The objective of this study was to elucidate the physicochemical characteristics of gelatin extracted from jellyfish Rhopilema hispidum. We investigated the proximate composition, amino acids, gel strength, gelling/melting points, dynamic viscoelastic properties, and viscosity of jellyfish gelatin. Jellyfish gelatin contained 12.2% moisture, 1.5% lipid, 2.1% ash, and 84.8% protein. Glycine, hydroxyproline, proline, and alanine were the predominant amino acids. The gelatin showed a gel strength of 31.2 kPa, a gelling point of $18.0^{\circ}C$, and melting point of $22.3^{\circ}C$. The gelatin was composed of ${\alpha}_1$-chain, ${\alpha}_2$-chain, ${\beta}$-chain, and ${\gamma}$-chain. During cooling and heating process, jellyfish gelatin showed lower elastic modulus (G') and loss modulus (G") values than mammalian gelatin. Jellyfish gelatin did not show superior rheological properties to mammalian gelatin, like other fish gelatin; however, it can be used in various food and cosmetic products not requiring high gel strength.
An aquatic food chain was constructed to provide information of bioaccumulation of DEHP as followed: phytoplankton(Scenedesmus subspicatus) ${\rightarrow}$ zooplankton(Daphnia magna) ${\rightarrow}$ fish(Oryzias latipes). After 10 days of exposure to DEHP, the fish and culture water were analyzed for residual concentration of DEHP and BAF(Bioaccumulation Factor) was determined. In addition, BCF(Bioconcentration Factor) was calculated in exposure tank in which fish were only exposed DEHP by culture water. These experiments provide the relative importance between BAF and BCF. In this study, BCF and BAF did not show any significant difference. Another work in this study was model construction and application to investigate the effect of food chain structure to BAF in higher organism (fish). The model constructed in this study considered the biological characteristics of DEHP such as metabolic parameters, as well as the chemical characteristics such as solubility. This model could be used in prediction of bioaccumulation level in dependent of various food chain structures, when the target organisms or chemicals would be changed.
Nanomaterials are used in a range of fields, including industry, medicine, aerospace, and manufacturing, due to their unique and useful properties. In recent years, nanotechnology has developed rapidly, and the amount of nanomaterials used in various fields has increased consistently. As a result, nanomaterials are released into the aquatic and soil ecosystem, posing potential risks to organisms and environment. These materials can enter the cells and may cause serious damage to organisms. Furthermore, they can be transferred through trophic levels and food web, thereby leading to bioconcentration and biomagnification. In this study, we analyzed the trends in research on food chain transfer of nanomaterials and investigated the techniques used in the research. Although many studies have been underway, there is a need for further advanced studies on higher trophic levels and complex microcosm and mesocosm. Furthermore, study topics should be expanded to include various types of nanomaterials and varied species and trophic levels.

Molecular techniques, including restriction fragment length polymorphism(RFLP) and polymerase chain reaction-single strand conformational polymorph isms(PCR-SSCP), were developed to identify salted, dried threadfin(Eleutheronema tetradactylum) and white herring(Ilisha elongata) fish. Using PCR with universal primers, conserved 367-bp fragments of the cytochrome b gene were amplified from fresh fish samples and sequenced. The sequences were then searched for specific restriction sites. The digestion of the PCR products with the endonucleases AvaI, FokI, MboII, and MspI generated RFLP, which was used to identify the commercial products. Similarly, the amplified PCR-SSCP products were developed and the products tested. Overall, similar patterns were found in the majority of the fresh and processed products. Based on the results, both RFLP and PCR-SSCP were useful in determining and validating the authenticity of the fish species used to prepare the commercial salted, dried products. A similar approach can be applied to other species.

Post-harvest handling and hygienic level of aquatic products significantly affect the quality and level of safety. Cold chain control is one of the determining factors for the quality of fish and the bacterial community that grows on the fish. Identification of spoilage bacteria and pathogens in aquatic products must be made because it will determine the physical and chemical quality. A molecular identification method with high sensitivity is the solution. This study aims to identify the quality of fish and bacterial communities that grow. The research procedures included sample collection, pH measurement, drip loss measurement, transportation and cold storage treatment, DNA extraction, DNA sequencing, sequence analysis, and bioinformatics analysis. The conclusion obtained from this study is that the simulation of the cold chain system applied to eastern little tuna does not significantly affect changes in the water activity value, pH, and drip loss. The insignificant change indicates that the eastern little tuna samples are still in good quality. The bioinformatics analysis showed the highest diversity and abundance of the bacterial community came from the Gammaproteobacterial class.
In this study, the ${\beta}$-lactamase (VPA0477) gene was used as a new target for the PCR-based detection of Vibrio parahaemolyticus. Primers specific for the ${\beta}$-lactamase (VPA0477) gene of V. parahaemolyticus, were designed and incorporated into a PCR-based assay. The assay was able to specifically detect all of the 191 V. parahaemolyticus strains tested, but did not result in amplification of 39 other Vibrio spp. and non-Vibrio spp. strains tested. The detection limit of the assay was 10 CFU of V. parahaemolyticus RIMD2210633 from pure culture broth. The ${\beta}$-lactamase (VPA0477) gene-based assay developed in this study was sensitive and specific, and has great potential for the accurate detection and identification of V. parahaemolyticus in seawater or seafood samples.
We applied a combination of most probable number-polymerase chain reaction (MPN-PCR) methods using a PCR procedure targeting the H-NS (VP1133) gene to detect Vibrio parahaemolyticus presence and density in seawater as well as within short-necked clam Ruditapes philippinarum tissues collected from Gomso Bay, Korea. In 30 seawater samples, V. parahaemolyticus levels ranged from less than 1.8 to $1.1{\times}10^3MPN/100mL$, and samples from August showed higher than those from other months. Furthermore, the levels of V. parahaemolyticus in six short-necked clam samples ranged from $7.8{\times}10^2$ to $2.1{\times}10^3MPN/100g$, approximately 2.5 times higher than in seawater samples from the corresponding month. Our results provide data on V. parahaemolyticus contamination in seawater and short-necked clam tissues, and help to improve quantitative methods of assessing V. parahaemolytcius levels.
With its recent advances, nanotechnology is now being applied to various areas. Despite the benefits of nanoparticles, their risk in the environment has caused controversy, which is now becoming an international issue. Nanoparticles can easily infiltrate into cells, accumulate in biota, and may cause adverse effects in the levels of molecules, cells and organisms, and in the community. If nanoparticles are released into the environment, they can be transferred to organisms in the ecosystem, and eventually to the human body through the food chain. In this study, the research trend of the trophic transfer of nanoparticles in the food chain was investigated. Although a few investigations have been conducted regarding this topic, the trophic transfer of nanoparticles is becoming a significant issue in the area of nanotoxicology due to the potential risk to humans via the biomagnification process. While previous studies have demonstrated evidence of the trophic transfer of nanoparticles intensive future studies are needed to provide further information on the properties of nanomaterials, the exposure media, and the in vivo mechanisms such as uptake, accumulation, and depuration.

The occurrence of TTX in ciliated protozoa was investigated in order to clarify tetrodotoxin (TTX) accumulation mechanisms in marine organisms. Tissue culture bioassay, HPLC, and GC-MS analyses confirmed the occurrence of TTX in Euplotes mutabilis and also in bacteria isolated from the culture medium. Fluorescently labeled bacteria (FLB) were prepared with those bacteria, and predation by E. mutabilis was observed. The results indicated that TTX in bacteria can be transferred to higher trophic levels through the food chain.
Methyl gallate isolated from bark of the tree Rhus verniciflua Stokes has significant antimicrobial activity against the fish pathogenic bacteria Edwardsiella tarda and Vibrio anguillarum. To evaluate the antimicrobial activity of gallate derivatives, eight alkyl gallates were tested. Ethyl gallate and propyl gallate had the highest activities, with MICs of $15.6-31.3{\mu}g/mL$ against E. tarda. For V. anguillarum, propyl gallate and butyl gallate were highly effective, with MICs of $7.81-31.3{\mu}g/mL$. When used in combination with antibiotics, methyl gallate exhibited synergistic effects with oxytetracycline against E. tarda and with norfloxacin against V. anguillarum. These results suggest that short-chain alkyl gallates can be used as alternatives to antibiotics against the fish pathogenic bacteria.
