참깨의 재배지역에 따른 참깨 묵(고마도후)의 품질 특성 (Quality Characteristics of Sesame Mook(Gomadoufu) with Different Cultivation Locations for Sesame)

  • The present study replaced Atarigoma with Korea &Chinese sesame values a nd analyzed basic data on various mook to develop Korea's food culture. Contents of oleic acid and linolenic acid in sesame seed were 42.31% and 48.18%, respectively, with a total moisture content of 89.5%. As storage temperature increased, moisture content increased. Cohesiveness and springiness decreased gradually at $4^{\circ}C$ and increased at $20^{\circ}C$, whereas gumminess and chewiness increased at $4^{\circ}C$ and gradually decreased at $20^{\circ}C$. Overall acceptability scores of Japanese and Korean arrowroot starch sesame mook were 7.20 and 7.10, respectively. Korea and Japanese Sesame can be substituted for sweet potato starch, potato starch, and arrowroot starch.

음양오행설 상생상극론(相生相剋論)의 벡터 해석(解析) (Vector Analysis of the Xiangsheng Xiangke(相生相剋) of the Yinyang Wuxing(陰陽五行) Theory)

  • Objectives : The purpose of this paper is to model each Xíng(行) of the Yīnyáng Wǔxíng(陰陽五行) theory as a vector, to interpret the Xiāngshēng Xiāngkè(相生相剋) theory as a vector sum, and argue the objectivity and universal applicability of the Xiāngshēng Xiāngkè(相生相剋) theory. Methods : The five xíngs of the Wǔxíng were modeled and expressed as vectors, and the Xiāngshēng Xiāngkè theories were quantitatively explained by vector summation. Results : We calculated the Wǔxíng vectors using the vector sum formula, and found that the Xíng vectors that received mutual support increased in size by about 62%, and the Xíng vectors that received opposition decreased in size by about 38%. Conclusions : This result could be considered as quantitative interpretation of the contents of the Xiāngshēng Xiāngkè(相生相剋) theory which has mostly been explained qualitatively. The results of this study could hopefully provide ideas to quantify various theories based on the Yinyangwuxing theory such as Korean Medicine and other traditional fields in East Asian culture.

흰색의 의미와 적용에 대한 기초 연구 (The Significance of the Chromatic Value of the Color White)

  • 흰색은 조형적으로 활용 시 색으로써 중요한 요소 이며 시각언어로 활용되어 우리의 시각 환경의 질을 높일 수 있는 잠재력을 가지고 있다. 본 논문에서는 과학적이며 동시에 정신적인 색채학에 대한 이해를 바탕으로 흰색의 개념 및 동·서양시대에 따라 다른 흰색의 의미변화를 개괄적으로 검토하였다. 과학적 지식인 색채학에서 흰색과 색으로 표현 할 수 있는 재료인 특정 흰색 안료도 함께 분석하고 동 서양화가들이 다루었던 흰색의 사용법과 표현법의 차이를 알아봄으로써 시대에 따른 흰색의 의미와 변화를 고찰하였다. 이러한 시대나 문화에 따른 흰색의 표현과, 그것의 다양한 상징과 의미의 이해 확대는 흰색의 미묘한 다양성을 인지하고 동시에 효과적인 색채 배색을 가능하도록 한다. 이것은 다양한 조형 분야의 응용에 적용이 되며 특히 각기 다른 재질감을 갖는 흰색 섬유에 있어 시각적 효과를 다양하게 이용한 디자인으로 유도 될 수 있을 것이다.

참다래의 이화학적 성분, 항균 활성 및 폐암 세포 증식 억제 효과 (Chemical Composition of Kiwifruits, Their Anti-microbial Activity and Their Hyperplasia Inhibition Effect of against Lung Cancer Cells)

  • This study was conducted to gather the basic data on the spread of the domestic kiwifruits, and the development of the manufactured goods and the health functional foods produced using kiwifruits. We determined the chemical compositions of four types of kiwifruits cultivated in Korea, Daeheung, Bidan, Haegeum and Hayward. In addition, we measured the anti-microbial activities and cytotoxicities of these types of kiwifruits. The vitamin C contents of the kiwifruits increased in the order of Bidan (93.82 mg/100 g), Daeheung (85.89 mg/100 g), Haegeum (83.73 mg/100 g) and Hayward (75.28 mg/100 g). The total amino acids contents per 100 g of kiwifruit (dry weight basis) were 483.97 mg (Haegeum), 453.08 mg (Hayward), 437.27 mg (Bidan) and 369.35 mg (Daeheung). The K and Ca contents of the kiwifruits ranged from 14.56~37.12 mg/L and 1.94~8.24 mg/L, respectively; however, the Fe, Mg, Zn and Cr contents all less than 1.83 mg/L. The antimicrobial activities of methanol extracts of kiwifruits against five gram positive bacteria at concentration of 2,000 mg/L in terms of inhibition diameter ranged from 8.8~12.8mm, while raged from 9.2~13.1mm against three gram negative strains of bacteria. The hyperplasia inhibition of lung cancer cells (Calus-6) by 800 mg/L kiwifruits extracts of Bidan, Haegeum, Daeheung and Hayward kiwifruits were 21.2%, 9.5%, 6.7% and 5.0%, respectively. Consequently, it was assumed that kiwifruits was rich in vitamin C, amino acids and K, and that they would therefore be useful in processed goods.

한국과 일본의 오페라 수용과 발전과정에 대한 비교 - 창작오페라를 중심으로 (Comparison of the Acceptance and Development of Opera in Korea and Japan - Focusing on Development of Contemporary Opera)

  • 한국과 일본은 지리적으로 밀접하고 같은 한자문화권에 속해있다. 때문에 많은 유사점을 가진 가운데 나름의 차이를 발견할 수 있는 문화를 발전시켜왔다. 이런 특징은 서양음악의 수용과 발전 과정에서도 관찰된다. 창작오페라에 있어서 양국은 토대가 되는 서양음악의 도입경로나 시기, 소재, 자생력이 없는 순수공연예술이라는 일반적인 유사성을 보이고 있지만 답보상태인 한국에 비해 일본 창작오페라는 '유즈루'라는 세계무대에서 활용할 수 있는 작품을 만들어내는 등 오페라를 통한 문화적 교류에 능동적으로 나서고 있다는 부분에서 상이점이 존재한다. 오페라가 서양의 음악양식이라 할지라도 고급예술의 음악적 언어를 통해 자국의 문화를 전달하고 소통하는 것은 문화강국으로서의 지위를 확보하기 위한 중요한 문제 중 하나다. 디지털기술의 발달로 오페라의 영역이 미디어엔터테인먼트로 확장되는 이때, 우리보다 앞서 창작오페라를 문화커뮤니케이션의 도구로 활용했던 일본의 사례와 우리나라의 창작오페라 발전과정을 비교 연구해 보는 것은 한국 창작오페라가 수준 높은 공연문화콘텐츠로 발전하는데 도움이 될 것으로 생각한다.

Addition Effect of Seed-associated or Free Linseed Oil on the Formation of cis-9, trans-11 Conjugated Linoleic Acid and Octadecenoic Acid by Ruminal Bacteria In Vitro

  • The effects of seed-associated or free linseed oil on fermentation characteristics and long-chain unsaturated fatty acids composition, especially the formation of conjugated linoleic acid (CLA) and octadecenoic acid (trans-11 $C_{18:1}$, $t-C_{18:1}$) by mixed ruminal bacteria were examined in vitro. Concentrate (1% of culture solution, w/v, as-fed basis) with ground linseed (0.6% of culture solution, w/v, DM basis) or linseed oil as absorbed onto ground alfalfa hay was added to 600 ml mixed solution consisting of strained rumen fluid and artificial saliva at the ratio of 1:1 in a glass culture jar. The culture jar was covered with a glass lid with stirrer, and placed into a water-bath ($39^{\circ}C$) and incubated anaerobically up to 24 h. Seed-associated or free linseed oil did not significantly affect the pH and ammonia concentration in the culture solution. Molar percent of acetate tended to increase while that of propionate decreased with the addition of free oil treatment throughout the incubation. Differences in bacterial number were relatively small, regardless of the form of supplements. Decreasing trends in the compositions of linoleic acid ($C_{18:2}$) and linolenic acid ($C_{18:3}$) but increasing trends of stearic acid ($C_{18:0}$), $t-C_{18:1}$ and CLA compositions were found from culture contents up to 12h incubation when incubated with both ground linseed and linseed oil. The compositions of $C_{18:0}$, $C_{18:2}$ and $C_{18:3}$ were greater but those of oleic acid ($C_{18:1}$), $t-C_{18:1}$ and CLA were smaller in a culture solution containing ground linseed than those containing linseed oil. The ratio of $t-C_{18:1}$ to CLA was lower in the culture solutions containing linseed oil up to 12h incubations as compared to those containing ground linseed.

Using Dietary Propionic Acid to Limit Salmonella gallinarum Colonization in Broiler Chicks

  • This experiment was conducted to study the effect of dietary propionic acid on inhibitory effect of Salmonella gallinarum. Day-old 144 broiler chicks were randomly distributed into four dietary treatments, three replicates per treatment. The four dietary treatments consisted of 0.0, 0.6, 1.2, and 1.8% dietary propionic acid. Chicks were challenged orally on three days of age with $10^6$ cfu Salmonella gallinarum. Sample of crop and cecal contents were obtained on Days 1, 8 and 15 post-inoculation. The pH of crop contents decreased significantly (p<0.01) for groups of chicks provided 1.2 and 1.8% propionic acid in the diet as compared with those provided 0.6% propionic acid and control group. The pH of cecal contents decreased significantly (p<0.01) for groups of chicks provided with 0.6, 1.2 and 1.8% of propionic acid as compared with control group. The number of Salmonella gallinarum positive culture in the crop and ceca of chicks, decreased significantly (p<0.01) from the groups provided with 0.6, 1.2 and 1.8% of propionic acid in the diet at day 1, 8 and 15 post-inoculation. The addition of 1.8% propionic acid in the diet provided a high level of protection against colonization than did 0.6 and 1.2%. These results indicate that the addition of propionic acid in a concentration of 1.2 or more to the diet of newly hatched chicks significantly decreases crop and cecal colonization by Salmonella gallinarum.

동북아시아 국가들의 대(對)테러리즘 관련 협약체결을 위한 제언: 지역별 국제협약의 경향분석을 중심으로 (Suggestion on the Convention for Anti-Terrorism of North Eastern Asian Countries: Focusing on Tendency Analysis of Regional International Conventions)

  • 국제사회에서 국제테러리즘의 위협이 증가하고 있는 추세인데, 이러한 현상은 동북아시아 지역도 예외일 수는 없다. 1차적으로 동북아시아 국가들은 국제사회에서 정치 군사 외교 등의 다양한 분야에서 영향력을 행사하고 있기 때문에 국제테러리즘이 발생할 가능성이 있고, 2차적으로 동북아시아 주요 국가들인 한국 중국 러시아 일본 등은 그들만의 고유한 정치 종교 민족 문화 등을 가지고 있기 때문에 자생적 테러리즘이 발생했거나 발생할 가능성도 있다. 이에 이 연구에서는 국제사회의 대(對)테러리즘 관련 지역별 7개 국제협약 내용에 관한 경향을 분석하였는데, 그 결과는 다음과 같다. 첫째, 테러리즘의 범행동기와 목적 둘째, 대(對)테러리즘 관련 협약의 내용 셋째, 테러리즘의 공격유형을 심리적 측면과 물리적 측면으로 구분 넷째, 테러리즘의 피해대상을 대인적 측면과 대물적 측면으로 구분 다섯째, 테러리즘 피해자를 특정인(hard targets)과 불특정다수(soft targets)로 구분하는 것 등을 주로 다루었다. 이에 근거하여 동북아시아 국가들도 대(對)테러리즘 관련 지역별 국제협약 체결을 신중히 검토할 필요성이 있다고 본다.

청태전과 녹차 추출물의 이화학적 성분과 생리 활성 (Physical and Chemical Ingredients Components and Physiological Activity of Chungtaejeon and Green Tea Extracts)

  • This study was carried out to help restore and spread broaden the consumption of Chungtaejeon, a our traditional tea, Chungtaejeon in Korea, and as well as to gather the basic data on Chutaejeon tea. We have also compared the various ingredients components and physiological activities of Chungtaejeon tea extracts with that of green tea extracts. According to the results, the total phenol contents in of the Chungtaejeon and green tea extracts were 90.56 and 98.70 mg/100 mL, respectively, and their tannin contents levels in Chungtaejeon and green tea extracts were 214.14 mg/100 mL and 259.60 mg/100 mL, respectively, showing a difference in content. The catechin contents of the Chetaejeon and green tea extracts were in the order of EGC($15.80{\sim}16.50\;mg/100mL$), EGCG($10.40{\sim}10.60\;mg/100 mL$), and ECG($9.55{\sim}9.88\;mg/100 mL$), however, with the exception of EC(7.86 mg/100 mL) in the green tea extracts, there were not significant differences between that in them Chetaejeon and green tea extracts. Quercetin was the main flavonoid ingredient component in those both the Chungtaejeon and green tea extracts was quercetin, at levels of 0.08 mg/100 mL and 0.06 mg/100 mL and its contents in Chungtaejeon and green tea extracts were 0.08 mg/100 mL and 0.06 mg/100 mL, respectively. The primary amino acid in both tea extracts was theanine main amino acid at levels of, theanine contents were most increased in 8.02 mg/100mL and 10.80 mg/100 mL, respectively, Chungtaejeon tea extracts by 8.02 mg/100 mL and green tea extracts by 10.80 mg/100 mL. And the arginine contents of the Chungtaejeon and green tea extracts in Chungtaejeon and green tea extracts were 1.78 mg/100 mL and 1.86 mg/100 mL, respectively. In terms of mineral composition, potassium content was highest contents in the Chungtaejeon and green tea extracts by 19.80 and 18.04 mg/100 mL, respectively. Finally, the Chungtaejeon tea extracts offered the greatest anti-oxidation and ACE inhibition activities were most increased in the Chungtaejeon tea extracts, and the green tea extracts showed the highest level of nitrite radical scavenging activity at 90% was extremely much increased in the green tea extracts by 90%.

Proximate Composition of Viscera of Major, Common and Some Chinese Carps Under the Effect of Different Fertilization Schemes and Feed Supplementation in Composite Culture System

  • The proximate composition of viscera of six fish species viz., Catla catla, Labeo, rohita Cirrhina mrigala, Hypophthalmichthys molitrix, Ctenopharyngodon idella and Cyprinus carpio under the influence of artificial feed $(T_1)$, broiler manure $(T_2)$, buffalo manure $(T_3)$, N:P:K (25:25:0 $T_4$) and control pond $(T_5)$ has been studied on final harvest after the end of experimental period of one year. The overall comparison of six fish species under five different treatments showed that Cyprinus carpio remained the best for visceral total protein contents. The maximum visceral protein content was recorded in fishes under $T_2$ except Cirrhina mrigala, while the minimum under $T_5$. The comparison of five treatments showed that maximum (6.69) percentage of fat in viscera of fish was recorded under $T_2$, closely followed by $T_4$ while minimum (4.89) under the effect of $T_5$. Among the six fish species under five treatments Cyprinus carpio showed maximum accumulation/deposition of total fats in viscera.
