  • Gallic acid was isolated from Caesalpinia mimosoides Lamk and the structure s identified based on spectroscopic analysis and comparison with authentic compound. In this study we compared the ability of natural gallic acid (nGA) and commercial gallic acid (cGA) to inhibit the proliferation of cholangiocarcinoma cell lines (M213, M214) and foodborne pathogenic bacteria (Salmonella spp. and Plesiomonas shigelloides). Both nGA and cGA had the same inhibitory effects on cell proliferation by inducing apoptosis of cholangiocarcinoma cell lines. In addition, nGA inhibited growth of foodborne pathogenic bacteria in the same manner as cGA. Our results suggest that nGA from Caesalpinia mimosoides Lamk is a potential anticancer and antibacterial compound. However, in vivo studies are needed to elucidate the specific mechanisms involved.

  • Antimicrobial polyethersulfone ultrafiltration membranes containing zerovalent iron ($Fe^0$) and magnetite ($Fe_3O_4$) nanoparticles were synthesized via phase inversion method using polyethersulfone (PES) as membrane material and nano-iron as nanoparticle materials. Zerovalent iron nanoparticles (nZVI) were prepared by the reduction of iron ions with borohydride applying an inert atmosphere by using $N_2$ gases. The magnetite nanoparticles (nMag) were prepared via co-precipitation method by adding a base to an aqueous mixture of $Fe^{3+}$ and $Fe^{2+}$ salts. The synthesized nanoparticles were characterized by scanning electron microscopy, X-ray powder diffraction, and dynamic light scattering analysis. Moreover, the properties of the synthesized membranes were characterized by scanning electron microscopy energy dispersive X-ray spectroscopy and atomic force microscopy. The PES membranes containing the nZVI or nMag were examined for antimicrobial characteristics. Moreover, amount of iron run away from the PES composite membranes during the dead-end filtration were tested. The results showed that the permeation flux of the composite membranes was higher than the pristine PES membrane. The membranes containing nano-iron showed good antibacterial activity against gram-negative bacteria (Escherichia coli). The composite membranes can be successfully used for the domestic wastewater filtration to reduce membrane biofouling.

  • Copper-bearing montmorillonite (Cu-MMT) was produced by $Cu^{2+}$ cation exchange reaction. X-ray diffraction analysis showed that that the (001) basal spacing of the MMT crystal lattice increased from 1.544 to 1.588 nm after $Cu^{2+}$ exchange. This indicated that $Cu^{2+}$ entered into interlayer position of MMT as a hydrated cation or composite cation. In vitro results indicated that Cu-MMT had antibacterial activity on Escherichia coli $K_{88}$. Cu-MMT had unbalanced positive charge after cation exchange. Its antibacterial activity resulted from two aspects, one was electrostatic attraction which made E. coli $K_{88}$ being adhered on the montmorillonite surface, the other was the $Cu^{2+}$ slowly released, which could kill bacteria. In an in vivo study, four replicates of eight weanling pigs were assigned to each of two dietary treatments to study the effects of Cu-MMT on diarrhea, E. coli in the lumen of the jejunum and morphology of jejunal mucosa. As compared to the control, supplementation of the diet with 0.2% Cu-MMT improved average daily gain by 12.50% (p<0.05) and decreased F/G by 9.42% (p<0.05). The mean diarrhrea incidence was decreased by 71.80% (p<0.05). The viable counts of Escherichia coli in jejunal contents were significantly reduced (p<0.05). Villus height and the villus height to crypt depth ratio at the jejunal mucosa were increased by 19.09% (p<0.05) and 37.10% (p<0.05), respectively.

  • The chemical composition of natural powder dye $Pinux^{TM}$ manufactured from Pinus radiata bark and dyeability of dyed silk fabrics with $Pinux^{TM}$ were examined. It is made up of the optimum dyeing condition of silk fabric according to the dyeing concentration, dyeing time, and dyeing temperature. Also, we examined the colorfastness and antibiosis of dyed silk fabrics to washing, rubbing, perspiration and light. For the analysis of the chemical composition of $Pinux^{TM}$, the total contents of phenolic compound, proanthocyanidin(PA) and anti-oxidative activities of the dye were analyzed. As a result, it was found that the main components of the $Pinux^{TM}$ manufactured from Pinus radiata bark is proanthocyanidin, mostly a flavonoid containing a procyanidin structure, and it consists of approximately 63% phenol. As a result of examining the dyeability of silk fabrics with $Pinux^{TM}$, it showed that the dyeability was best under the conditions of the concentration of dye $1{\sim}1.5%$(wt/v%), dyeing time of 90 minutes, and dyeing temperature at $90^{\circ}C$. It was found that the colorfastness of dyed silk fabrics, colorfastness to washing, perspiration for acidic and rubbing were as good as grade 4 or 4-5. However, the colorfastness to light was low at grade 1, the same as the results of other natural dyed fabrics. As a result of the antibiosis measurement for the $Pinux^{TM}$-dyed silk fabrics, it showed high antibacterial properties to Staphylococcus sureus at 99.6%.

  • The purpose of this study is to investigate the quality characteristic of cholesterol free milk helping the reduction of serum cholesterol. Cholesterol free milk stored at $10\pm1^{\circ}C$ was evaluated with general analysis, stability, cholesterol, microorganism, aflatoxin $M_1$, antibiotic, antibacterial agent, color, and sensory evaluation. Animal fat contents were significant (p<0.05), but normal values. Quality characteristics of alcohol test, freezing point, and somatic cell count were general milk data with stability. Cholesterol content, microorganism, and aflatoxin MI were not detected. Also antibiotic and antibacterial agent residues were not detected by Parallux, Charm II, TTC II, and Eclipse method. Color of CFM1 was significant, while CFM2 was similar with conventional milk. Compared to control milk made by conventional way, QDA scores of color and mouthfeel in CFM1 were significantly different, whereas CFM2 did not show any significant. These Quality characteristic results suggested that health-oriented cholesterol free milk would be made by food additive.

  • Helminthostachys zeylanica is a rare plant grows in lightly shaded areas. The fern was traditionally used as antipyretic and antiphlogistic agents. This study was aimed to evaluate the antibacterial potential of H. zeylanica on foodborne Bacillus cereus. The chemical composition of its ethanolic extract was also determined. The plant samples were collected at Kampung Kebun Relong, Kedah, Malaysia. The ethanolic extract showed significant inhibitory activity on B. cereus with a sizeable clear zone detected on disc diffusion assay. On broth microdilution assay, the MIC of the extract on B. cereus was 6.25 mg/ml and the MBC was 12.5 mg/ml. The inhibitory activity of the extract on B. cereus was bactericidal. In the growth dynamic study, the antibacterial efficacy of the extract was concentration dependent, where a lower colony forming unit count was obtained with increased extract concentration. The SEM micrograph of extract treated B. cereus cells showed invaginations of cell wall. The bacterial cell structure collapsed after 24 h exposure to the extract. The GCMS analysis of the extract showed that the major constituents of the extract were phenol (36.26%) and quercetin (29.70%). This study is important as it shows the potential use of H. zeylanica as an effective agent to control B. cereus related infections.

  • The objective of this study was to improve the Dasik through the addition of sugar alcohol(xylitol, mannitol, sorbitol, erythritol) and agar during the production of Dasik in order to complement the texture of Dasik. Dasik sample were prepared, and the sensory quality and physical characteristics of the samples were compared and the antibacterial characteristics of green tea Dasik containing sugar alcohol against oral bacteria were also examined. The results are summarized as follows. The moisture content of green tea containing sugar alcohol to improve the physical properties was over 30%. The water activity of the agar-added Dasik was higher than that of the control group. The pH was significantly higher for both the experimental group and the control group. The color L value was the brightest at 59.21 for FAOG, while the a value was the lowest for SG, and the b value was the highest for MG. In the texture analysis, the hardness of the control group was the highest at $5181.04\;g/cm^2$ for SSG. The cohesiveness was the highest at 0.16% for SG and the chewiness was the highest at 182.12 g for MG, while the lowest cohesiveness was determined to be 43.73 g for EG. As for the adhesiveness, the agar, sugar alcohol-added groups were overall negative (-) while SG was found to have the lowest negative value at -39.25 g. In the sensory evaluation, the control XYG group scored the highest in moistness, adhesiveness, chewiness, and overall acceptance. In addition, all groups except SSG exhibited antibacterial characteristics against P. bivia. In conclusion, Dasik with added agar was shown to complement the texture of Dasik due to the added sugar alcohol.
