Antioxidant Activity of Ethanol-Extracts from a Maillard Browning Mixture and Some Antioxidants in Soybean Oil and Soybean Oil-Water Emulsion Systems (콩기름 및 콩기름-물 에멀젼기질(基質)에서의 마이얄형(型) 갈색화반응생성물(褐色化反應生成物)과 일부(一部) 산화방지제(酸化防止劑)의 산화억제효과(酸化抑制效果))

  • The antioxidant actilvity of ethanol-extracts (M-2 and M-30), which had been obtained from a Maillard-type browning mixture after 2 and 90 hr browning, and BHA, BHT, TBHQ, and ascorbyl palmitate It·as investigated in soybean oil and soybean oil-water emulsion systems. The activity of the extracts and antioxidants was estimated by comparing the POV and TBA value development of the corresponding substrates with that of controls. The substrates and controls were stored at $45.0{\pm}0.5^{\circ}C$ for 25 days. The activity of the extracts (10 ml each) and antioxidants (0.02%) based mainly on the POY development of the corresponding anhydrous substrates was, in decreasing order, as follows ; As. palmitate, TBHQ > M-30, M-2 > BHT, BHA The actilvity of the extracts and antioxidants in tile oil-water emulsion substrates was, in decreasing order, as follows : As. palmitate > M-30, M-2 > BHT, TBHQ, BHA The activity of the extracts appeared to be more effective in the oil-water emulsion system than in the anhydrous system, and it f·as greater than that of the phenolic antioxidants such as BHA, BHT, and TBHQ in the oil-water emulsion system.

Antioxidative Activity of Brazilin on Potato Chips (Brazilin의 Potato Chip에 대한 항산화 효과)

  • Brazilin was added to frying oil used in the production of potato chips and their antioxidative effects against Caesalpinia sappan L. were evaluated. Additionally, the antioxidative activity was tested under the same conditions that commercial antioxidants are evaluated. The peroxide value of the oil and fat extracted from the potato chips was 134 meg/kg oil, 84.06 meg/kg oil, 117.10 meg/kg oil and 68.56 meg/kg oil in the control group, BHA(50 ppm)-BHT(50 ppm) group, $\delta$-tocopherol (100 ppm) group and brazilin(100 ppm) group after storage for 30 days. The antioxidative effect of chips subjected to these treatments were 1.6 times, 1.14 times and 1.97 times greater than that of the control. In addition, the peroxide value was lower in the brazilin(100 ppm) group than in the BHA(50 ppm)-BHT(50 ppm) group and this group also had a superior effect at inhibiting the production of peroxide. Furthermore, an experiment conducted at high temperature using the Rancimat resulted in the antioxidant activity of brazilin(100 ppm) and BHA(50 ppm)-BHT(50 ppm) being 1.53 and 1.4 times greater than that of commonly used synthetic antioxidants. Finally, brazilin(100 ppm) effectively decreased the palmitic acid ($C_{16:0}$)/linoleic acid($C_{18:2}$) value and increased the conjugated dienoic acid content to a greater degree than commercial antioxidants.

STUDIES ON FREEZING OF YELLOW SEA BREAM 1. Effects of Freezing and Storing Temperature and Chemicals on the Quality of Yellow Sea Bream (옥돔의 동결에 관한 연구 1. 동결저장온도와 약품처리가 품질에 미치는 영향)

  • The quality changes of yellow sea bream, Branchiostegus japonicus japonicus, during frozen storage were mentioned from the view point of commercial value. The experiments were conducted to find out the effective storing method by varying the storage temperatures $(-5^{\circ}C,\;-35^{\circ}C)$ and pretreatment with chemicals $(0.l\%\;BHA,\;1\%\;sodium\;Polyphosphate)$. The samples were stored for 6 months at $-5^{\circ}C$ and $-35^{\circ}C$ after dipping in the chemical solutions and packing with polyethylens film. The extractibility of salt soluble protein of sample stored at $-35^{\circ}C$ was higher than that of samples stored at $-5^{\circ}C$, while the chemical treatments were not so much effective. Difference in the amount of free water released from samples was obvious between $-5^{\circ}C$ and $-35^{\circ}C$ storage, and that of samples treated with sodium Polyphosphate was much less than the BHA-treated ones. VBN content was differed by varying the storage temperature whereas no effect by the chemical treatments. TBA value of the sample storage at $-35^{\circ}C$ was lower than $-5^{\circ}C$ and the effect of chemicals on the development of oxidation was in order of sodium polyphosphate, BHA and control. Carotenoid content also changed by varying the storage temperature and the color was completely faded out with quality deterioration after 3 months storage at $-5^{\circ}C$.

  • To study the relative effectiveness of the antioxidants (BHA, BHT) and the transparent cellophane films (colorless, blue and red) on rancidity development of the sesame oils treated with sunlight - irradiation condition, this experiment was carried out. The results obtained as follows ; 1. The retarding effect of the antioxidants on POV, COV and TBA development was more effective than control, and Bill was more effective than BHA. 2. The transparent cellophane films were more effective than antioxidants, and red was more effective than blue transparent cellophane film. 3. During the storage of the sesame oils which were covered with colorless, blue and red thansparent cellophane film respectively, the contents of linoleic acid in sesame oil were decreased, while oleic acid were increased.

Antioxidative Effect of Phenolic Acids in Defatted Perilla Flour on Soybean Oil (탈지들깨박 중 페놀산의 대두유에 대한 항산화 효과(I))

  • Free phenolic acid, soluble phenolic acid ester and insoluble bound phenolic acid were extracted from defatted perilla flour. Their antioxidative effects were compared with those of BHA, AE and TBHQ for soybean oils by measuring acid and peroxide values at 60$^{\circ}C$ for 25 days. The patterns of these extracts were compared by using gas chromatography. Free phenolic acid and soluble phenolic acid ester extracts showed a higher antioxidative effects than BHA and AP. Among phenolic extracts, free phenolic acid showed the most effective antioxidant activity in soybean oil. Six types of free phenolic acid, 3 types of soluble phenolic acid ester, and 2 types of insoluble phenolic acid were found in the extract.

  • The hot water extracts of Paeonia japonica, Paeonia moutan, Eucommia ulmoides, Bupleurum falcatum, Cornus officinalis were freeze dried and dissolved with 70% ethanol. These extracts were fractionated with ethanol soluble fraction(ESF) and ethanol insoluble fraction(EIF). To compare oxidative stability effect of these extracts with that of BHA, linoleic acid with 3,000ppm extracts was incubated at 35$^{\circ}C$. Induction period of BHA was 9 days but that of Paeonia japonica ESF and Scutellaria baicalensis ESF was 12, 9 days respectively. And the higher antioxidant activity was observed for ESF than EIF of these extracts.

  • As window sized increases, the throughput input-buffered packet switch with a window scheme improves on random traffic condition. However, the improvement diminishes quickly under bursty traffic. In this paper, we propose Burst Head Addressable FIFO mechanism and memory structure having search capability in unit of burst header to compensate the sensitiveness of the windowed scheme to bursty traffic. The performance of a input-buffered switch using the proposed Burst Header Addressable FIFO input buffer was analyzed using computer simulations. The maximum throughput of the conventional FIFO scheme approaches an asymptotic value 0.5 as mean burst length increases. The maximum throughput of the proposed scheme is greater than that of the conventional scheme for any mean burst length and window size.

  • The effects of butylated hydroxyanisole and butylated hydroxytoluene on the immune status in normal male were evaluated. They exhibited significant decrease in the circulating leukocyte counts. Relative spleen and thymus weights were slightly decreased, but not stratistically significant. These were, however, significant liver hypertrophies in theier exposed mice. Splenic IgM PFCs per one million cells in 1/20 LD50 BHA and BHT exposed mice were significantly reduced IgM PFCs per spleen were similar tothose of control, except in 1/20 LD50 BHA exposed mice, where they were significantly suppressed. The precise nature of the inhibition is not clear. Direct cytotoxicity is not responsible for the depressed antibody response, even following relatively high doses of them, because the changes in spleen cellularity are not significant. Both substances, however, did not show any effects on the arthus reaction and delayed hypersensitivity reaction induced by heat aggreagted bovine serum albumin, and in vivo phagocytosis of colloidal carbon. In the light of the present results, in vivo antibody response as well as in vitro, may be sensitive to BHA of the present results, in vivo antibody response as well as in vitro, amy be sensitie to BHA and BHT. Further elucidation of the precise nature of antibody suppression in their exposed mice, is warranted.

  • Low salt fermented products of anchovy, Engraulis japonica, caught in the coasts of East Sea of Korea, were prepared tentatively and also discussed the retarding effect of rancidity of the product by the addition of BHA or red pepper. Fresh anchovies were purchased from Kichang fish market. The raw samples were mixed with $8\%$ table salt, $0.5\%$ lactic acid, $6\%$ sorbitol, $4\%$ ethyl alcohol and $0.02\%$ BHA or $0.5\%$ red pepper and filled in the glass bottles and sealed with the cap. Conventional fermented product of anchovy as a control was prepared from fresh anchovy and $20\%$ salt only. After preparation, the products were fermented for 90 days at room temperature. Amino-nitrogen, TBA value, peroxide value and viable counts of bacteria of these products were determined and also evaluation of their qualify was compared with control product by sensory evaluation during fermentation. Amino-nitrogen contents of the low salt products reached a peak in 55 days of fermentation, and the volatile basic nitrogen contents ranged $100\;mg\%$ even after 90 days of fermentation. Thiobarbituric acid value of the product with $0.02\%$ BHA showed a little increase up to 65 days of fermentation regardless of salt contents, while that of the control product increased sharply up to 65 days and then decreased gradually. BHA was effective on retarding rancidity of fermented products of anchovy and red pepper was also slightly effective. All the products showed the highest cell population in about 55 days of fermentation. Judging from the results of analysis and sensory evaluation, the low salt fermented product of anchovy could be prepared with $8\%$ salt, $0.5\%$ lactic acid, $6\%$ sorbitol, $4\%$ ethyl alcohol and $0.02\%$ BHA or $0.5\%$ red pepper to the fresh round anchovy.

Effect of Sunlight on the Rancidity of Soybean Oil (대두유의 산패에 미치는 일사광선의 영향)

  • The accelerating effect of sunlight on the rancidity of soybean oil and the efficacies of several anti-oxidants were measured. The result is as follows: 1. The ac야 value and peroxide value of soybean oil were 0.16 and 1, 72 respectively. 2. the peroxide value of soybean oil which was exposed to sunlight nine hours a day for six days was 134.3: 21 times of that which was not exposed to sunlight. 3. The peroxide value of the soybean oil with 0.02~0.06% BHA decreased a little, but not significantly. 4. The anti-rancidity effect of BHT was a little stronger than BHA. 5. The anti-rancidity effect of ascorbic acid alone was negligible. 6 The peroxide value of soybean oil with an anti-oxidant which comprised ascorbic acid, BHA and BHT decreased to one third of that which was not treated with anti-oxidant.
