Changes in the Quality Characteristics of Sulgidduk by the Addition of Persimmon Peel (감 과피를 첨가한 설기떡의 품질특성 변화)

  • This study is to examine nutrients in the persimmon peel develop processed products and analyze their quality properties. The persimmon peel powder was rich in nutrients with 4.35% of moisture, 3.01% of protein, 1.02% of lipid, 2.02% of ash and $5.7^{\circ}Brix$ of Sugar concentration as well as 82.5 mg% of total carotenoid. As far as quality properties of Sulgidduk were concerned when the 5% addition persimmon peel resulted in the highest level of watery content and the more colors were added the lower the L value became and the higher a and b values. As the result of measurements using a texture analyzer, hardness, adhesiveness, cohesiveness, springiness and chewiness property decreased flexibility increased. The sensory test results revealed that the 3% added persimmon peel Sulgidduk was the best.

  • In order to prepare digested Protein source for the Weanling Food from soybean, an attempt was made to decompose steamed soybean protein to amino acids and peptides by protease and cellulase produced from Aspergillus niger and Aspergillus sojae. In this paper, the optimum condition for digestion of soybean protein were studied and also investigated the effects of decolorization of it. As the results, followings were obtained; 1. As steaming conditions, a treatment under 15 lb of pressure and 10 minutes of heating shows most effective. 2. The optimum pH of Asp, sojae enzyme for the digestion of soybean protein is 6.0, while that of Asp. niger enzyme is 4.4. In successievly-decomposing with Asp. sojae and Asp. niger, it shows the most effective on ratio of water-soluble-nitrogen to total nitrogen and amino-nitrogen to total nitrogen than any other separate treatments. 3. The suitable amount of the enzyme solution to that of the soybean substrate paste, in volume, is 1 : 2. 4. Digestion ratio of soybean protein indicates the gradual and steady effects of increasing time of digestion, but 8 hour-digestion regarding to putrefaction was suitable. 5. The most effective decolorization was successively passed on culumns of active carbon and anion exchanger (Dowex 2-x-8) at room temperature. In separate treatments, the effective order of decolorization was as follows; (Dowex 2-x-8)>Active carborn>Amberite IR-120 6. The powder type of the soy protein source obtained by concentration below $60^{\circ}C$ contains 12.51% of moisture, 66.31% of protein, 4.25% of fat, 12.75% of carbohydrate, 4.18% of ash.

Effect of Content of Potato Tuber Component and Potato Variety on the Bioethanol Production (감자의 성분함량과 품종이 바이오에탄올 생산에 미치는 영향)

  • The contents of starch, moisture, crude protein, crude fat, crude fiber, and ash of different varieties of potatoes were analyzed. The average starch contents of Go-woon, Ha-ryoung, Dae-seo, Jo-won, Ga-won potatoes were $17.9{\pm}0.2$, $18.0{\pm}1.7$, $17.7{\pm}0.5$, $14.8{\pm}0.4$, and $16.2{\pm}1.0%$, respectively. The ground powder of each starchy substrate was suspended in distilled water, and then liquefied, saccharified, and fermented by Saccharomyces cerevisiae ATCC26603 at $30^{\circ}C$ for 4 days. By statistical analysis, the effectiveness of the contents of the different components of the potato tubers on the ethanol production were examined. The results showed that the starch content positively affected the ethanol production. while moisture content affected negatively the ethanol production. Ethanol production from the 5 different varieties of potato tubers harvested on different time were examined and the results indicated that both of potato variety and the harvesting-time significantly affected the ethanol production. Among the several varieties of potato, Ha-ryoung produced the highest yield of ethanol as much as $94.3{\pm}1.9$ L/ton or $3111{\pm}62.7$ L/ha.

Binding of the Hexavalent Chromium Ions in the Process of Cement Hydration (시멘트 수화에 따른 6가 크롬의 고정화 특성)

  • The hexavalent chromium (Cr(VI)) is well known as a hazardous ion, presumably inducing dermatic diseases and if serious cancer. The present study concerns the binding capacity of Cr(VI) ions in the cement powder and matrix for a quantitative technique of Cr(VI) ions in cement to influence human health. Both the water-soluble and acid-soluble Cr(VI) ions present in 3 types of ordinary Portland cement (OPC), pulverised fuel ash (PFA), ground granulated blast furnace slag (GGBS), and silica fume (SF) were measured using the spectrophotometer. As a result, it was found that the concentration of water-soluble Cr(VI) ion in cement ranged from 10.5 to 18.9mg/kg-cement, and in the additional materials a very low value of Cr(VI) ion was measured. Acid-soluble Cr(VI) ion was even higher than water-soluble Cr(VI) ion, ranging from 172.4 to 318.2mg/kg-cement. Nevertheless, the concentration of acid-soluble Cr(VI) ion is not proportional to addition of acid. It depends rather the variable pH of solvent involving cement paste. As enough cement hydration occurs, the binding capacity of Cr(VI) ion increases, inhibiting this ions from leaching out in the presence of hydration products such as ettringite or tri-calcium aluminate which bind Cr(VI) ion by ion-exchange.

Nutritional Compositions and Physicochemical Properties of Two Domestic Aronia (A. melanocarpa) Varieties (국내산 아로니아 두 품종(네로, 바이킹)의 영양성분 및 생리활성 분석)

  • The nutritional compositions and physicochemical properties of two aronia varieties (Viking and Nero) cultivated in Chungbuk were investigated. The proximate compositions of Nero and Viking powder were:13% moisture, 0.58% and 0.6% ash, 0.73% and 0.33% crude lipid, 5.47% and 6.51% crude protein, 15.65% and 16.15% crude dietary fiber, and 64.36 and 64.43% crude carbohydrate, respectively. The proximate contents of the aronia samples were not significantly different. Among the physicochemical properties, there was also no significant change in total anthocyanin and antioxidant activity. However, Viking had higher total polyphenol contents and ${\alpha}$-glucosidase inhibition activity than Nero. The mineral contents of Al, Fe, Mn, Mg, Ca, Na, K, Cu and Zn in the two aronias were determined. Cu and Zn were not detected in both varieties. With regard to Al, Na and K, Nero was higher than Viking, while Ca was higher in Viking than Nero. From the results, Viking could be suggested to be beneficial for food processing.

Characteristics of Color and Pungency in the Red pepper for Kimchi (김치제조용 고춧가루의 색도 및 매운맛 특성)

  • This study was carried out to investigate characteristics of the red peppers for Kimchi preparation. Four cultivars of Korean red pepper with different color value, ten brands of commercial red pepper powder produced at different areas and paprika with imported from Spain were collected. These sample were analyzed for proximate composition, color, capsaicinoid and sensory evaluation, etc. Proximate composition was moisture of 12.6-17.13%, ash of 5.11-8.93%, crude lipid of 7.68-12.81% and crude protein of 11.35-16.72%. Free sugar content showed two-times among samples, the lowest sample was 11.35%(Shintaein), whereas the highest sample was 21.06% (Koisan). Capsaicinoid content of cultivars showed the highest value Dabok with 75.49 mg% and the lowest value Gusung with 18.77 mg%. American Spice Trade Association(ASTA) value, it was indicated redness of red pepper, showed very wide range of values with 47.3-144.7. Correlation coefficient($R^2$) of ASTA value and $a^* $was 0.87, while $R^2$ of 0.05 between of ASTA value and capsaicinoid contents. In sensory attributes, Dongbang(0.87 mg%) and Gusung(0.43 mg%) were not significantly different, while Dabok(1.74 mg%) was significantly different from other smaples in lag time, overall intensity and duration. The difference threshold of hot taste and ASTA value was over 1.0 mg%(capsaicinod content), 70(ASTA value), respectively.

Density and Water Absorption Characteristics of Artificial Lightweight Aggregates containing Stone-Dust and Bottom Ash Using Different Flux (폐석분 및 바텀애시를 사용한 인공경량골재의 융제(Flux) 종류에 따른 밀도 및 흡수율 특성)

  • In this paper, the physical properties of lightweight aggregate such as density and water absorption according to addition ratio and type of flux were investigated. When using $Na_2CO_3$ as flux of lightweight aggregate, burnability was available at low burning temperature and water absorption increased. And as increasing addition ratio of $CaCO_3$, NaOH, $Fe_2O_3$, absorption decreased and $CaCO_3$, NaOH, $Fe_2O_3$ were considered improper to use flux of lightweight aggregate because of high dried density. $Na_2SO_4$ was proper to use flux of lightweight aggregate due to dried density $1.35{\sim}1.50g/cm^3$ and lower absorption. When using glass abrasive sludge as flux of lightweight aggregate, dried density and water absorption were in the range of $1.45{\sim}1.55g/cm^3$ and 9~12% respectively. It was indicated that as increasing addition ratio of blast furnace slag powder, density increased whereas absorption decreased. In use of oxidizing slag as flux, artificial lightweight aggregate which have dried density $1.46g/cm^3$, water absorption 8,5 % can be manufactured at 10 % of addition ratio.

Analysis on the Components and Safety Evaluation of Abeliophyllum distichum Nakai Leaves and Stems (미선나무 잎과 줄기의 성분 분석 및 안전성 평가)

  • Objectives: This study was carried out in order to analyze the composition of the leaves and stems of Abeliophyllum distichum Nakai, with the aim of obtaining basic data for utilizing the plant as a food ingredient, as well as for processing. Methods: Leaves and stems from Abeliophyllum distichum Nakai were harvested at Cheongcheon-myeon, Geosan-gun, Chungcheongbuk-do, and were subsequently freeze-dried and ground to a fine powder for chemical component analysis and safety evaluation. Results: The moisture contents of Abeliophyllum distichum Nakai leaves and stems were respectively 65.07% and 40.97%, and the crude ash contents were 1.32% and 0.91%. In addition, the crude protein contents were 11.97% and 3.77%, and the crude fat contents were 2.52% and 0.36%, respectively. The fructose and glucose contents were 32.13 mg/g and 56.17 mg/g for leaves, and 11.38 mg/g and 10.59 mg/g for stems. The major fatty acids of the leaves were palmitic acid (31.79%) and stearic acid (14.79%), and those for stems were linolenic acid (32.78%) and palmitic acid (26.75%). The ascorbic acid contents of leaves and stems were 1.32 mg/g and 0.30 mg/g respectively. The calcium content was found to be the highest among the minerals tested, both in the leaves and stems, with the levels being 166.17 mg/100 g for leaves and 592.34 mg/100 g for stems. The content of organic acid was greater in leaves than in stems, with that of malic acid accounting for more than 75% of total organic acids for both samples. The total phenolic compounds and flavonoid contents of Abeliophyllum distichum Nakai were 50.64 mg/g and 13.53 mg/g in leaves and 96.47 mg/g and 18.53 mg/g in stems, respectively. No changes were shown in the number of micronucleated polychromatic erythrocytes (MNPCE) among 2,000 polychromatic erythrocytes compared to the negative control. Abeliophyllum distichum Nakai was administered orally to rats in order to investigate acute toxicity. The $LD_{50}$ values in rats were above 2,000 mg/kg. Conclusion: These results indicate that the leaves and stems of Abeliophyllum distichum Nakai can be used as natural ingredients in the development of nutritional and functional materials.

Effect of Calcium Lactate Prepared from Black Snail on Dough Fermentation, Quality and Shelf-life of Bread (다슬기로 제조한 칼슘 락테이트가 반죽의 발효와 빵의 품질 및 저장성에 미치는 영향)

  • This study was conducted to investigate the effect of 0.5% calcium lactate(CaL) on the fermentation of dough and quality and shelf-life of bread. Calcium lactates(CaL-A and CaL-P) were prepared from ash of black snail which contained shell and tissue together(ABS) and powder of the snail(PSB). pH of dough with the CaLs were higher than that of the control md, volume of the dough, loaf volume of bread were lower than those of the control products. But the volumes were almost the same when the pH of the dough were adjusted to pH 5.5. Mean calcium contents of treated bread (39.36~49.70 mg/100 g) were higher than that of control products(13.43 mg/100 g). There was no difference in Hunter $L^{*}$, $a^{*}$, $b^{*}$ values between the control and the treated group. Hardness and gumminess of CaL-A treated bread were the highest, but springiness and cohesiveness were the lowest. All the attributes showed no difference in case of pH adjustment(pH 5.5). The smaller pore and larger air cell with rough surface were observed in the CaL treated bread by SEM analysis. Sensory scores of CaL treated bread showed relatively lower values than those of the control products, but the scores increased by pH adjustment. The shelf-life of bread with CaL-P and CaL-A at 2$0^{\circ}C$ were 4 and 3 days, respectively, while that of the control group 1 day.day.y.

Physicochemical Composition of Ramie Leaves (Boehmeria nivea L.) (모시잎의 이화학적 성분)

  • We quantitated the major chemical components of ramie leaves (Boehmeria nivea L.) powder. The proximate compositions (all w/w) was 5.42% moisture, 28.15% crude protein, 6.95% crude fat, 15.27% crude ash, and 54.79% carbohydrate, respectively. The total, insoluble, and soluble dietary fiber contents were $39.66{\pm}1.84g/100g$, $20.32{\pm}2.02g/100g$, and $19.34{\pm}2.84g/100g$, respectively. The major free sugars were glucose, galactose and lactose. Seventeen amino acids were isolated. Essential amino acids constituted 44.65% of the total. When free amino acid levels were evaluated, 25 kinds of components were detected, of which 18.15% were essential. Only caproic acid methyl ester and pentadecanoic acid were detected when fatty acid examined.
