As of 2018, total yield of lettuce and strawberry amounted to 93,543 tons (representing 1.0 percent) and 183,639 tons (2.0 percent), respectively, among total yields worth 9,185,889 tons in South Korea. Lettuce is affected by a combination of numerous elements such as varieties, cultivation methods and pests during each growth phase (Lee et al., 1999). It is mainly cultivated in spring and fall. Especially due to respiration rate after harvest leading to reduced quality and poor storage, maintaining annual supply is unavailable (Jang et al., 2018). With the distribution of new varieties, forcing culture and indoor insulated facilities for plant cultivation during winter, strawberries are produced every year except for late summer and early fall. Due to active respiration, transpiration, soft flesh and high water content, the fruit is vulnerable to go bad and got rotten compared to other fruits. Furthermore, it is difficult to maintain freshness due to the possibility of softening, discoloration and fungi (Lee et al., 2012). In this regard, developing improved storage and package techniques is needed to ensure maintaining quality and safety even just two to three days after harvest. In order to ensure improved quality and safety of strawberries and lettuce after harvest, the present study applied a modified atmosphere packaging (MAP) technology (Mostofi et. al., 2008). Going forward, it compared the quality and safety of the two products while being stored in a way that put them in an MAP-applied container and a plastic container at room temperature and 4 degree Celsius.
Erwinia amylovora and Erwinia pyrifoliae cause fire blight and black-shoot blight, respectively, in apples and pears. E. pyrifoliae is less pathogenic and has a narrower host range than that of E. amylovora. Fire blight and black-shoot blight exhibit similar symptoms, making it difficult to distinguish one bacterial disease from the other. Molecular tools that differentiate fire blight from black-shoot blight could guide in the implementation of appropriate management strategies to control both diseases. In this study, a primer set was developed to detect and distinguish E. amylovora from E. pyrifoliae by conventional polymerase chain reaction (PCR). The primers produced amplicons of different sizes that were specific to each bacterial species. PCR products from E. amylovora and E. pyrifoliae cells at concentrations of 104 cfu/ml and 107 cfu/ml, respectively, were amplified, which demonstrated sufficient primer detection sensitivity. This primer set provides a simple molecular tool to distinguish between two types of bacterial diseases with similar symptoms.
To confirm the applicability of crab apple, the composition and content of amino acids and minerals with 'Fuji' apple were measured. Apple and crab apple were extracted with water, 70% and 100% ethanol, respectively. The contents of polyphenols, flavonoids, and ascorbic acid, antioxidant activities of these extracts were measured. The amino acid composition of apples comprised a total of 17 amino acids. The total amino acid contents of apple and crab apple were 2,050.45 mg/kg and 900.05 mg/kg, respectively. For minerals, the total mineral content of apple and crab apple were 489.14 mg%, 529.77 mg%, respectively. The contents of polyphenols, flavonoids, and ascorbic acid of apple and crab apple extracts were highest in 70% ethanol extracts. The content of polyphenols, the crab apple extract, showed a generally higher content than the apple extract. The content of flavonoids, apple and crab apple extracts revealed no difference between extracts. The content of ascorbic acid, apple extract showed a generally higher content than the crab apple extract, but there was no significant difference between extracts. In the case of DPPH and ABTS radical scavenging abilities, 70% ethanol extract showed the highest antioxidant activity, and crab apple showed higher activity than apple extracts.

This study was designed to examine whether 'Hongro' apples packaged with natural calcium-coated package papers was fresher maintained than fruit held in not-packaged tray, and whether postharvest physiology of the fruits was affected by calcium-coated papers, or not. The summarized results were as follows; Soluble solids contents and firmness of fruit were higher room temperature(20~25℃) after 4 week and 14 week in cold storage(0~1℃) by calcium-coated package papers. but total acid contents in juice and Hunter a value of peel were trended to decrease in room temperature and cold storage. Weight loss of fruit, decay fruit and CO2 evolution were decreased by calcium and wax-coated package papers in room temperature storage condition. Also, excellent fruits increased. Ethylene evolution in fruit were not different by package paper and storage condition.
Fungal isolates from infected Chinese quince trees were found to cause black rot in Yeongcheon, Gyeongsangbuk Province, Korea. The quince leaves withered and turned reddish-brown and fruits underwent black mummification. To elucidate the cause of these symptoms, the pathogen was isolated from infected leaf and fruit tissues on potato dextrose agar and Levan media. Several fungal colonies forming a fluffy white or dark gray mycelium and two types of fungi forming an aerial white mycelium, growing widely at the edges, were isolated. Microscopic observations, investigation of fungal growth characteristics on various media, and molecular identification using an internal transcribed spacer, β-tubulin, and translation elongation factor 1-α genes were performed. The fungal pathogens were identified as Diplodia parva and Diplodia crataegicola. Pathogenicity tests revealed that the pathogen-inoculated fruits exhibited a layered pattern, turning brown rotting; leaves showed circular brown necrotic lesions. The developed symptoms were similar to those observed in the field. Fungal pathogens were reisolated to fulfill Koch's postulates. Apples were inoculated with fungal pathogens to investigate the host range. Strong pathogenicity was evident in the fruits, with browning and rotting symptoms 3 days after inoculation. To determine pathogen control, a fungicidal sensitivity test was conducted using four registered fungicides. Thiophanate-methyl, propineb, and tebuconazole inhibited the mycelial growth of pathogens. To the best of our knowledge, this is the first report on the isolation and identification of the fungal pathogens D. parva and D. crataegicola from infected fruits and leaves of Chinese quince, causing black rot disease in Korea.

As agricultural production increases due to population growth, agricultural by-products that are generated at all production stages increase commensurately. Black soldier fly (BSF) (Hermetia illucens) treatment has potential as an environmentally friendly process to combat the environmental pollution caused by agricultural by-products. This study examined the utilization of BSF larvae in the decomposition of the by-products of apples and mandarins, fruits commonly produced in South Korea. The BSF test larvae were fed apple pomace or mandarin waste, and the control larvae were fed calf feed. Larval weight and size were measured at 4-day intervals until larvae reached the pre-pupal stage. Larval development time, survival rate, and BSF fecundity rate were calculated for all three substrates. Waste reduction and bioconversion ratios were also calculated. The developmental time of larvae fed with apple pomace and mandarin waste was greater than that of the control larvae. The average weight of larvae fed with the fruit by-products was less than that of the control. There was no significant difference in the survival rate of BSF larvae or the fecundity rate of BSF between the substrates used in this study. BSF larvae decomposed 48.0% and 61.5% of apple pomace and mandarin waste, respectively. The bioconversion efficiency rates of BSF larvae fed with apple pomace and mandarin waste were 9.1% and 12.1%, respectively. These results indicated that decomposition of single fruit by-products by BSF larvae is an environmentally friendly and effective bioconversion process.

Considering irrigation facilities are currently insufficient and drought vulnerability due to climate change is high, efficient measures are required to secure water supply for field crops. This study, therefore, calculated the water shortage to secure water for representative field crops. An economic analysis was further conducted by comparing the production income to the input cost for each method. Here, five distinct regions were selected to represent each crop-Cheongyang-gun for chili peppers, Yesan-gun for apples, Dangjin-si for cabbages, Seosan-si for garlic, and Goesan for beans. The regions with insufficient water supply were estimated by calculating the water requirements and the supplied water from public groundwater wells for each area. A comprehensive set of four scenarios was presented as a strategy to ensure water security and manage irrigation facilities. These scenarios comprised the maintenance of existing groundwater wells, the construction of new water storage tanks, the installation of additional groundwater wells, and the utilization of surface water. B/C (benefit/cost) analysis was conducted for each scenario. As a result, the construction of water storage tanks was selected as a facility and water management plan in Cheongyang-gun, Dangjin-si, and Seosan-si. The analysis additionally indicated the economic viability of installing surface water utilization facilities in Yesan-gun and developing water storage tanks and groundwater (aquifer) wells in Goesan-gun. The results of this study are considered to serve as foundation data that may be utilized in the selection of water management plans for drought-prone areas in the future.
100 different yeast colonies were isolated from spontaneously fermented kiwis, persimmons, apples, pears, watermelons, grapes, grape fruits, peachs, and plums, and selected yeast strains were used to produce kiwi-persimmon mixed wine (KPMW). Among the isolates, five representative strains exhibited tolerance to sucrose, alcohol, pH, and potassium metabisulfite when compared with the control yeast strain (Saccharomyces cerevisiae KCCM 12615). All five yeast strains (Y4, Y10, Y28, Y78, and Y81) exhibited 99% 26S rDNA sequence similarity to S. cerevisiae. The pH, acidity, Brix, reducing sugar, alcohol, and organic acid contents were consistent in KPMW prepared from the S. cerevisiae KCCM 12615 and Y28 strains. KPMW made from the Y4, Y10, and Y28 strains exhibited lower quantities of free sugars than those of the KPMW made from the other yeast strains. The level of ethyl esters in KPMW prepared from the Y28 was higher than that in the other KPMWs. All strains, except for Y28, produced lower concentrations of sulfur and ketone compounds. Furthermore, the KPMW produced by the Y28 strains had total phenolic contents with 1.1 g/L, with DPPH and ABTS radical scavenging activities of 57.06% and 55.62%, respectively, and a FRAP assay value of 0.72. Our results suggest that Y28 is a promising yeast strain for producing high-quality wines.
A nonthermally sterilized raw apple vinegar was manufactured using an ultra-fine filtration process (0.2 ㎛ membrane filter) and its quality was comparable to commercially available vinegar products. First, using apple concentrate as a raw material, it was possible to produce non-thermal sterilized Using a two-stage fermentation process of alcohol and acetic acid fermentations, a non-thermally sterilized raw apple vinegar with pH 2.94 and an acidity of 6.20% was produced from an apple concentrate. The fermentation process increased the browning index significantly. However, the fundamental quality parameters of the non-thermal sterilized raw apple vinegar (A) with sterilized apple vinegar (B) did not differ significantly. The pH (2.92-2.95) of apple vinegar (A and B) was higher than that (pH 2.65-2.70) of commercial vinegar (C and D), and the total acidity, which is in the range of 6.20-6.21% and 6.53-6.90%, respectively, was higher in samples C and D than in samples A and B. However, four kinds of organic acids were detected in non-thermal sterilized raw apple vinegar (A), and its total organic acid content (6,245.00 mg%) was significantly higher than that of other samples (B, C, D) (p<0.05). In particular, malic acid content, as a main organic acid in apples, was very high in sample (A) (244.83 mg%) and sample (B) (210.21 mg%), compared to commercial products C (125.78 mg%) and D (86.90 mg%). The total polyphenol content and antioxidant activity of fermented apple vinegar (A, B) were more than twice as high as those of commercial products (C, D). Vinegar A had higher total polyphenol content than vinegar B. The above results suggest it is possible to manufacture and commercialize non-thermal sterilized raw apple vinegar with higher organic acid content and antioxidant properties using ultra-fine filtration.
