Development of Meat-like Flavor by Maillard Reaction with Addition of Natural Flavoring Materials (천연 조미향상물질의 첨가에 의한 Maillard 반응에서 Meat-like Flavor의 개발)

  • Addition of three natural flavoring materials, hydrolyzed vegetable protein (HVP), hydrolyzed animal protein (HAP) and yeast extract (YE), into 0.2 M cystine-0.1 M lactose-0.1 M maltose solution (control) was studied for development of meat-like flavor by Maillard reaction. The HVP, HAP and YE were added individually at various concentrations and were mixed at selected concentration in order to compare their effects. The absorbance, color, sensory characteristics and volatile compounds of the solutions after the reaction at $100^{\circ}C$ for 8 hr were measured. The results showed that the absorbances of reaction solution at 420 nm and 278 nm were increased as reaction time and the concentration of the natural flavoring material increased. Also ‘L’ values of reaction solutions added with HVP, HAP or YE decreased while the ‘b’ value increased slightly. From the results of sensory evaluation 1.16% HVP, 0.94% HAP, 1.48% YE or 1.16% HVP + 0.94% HAP were selected as the appropriate substrates for the meat-like flavor development. The volatile compounds identified by GC/MS for the control and those added with 1.16% HVP or 1.16% HVP+0.94% HAP were 1 hydrocarbons, 9 aldehydes, 5 ketones, 1 ester, 5 alcohols, 2 aromatics(benzene), 2 furans, 1 sulfur compound.

  • For the purpose of obtaining basic data which can be applied to processing of retort pouched shell-fishes, retort pouched seasoned baby clam was prepared. After sand and mud were removed, and then steamed baby clams were shucked. Baby clam meats were seasoned with the mixed seasoning powder containing $3\%$ of sugar, $2.5\%$ of salt, $12\%$ of sorbitol, $0.5\%$ of monosodium glutamate and $10\%$ of smoke flavor, and then dried at $35-40^{\circ}C$ for 3 hours. After dried, the meats were vacuum packed in plastic film bag (polyester/nylon/unoriented polyproylene; $12{\mu}m/15{\mu}m/50{\mu}m,\;15{\times}17cm$), and sterilized for 12 minutes in a hot water circulating sterilzer at $120^{\circ}C$, The factors such as pH, VBN, moisture content water activity, color value (L, a, b), texture, TBA value and viable bacterial count of products were determined during storage at room temperture ($20{\pm}3^{\circ}C$). The results showed that the product could be preserved in a good condition for 120 days at $20{\pm}3^{\circ}C$. Judging from the scores of sensory evaluation on flavor, the product added smoke flavor as seasoning was the most desirable.

Dietary Intakes, Plasma Levels and Urinary Excretions of Taurine in Adolescents and Adults Residing in Seoul Area (서울지역 청소년 및 성인의 타우린 섭취량, 혈중 농도 및 소변내 배설량에 관한 연구)

  • As diverse physiological functions of taurine have been reported, taurine-containing health drinks and products are marketed worldwide for the treatment of various conditions such as improvements of liver, heart and circulatory functions or as an aid to athletic performance. Although animal studies have shown that taurine is fairly safe when supplemented in the diet for an extended period, the effective dose range of taurine for dietary supplements is in controversy. Reports on dietary taurine intakes have been sparse, and would serve as a guideline for determining an appropriate taurine dosage. The present study was aimed to estimate dietary intake level of taurine using the taurine content database of commonly used food stuffs established recently in our laboratory, and also to evaluate plasma concentration and urinary excretion of taurine in adolescents and adults residing in Seoul area. Dietary taurine intakes of the subjects were 219$\pm$16.9mg/day for 16-19 years old(n=123), 177$\pm$18.1mg/day for adults older than 20 years old(n=123). Male subjects(n=115) consumed 216$\pm$21.1mg of taurine/day, while female subjects(n=131) consumed 181$\pm$14.3mg of taurine/day(p<0.05). The level of dietary taurine intake was positively correlated with the levels of dietary intakes of energy, carbohydrate, total lipids, cholesterol, vitamin A, vitamin B$_1$, niacin, vitamin C, calcium, phosphorous, sodium and potassium at p<0.01, and with dietary intakes of iron and animal lipids at p<0.05, respectively. Plasma taurine concentration of subjects were 135$\pm$5.9$\mu$mol/L, which is considered to be within a normal range for healthy subjects. The subjects excreted 1158$\pm$72.7nmol/ of tarine mg creatinine in their urine, which is approximated as 150-170mg of taurine/24hr urine based on the assumption that 18mg creatinine/kg/day is excreted in the urine of healthy adults, and this would be about 80% of the daily taurine intake observed in the same subjects. Dietary taurine intake level was positively correlated with plasma taurine concentration, as well as with urinary taurine excretion corrected by creatinine excretion at p<0.05. The present study was the first report of taurine intake, and plasma concentration and urinary excretion of taurine in a Korean population so far, and these results would serve as an index for the future study evaluating taurine status in a diverse population within and outside Korea. Thiopental Prevents A Beta-Endorphin Response to Cardiopulmonary Bypass (체외순환전 투여된 Thiopental이 Beta-endorphin치 변화에 미치는 영향)

  • We studied the effects of adding a single bolus(500 mg) of sodium thiopental to a continuous infusion of low-dose fentanyl on plasma beta-endorphin immunoreactivity(iBE) responses to cardiopulmonary bypass(CPB) in 28 patients undergoing elective coronary artery bypass grafting or valve procedures. Thiopental was injected just prior to the initiation of CPB. The iBE levels and the hemodynamic indices such, as mean arterial pressure, cardiac output and systemic vascular resistance were measured before CPB, at 30 min and again at 60 min after the initiation of the bypass. The results were as follows. After the initiation of CPB, iBE levels increased at 30 min and 60 min(P=0.006, P=0.004 respectively) in the control group, but not in the thiopental group. There were significant differences in the changes of iBE levels between the groups(F=8.7, G-G=0.002, P=0.001). The hemodynamic indices were similar in both groups. In conclusion, pretreatment with thiopental just before the initiation of CPB prevents the stress-induced beta-endorphin response to CPB.

A Study on the Effect of Authentic Leadership of Hospital Organization on Organizational Commitment and Organizational Citizenship Behavior: Focusing on Mediating Effect of LMX (병원 조직의 진성리더십 유형이 조직몰입과 조직시민행동에 미치는 영향에 관한 연구 : LMX의 매개효과를 중심으로)

  • Purpose - This study is to clarify the structural relationship between the direct supervisor and organizational commitment and organizational citizenship behavior through mediation of the Leader-member exchange (LMX) in the hospital organization, and to confirm the mediating effect of the LMX. Through this study, we will provide basic data on the aspects of HR to enhance organizational immersion and organizational civic behavior in hospital organizations, and present suggestions on academic contribution and effective organizational operation measures. Research design, data, and methodology - This study is to investigate the relationship between authentic leadership and OC and OCB of the organization member, which is proposed to secure more active and high competitiveness in the recent changing medical environment, with multi-regression and B&K(1986) method. For this purpose, 653 employees of senior hospitals in Seoul and Kyeong-In area were surveyed using structured questionnaires. Each questionnaire was composed of 7-point scale, and each hypothesis was testified by multiple leaner regression and by BK method for testifying mediator effect. Result - As a result of the analysis, it was found that the male and non-medical staff had higher recognition level than the medical staff in the LMX, organizational commitment and organizational citizenship behavior. In the senior management or more than 5 years' experience group, organizational commitment and organizational citizenship behavior were recognized higher than the group of subordinate managers. Second, authentic leadership has a positive influence on LMX, organizational commitment and organizational citizenship behavior, and LMX has a significant positive impact on organizational commitment and organizational citizenship behavior. In addition, as a result of analyzing LMX mediating effect in the relationship of authentic leadership and organizational effectiveness by BK method, LMX had partial mediating effects between authentic leadership and organizational citizenship behavior, and between authentic leadership and organizational commitment. Conclusion - Results of the study confirmed that all the members of the hospital organization that were lacking served as positive factors for the relationships of authentic leadership and LMX, and authentic leadership and organizational effectiveness. It is expected that the hospital organization will be able to suggest such as the organizational approach to expect high organizational effectiveness centering on authentic leadership ability as psychological capital.

Liquefaction and Saccharification of Tapioca Starch for Fuel Ethanol Production (연료용 알콜 생산을 위한 타피오카 전분의 액화 및 당화)

  • For fuel alcohol production, enzymatic liquefaction and saccharification of tapioca starch by ${\alpha}$-amylase and glucoamylase were studied. The thermophilic ${\alpha}$-amylase Termamyl produced from Bacillus licheniformis gave a better liquefaction than the relalively low temperature enzyme BAN from B. subtilis. Oplimal temperature and pH with Termamyl were $90∼95^{\circ}C$ and 5.8, respectively. Minimal amount of Termamyl 240uc for a satisfactory liquefaction for a two-hour reaction was about 0.0125% (v/w) with respect to the mass of tapioca used. For saccharification experiments two enzymes, Novo AMG and Do-I1 enzymes were compared. The enzymatic activity of each enzyme was a little different depending on the substrate used and the latter was found to have a significant amount of ${\alpha}$-amylase activity. With Novo AMG optimal temperature was about $58^{\circ}C$ The pH optimum was 4.3 with maltose, however, with tapioca, no difference was observed between pH 4.3 and 5.7 which is a natural, unadjusted pH of liquefied tapioca. For 85% of completion of saccharification, it was necessary to use 0.0625% (v/w) of Novo AMG 400L for tapioca and to run the reaction for more than 10 hr, Packed volume of solid particles in tapioca slurry remained at around 30% during liquefaction and saccharification. This indicates that the removal of the solid particle before fermentation is not economically feasible at all, even though the solid particles make it very difficult to operate the bioreactor in a continuous mode with cell-recycle.

Sprachkontakt und $Lehnw\"{o}rter$ (IV) - Deutsche $Einfl\"{u}sse$ auf den englischen Wortschatz - (언어접촉과 차용어(IV) -영어어휘에 미친 독일어의 영향-)

  • In meiner Arbeit habe ich versucht zu untersuchen, welche deutschen $W\"{o}rter$ historisch in die englische Sprache entlehnt wurden und welche politischen, sozialen, wirtschaftlichen, kulturellen und $milit\"{a}rischen\;Hintergr\"{u}nde$ in der jeweiligen Zeit bei dem Entlehnungsprozess eine Rolle gespielt hatten. Durch meine Untersuchung habe ich bemerkt, dass die deutschen $W\"{o}rter$ von der Altenglischen Zeit bis jetzt $st\"{a}ndig\;Einfl\"{u}sse$ auf die englische Sprache $ausge\"{u}bt$ haben: In der Altenglischen Zeit wurde zwar nur ein paar $W\"{o}rter$ aus der christlichen Kirche aus dem Althochdeutschen ins Altenglische entlehnt, aber $allm\"{a}hlich$ wurden die deutschen $W\"{o}rter$ aus vielen verschiedenen Bereichen ins Englische entlehnt, wie z. B. aus dem des Bergbaus, der Seefahrt, der Wissenschaft, der Literatur, der Philosophie, der Musik, des Schulwesens usw. Es ist auch verstandlich, dass $ungef\"{a}hr$ bis zum 16. Jahrhundert die deutschen $Lehnw\"{o}rter$ im Englischen aus geographischen $Gr\"{u}nden$ meistens aus dem $Niederl\"{a}ndischen$ bzw. aus dem Niederdeutschen stammten. Die Zahl der deutschen $Lehnw\"{o}rter$ im Englischen erreicht im 19. Jahrhundert den $h\"{o}chsten$ Stand, weil in dieser Zeit die deutsche Wissenschaft, besonders die Naturwissenschaft, Philosophie, Literatur und Musik weltweit sehr bekannt waren. Die $Lehnw\"{o}rter$ wurden normalerweise zusammen mit kulturellen $Einfl\"{u}ssen$, oder urn eine $L\"{u}cke$ des Wortsystems der heimischen Sprache $auszuf\"{u}llen$, entlehnt. Aber ich habe bei meiner Untersuchung auch bemerkt, dass die kulturellen $Einfl\"{u}sse$ manchmal keinen Einfluss auf die Entlehnung des fremden Wortschatzes $aus\"{u}ben$ und die Entlehnung der $W\"{o}rter$ keinen Zusamenhang mit einer $L\"{u}cke$ im Wortsystem der heimischen Sprache aufweist, d. h. die $W\"{o}rter\;k\"{o}nnen$ auch entlehnt werden, obwohl die entsprechenden $W\"{o}rter$ schon in der heimischen Sprache vorhanden sind. Und manchmal wurden die $ausl\"{a}indische$ Kultur angenommen, ohne ein Wort aus diesem Bereich entlehnt zu haben. Bemerkenswert ist auch, dass die deutschen $Lehnw\"{o}rter$ im Englischen im Vergleich zu den englischen $Lehnw\"{o}rtern$ im Deutschen beziehungsweise den $franz\"{o}sischen\;Lehrw\"{o}]rtern$ im Englischen $zahienma{\ss}ig$ sehr gering sind, weil Deutschland historisch gesehen in Europa eine nicht so $gro{\ss}e$ Rolle gespielt hatte wie England bzw. Frankreich. Aber ich bin sicher, dass in Zukunft mehr deutsche $W\"{o}rter$ als bisher aus verschiedenen Bereichen ins Englische entlehnt werden, weil Deutschland nach dem zweiten Weltkrieg in der Welt wirtschaftlich sehr viel Bedeutung zukommt und besonders in der $Europ\"{a}ischen$ Union politisch, wirtschaftlich und finanziell eine sehr $gro{\ss}e$ Rolle spielt und weiter spielen wird.

The Effects of ultrasonic irradition on germination of mung bean (녹두 발아에 미치는 초음파 조사의 영향)

  • The experiment was carried out to examine on effect of ultrasonication on the growith of a mungbean while a mungbean is germinated and to measure amino acid content of a mungbean during its germination. Mungbean seeds soaked are divided into three groups; the first group was control group, untreated and naturally germinated. the second was ultrasonic treated group(UTG I), irradiated by ultrasonication for 8, 16 and 24min respectively immediately after soaking. the third was ultrasonic treated group(UTG II), irradiated by ultrasonication after 48hr germinating. The results were as foolows; Fresh weight, moisture, length of mungbean increased as its germination proceeds. while dry weight decreased. Ultrasonication tends to inhibit its germination of mungbean and results in the decrease in weight, length and moisture. Specially ultrasonication had a marked effect on UTG II. The longer the time of ultrasonication was, the more was the growth inhibited. In the control groups, the content of amino acid increased until 72 hours, but after that, it decreased. of the amino acid determined, glutamic acid decreased marekedly in the cotyledons, While the opposite was the case with aspartic acid in the hypocotyls. Comparing with the control groups, UTG I, the content of amino acid decreased. As the ultrasonic treaed time was increased, the concentration of amino acid in hypocotyl cotyledon tended to decreased. UTG II, the content of amino acid was lower than control groups, but higher than UTG I, and the effects of ultrasonication were similar to UTG I.

Compressive Strength Properties of Steam-cured High Volume GGBFS Cement Concrete (증기양생한 고로슬래그 다량치환 시멘트 콘크리트의 압축강도 특성)

  • Recently, lots of researches on concrete with high volume mineral admixture such as ground granulated blast furnace slag (GGBFS) have been carried out to reduce $CO_2$. It is known that the precast concrete has an advantage of high strength at early age due to steam curing, even if concrete has high replacement level of mineral admixture. However it demands the investigation of compressive strength properties according to steam curing regimens. In this study, concretes with water-binder ratio of 32, 35% and water content of 135, 150, $165kg/m^3$ were produced to investigate compressive strength properties of high volume (60% by mass) GGBFS cement concrete according to steam curing regimens. Then steam curing was implemented with the maximum temperature of 50, $60^{\circ}C$ and steaming time of 5, 6, 7 hours. From the test results, it was found that steam curing was effective to raise early strength of high volume GGBFS cement concrete, but 28 day compressive strengths of steam cured specimens were lower than those of water cured specimens. Thus, a further study would be needed for the optimum steam curing regimens to satisfy target demolded strength and specified strength for the application of high volume GGBFS cement concrete to precast concrete members.

An Evaluation of the Anti-oxidant Activity of Fermented Defatted Sesame Seeds (참깨탈지박 발효 추출물의 항산화 활성 평가)

  • This study was conducted to investigate the total lignin content and anti-oxidant activity in extracts of defatted sesame seeds (DSS) fermented with 15 strains of Bacillus subtilis. The anti-oxidant activities of DSS were analyzed both before and after fermentation. The total lignan content of the DSS extracts fermented with BCH3678 (1,613.8 mg/l) and BCH3572 (1,599.5 mg/l) were relatively high compared to other strains. Anti-oxidant activity was determined according to phenolic compound and flavonoid content and DPPH radical scavenging rate; the highest total phenolic compound content was provided by the DSS with SRCM103716 at 2,803.3 mg GAE/g which returned total flavonoid content of 1,553.1 mg/g as strong correlation of its anti-oxidant activity. The DSS extract fermented by SRCM103716 at 37℃ for 24 hr showed the highest DPPH scavenging rate at 66.5%. The fermented DSS extracts, regardless of strain, demonstrated higher anti-oxidative activity than the unfermented control, and these results suggest that such extracts could be useful as a potential source of bioactive compounds.
