Thixotropic Properties of Gelatinized Rice Starch Solutions (쌀 전분 호화액의 틱소트로픽 성질)

  • Rheological properties of gelatinized rice starch solutions were investigated with Brookfield rotational viscometer. The 8% starch solution showed thixotropic behavior with yield stress. The alkali gelatinized starch was more thixotropic than the thermal gelatinized one. The time dependent characteristics of starch solutions followed Tiu's model. The value of rate constant $(a_1)$ in Tiu's model increased linearly with shear rate, and was exponentially dependent on concentration and temperature. Temperature dependency of rate constant and apparent viscosity followed Arrhenius type equation and the activation energy were about 14.3 and 6.8 Kcal/g mole, respectively. The $a_1-value$ was found to be useful to evaluate changes in structaral decay on the shearing time of gelatinized rice starch solutions.

Applications of Time-Temperature Integrator (TTI) as a Quality Indicator of Grounded Pork Patty

  • Time-temperature integrators (TTIs) are simple and cost-efficient tools which may be used to predict food quality. Enzymatic TTIs are devised to indicate food quality in the form of color alterations from green to red, based on the cumulative impacts of temperature and time period on the enzymatic reactions. In this study, the quality of ground beef patties was investigated for the parameters of pH levels, color, VBN, water holding capacity, and total microbial counts, depending on various storage temperatures (5, 15, and $25^{\circ}C$). TTIs were attached to the surface of the ground beef patties in order to evaluate the degree of correlating colorimetric changes with the determined quality parameters. Through the Arrhenius equation, activation energy and constant reaction rates of TTI, VBN, and total microbial counts were calculated as to observe the relationship between enzymatic reactions of the TTI and food spoilage reactions of the ground beef patties. VBN and total microbial counts were already increased to reach decomposition index (VBN: 20, total microbial count: 7-8 Log CFU/g) of meat at middle stage of storage period for each storage temperature. Although activation energy of TTI enzymatic reactions and food spoilage reactions of the ground beef patties were similar, the change of TTI color was not a coincidence for food spoilage at $5^{\circ}C$ and $15^{\circ}C$ of storage temperature. It was suggested that TTI should be designed individually for storage temperature, time, type of meat, or decomposition index of meat.

Thermal Stability and Lifetime Prediction of PAG and POE Oils for a Refrigeration System

  • An experimental study has been carried out to analyze the thermal stability and to estimate the lifetime of refrigerating lubricants. PAG and POE oil are considered as test oils in this study. The viscosity of PAG and POE oil was measured by the vibration type viscometer while temperature is varied periodically in the range of $0^{\circ}C{\sim}100^{\circ}C$. In order to estimate lifetime of PAG and POE oil with temperature, the viscosity was measured while the test temperature of oils was maintained continuously at $180,\;200\;and\;220^{\circ}C$. The lifetime of oils is estimated as the decrease in viscosity change by 15%. The results indicate that the reduction rates of viscosity of PAG and POE oil are less than 5% after 510 temperature variation cycles. However, when the oils are kept at high temperature, it is found that the lifetimes of PAG oil is seen to be 244, 177 and 89 hours at the test temperature of $180,\;200\;and\;220^{\circ}C$, respectively, where as the lifetimes of POE oil are estimated to be 1,744, 1,007 and 334 hours at the temperature of $180,\;200\;and\;220^{\circ}C$, respectively. Thus, the lifetime of POE oil is found to be much longer than that of PAG oil. The lifetime correlations of PAG and POE oil are also obtained by Arrhenius's equation method in this paper.

Study on the Tracking Characteristics Depending on Accelerated Degradation of PVC Insulation Material (PVC 절연재료의 가속열화에 따른 트래킹 특성에 관한 연구)

  • The present paper is a study on the tracking characteristics depending on accelerated degradation of PVC insulation material. In order to insulation degradation of PVC insulation material, the Arrhenius equation, a type of accelerated degradation test formula, was used to conduct accelerated degradation experiments with experiment samples prepared at the following age equivalents: 0, 10, 20, 30 and 40 years. Afterwards, a tracking experiment was conducted on the accelerated experiment samples as part of the KS C IEC 60112 criteria. When measuring the PVC tracking features according to the accelerated aging, the results showed that when 0.1% of ammonium chloride was added to the PVC insulating material, but no tracking occurred. However, depending on the age equivalent, The results of analyzing the current waveform and voltage waveform of the tracking propagation process showed the age equivalent from 0 years to 40 years displayed a break down in insulation resistance and even the BDB(before dielectric breakdown) sections did not maintain the same functionality of the original material. Based on a criterion of an age equivalent of 0 years, material with an age equivalent of 10 years posed a 1.4 times greater risk, material with an age equivalent of 20 years posed a 2 times greater risk, material with an age equivalent of 30 years posed a 4.6 times greater risk, and material with an age equivalent of 40 years posed a 7 times greater risk.

Prediction of Propylene/Propane Separation Behavior of Na-type Faujasite Zeolite Membrane by Using Gravimetric Adsorption (중량식흡착 거동에 기초한 Na형 Faujasite 제올라이트 분리막의 프로필렌/프로페인 분리 거동 예측 연구)

  • In this study, propylene/propane separation behavior of Na-type faujasite zeolite membranes is predicted by observing gravimetric adsorptions of propylene and propane on zeolite 13X. The gravimetric adsorptions were measured by using a magnetic suspension balance (MSB) at temperatures of 323, 343, 363 K and a pressure range of 0.02-1 bar. The pressure was increased at 0.1 bar intervals. As adsorption temperature increased, adsorptions of propylene and propane decreased and propylene/propane adsorption selectivity increased. Also, the diffusion coefficients of propylene and propane were increased as the adsorption temperature increased, following the Arrhenius equation. The maximum propylene/propane diffusion selectivity was 0.9753 at 323 K. The perm-selectivity was calculated from the adsorption data of zeolite 13X and compared with the perm-selectivity measured in the single gas permeation experiment for the Na-type faujasite zeolite membrane. The maximum values for the calculated and measured perm-selectivities were observed at a temperature of 323 K. It could be concluded that the prediction of propylene/propane separation of surface diffusion-based membrane by using gravimetric adsorption data is reasonable. Therefore, it is expected that this prediction method can be applied to the screening of adsorption-based microporous membrane for propylene/propane separation.
