뽕잎(桑葉)에 함유된 항산화성 물질 (Antioxidative Substances in Mulberry Leaves)

  • Antioxodative substances in Mulberry leaves were examined. Antioxidative substances in Mulberry leaves were extracted by 80% methanol agueous solution. Antioxidative activity of extract was determined by examining hydrogen donating ability on 1,1-diphenyl-2-picrylhydrazyl (DPPH) and the inhibitory effect on the formation of the peroxide from Linoleic acid in the test tube at $50^{\circ}C$. Antioxidative substance were, then, separated and indentified by thin layer chromatography(TLC), UV-Vis spectrum and High performance liquid chromatography(HPLC) methods. Hydrogen donating ability on DPPH and antioxidative ability on linoleic acid of the extracted antioxidative substance were higher than those of 100ppm butylated hydroxy toluene(BHT). The extracted antioxidative substances were separated by TLC using ethylacetate : chloroform : formic acid : water(8 : 1 : 1 : 1 v/v) as a solvent, and a spot at Rf=0.35 was detected. The spot was scraped from the plate, and extrated by methanol. The extract was analyzed by UV-Vis spetra and HPLC, and chlorogenic acid was identified as a antioxidative substance.

어유에 대한 효모와 항산화효과 (Screening for Antioxidative Activities of Yeasts on Fish Oil)

  • 효모의 항산화작용을 알아보기 위하여 IFO 효모, 간장에서 분리한 효모, 막걸리에서 분리한 효모 및 당밀에서 분리한 효모를 각각 $1{\times}10^6/ml$로 증식시켜 어유에 접종하여 $30^{\circ}C$에서 배양하면서 POV, TBA-V의 변화를 조사하여 그 항산화력을 검토하였다. 항산화활성은 Saccharomyces rouxii와 Torulopsis etchellsii가 가장 높았고, 막걸리에서 분리한 효모 중에서는 Pichia ohmerii가 가장 높았다. 그리고 당밀에서 분리한 효모중에서는 Candida versatilis가 항산화작용이 높았다.

민들레의 서식지와 부위별 항산화 및 항균 활성 연구 (Antioxidative and Antimicrobial Qualities of Different Pare of the Dandelion Plant (Taraxacum officinale) from Different Habitats)

  • To classify the physiological activity by habitat and part of Dandelion (Taraxacum officinale), antioxidative and antimicrobial activities were investigated from methanol extracts of Dandelion. Dandelion was taken from Uiryeong (in Kyungnam province) and from Seoul, and antioxidative and antimicrobial activities were measured for three different parts of the dandelion: the flower, leaf and root. Antioxidative activities of methanol extracts from Dandelion were examined by a DPPH test, and antimicrobial activities were examined against 5 microorganisms: Bacillus subtilis and Bacillus cereus as G(+) microorganisms, and Salmonella typhimurium, Staphylococcus aureus and Eschrichia coli as G(-) microorganisms. No significant differences were found in terms of antioxidative and antimicrobial activities between the dandelions in Uiryeong and the dandelions in Seoul. Antioxidative activity, however, was higher in the flower of the dandelion, irrespective of habitat. Further research with other physiological factors (besides antioxidative and antimicrobial activities) is necessary to shed light on dandelion physiological function and to enhance the utilization of dandelion.

국산 대두의 항산화 효과 (A Study on the Antioxidative Activities of Korean Soybeans)

  • 국산 대두의 항산화 효과를 확인하고 그 원인 물질을 규명하기 위하여 노란콩, 밤콩, 검정콩, 소립검정콩을 각각 콩전체, 콩껍질과 속으로 분리하여 실험한 결과, 콩전체의 경우 노란콩 보다 밤콩, 검정콩, 소립검정콩 등의 색이 짙은 콩의 항산화 효과가 높았고 이들을 껍질과 속으로 분리하여 항산화효과를 측정한 결과 콩 속의 항산화 효과는 네종류의 콩에서 유사한 것으로 나타났으나 껍질의 경우 노란콩 보다 밤콩, 검정콩, 소립 검정콩 등의 색이 짙은 콩껍질에서 높은 항산화 효과를 나타내어서 콩의 항산화 효과에는 콩껍질에 함유되어 있는 색소물질이 중요한 역할을 하는것으로 나타났다. 콩의 짙은 색의 주요 색소성분인 anthocyanin 함량을 측정한 결과 소립검정콩과 검정콩의 anthocyanin 함량이 높았고 밤콩과 노란콩은 적게 나다났다. 콩의 항산화효과의 주요물질을 분리하기 위하여 핵산, 메타놀 및 물로 추출하여 항산화 효과를 측정한 결과 80% 메타놀추출물에서 네종류의 콩 모두 강한 항산화 효과를 나타내었다. 콩의 항산화 원인 물질인 total phenol 함량을 측정한 결과 노란콩 보다 밤콩, 검정콩, 소립검정콩에서 높은 함량을 나타내었고 용매별 추출물 중에서는 메타놀추출물에서 그 함량이 높아서 콩의 항산화 효과와 total phenol 함량은 일치하는 것으로 나타났다.

  • Many studies have presented results about the antioxidative and antimicrobial activities of Dandelions(Taraxacum officinale). There has yet to be a study which makes comparisons based on the variety or parts of the Dandelion. To compare the physiological activity, antioxidative and antimicrobial activities were measured by using methanol extracts of Korean and Western Dandelions. The Dandelions were taken from Uiryeong in Kyungnam province, and antioxidative and antimicrobial activities of the flower, leaf and root were measured. Antioxidative activities of the methanol extracts were examined with a DPPH test. Antimicrobial activities were examined against 5 microorganisms. Bacillus subtilis and Bacillus cereus served as G(+) microorganisms, while Salmonella typhimurium, Staphylococcus aureus, and Eschrichia coli served as G(-) microorganisms. There was no significant difference in the antioxidative activity of the methanol extracts from leaves and roots between varieties. The antioxidative activity of the flower extracts was higher in the Korean than in the Western samples but the highest level of antioxidant was lower than 70%. No significant difference in antimicrobial activities between the varieties was observed. More research using physiological factors other than antioxidative and antimicrobial activities is needed to identify physiological functions and enhance the utilization of Dandelions.

맹종죽(Phyllostachys Pubescens)추출물 코팅쌀이 Atherogenic 식이를 섭취한 C57BL/6 마우스의 항산화 시스템에 미치는 영향 (Effect of Maengjong-Juk (Phyllostachys Pubescens) Extract Coated Rice Diet on Antioxidative System of C57BL/6 Mice Fed Atherogenic Diet)

  • To evaluate the antioxidative effect of maengjong-juk (Phyllostachys pubescens) extract coated rice in vivo system, maengjong-juk extract coated rice diets were fed to C57BL/6 mice for 16 weeks. Plasma total antioxidative capacity, hepatic lipid peroxidation, protein oxidation, activities of antioxidative enzymes and total glutathione content were measured. Plasma total antioxidative capacity was elevated significantly in maengjong-juk extract diets supplemented group in a dose dependant manner. Hepatic TBARS contents were significantly decreased in maengjong-juk extract diets supplemented group compared to high cholesterol group. Maengjong-juk extract coated rice diets suppressed the protein oxidation significantly in liver. Activities of hepatic antioxidative enzymes such as total SOD, CuㆍZn-SOD, Mn-SOD, GSH-Px and catalase activities of maengjong-juk extract coated rice diets were significantly higher than those of high cholesterol diet. Total hepatic glutathione content was significantly increased by maengjong-juk extract coated rice diets administration. According to this study, numerous antioxidative materials and phytochemicals containing in maengjong-juk extracts appear to protect antioxidative systems in C57BL/6 mice fed bamboo extract coated rice diet. 지질 과산화에 대한 전통약용 식물의 항산화 효과 (Antioxidative effects of traditional medicinal plants on lipid peroxidation)

  • To assess the antioxidative activity of 12 medicinal plants on lipid peroxidation, twelves traditional medicinal plants extracted with 95% methanol were investigated the antioxidative activity using DPPH, thiocyanate acid method, and thiobarbituric acid (TBA) methods. Out of 12 medicinal plants extracted with methanol, the extraction yields of Sedum kamtschaticum was the highest values (49.46%) among them and Geranicum sibiricum, Saururus chinensis root (R), Agrimonia pilosa leaf (L), Agrimonia pilosa root was the lowest value (9.97%). Radical scavenging effect of the selected traditional medicinal plants extracted from different extract solution were examined by 1, 1-diphenyl-2-picrylhydrazyl (DPPH) radical method. Antioxidative activity of methanolic extracts was higher than those of ethanol and n-hexane extracts. Scavenging effects in Sedum kamtaschaticum (R) determined by DPPH radical showed the highest among the 12 plants. The antioxidative effects of the first four medicinal plants were similar to those of butylated hydroxyanisole (BHA), and butylated hydroxytoluene (BHT), but higher than that of tocopherol, which was used as a handled control. Antioxidative effects of each indicated concentration of the methanolic extracts on linoleic acid by thiocyanate method was the highest in Sedum kamtschaticum and followed by Geum japonicum and Agrimonia pilosa and their antioxidative effect were similar to those of BHA, and BHT, but higher than that of tocopherol. Antioxidative effects of the selected medicinal methanolic extract on linoleic acid by thiocyanate acid method were examined for 15 days. Peroxidation of control and tocopherol group occurred on days 5 and 9, respectively, but BHA, BHT, selected medicinal methanolic extract group did not occur until on day 15. Antioxidative effects of the selected medicinal methanolic extract on linoleic acid by TBA method were examined for 15 days. Antioxidative activity was similar to those obtained by thiocyanate acid method.

배양 간세포 (Chang)에서 황산화작용 및 항상화요소 활성에 미치는 계란 놀느자 단백질 가수분해물의 영향 (Effect of Enzymatic Hydrolysate from Egg Yolk Protein on the Activity of Antioxidative Enzyme in Cultured Hepatocytes (Chang))

  • Normally, aerobic cells are protected from the damage of free radicals by antioxidative enzymes such as catalase, superoxide dismutase (SOD), glutathione (GSH) peroxidase and GSH-S-transferase. In this study, we have investigate the effect of egg yolk protein hydrolysates on antioxidative activity and the activity of antioxidative enzyme in cultured hepatocytes (Chang). Without the pretreatment with hydrolysate, about 50% of the hepatocytes were killed within 2h by 225$\mu$M tert-butyl hydroperoxide (t-BHP). By contrast, fewer than 20% of the 5 K hydrolysate (permeate from 5 kDa membrane and not passed through 1 kDa membrane)-pretreated hepatocytes were killed by the same concentrations of t-BHP. In addition, the activities of catalase, GSH peroxidase and GSH-transferase were significantly increasing with the treatment of 5 K hydrolysate. These results suggest that 5 K hydrolysate exerts antioxidative effect by increasing activity of antioxidative enzymes.

국내산 무화과의 이화학적 특성 및 항산화 활성 (Physicochemical Characteristics and Antioxidative Effects of Korean Figs(Ficus carica L.))

  • In order to obtain the basic data fer the processing adaptability of Korean figs(Ficus carica L.), physicochemical analyses were carried out with Korean common type figs in the different ripening stages. Moisture contents decreased, but the contents of protein, fat carbohydrate and soluble solids increased according to the ripening of fruits. K was detected as the most abundant one of all the minerals and Ca, Mg, Na, Fe, Mn, Zn and Cu were the next in order. The mineral contents decreased slightly with ripening. Especially, Ca, Mg, U, Fe and Zn were higher in the unripened H stage figs. The antioxidative activity was assayed with water and methanol extracts from ripened figs by the DPPH radical scavenging ability. The antioxidative activities of Korean figs were relatively high and increased in a dose dependent manner. The methanol extract showed the higher antioxidative activity than the water one. Therefore, the methanol was the better solvent than water for the antioxidative compounds. These results suggested that Korean figs are relatively the good sources of minerals, especially the Ca and the antioxidative compounds.

  • This study was designed the antioxidative effect of the ethanol extract obtained Rooibos tea (Aspalathus linearis) on various kinds of oil, and examined the synergistic effect of Rooibos tea extract by addition of citric acid to the antioxidation activity and also investigate to antioxidation effect of the extract in food production and storage peroids. The antioxidative activity of 0.2mg of Rooibos tea extract was showed similar to same doses of $\alpha$-tocopherol, BHA and BHT in linolieic acid-ethanol system. The antioxidative effect of the mixture with 0.1% Rooibos tea extract on lard was more effective than that of the mixture with same doses of $\alpha$-tocopherol, BHA and BHT. The antioxidative effect of Rooibos tea extract was showed slightly effects on lard or soybean oil. Antioxidative effects of Rooiboe tea extract in addition of citric acid as synergist showed more effective in linoleic acid-ethanol system, but did not showed in the other oils. In the application of Rooibos tea extract to food prodctuction and storage period, the antioxidative effect was more effective in biscult, preparation added lard mixed with 0.1% Rooibos tea extract.
