Manufacturing and Physicochemical Properties of Wine using Hardy Kiwi Fruit (Actinidia arguta) (다래를 이용한 발효주의 제조 및 이화학적 특성)

  • For the development of hardy kiwi wine, we arranged for the post-maturity of hardy kiwi fruit, treated them with calcium carbonate and a pectinase enzyme complex, investigated the resulting physicochemical properties and conducted a sensory evaluation. The period determined for creating post-maturity in the hardy kiwi fruit was determined as 5 days storage at room temperature following maturity. During this time the yield of fruit juice was increased from 22.1% to 53.5% using 0.1% (v/v) cytolase PCL5 for 2 h at room temperature. 0.1% (w/v) calcium carbonate was also added during the process of aging, for the reduction of the sour taste. The fermentation trial of the hardy kiwi wine was prepared using water (25% or 50%), sugar ($24^{\circ}brix$), 0.1% (w/v) $CaCO_3$, 0.1% (v/v) cytolase PCL5, $K_2S_2O_5$ (200 ppm), and yeast ($1.5{\times}10^7$ cell/ml). Fermentation then occurred for 2 weeks at $20^{\circ}C$. The pH value, total acidity, alcohol, and reducing sugar content of the resulting hardy kiwi wines of 25% (v/w) and 50% (v/w) water, were in a range of pH 3.4-3.7, 1.12-1.21%, 14.3-14.4%, and 15-16 g/l, respectively. Citric acid and fructose constituted the major organic acids and the free sugar of the 25% and 50% hardy kiwi wine, respectively. Volatile flavor components, including 10 kinds of esters, 8 kinds of alcohols, 5 kinds of acids, 3 kinds of others and aldehydes, were determined by GC analysis. The results of sensory evaluation demonstrated that 50% hardy kiwi wine is more palatable than 25% hardy kiwi wine.

Effects of Seeding Rate and Nitrogen Fertilizer Level on Growth and Seed Productivity of Rye Cultivar in Sancheong Province (산청지역에서 파종량 및 질소 시비량에 따른 호밀의 생육과 종실 수량)

  • This experiment was conducted at Sancheong from 2013 to 2015. The objective of this study was to establish the seeding rate, and to clarify the optimum nitrogen fertilizer level for rye seed production in the southern area of Korea. We employed Korean rye cultivar 'Gogu' in this test. The experimental design was a split-plot design with three replications. A split-plot design was used with three seeding levels (3, 5, and 7 kg 10 a-1) on the main plots and other treatments fully randomized in sub-plots. A factorial arrangement of treatments included three different nitrogen fertilizer levels (0, 3, 6, and 9 kg 10 a-1). The grain yields of rye affected by increasing the seeding rate. The number of spike per m2 and immature grain weight was increasing, while the fertility rate and the number of grain per spike were decreased as seeding rate were increased from 3 kg 10 a-1 to 7 kg 10 a-1. The percentage of a productive tiller, 1-liter weight, and 1000-grain weight also decrease by increasing seeding but the grain yields of rye had less effect. There was an increase in the number of spike per m2, the number of grain per spike, and grain yields as nitrogen fertilizer level was increased from 0 kg 10 a-1 to 9 kg 10 a-1 and followed a delaying heading and an increasing lodging of the plant. But grain yields did not affected by the interaction of seeding rate × nitrogen fertilizer levels. The best seeding rate and nitrogen fertilizer level for rye seed production were 5 kg and 3 kg 10 a-1, respectively, considering seed and fertilizer reduction and the prevention of pollution by excess fertilization.

Mechanical Aalloying Behavior of $Al_3$Hf 및 $Al_3$Ta Intermetallic Compounds by SPEX Mill and the Effect of Ternary Additions on the Formation of $Ll_2$ Phase (SPEX mill을 이용한 $Al_3$Hf 및 $Al_3$Ta 금속간화합물의 기계적합금화 거동과 $Ll_2$상형성에 미치는 제 3 원소 첨가의 영향)

  • To improve the ductility of $Al_3Hf$ and $Al_3Ta$ intermetallic compounds, which are the potential temperature structural materials, the mechanical alloying behaviour and the effect of ternary additions on the $Ll_2$ phase formation were investigated. During the mechanical alloying by the SPEX mill, the $Ll_2$ $Al_3Hf$ intermetallic compound was formed after 6 hours of milling in AL-25%Hf system. In AL-25%Ta system, however, only the $D0_{22}$ $Al_3Ta$ intermetallic compound was formed until 30 hours of milling and the $Ll_2$ phase was not observed. In AL-12.5%M-25%Ta(M=Cu, Zn, Mn, Fe, Ni) systems, the additions of Cu and Zn had no effect on the $D0_{22}$ structure of the binary $Al_3Hf$ and the additions of Mn, Fe and Ni produced the amorphous phase. Therefore it was considered that these ternary additions could not overcome the energy difference between $Ll_2$ and $D0_{22}$ structures in the $Al_3Hf$ intermetallic compound. In AL-12.5%M-25%Hf(M=Cu, Zn, Mn, Fe, Ni)systems, the additions of Cu and Zn did not affect the $Ll_2$ structure of the binary $Al_3Hf$ but the additions of oMn, Fe and Ni produced the amorphous phase as they did in AL-12.5%M-25%Ta systems. Therefore, it was considered that the Ni, Mn and Fe additions promote the formation of amorphous phase in $Al_3X$ intermetallic compounds.

PHYSIOANATOMY OF NASOPHARYNGEAL SPACE AND HYPERNASALITY IN CLEFT PALATE (구개열에서 비인두강의 생리해부학적 구조와 과비음과의 연관성 연구)

  • Velopharyngeal closure is a sphincter mechanism between the activities of the soft palate, lateral pharyngeal wall and the posterior pharyngeal wall, which divides the oral and nasal cavity. It participates in physiological activities such as swallowing, breathing and speech. It is called a velopharyngeal dysfunction when this mechanism malfunctions. The causes of this dysfunction are defects in (1) length, function, posture of the soft palate, (2) depth and width of the nasopharynx and (3) activity of the posterior and lateral pharyngeal wall. The purposes of this study are to analyze the nasopharynx of cleft palate patients using cephalometry and to evaluate the degree of hypernasality using nasometry to find its relationship with velopharyngeal dysfunction. The following results were obtained : 1. In cephalometry, there were significant differences in soft palate length, soft palate thickness, nasopharyngeal depth, nasopharyngeal area, and adequate ratio between two groups. 2. In nasometry, there were significant differences between two groups in vowel /o/ and sentences including oral consonants. 3. In cleft palate patients, though no general correlation was found between Anatomic VPI and nasalance scores, vowel /i/ and sentences including oral consonants were slightly correlated. In conclusion, cephalometry and nasometer results were significantly different between the two groups. Though in the cleft palate group, Anatomic VPI and nasalance scores, which are indices for velopharyngeal closure, excluding the vowel /i/ and sentences including oral consonants show generally no significance.
