훈제 처리가 가열소지에 미치는 영향 (The effect of smoking on the quality boiled sausage)

  • The effect of smoking on the quality sausage Sausages were prepared from beef, port, chickens, games, fish and shellfish with polyphosphate salt and spices. Sausage history goes back to 3,000 years of age. The procedure of sausage 1) Meat Curing 2) Meat Control 3) Add Spices 4) Permissible Ingredients 5) Grinding 6) Mixing Emulsion 7) Stuffing 8) Showing 9) Smoking 10) Cooking 11) Drying 12) Packaging Sausage Product to get information on the effect of smoking onto the quality of meat produces. Sausage was smoked under a given conditions. Smoking was conducted as 35f$^{\circ}C$to 6$0^{\circ}C$ the related humidity of smokehouse was still at 60 to 70 percent. Results are as follows: 1. The Penetrated smoke in sausage was prolonged < p.<0.02 when sausage was smoked 2hours at 60~$65^{\circ}C$ the penetrated amount of free acetone in sausage was 0.5mg%. 2. Peroxide value of sausage as heating treatment both at 3$0^{\circ}C$ and at 5$0^{\circ}C$ was prolonged. 3. When sausage was heated at 3$0^{\circ}C$, bacteria of sausage increased In number while at 60~$65^{\circ}C$ bacteria of sausage increased In number fourteen hours. 4. When sausage was treated with smoking the distribution of free amino acids in sausage was changed markedly. 5. The longer smoking time of the products was the higher the content. 6. In case of oak wood smoke flavoring all of test samples. 7. Rapid decrease of does-response mutagenic curve of the smoke flavoring of oak wood and apple wood by in the peak of curve and phenol in the smoke flavoring. Continuous efforts are required to make sausages easily in the butcher shops and in the restaurants. 8. Sausage texture evaluation has 13 rules. It is Elasticity, Surface Moisture, Surface Smoothness, Center Hardness, Skin Toughness, Cohesiveness, Denseness, Moisture Release, Cohesiveness of Mass, Lumpiness, Graininess (of Contents), Skin separation, Oiliness and sensory 11 rules evaluation is color, texture, mold, flavor, sweet test, salty, sourness, bitter, and savory taste. 9. Smoked, component, peroxide value, bacteria, color, free amino acid, tenderness, flavor, shrinkage are important values.

DITI를 이용한 갱년기 환자의 체열분포 양상 (Using DITI to examine the pattern of subcutaneous heat of the climacteric patients)

  • 1. Objectives Among many symptoms that the climacteric patients complain of, the major subjective symptom is both heat in the upper part and cold in the lower part of the body(e.g foot, knee, and leg). We use DITI as a method to prove the symptoms of climacteric patients such as both heat in the upper part and cold in the lower part of the body, diagnose these symptoms, and follow up the progress of the clinical treatments. 2. Subjects and Methods We compare the subcutaneous heat of the climacteric patients with the symptom of heat in the upper part and cold in the lower part of the body with young women without any specific disease. The age distribution of the experimental group is 28 patients in 40's, and 22 in 50's. The mean age of the experimental group is $48.5{\pm}4.25$. The age distribution of the control group is 17 patients in teen, 26 in 20's, 7 in 30's. The mean age of the control group is $23.31{\pm}6.45$. We measure the subcutaneous heat on the cheeks, upper arms, palms, thighs, knees, dorsum pedis, lower back, hip, upper abdomen, lower abdomen of both groups and analyse the results. 3. Statistical methods All the results are statiscally analysed using student T-test of Microsoft Exel program. Statistically significant value by the analysis of variance procedure is P<0.05. 4. Results 1. The subcutaneous heat of the whole body of the experimental group shows hypothermia compared with control group, and the hypothermic pattern gets severe on the periphery. ${\Delta}T$ between the right and left side of the body in experimental group is larger than that of control group. 2. ${\Delta}T$ between the cheeks and the hypogastric in the experimental group is significantly larger than that of the control group, which shows cold face. 3. ${\Delta}T$ between the upper arms and the palms in the experimental group is significantly larger than that of the control group, which shows cold hand. 4. ${\Delta}T$ between the thighs and the knees in the experimental group is significantly larger than that of the control group, which shows cold knee. 5. ${\Delta}T$ between the thighs and the feet in the experimental group is significantly larger than that of the control group, which shows cold foot. 6. ${\Delta}T$ between the hip and the lower back in the experimental group is significantly larger than that of the control group. That shows the Lower back is warmer than the hip. 7. ${\Delta}T$ between the upper and the lower abdomen in the experimental group is significantly larger than that of the control group, which shows cold hypogastric.

진동대 시험에 의한 편평한 암석 절리면의 동적 마찰거동 특성 (Dynamic Frictional Behavior of Saw-cut Rock Joints Through Shaking Table Test)

  • 암반구조물의 규모가 점차 대형화됨에 따라 암반이 자유면에 노출되는 확률이 높아지고 있으며, 최근 들어 지진이나 발파, 고속철도의 운행에 의한 진동 등으로 야기되는 동적 하중의 발생빈도가 증가하는 추세이므로 동적 하중조건 하에서 암반 불연속면의 거동 특성 파악을 위한 연구의 필요성이 증대되고 있다. 본 연구에서는 자유면에 노출된 블록의 동적 거동을 모사할 수 있도록 경사면 진동대 시험장비를 제작하였고, 다양한 동적 하중 조건하에서 편평한 화강암 절리면의 마찰 거동 특성을 분석하였다. 경사시험을 통해서 구한 한계 경사각과 진동하중 하에서의 임계가속도로부터 역산한 정적 마찰각을 비교한 결과 동하중 하에서 정적마찰각이 $4.5\~8.2^{\circ}$ 정도 낮게 산정되는 경향을 보였다. 이론적인 암석 블록의 마찰 거동을 표현하는 블록 거동 프로그램을 작성하고, 진동하중에 의해 미끄러지는 암석 블록의 가속도 및 변위 계측결과를 개발된 프로그램에 의한 결과와 비교하여 암석 절리면의 동적 마찰각을 산정하였는데 동적 마찰각 역시 한계 경사각에 비해 $2.0\~7.5^{\circ}$ 정도 감소하는 결과를 얻었다. 동하중 하에서 측정된 정적 마찰각과 동적 마찰각은 가해진 가속도의 크기나 진폭 등의 하중 특성과 기하조건에 따라 달라지는 경향을 보였다. 개별요소 프로그램을 이용하여 진동대 시험을 모사하였는데, 계측결과 및 개발된 프로그램에 의한 결과와 비교적 잘 일치하였다. 진동대 시험에 의한 동적, 정적 마찰각은 직접전단시험에 의한 기본 마찰각보다 현저히 작게 산정되었다.

S.O.T CATEGORY II BLOCKING이 복근지구력과 어깨 통증에 미치는 영향 (THE EFFECT OF SACROOCCIPITAL TECHNIQUE CATEGORY II BLOCKING ON ABDOMINAL MUSCLE ENDURANCE AND SHOULDER PAIN)

  • 본 연구는 카이로프랙틱 기법 중 누운 자세에서 시술되어지는 S.O.T category II 골반 블록 중재가 골반의 불안정으로 인한 기울어짐을 회복시킴으로써 이에 따른 어깨통증을 줄이고 복근의 지구력을 향상시킬 수 있는지 알아보고자 한 것이다. 이 실험을 위해 엉치엉덩관절의 불안정을 가지고 있으며 허리의 통증이 있는 총 50명의 참여자가 실험군과 대조군에 각 25명씩 무작위 할당되었다. 실험군은 category II 블록 중재를 받았고, 대조군은 거짓블록 중재를 받았으며, 이들 두 집단을 통해 중재 전, 중재 후, 그리고 중재 2주 후에 복근지구력과 어깨통증을 측정하여 그 결과를 반복측정 이원분산분석법으로 분석하였다. 분석결과 S.O.T category II 골반 블록 중재 후 실험집단에서 복근지구력이 유의한 증가를 보였으며 중재가 끝난 2주 후에도 유지 되었다. 또한 어깨통증의 경우에도 실험집단에서 통증의 감소를 보였으며 역시 중재가 끝난 2주 후에도 유의한 감소를 보였다. 이상의 연구 결과를 종합해 볼 때 S.O.T category II 골반 블록 중재는 골반의 안정성을 유도하여 복근지구력을 증진시키고, 어깨통증을 감소시키며 중재 후에도 지속효과가 있는 것으로 나타남으로, 골반의 불안정성이 원인이 되는 어깨통증이나 복근지구력을 회복시킬 수 있는 중재법으로 활용되어질 수 있을 것으로 사료된다.

Crumbled or mashed feed had no significant effect on the performance of lactating sows or their offspring

  • Background: Physical and chemical properties of feedstuffs can be changed by feed processing. Moreover, through various mechanisms, feed processing can affect growth performance and feed efficiency of swine, nutrition value of the feed. Weaning-to service-intervals (WSI), subsequent farrowing rates, and total-born litter sizes were determined by feed intake and metabolic state during lactation. Methods: A total of 20 sows (Landrace ${\times}$ Yorkshire) with an average body weight (BW) of 266.1 kg 4 d before farrowing were used to determine the effect of feed processing on the performance of lactating sows and their offspring. The following two dietary treatments were used: 1) Crumble diet (C); and 2) Mash diet (M). Ten replications were used for each treatment. Back fat thickness of sows was measured 6 cm off the midline at the 10th rib using a real-time ultrasound instrument at 4 d before farrowing, 1 d after farrowing, and during weaning. Sow BW were also checked at 4 d before farrowing, 1 d after farrowing, and during weaning. Fecal score of sows were assessed on d 14. Fecal score of piglets were observed on d 7, 15, and 24. Data were analyzed using t-test procedure of SAS (2014) with sow as experimental unit. Results: No significant (p > 0.05) difference was observed in the reproduction performance of sows between the two treatments. In addition, there was no significant (p > 0.05) difference in the growth performance of piglets between the two treatments. Fecal score of sows or piglets showed no significant (p > 0.05) difference either. Conclusions: In conclusion, different feed processing (mash or crumble) did not make any significant difference on the performance of lactation sow or their piglets.

한국전통혼례문화의 계승을 위한 혼례절차에 대한 미혼남녀의 인식연구 (A Research on Perceptions of the Wedding Ceremony of Unmarried People for the Succession of Korean Traditional Wedding Culture)

  • The purpose of this study was to explore perceptions and awareness of traditional Korean wedding ceremonies. For this purpose, I began a literature review and investigated the consciousness about traditional Korean wedding ceremonies among unmarried people. As a result, I discussed the future of Korean wedding culture. Data were analyzed from the sample of 206 unmarried people collected from April 20 to Jun 13, 2009. The data were analyzed by making use of the SPSS program and included Frequency analysis, ANOVA and the $\chi^2$-test. The summary of these results was as follows. First, unmarried people want a special wedding ceremony. They think the appropriate age of marriage is between their 20s and mid-30s. The traditional wedding ceremony is changing, but they think that the meanings behind them will continue. If they married a foreigner, they would want to have a modem wedding ceremony and each of their traditional wedding ceremonies. Second, they have no educational experience about traditional wedding culture(85.4%). Some people who have educational experience learned about traditional wedding culture from their parents or grandparents. Third, most traditional wedding procedures were influenced by Korean customs. Most men did not know about traditional Korean wedding procedures. But if they get married, they will follow traditional wedding procedures (M=3.35). In the future, we will have to succeed Korean wedding culture, for example, Peau back(幣帛), Ham(函), and traditional wedding ceremony.

Does Fibrin Sealant Reduce Seroma after Immediate Breast Reconstruction Utilizing a Latissimus Dorsi Myocutaneous Flap?

  • Background The most common complication of latissimus dorsi myocutaneous flap in breast reconstruction is seroma formation in the back. Many clinical studies have shown that fibrin sealant reduces seroma formation. We investigated any statistically significant differences in postoperative drainage and seroma formation when utilizing the fibrin sealant on the site of the latissimus dorsi myocutaneous flap harvested for immediate breast reconstruction after skin-sparing partial mastectomy. Methods A total of 46 patients underwent immediate breast reconstruction utilizing a latissimus dorsi myocutaneous island flap. Of those, 23 patients underwent the procedure without fibrin sealant and the other 23 were administered the fibrin sealant. All flaps were elevated with manual dissection by the same surgeon and were analyzed to evaluate the potential benefits of the fibrin sealant. The correlation analysis and Mann-Whitney U test were used for analyzing the drainage volume according to age, weight of the breast specimen, and body mass index. Results Although not statistically significant, the cumulative drainage fluid volume was higher in the control group until postoperative day 2 (530.1 mL compared to 502.3 mL), but the fibrin sealant group showed more drainage beginning on postoperative day 3. The donor site comparisons showed the fibrin sealant group had more drainage beginning on postoperative day 3 and the drain was removed 1 day earlier in the control group. Conclusions The use of fibrin sealant resulted in no reduction of seroma formation. Because the benefits of the fibrin sealant are not clear, the use of fibrin sealant must be fully discussed with patients before its use as a part of informed consent.

Effects of Latin hypercube sampling on surrogate modeling and optimization

  • Latin hypercube sampling is widely used design-of-experiment technique to select design points for simulation which are then used to construct a surrogate model. The exploration/exploitation properties of surrogate models depend on the size and distribution of design points in the chosen design space. The present study aimed at evaluating the performance characteristics of various surrogate models depending on the Latin hypercube sampling (LHS) procedure (sample size and spatial distribution) for a diverse set of optimization problems. The analysis was carried out for two types of problems: (1) thermal-fluid design problems (optimizations of convergent-divergent micromixer coupled with pulsatile flow and boot-shaped ribs), and (2) analytical test functions (six-hump camel back, Branin-Hoo, Hartman 3, and Hartman 6 functions). The three surrogate models, namely, response surface approximation, Kriging, and radial basis neural networks were tested. The important findings are illustrated using Box-plots. The surrogate models were analyzed in terms of global exploration (accuracy over the domain space) and local exploitation (ease of finding the global optimum point). Radial basis neural networks showed the best overall performance in global exploration characteristics as well as tendency to find the approximate optimal solution for the majority of tested problems. To build a surrogate model, it is recommended to use an initial sample size equal to 15 times the number of design variables. The study will provide useful guidelines on the effect of initial sample size and distribution on surrogate construction and subsequent optimization using LHS sampling plan.

수직형 손잡이와 수평형 손잡이의 높이와 간격에 따른 미는 힘 비교 (Comparison of the Pushing Forces between Horizontal Handle and Vertical Handle According to the Handle Height and Distance)

  • Manual materials handling tasks are the main risk factors for the work-related musculoskeletal disorders. Many assistant tools for manual materials handling are being used in various kind of industries. One of them is a 4-wheeled cart which is widely used in manufacturing factories, hospitals, etc. The major force required to control the 4-wheeled cart is pushing and pulling. There are two types of handles being used for the 4-wheeled cart : vertical type (two vertical handles), and horizontal type (one horizontal handle). This study tried to investigate the pushing forces and subjective discomforts (hand/writst, shoulder, low back, and overall) of the two handle types with different handle height and distance conditions. Twelve healthy male students (mean age = 23.4 years) participated in the experiment. The independent variables were handle angle (horizontal, vertical), handle height (low, medium, high), and handle distance (narrow, medium, wide). The full factorial design was used for the experiment and the maximum pushing forces were measured in 18 different conditions ($2{\times}3{\times}3$). Analysis of variance (ANOVA) procedure was conducted to test the effects of the independent variables on the pushing force and discomfort levels. Handle height and angle were found to be the critical design factors that affect the maximal pushing forces and subjective discomfort. In the middle height, subjects exerted higher pushing forces, and experience lower discomfort levels compared to the high, and low height. There was no statistical influence of the handle distance to the pushing forces and subjective discomfort levels. It was found out that the effects of the handle angle (horizontal and vertical) on both pushing force and subjective discomfort were statistically significant (p < 0.05). The vertical handle revealed higher pushing force and lower discomfort level than the horizontal handle. The reason for that was thought to be the different postures of the hand when grasping the handles. The horizontal handle induced pronaton of the hand and made hand posture more deviated from the neutral position.

고농도 질소폐수 처리 공정에서 환경인자가 아질산염 축적에 미치는 영향 (Effects of Environmental Factors on Nitrite Accumulation in a Strong Nitrogen Removal System)

  • The high concentration of N in the wastewater from livestock farming generally renders the efficiency of the wastewater treatment. Therefore, removal of N in livestock wastewater is crucial for successful treatment. The current study was conducted to investigate the optimum conditions for partial nitrification under anaerobic condition following nitritation in TPAD-BNR(two-phase anaerobic digestion-biological nitrogen removal) operating system. Sequential operating test to stimulate partial nitrification in reactor showed that partial nitrification occurred at a ratio of 1.24 in $NO_2{^-}$-N:$NH_4{^+}$-N. With this result, a wide range of factors affecting stable nitritation were examined through regression analysis. In the livestock wastewater treatment procedure, the hydraulic retention time (HRT) and pH range for optimum nitrite accumulation in the reactor were 1-1.5 days and 7-8, respectively. It was appeared that accumulation of $NO_2{^-}$-N in the reactor is due to inhibition of the $NO_2{^-}$-N oxidizer by free ammonia (FA) while the effect of free nitrous acid was minimal. Nitrification was not influenced by DO concentration at a range of 2.0-3.0 mg/L and the difference in the growth rate between $NH_4{^+}$-N oxidizer and $NO_2{^-}$-N oxidizer was dependent on the temperature in the reactor.
