여성의 연령에 따른 Bakery 이용실태에 관한 연구 - 서울 일부지역을 중심으로 - (A Study on the Actual Conditions of Bakery Utilization according to the Female Age - Centering around the Females in Seoul Region -)

  • This research was accomplished to prove that the females would be different bakery utilization by their age group and what was the main factor of bakery product at each age group. This subway was examined far 221 females by the self-administerd questionnaire method. The demographic characteristics of research examines showed that the twenties were 77(34.8%), the thirties and the over forties were 72(35.6%) respectively. 55.2% of them graduated a high school and housewives were 35.3%. They normally use the bakery 1 ~ 3 times per week(49.8%), especially they use it in the evening. They responded that the reason of using bakery product was the delicious taste. Twenties bought the bakery product for themselves but the over forties did it for their sons or daughter. The price for one purchasing was usually 2,000~5,000 won. Twenties showed the highest usage of cooked bread with vegetable or ham etc., the thirties liked plain bread but the over forties usually used the bread of sweat taste. Most of them considered the taste as the most important factor when the product was bought especially in twenties. However, the thirties and the over forties also thought the nutrition was important. They also needed the development of new bakery product, especially thirties asked the improvement of service of bakery.

베이커리 제품에 대한 여대생의 이용현황에 관한 연구 (The Purchasing Practice of Bakery Product by Female University Student)

  • This study was designed to identify the purchasing practice on the bakery products by the female university students in Seoul and Kyunggi area. Total 262 questionnaires were used for the analysis among 285 responses. The results showed that 50.76% of the respondents bought the bakery products 1∼3 times a month mainly for supper or snacks. The most favored bakery products were bread, danguaja bbang, cake, pie and jori bbang, and there was a signigicant difference in the preference of bakery products by the type of dwelling (p<0.001). Students with non-food science major significantly preferred bakeries as light meals (p<0.01). Students with food science major liked bread, jori bbang, cake and pie, but the non-food science majors liked bread, sweat red-bean bread and sandwich (p<0.05). Depending upon the housing status and the major of the respondents, there was a signifcant difference in the purchase factor like nutrition, taste, size and sanitation of the store (p<0.05), while the purchasing frequency was not affected by those factors (p<0.05). As to the question if there is a room for improvement, different housing status influenced significantly the respondents in citing the factors like business hours and service, and the shape of product and service(p<0.05).

주거지에 따른 베이커리 제품의 선호도와 구매 만족도 (A Study on the Residence Preference and Purchase Satisfaction of Bakery Product Purchasers)

  • 이 연구의 목적은 주거지와 소득에 따른 베이커리 제품 구매 속성과 형태에 대해서 조사하였다. 일반적인 사항에서 전체 1,235명 중의 여성이 59.6%, 남성이 40.4%로 여성이 남성보다 조금 더 많았으며, 주거지는 서울 대도시 지역이 53.0%, 중소도시 지역이 47.0%였다. 베이커리 제품의 선호도에서 '일반 식빵과 단과자 빵류'가 56.5%로 가장 많았고, '샌드위치류' 26.0%, '천연 발효빵과 건강빵' 24.5%, '케익류' 20.6%, '빵과 함께 커피, 음료' 17.2% 순이었다. 소득에 있어서는 소득이 높아질수록 '천연 발효빵과 건강빵'을 선호하였으며(p<0.001), 소득이 낮아질수록 '조각 케익'(p<0.001)과 '샌드위치류'(p<0.001)를 선호하였다. 베이커리 제품의 만족도에서는 '품질과 맛'(M=3.76), '신선도'(M=3.64), '양질의 재료'(M=3.40), '기능성 제품판매'(M=3.31), '영양성분'(M=3.24) 순으로 나타났으며, 주거지에 있어서 서울 대도시 사람과 중소도시에 거주하는 사람 모두 '품질과 맛'(p<0.05), '신선도'(p<0.05)를 중요하게 생각하였다.

경주 지역 대학생의 빵에 대한 인식과 이용 실태 (The Recognition and Use of Bakeries Available to University Students in the Gyeongju Area)

  • This study was performed to analyze the preferences and actual use patterns of university students (96 males and 187 females) for bakeries in the Gyeongju area of Korea. A total of 283 questionnaires were used for the examination and statistical analyses were completed using SPSS Win (14.0) by descriptive analysis and $x^2$-tests. The most favored bakery products were prepared items such as sandwiches and toast. Most of the respondents (92.9%) typically used bread for snacks, and the main places of purchase were well-known bakery shops (38.5%) in which females preferred well-known shops more than males. In addition, the respondents liked milk (79.9%) and jam (39.7%) as the beverage and food, respectively, to eat with bread. When choosing bread, the main selection point was taste (80.2%) and the cost per person per visit was usually 1,000~5,000 won (63.3%). The consumption frequency rate revealed that 49.1% of the students consumed bread as a snack, while 24.8% consumed bread with other foods 1~2 times a week. In the case of purchasing bread as a snack, females had more purchases than males (p<0.05). Students who lived in their own home (p<0.001) with a commute time to school greater than 30 minutes (p<0.001) had the highest number of bread purchases as a snack. The most important point for bread purchase was hygiene (4.60). Overall, for the development of bakeries in the Gyeongju area it seems imperative to address the bakery shop environment, including such aspects as hygiene, price, and new bread product development for students.

과숙된 키위 파우더의 Bakery 제품에의 이용성 (Utility of Post-Mature Kiwi Fruit Powder in Bakery Products)

  • 과숙된 키위로 제조한 키위 파우더를 냉동생지나 쿠키와 같은 bakery 제품의 품질개량제로서 이용 가능한지에 대하여 조사하였다. 키위 파우더를 첨가한 냉동생지로 제조한 빵은 빵 속과 거죽의 색이 전체적으로 진해졌고, crumb firmness, 비용적과 관능적인 특성이 좋지 않아서 키위 파우더의 빵 제품에 대한 적용은 어려움이 있었다. 그러나 쿠키의 경우 쿠키의 비용적은 첨가량에 따라 유의적인 차이를 나타내지 않았고 쿠키의 spread ratio는 유의적으로 감소하였으나 퍼짐성은 첨가량에 따라 조절할 수 있었다. 또한 키위 파우더는 오븐 내에서 쿠키의 수분증발을 지연시켜 쿠키를 촉촉하게 할 수 있었고, 유기산에 의해 신맛을 제거 하거나 masking할 수 있다면, 쿠키의 품질(조직감)개량제로서 가능성이 있음을 알 수 있었다.

홍삼 분말을 첨가한 식빵의 품질특성 (Quality Characteristics of White pan bread with Led Ginseng powder)

  • This study investigated properties of bread utilizing extracts of ginseng powder. Ginseng powder bread was baked. Addition of 1~3% of ginseng powder extract to wheat flour was carried out. Rheological properties, dough pH, dough volume, bread volume, water absorption capacity, baking loss, bread color, bread texture, and sensory evaluation were tested to examine properties of bread baked with extracts of ginseng powder. The results are as follows. The dough pH decreased gradually with increasing ginseng powder extract concentration. The bread volume, baking loss, and bread weight increased with increasing use of ginseng powder extract, and springiness and cohesiveness increased as red ginseng powder additive concentration increased. Lightness of the L decreased while a and b increased. In the sensory evaluation, ginseng powder with 1% ginseng powder extract was evaluated as the best for taste, texture, flavor, and overall acceptability.

  • Bread making is based on several simple unit operations, basically kneading, fermentation and baking; however, it is still a quite complex process and bread quality can be strongly affected by minor details. The market of bread production is roughly shared at 50-50 between the industry market and the artisanal market, even though the frontier between these two players is not very easy. Different strategies have been developped by the industry to extend the shelf life of bread or to interrupt the bread making process. Freezing for example has been used form the 50s to extend the shelf life of bakery products. It was first applied to fully baked products and then to frozen dough which appeared as an interesting strategy to interrupt the bread making protocol. This paper presents a review on key issues of the frozen dough technology.

녹색 밀을 첨가한 베이커리 제품의 품질 특성 (Quality Characteristics of Bakery Products with Whole Green Wheat Powder)

  • 전곡립(whole grain)인 녹색 밀의 이용 가치를 높이고, 가공식품산업으로의 적용 가능성을 알아내고자 녹색 밀을 제분하여 얻은 녹색 밀가루의 호화 특성을 조사하고, 녹색 밀가루의 첨가량을 달리한 베이커리 제품(식빵, 머핀, 쿠키)을 제조하여 색도와 조직감 측정, 내부 표면 관찰, 관능검사를 실시함으로써 녹색 밀가루의 제과제빵 적성과 품질특성을 평가하였다. 일반 밀가루에 녹색 밀가루의 첨가량을 달리한 전분의 호화 특성 분석 결과, 호화개시온도만 증가하는 경향을 보였고 최고점도, 최고점도에 이르는 시간, 최종점도, 최저점도, 구조파괴점도와 회복점도는 모두 감소하는 경향을 보였다. 이는 녹색 밀가루의 첨가로 인하여 호화가 지연되어 전분사슬의 구조는 미흡해지나, 노화를 지연시키는 효과를 주는 것으로 보인다. 녹색 밀가루의 첨가로 베이커리 제품의 색도는 전반적으로 어둡고 녹색과 황색을 띄는 경향을 나타내었고, 내부 표면은 녹색 밀가루의 첨가가 증가할수록 기공의 수와 크기가 줄어 팽창 정도가 감소하였으나 식빵에 비하여 머핀과 쿠키는 상대적으로 그 정도가 크지 않았다. 조직감의 경우, 식빵과 머핀은 녹색 밀가루의 첨가량이 증가할수록 경도가 증가하였지만 쿠키는 경도가 감소하였다. 베이커리 제품의 관능평가에서 전반적인 선호도는 녹색 밀가루 30% 첨가 된 머핀과 20% 첨가된 쿠키가 가장 높은 값으로 나타났으나 식빵의 경우, 녹색 밀가루의 첨가가 증가할수록 전반적인 선호도가 낮게 나타났다. 녹색 밀가루를 첨가한 베이커리 제품은 외관적으로 녹색을 띄어 유색미로서의 상품성이 있음을 확인하였으며 녹색 밀가루를 10%내외로 첨가한 식빵 또는 20%내외로 첨가한 머핀과 쿠키의 경우, 느끼한 맛이 감소하고 고소한 맛을 주어 베이커리 제품의 기호성에 좋은 영향을 주는 것으로 생각된다. 따라서 전곡립인 녹색 밀의 영양학적 우수성을 베이커리제품을 비롯한 다양한 가공식품산업으로의 적용할 가능성이 있을 것으로 기대된다.

오징어 먹물을 첨가한 식빵의 품질 특성 (Quality Characteristics of Bread with Cuttlefish Ink Added)

  • The aim of this study was to determine the quality characteristics of bread with 2%, 4%, 6%, and 8% cuttlefish ink added. The pH of the dough decreased as the addition percentage increased, and the addition of 8% was the lowest. The pH of the bread and the fermentation expansion power of the dough decreased as the addition percentage increased. Moisture and ash content were positively correlated with the addition percentage, and the crude protein and crude ash content were negatively correlated. As the addition percentage increased, the color of the bread became darker, and the bread volume decreased. The inside and outside color of the bread also decreased as the addition percentage increased. The volume and specific volume of bread decreased as the addition percentage increased. The amino acid analysis indicated glutamic acid was the largest, free amino acid analysis pointed out aspartic acid the highest. The springiness, cohesiveness, gumminess, brittleness, and hardness of the bread were positively correlated with the addition percentage. Overall, it seems possible to develop bakery items using cuttlefish ink as a functional ingredient.

변형기체포장이 흑미 첨가 기능성 찐빵의 저장성에 미치는 영향 (Effect of Modified Atmosphere Packaging on Preservation of the Steamed Bread Added with Black Rice)

  • 흑미를 첨가하여 제조한 기능성 찐빵에 변형기체포장으로 적용하여 저장성에 미치는 영향을 살펴보았다. 흑미 첨가 찐빵은 미생물적으로 매우 민감하여서 쉽게 부패될 수 있는 특성을 가지고 있으며, 이를 억제할 수 있는 변형기체 포장이 저장성 향상과 유통기한 연장에 기여할 수 있는 것으로 확인되었다. 미생물적 품질과 관능적 품질에 근거하여 각 포장조건 별 저장수명은 함기 포장에서는 5일 미만, 질소 포장에서는 5일, 이산화탄소 60%/질소 40% 포장에서는 8일, 이산화탄소 100% 포장에서는 15일로 설정할 수 있었다. 하지만 이산화탄소 포함 변형기체 조건에서도 노화에 의한 texture 변화는 계속 진행되므로, 이러한 저장수명 연장에의 변형기체 포장의 적용은 찐빵의 재가열 등의 상황에서 이루어져야 할 것으로 판단된다.
