Rice is one of the most important cereal in China. The seed of rice unearthed from ancient tombs proved that rice cultural has a history of more than 7,000 years in south China. Nutritive values and fermentation rates of rice straw treated with 3% anhydrous and 3% aqueous ammonia were evaluated both in vitro and sheep metabolism trials. Daily gain, feed efficiency and feed cost per gain were also determined with growing Holstein bulls fed anhydrous and aqueous ammonia treated rice straw. Crude protein was increased 2.4 fold and NDF was decreased 6.5%, but ADF and cellulose were not different between untreated and ammonia treated rice straw. An average of 35.5% of total added ammonia-N retained in the rice straw and other 64.5% was not retained in the rice straw. Ammonia treatment increased in vitro DM, NDF, ADF and cellulose digestibilities by 44.8%, 43.3%, 49.4% and 42.4%, respectively, and fermentation rates by 63.3%, 132.4%, 49.4% and 42.4%, respectively. In sheep metabolism trials, DM digestibilities of rice straw treated with anhydrous and aqueous ammonia were increased 22% and 36%, respectively, and digestible DM intakes by 48% and 70%, respectively in sheep fed anhydrous and aqueous ammonia treated rice straw over untreated rice straw. Rumen ammonia and blood urea were considerably higher in sheep fed ammonia treated rice straw than sheep fed untreated rice straw. Daily gain of Holstein bulls was increased 20.8% and 29.9% and rice straw intakes were increased 28.4% and 44.3% in anhydrous and aqueous ammonia treated rice straw over untreated rice straw. Feed conversion was improved 9.5% and 10.3% and feed cost/gain was reduced 7.1% and 9.2% respectively in anhydrous and aqueous ammonia treated rice straw group as compared with untreated rice straw group.
Low-fat sausages with or without 10% hydrated rice flour were made from duck, chicken and pork and their physical and sensory properties were compared. Results showed that moisture content did not differ significantly among the sausage batters. However, crude protein, crude fat and total ash content were significantly lower in the group with added rice flour compared with the no flour group. Crude protein and crude fat were the highest in pork sausages without rice flour (p<0.05). Adding 10% rice flour reduced total expressible fluid in all meat type sausages. Cooking loss was also decreased when 10% rice flour was used in making sausages from chicken and pork. However, no changes in cooking loss were found in duck meat by adding rice flour. Again, the highest cooking loss was in pork sausages without rice flour and lowest in chicken sausages with 10% rice flour. The pH of the meat from different animal species differs significantly, although no significant difference was found within meat types with or without rice flour. Lightness ($L^*$) increased, while redness ($a^*$) decreased with adding rice flour in all meat type sausages. Results showed that hardness was significantly reduced when 10% rice flour was added to pork, chicken and duck meat (p<0.05). This may be due to increased water retention of rice flour after cooking. Sensory evaluation indicated that the overall acceptability of pork and chicken sausages with or without rice flour was the same, but duck sausages without rice flour had the highest off-flavor score among the sausages. Addition of rice flour increased the overall acceptability of duck sausage to that of pork and chicken sausages.

A study was conducted to evaluate the effect of enamel coating on boat hull drag. The results were compared with drag required for varnished uncoated boats. Models of rice barge and fishing boat were used in this study. The speed range of 0.6 to 1.5㎧ at different loads varying from 6 to 9 kg for rice barge and 4.6 to 6.4kg for fishing boats were used during testing. The total weight of the coated and uncoated boats were kept the same. It was observed that the drag force required by the coated boats was less than identical uncoated ones at all speeds and loads. For both uncoated and coated the drag required increased with speed. The maximum recorded reductions in drag were 26% for the rice barge and 28% for the fishing boat model.
Objective: An experiment was conducted to assess the antioxidant contents and activities of colored rice grains and to evaluate their nutritive characteristics in terms of chemical composition and in situ ruminal degradation. Methods: Ten cultivars of colored rice grains (Oryza sativa L.) collected from several areas of Japan were studied, and control rice without pigment, maize, barley, and wheat grains were used as control grains. Their chemical compositions, pigment, polyphenol contents, total antioxidant capacity (TAC), and degradation characteristics were determined. Results: The starch contents of the colored rice grains were in the range of 73.5% to 79.6%, similar to that of the control rice grain. The black and red rice grains contained anthocyanin (maximum: $5,045.6{\mu}g/g$) and proanthocyanidin (maximum: $3,060.6{\mu}g/g$) at high concentrations as their principal pigments, respectively. There were significantly (p<0.05) positive relationships among the pigment contents, polyphenol content, and TAC values in the colored and control rice grains, indicating that the increase in pigment contents also contributed to the increased polyphenol content and TAC values in the colored rice grains. The dry matter and starch degradation characteristics, as represented by c (fractional degradation rate of slowly degradable fraction) and by the effective degradability, of the colored rice grains and the control rice grain were ranked as follows among commonly used grains: wheat>barley${\geq}rice$>maize. The colored rice grains also included the most-digestible starch, since their potential degradable fraction and actual degradability at 48 h incubation were almost 100%. Conclusion: Colored rice grains have high potential to be used as antioxidant sources in addition to starch sources in ruminants.
This study investigated quality characteristics of pan breads prepared with 0, 10, 20, 30 and 40% purple rice flour and naturally fermented blueberry-rice starters. RVA (Rapid Visco Analyzer) analysis showed that wheat flour retrogradation was not retarded by addition of purple rice flour. Using amylography, gelatinization tem. perature of purple rice flour samples was higher than that of the control, whereas maximum viscosity temperature. and maximum viscosity of purple rice flour samples were lower than those of the control. Weights of pan breads containing purple rice flour were lower than that of the control, whereas volume, specific volume and baking loss rate were higher than those of the control. The anthocyanin contents and antioxidative activites as measured by DPPH radical scavenging activity of breads increased as the concentration of purple rice flour increased. The moisture content of pan breads containing purple rice flour decreased as storage time increased. The pH of breads containing purple rice flour was higher than that of the control. Color L value decreased, whereas a and b values increased significantly, as storage time increased. In texture analyzer measurement, hardness of breads containing purple rice flour significantly increased as storage time increased. Breads containing 10~20% purple rice flour showed acceptable sensory properties, such as mouth feel, appearance, flavor, texture, taste and overall acceptability.
Imwonshibyukji is a copying manuscript written around 1825, the 27th year of king Soonjo of the Chosun Period. It is a massive home encyclopedia of total 52 books and 100 volumes. It was quoted from many Chinese literatures The unpublished 'Jeongjoji'of its 17-20th volumes was analyzed to study the cooking methods on the Korean rice cakes (dduck) and studied for the degree of their usefulness and medical values in the light of the cooking and processing science. The book introduced 6 kinds of Korean rice cake: sirudduck (steamed rice cake), chinundduck (steamed and struck rice cake), zizinundduck (small oil fried rice cake), danggui (steamed rice cake mixed with rice power and honey), hondon (=danja: boiled and stuffed rice cake) and butu (fermented rice cake), all of which were composed of total 64 items. The main materials fur the Korean rice cake were as follows: sirudduck and butu were nonwaxy rice powder, chinundduct dinggui and hondon were glutinous rice powder, and zizinundduck was wheat flour. The side material was mainly natural food with the effect of a medicine. The literatures quoted in Imwonshibyukji are as follows: 4 Korean books including Ongheejabji were quoted total 28 times (41.5%), 5 Chinese books including Junsengpaljeon were quoted total 35times (52.2%), and I Japanese book Whawhansamjedohoi was quoted total 4 times (6.0%). The Korean rice cakes quoted in the Korean literature so far exist but the Chinese ones no longer exist. In the comparative analysis of Imwonshibyukji and other contemporary literatures, Chosunmoossangsinsikyorijebub was the most similar one to the book among others.
The object of this study was to determine the influence of monensin and virginiamycin (VM) on in vitro ruminal fermentation of rice straw or ammoniated rice straw. Rumen fluid was collected from 4 wethers fed 200 g of concentrate supplement with 400 g of untreated (U) or ammoniated (A) rice straw once daily for 28 days. Mixed ruminal microorganisms were incubated in anaerobic media that contained 20% (vol/vol) ruminal fluid and 0.3 g of either U or A rice straw. Monensin and/or VM, dissolved in ethanol, were added in centrifuge tubes at final concentrations of 0, 15, 30, 15+15 and 30+30 ppm of culture fluid. The addition of monensin and VM combination to A rice straw fermentation decreased (p<0.05) the acetate to propionate ratio, total VFA and lactate production, but increased (p<0.05) pH. Total gas production tended to be decreased by the addition of monensin plus VM. Antimicrobial agents decreased $NH_3$ N concentration and dry matter digestibility.
The study was conducted to investigate the effect of soybean meal (SBM) supplementation on the voluntary intake of rice straw and ruminal fermentation characteristics. Balance trials were conducted with three Hapanese Corriedale wethers fed a rice straw alone (control), rice straw supplemented with 75 and 150 g of SBM/day in a $3{\times}3$ latin square design. Voluntary intake of rice straw in sheep fed both levels of SBM supplemented diets was significantly higher (p<0.05) than that in sheep fed control diet. Crude protein digestibility was significantly increased (p<0.05), but organic matter, crude fibre, neutral detergent fibre and acid detergent fibre digestibilities were not affected by SBM supplementation. Nitrogen balance was positive in sheep on both levels of SBM supplemented diets, but negative in animals on the control diet. Rumen ammonia and blood urea-nitrogen concentrations increased (p<0.05) as increasing level of SBM. Total volatile fatty acids, acetate, propionate, butyrate and valerate concentrations in rumen fluid were also significantly increased (p<0.01), but ruminal pH was decreased (p<0.05) by SBM supplementation.
