Studies on the Tin Content for Fruit Tinplated Can (과실 통조림의 주석 함량에 관한 연구)

  • Authors investigated on the content of tin metals in 108 samples of tinplated canned fruit commercial. 1. The highest concentration of tin in 11 kinds of samples of canned fruit that is, apricot nectar was 114ppm and lowest of that 2.5∼3ppm. 2. There was 48.6ppm of tin content in orange nectar A that of pineapple nectar 56.6ppm in higher remarkably and that of the other samples was no appearance difference. 3. There was 114ppm(number 10), 5.3∼56.6ppm(number 8) and 8.7∼48.6ppm(number 3) of tin content in minimum between maximum concentration for difference remarkably and that of others there was no difference considerably, The highest concentration in detection frequency of content range was 8∼ 14ppm in 41. 7% and 2.5"6.6ppm in 36.1% and that of concentration was lower for comparison the others. 5. There was lower contration of tin in all samples for law of food hygiene in limitation 150ppm.

Scale Insects (Stenorrhyncha) Occurred on Fruit Trees in Korea (국내 과수에 발생하는 깍지벌레(진딧물아목)의 종류)

  • A total of 29 scale insect species belonging to 21 genera of five families were recognized on 11 fruit trees on the basis of specimens collected from 2001 to 2002 and specimens deposited in the Insect Collection of NIAST in Korea. Ten species were recognized on apple, nine species on pear, three species on peach, 14 species on unshiu orange, nine species on persimmon, two species on Japanese plum, one species on japanese apricot, 10 species on junos orange, one species on grape, four species on jujube and three species on kiwi fruit.

  • Objectives : This research examined about dietary therapy on the constipation based on the literary findings, for clinical treatment and prevention of the constipation. Methods : This Research examined on histories, compositions, applications, and effects of the constipation on about 100 cases of dietary therapy of the constipation from recent Chinese literatures Results : 1. Various vegetables, animals and mineral materials including herbs, grains, vegetables, fruits, food and drink were used for the dietary therapy. 2. Methods of the preparation for use as therapeutics were decoction, pulvis, gruel, medicinal wine, cake, tea, paste and gelatin and etc. 3. Frequently used materials were sesame oil, honey, ear mushroom, shiitake mushroom, kelp, walnut seed, hemp seed, groundnut, glutinous rice, apricot stone, yellow bean peel, radish, potato, spinage, and spring onion. Conclusion : Though dietary therapy for the constipation is not based on clinical or experimental data, but through experience. It is mostly based on Yin-Yang and five elements, visceral manifestation, channels and their collateral channels and chinese herbal medicine theories. If we use them properly according to oriental medicine method, it will be effective on treating and preventing the constipation.

Etiological Characteristivcs of Colletotrichum acutatum, C. gloeosporioides and Glomerella cingulata Isolated from Apples (사과에서 분리한 Colletotrichum acutatum, C. gloeosporioides 및 Glomerella cingulata의 병원학적 특징)

  • Pathogenic fungal species associated with apple anthracnose were studied with diseased fruits collected over two major apple growing areas from 1986 to 1988. Colletotrichum acutatum Simmonds, c. gloeosporioides(Penz.) Sacc. and Glomerella cingulata(Stonem.) Spauld. & Schrenk were identified based on their mycological characteristics. C. acutatum could be easily differentiated from C. gloeosporioides by producing their fusiform conidia and developing apricot∼salmon colony colors, non-forming an ascigerous stages. Growth rate of C. acutatum were slow in plate culture. The three species of anthracnose fungi tested caused apple rot. Symptoms produced by C. gloeosporioides were larger than those of the others. C. gloeosporioides and G. cingulata produced rot lesions on apples that appeared became brown and later black, but C. acutatum produced rot lesions appeared yellowish brown and later reddish brown. G. cingulata has the major species responsible for apple anthracnose, epidemics in Korea.

Comparative Analysis on the Effect of Beef Tenderizers in Joseon Dynasty (조선시대 소고기 연화제의 연화효과 비교분석)

  • One of the main processes of tenderizing beef in Joseon Dynasty was chemical methods involving Apricot seeds, manchu cherry twig and leaves, bamboo skins, mulberry tree bark, mangsa (硭砂), salmiacum (磠砂), alcohol, fermented malt, and original honey. This study analyzed and compared the effect of broussonetia papyrifera, fermented malt, cherry trees, and mulberry tree bark from old cookbooks. Tenderizing beef with cherry trees was most effective in the experiment on shearing force, TPA, and electrophoresis of beef. According to sensory evaluation and electrophoresis test results, tenderized beef with mulberry tree bark was slightly more preferred over the method using cherry trees. However, in accordance with the above mentioned experiment, quantitative descriptive analysis showed that the most common tenderizing material was derived from morus alba powder.

  • 매실의 향기성분은 50여종 중 알콜류가 benzyl alcohol, linalool, 1,6-octadien-3-ol, n-haxanol 등 10종, aldehyde류가 2-hexenal, benzaldehyde, n-hexanal 등 3종, acid류가 butandeionic acid, acetic acid, 2종, 2-iodo-hexane 등 hydrocarbon류가 5종, butanedioic acid-diethyl estet를 포함한 ester류가 3종, B-ionone을 포함한 ketone류가 3종 그리고 기타 성분이 2종이었다. 매실이 성숙함에 따라 향기성분의 수가 증가하고 그 함량도 증가하는 경향이었다. 매실의 비휘발성 유기산의 조성은 succinic, fumaric, oxalic, malic, tartaric 및 citric acid이었다. 매실이 비휘발성 유기산은 성숙 초기에는 malic acid와 oxalic acid의 함량이 높았다. Citric acid의 함량이 증가한 반면에 대부분의 유기산은 감소하는 경향이었다. 휘발성 유기산은 성숙중에 formic acid함량은 감소하고 butyric acid의 함량은 증가하는 경향이었다. 총 유기산의 함량은 매실 성숙에 현저히 감소하는 경향이었다.

  • Although Maejeong-Bogam (梅亭寶鑑) is a manuscript, it has attracted considerable attention from academia because of the clear authorship and relevant treatment methodologies. This article is the result of an extensive study on the author and the contents of the manuscript through the use of various data. This article revealed facts which include: 1) Author HAN Bangryeol (韓昉烈) is a Confucian doctor who lived in Namwon area, Jeolla province of Korea. 2) Dr. HAN's other manuscript of Bongseong-Shinbang (鳳城神方) was written before 1814. 3) Maejeong-Bogam (梅亭寶鑑) collects pediatric medical records only and is focused on outbreaks and treatment of smallpox among children. 4) Smallpox was a national concern in the late Joseon Dynasty and doctors of the day developed corresponding therapies. 5) Smallpox Inoculation was carried out in Jeolla Province as early $19^{th}$ in Korea.

Antimicrobial Effect of Phytochemicals to Listeria monocytogenes Isolated from Slaughterhouses

  • The objective of this study was to investigate the inhibitory effect of natural antimicrobials on Listeria monocytogenes isolated from Korean slaughterhouses. A mixture of 15 strains of L. monocytogenes at low (3 Log CFU/mL) or high (7 Log CFU/mL) concentration was exposed to various extracts (grapefruit seed extract, citrus fruit extract, ginger extract, pear extract, Japanese apricot concentrate, balloon flower extract, jujube extract, and omija extract) at $0.001-4.0{\mu}g/mL$. Ginger extract, pear extract, Japanese apricot concentrate, balloon flower extract, jujube extract, or omija extract showed no antimicrobial effects on high-concentration of L. monocytogenes (7 Log CFU/mL). However, grapefruit seed extract and citrus fruit extract showed antibacterial effects against L. monocytogenes at 3 and 7 Log CFU/mL with MBCs of 0.001 and $0.002{\mu}g/mL$, respectively. These results indicate that grapefruit seed extract and citrus fruits extract can be used to control L. monocytogenes as natural antimicrobials.

Comparison of Physicochemical Characteristics of Pickles Manufactured in Folk Villages of Sunchang Region (순창 고추장민속마을에서 생산한 장아찌의 이화학적 특성 비교)

  • For standardization of quality and reduction of salt concentration of pickles manufactured in Folk Villages of Sunchang Region, the physicochemical characteristics of 90 pickles of 10 items were compared. Persimmon, garlic, cucumber, radish, Codonopsis lanceolata L., and Japanese apricot pickles were mixed with kochujang, perilla leaf pickle was mixed with soybean paste, cucumber pickle in wine cake was mixed with wine cake, and red pepper was mixed with soybean paste or soy sauce. Moisture contents, pH, and titratable acidities of pickles were various depend upon characteristics of materials. Sugar contents of pickles test,34 were ranged from $22.10{\pm}3.04$ (red pepper pickled with soy sauce) to $55.53{\pm}7.67\;^oBrix$ (garlic pickle), and sugar contents of pickles mixed with kochujang were higher than those of soybean paste or soy sauce. Salt concentration of pickles were ranged from $3.56{\pm}1.11$ (Japanese apricot) to $9.15{\pm}6.35%$ (red pepper pickled with soy sauce), and salt concentration of pickle mixed with soy sauce was the highest among the pickles tested. Total aerobic counts of pickles tested were similarly ranged from $5.62{\pm}0.10$ (red pepper pickled with soy sauce) to $6.83{\pm}0.55$ log CFU/g (perilla leaf pickled with soybean paste). These results indicate salt concentration and quality of pickles manufactured in Folk Villages of Sunchang region must be lowered and standardized, respectively.
