for Hanwoo Beef

  • Six muscles were seamed out randomly from Hanwoo carcasses (n = 12) of each quality grade (quality grades 1, 2 and 3). Samples were analysed for their total and soluble collagen contents, IMCT (intramuscular connective tissue) and Warner-Bratzler shear force (WBSF). Simple correlation (n = 21) was determined for WBSF among major muscles. For LT (longissimus thoracis), total collagen content was significantly higher (p<0.05) for quality grade 3 than those for quality grades 1 and 2. For semitendinosus (ST), semimembranosus (SM), psoas major (PM) and serratus ventralis (SV), total collagen content of quality grade 1 was lowest (p<0.05) of all quality grades. IMCT shear force for gluteus medius (GM) decreased (p<0.05) with better quality grade, and those for other muscles, with the exception of GM, were higher (p<0.05) for quality grade 3 than for quality grades 1 and 2. WBSF values showed GM and LT to be decreased (p<0.05) with better quality grade, and PM to be higher (p<0.05) for quality grade 3 than those for quality grades 1 and 2. SM, ST and SV from quality grade 1 had lower (p<0.05) WBSF value than those from quality grades 2 and 3. Total collagen content of ST was highest (p<0.05) of all muscles, whereas that of PM was lowest (p<0.05). Soluble collagen contents of LT and SV from quality grades 1 and 2 were, in general, higher (p<0.05) than other muscles, but that of SM was lowest (p<0.05). ST and SM had higher (p<0.05) WBSF values for three quality grades when compared to other muscles, whereas PM was lowest (p<0.05). LT had the strongest simple correlation with SV (r = 0.78) and GM (r = 0.77), and SM had the strongest correlation with ST (r = 0.73) and LT (r = 0.73). Also, PM had the strongest correlation with SV (r = 0.62).

Effect of mixed hay supplementation during fattening on carcass traits and meat quality of Hanwoo steers

  • Background: This study was aim to observe the effects of feeding mixed local hay (MH) consisted of 55% orchard grass (Dactylis glomerata L.), 35% tall fescue (Festuca arundinacea) and 10% red clover (Trifolium pratense) to Hanwoo steers on performance, carcass characteristics and meat quality (longissimus thoracis) compared with feeding imported timothy hay (TH) and local rice straw (RS). Results: Although no significant effects were found on animal performance and carcass yield grade, the carcasses of MH group had higher marbling score and quality grade than those of RS and TH group (P < 0.05). Therefore, higher fat content (P < 0.001), lower shear force and hardness value in the beef of MH group than that of other groups were observed. Furthermore, the beef of MH group had higher CIE $a^*$ value (redness) than that of other groups and feeding MH to Hanwoo steers lowered n-6 to n-3 fatty acids ratio in beef. Conclusions: Mixed hay provided benefits on meat quality and could be used for Hanwoo fattening program.

소와 돼지 도체 표면에 대한 미생물 오염도 (Microbiological quality on surfaces of beef and pork carcasses in Seoul)

  • It was conducted to evaluate the microbiological quality on the surface of slaughtered beef and pork products in Seoul from January 2003 to December 2003. Two hundreds four beefs and 284 pork carcasses were surveyed on generic E coli, total bacterial count for microbiological quality, and Salmonella spp as food-borne pathogen. The prevalence of the excellent or good grade(10$^4$ CFU/$\textrm{cm}^2$ in SPC) of beef and pork carcasses were 99.7% and 97.9%, respectively. The frequency of beef carcasses with less than 10$^2$ CFU/$\textrm{cm}^2$ of E coli was 100%, while that of pork carcasses was 98.2%. Salmonella spp was not recovered from all of beef and pork carcasses.

도체등급별 한우육의 연도와 단백질특성에 대한 비교연구 (Comparative studies on Tenderness and Characteristics of Protein Obtained from Various Carcass grade in Korean native Cow)

  • This study was conducted to investigate the effects of carcass grade on the hardness, myofibrillar fragmentations index, protein extractability and Mg-ATPase activity of myofibril and actomyosin obtained from 1, 2, 3 and D carcass grade)subgrade) in Korean native cow. Proximate component, hardness, chewiness, myofibril fragmentation index, protein extractability and Mg-ATPase activity if myofibril or actomyosin were not significantly different between 1st and 2nd carcass grade loin. The hardness and chewiness of 2nd carcass grade loin's were significantly lower than 3th grade loin's, but the myofibril fragmentation index, sarcoplasmic protein extractability and Mg-ATPase activity of myofibril were higher. The myofibrillar protein extractability and Mg-ATPase activity of actomyosin obtained from 3th carcase grade loin's were significantly higher than D grade loin's, but the hardness, chewiness and stroma protein extractability were lower. In conclusion, the degree of toughness in Korean native cow's loin was not significantly different between 1st and 2nd grade, but 3rd and D carcass grade were significantly higher, regardless of before and after aging.

Determination of Point of Sale and Consumption for Hanwoo Beef Based on Quality Grade and Aging Time

  • This study aimed to determine the suitable point of sale and consumption of different quality grade (QG) Hanwoo short loin during aging period, based on physicochemical, sensory, and microbiological quality. Short loins obtained from the carcasses of 13 Hanwoo steers and 2 bulls with 5 different QGs (1++, 1+, 1, 2, and 3) were analyzed over 28 d. QG and aging time had significant effect on water holding capacity, color, shear force, total volatile basic nitrogen (TVBN) content, and sensory traits. Higher QG groups generally exhibited a lower shear force, nucleotide content, and water holding capacity, and higher $L^*$, $a^*$, and $b^*$ values. Acceptable tenderness (shear force <5.4 kg) in QG 1++, 1+, 1, and 2 was achieved on days 7, 14, 16, and 18, respectively, and QG 3 showed a shear force of 6.8 kg, even after 28 d. Regardless of QG, TVBN content below threshold levels (20-30 mg%) was observed throughout the 28 d aging period, while total plate counts above 7 Log CFU/g were seen at 21 d. In conclusion, it is recommended that Hanwoo beef with QG 1++, 1+, and intermediate QG (1 and 2) should be sold or consumed between 7 and 21, 14 and 21, 16 and 21 d, respectively. Beef with QG 3 should be sold or consumed within 21 d, based on microbial growth, even though it has not achieved desirable tenderness. For this reason, an additional tenderizing process is recommended before this beef is ready for consumption.

Developmental Competence of Oocytes Collected from Individual Ovaries of Slaughtered Korean Native Cattle with Grade of Meat Quality and Meat Yield

  • We separately cultured follicular oocytes collected from individual ovaries of slaughtered Korean native cows and examined both the embryonic development rate and pregnancy rate after embryo transplantation according to the meat yield and quality grades of the source beef carcass. Oocytes from meat yield grade B cows exhibited a higher fertilization rate and embryonic developmental rate to the eight-cell stage than oocytes from grade A or C animals (p<0.05), but there was no significant difference in rate of development to the blastocyst stage among meat yield grades A, Band C. The oocyte cleavage rate and development rate to the eight-cell stage from meat quality grade 3 cattle was higher than grades 1++, 1+, 1 and 2 (p<0.05). Embryos derived from grade animals displayed a development rate to the blastocyst stage of 19.4%, which was also higher than all other meat quality grades (p<0.05). Transplantation of in vitro-cultured oocytes from meat yield grade A ovaries led to a higher pregnancy rate (64.2%) than in vitro-cultured oocytes from meat yield grade B ovaries (56.5%), but there was no significant difference between the two groups in pregnancy or abortion rates. In conclusion, embryonic development rate and pregnancy rate has a close relation to meat quality grades of the source beef carcass, this results is to give information for the Korean native cows improvement of breed.

지역자원 순환형 유기한우의 경영모델 (A Management Model for Korean Organic Beef Cattle Farming using Regional Resources)

  • Producing Korean organic beef cattle costs a great deal because it needs breeding conditions like the organic feed, an uncontaminated breeding farm and so on. So the price of Korean organic beef (KOB) is more expensive than that of Korean general beef (KGB). To overcome this adverse price condition, a case production organization in Asan will choose direct marketing routes for consumers or the shop under direct management of the organization, or franchise shops. As a result, these marketing routes are expected to narrow the price gap between KOB and KGB. And consumers will accept the price of KOB if quality of KOB is very high level, for example the first grade++.
