Prediction of Ascorbic Acid Stability in Powdered Beverage (분말음료의 아스콜빈산 안정성 예측)

  • A powdered beverage with afruit flavor was stored at 4, 21, 35 and $45^{\circ}C$ for 180 days to study ascerbic acid destruction at the selected temperatures. Degradation of ascorbic acid in the model followed the first order reaction, and the temperature dependence of reaction rate constants at tested temperatures was accounted for by the Arrhenius equqtion. The calculated activation energy for the destruction of ascorbic acid was 3.3 Kcal/mole. The relationship between ascorbic acid content and sensory flavor score of the beverage indicated that samples with destruction of ascorbic acid over 25% showed objectionable flavor. An attempt was made to predict the quality of powdered beverage by using a simulation model. A comparision between ascorbic acid values from shelflife tests and the simulation program showed a good agreement within acceptable error. This result demonstrated that quality of powdered beverage could be predicted by using a computer simulation model with a desired accuracy.

Life-time Prediction of a FKM O-ring using Intermittent Compression Stress Relaxation (CSR) and Time-temperature Superposition (TTS) Principle (간헐 압축응력 완화와 시간-온도 중첩 원리를 이용한 FKM 오링의 수명 예측 연구)

  • Intermittent CSR testing was used to investigate the degradation of an FKM O-ring, also the prediction of its life-time. An intermittent CSR jig was designed taking into consideration the O-ring's environment under use. The testing allowed observation of the effects of friction, heat loss, and stress relaxation by the Mullins effect. Degradation of O-rings by thermal aging was observed between 60 and $160^{\circ}C$. In the high temperature of range ($100-160^{\circ}C$) O-rings showed linear degradation behavior and satisfied the Arrhenius relationship. The activation energy was about 60.2 kJ/mol. From Arrhenius plots, predicted life-times were 43.3 years and 69.9 years for 50% and 40% failure conditions, respectively. Based on TTS (time-temperature superposition) principle, degradation was observed at $60^{\circ}C$, and could save testing time. Between 60 and $100^{\circ}C$ the activation energy decreased to 48.3 kJ/mol. WLF(William-Landel-Ferry) plot confirmed that O-rings show non-linear degradation behavior under $80^{\circ}C$. The life-time of O-rings predicted by TTS principle was 19.1 years and 25.2 years for each failure condition. The life-time predicted by TTS principle is more conservative than that from the Arrhenius relationship.

Properties of Purple-Fleshed Sweet Potato Antocyanin Pigment Solutions (자색고구마 Antocyanin 색소 추출액의 유동특성)

  • Flow properties of the concentrated pigment solutions extracted from purple-fleshed sweet potatoes were determined using a cone and plate rotational viscometer for soluble solids concentration range of 25 to 65% at temperature range of 20 to 60 $^{\circ}C$. The purple-fleshed sweet potato pigment solutions exhibited Newtonian behavior. Temperature dependency for the viscosity of the solution followed the Arhenius relationship with activation energy values between 14.23 and 43.00 kJ/mol, which increased linearly with soluble solids concentration. A relationship between viscosity, temperature and soluble solids concentration was investigated. At the same temperature, the viscosity of the concentrated pigment solutions increased exponentially as the concentration increased with higher degree of such phenomena at lower temperatures.

Enhancement of Hydroxylamine Reactivity of Bacteriorhodopsin at High Temperature

  • Recent denaturation experiments of bacteriorhodopsin (bR) in the dark and under illumination at high temperatures revealed that irreversible thermal bleaching occurs above ~ 70°C and the preceding reversible structural changes in the dark above 60°C are closely related to irreversible photobleaching observed in the same temperature range (Yokoyama et al. (2002). J Biochem. 131,785). In this study, structural properties of bacteriorhodopsin (bR) at high temperatures were extensively probed by hydroxylamine reactivity with the Schiff base in the dark and hydrogen-deuterium (H-D) exchange in the peptide groups. In the Arrhenius plot from kinetics measurements of the hydroxylamine reaction, a good linear relationship between the reaction time constant and the inverse of the absolute temperature was observed below 60°C, while significant increase started above 60°C, suggesting that remarkable increase in water accessibility of the Schiff base in the temperature region. FT-IR spectroscopic studies on the H-D exchange suggested increase in the deuterium exchanges rate of the peptide hydrogen in the same temperature region.

Shock Tube and Modeling Study of the Monomethylamine Oxidation at High Temperature

  • The ignition of monomethylamine was studied in reflected shock waves over the temperature range of 1255- 1579 K and the pressure range of 1.04-1.51 bar. The ignition delay time was measured by the sudden increase of pressure profile and the radiation emitted by OH radicals. The relationship between the ignition delay time and the concentrations of monomethylamine and oxygen was determined in the form of mass-action expressions with an Arrhenius temperature dependence. In contrast to the behavior observed in hydrocarbons, monomethylamine acts to accelerate rather than inhibit its own ignition. And numerical modeling of the ignition of $CH_3NH_2$ has also been carried out to test the several kinetic mechanisms.

  • This paper identifies these data by the data diagnosis in lognormal distribution and presents the method to obtain exact parameter estimates and confidence intervals of regression line. The life-stress relationship uses Arrhenius model and life data generate Class-H insulation complete data by simulation. Also, the method to estimate parameters uses least squares estimation and externally Studentized residuals can be used as test statistics for identifing outliers. And influential cases are identified by Cook's distance. This research is intended to obtain the useful information for the life of products and test method, to save time and costs, and to help optimum accelerated life test plans.

  • Accelerated degradation is concerned with models and data analyses for degradation of product performance over time at overstress and design conditions. Although there have been numerous studies with accelerated degradation theory in reliability, very few actually apply to parametric statistical analyses. This paper shows how to analyze degradation data, provides tests for how well the assumptions hold. Reel sensors, a sort of photointerrupters in home VCR, hive been tested, and least-square analyses are used to illustrate our approach. Tests for linearity of the performance-time relationship, dependence of the lognormal distribution, and the standard deviation on time are performed. The mean life of tested sensors is assessed at about 414,000 hours, and the Arrhenius activation energy of this reaction is concluded to be 0.39 eV as results.

  • Esterification reaction between succinic acid and 1,4-butanediol was kinetically investigated in the presence of nontoxic organometallic compound catalyst(ESCAT-100E) at $150-190^{\circ}C$. The reaction rates measured by the amount of distilled water from the reaction vessel. The Esterification reaction was carried out under the first order conditions respect to the concentration of reactants, respectively. The overall reaction order was 2nd. The linear relationship was shown between apparent reaction rate constant and reciprocal absolute temperature. By the Arrhenius plot the activation energy have been calculated as 376.13 kJ/mol under nontoxic organometallic compound catalyst and also apparent reaction rate constant, k' was found to obey first kinetics with respect to the concentration of catalyst.

Dielectric Properties of Orthorhombic Dysprosium Manganites

  • Orthorhombic dysprosium manganite DyMnO3 with single phase is synthesized using solid-state reaction technique and the crystal structure and dielectric properties as functions of temperature and frequency are investigated. Thermally activated dielectric relaxations are shown in the temperature dependence of the complex permittivity, and the respective peaks are found to be shifted to higher temperatures as the measuring frequency increases. In Arrhenius plots, activation energies of 0.32 and 0.24 eV for the high- and low-temperature relaxations are observed, respectively. Analysis of the relationship between the real and imaginary parts of the permittivity and the frequencies allows us to explain the dielectric behavior of DyMnO3 ceramics by the universal dielectric response model. A separation of the intrinsic grain and grain boundary properties is achieved using an equivalent circuit model. The dielectric responses of this circuit are discerned by impedance spectroscopy study. The determined grain and grain boundary effects in the orthorhombic DyMnO3 ceramics are responsible for the observed high- and low-temperature relaxations in the dielectric properties.

Non-Newtonian Characteristics of Gochujang and Chogochujang at Different Temperatures

  • This study was conducted to determine the rheological properties of gochujang and chogochujang at different temperatures (25, 35, and $45^{\circ}C$). Rheological properties of the samples were determined using a rotational rheometer at a shear range of 1 to $40s^{-1}$. Gochujang and chogochujang were found to be non-Newtonian fluids according to the Herschel-Bulkley model. Yield stress and consistency coefficient of gochujang at different temperatures were higher than those of chogochujang, whereas the opposite was observed for flow behavior index. Moreover, all rheological properties of gochujang and chogochujang decreased with increasing temperature. The consistency coefficient was related to temperature using an Arrhenius-type relationship. Gochujang (14.48 kJ/mol) had slightly higher activation energy than chogochujang (14.03 kJ/mol).
