The Study on Dietary Patterns of Korean food and the Level of Proper Eating Habits According to the Recognition of the Kimchi Cooking Method - Based on the Result of 2014 National Dietary Survey - (김치조리법 인지 여부에 따른 한식식사패턴 및 바른식생활 실천에 관한 연구 - 2014 국민식생활실태조사 결과를 토대로 -)

  • Purpose: This study investigated the dietary patterns associated with Korean food and the level of proper eating habits according to recognition of the Kimchi cooking method, and aimed to suggest the necessity of dietary education of traditional foods such as Kimchi. Methods: Based on the results of the national dietary survey conducted in 2014 by Ministry of Agriculture, Food and Rural Affairs of Korea, a total of 1200 subjects were classified into two groups, one that knew how to make Kimchi (53.8%) and another that did not (46.2%). Results: The group that knew how to make Kimchi (FG) showed significantly higher scores in knowledge of how to cook most types of Korean foods and traditional fermented foods than the other group (NG). Moreover, FG showed significantly higher scores in regularity in meals and a higher frequency of Korean foods such as rice, Kimchi, and grilled or stewed food, while it showed significantly lower scores in dietary risk factors than NG. In addition, FG showed significantly higher scores in dietary education interest and number of meals with family during the week than NG. Finally, FG had significantly higher scores in the degrees of practice of all eight items related to proper eating habits. Conclusion: Since recognition of Kimchi cooking has a great influence on maintenance of dietary life, dietary education to improve the cooking ability of traditional foods should be further strengthened.

Prevalence and antimicrobial susceptibility of Streptococcus species isolated from bovine mastitis (젖소 유방염에서 분리한 Streptococcus 종의 분포 및 항생제 내성 분석)

  • Streptococcus is one of the major pathogen groups inducing bovine mastitis. The aim of this study was to investigate the antimicrobial resistance patterns of Streptococcus species isolated from bovine mastitis milk samples in Korea from 2016 to 2021. In total, 181 (10.3%) Streptococcal isolates were collected from 1,761 quarter milk samples at 122 farms; S. uberis 39.2% (n=71), S. dysgalactiae 29.3% (n=53), S. equinus 9.9% (n=18), S. suis 6.1% (n=11), S. parauberis 4.4% (n=8), S. lutetiensis 3.9% (n=7), others 7.2% (n=13). However, S. agalactiae was not isolated. The isolates showed the highest resistance rate to tetracycline (55.2%) followed by erythromycin (45.3%) and pirlimycin (36.5%). In contrast, all isolates were susceptible to ceftiofur, cephalothin, penicillin/novobiocin, and only single S. equinus isolate was resistant to both ampicillin and penicillin. Of 181 isolates, 64 (35.4%) were multidrug resistance (MDR). The resistance to pirlimycin of S. uberis (73.2%) was much higher than that of other species (0~36.4%). All S. suis isolates were resistance to tetracycline. S. dysgalactiae showed lower resistance to erythromycin, pirlimycin and tetracycline than S. uberis and S. suis. The rate of MDR was relatively higher among S. uberis (73.2%) than among S. suis (36.4%), S. dysgalactiae (15.1%), others (0%). In conclusion, antimicrobial resistance in Streptococcus spp. should be regularly examined for appropriate therapies because the resistance patterns were various among the individual species.

Identification and characterization of shiga toxin-producing Escherichia coli isolated from the feces of slaughtered pigs (도축돈 장분변으로부터 Shiga Toxin-Producing Escherchia coli의 분리 와 성상)

  • Shiga toxin-producing Escherichia coli (STEC) causes various clinical signs in human and animals, and has been indicated as a global enteropathogen with zoonotic importance. In this study, the feces of healthy pigs were collected from the slaughtered pigs of Daejon abattoir during the period from December 2001 to October 2002. Of 326 specimens, 13 STEC were confirmed by culture, PCR and colony hybridization. The isolates were further studied for toxin types, pathogenic factors, plasmid profiles, and antimicrobial resistance to characterize the genetic and toxigenic properties. In PCR, all of 13 isolates were evident to have shiga toxin gene (stx). Of 13 isolates stx1 gene was detected in 4 and stx2 gene in 9. The genes of eaeA, hlyA and rfbE were not present in any isolates. In colony hybridization using shiga toxin common primer (STXc), 2 to 9 per 100 colonies subcultured from 13 isolates showed the positive reaction. In the examination for plasmid profiles of the isolates, one to eleven plasmids with varying sizes of 1.0 Kb to 100 Kb were detected, and the 13 STEC could be classified into four groups by the plasmid patterns. The antimicrobial resistance patterns of the isolates were comparably corresponded with the plasmid profile patterns.

Virulence-associated plasmids of Salmonella spp. isolated from animals in Korea (동물에서 분리된 Salmonella균의 병원성 관련 Plasmid에 관한 연구)

  • This paper dealt with plasmid DNA profile in 98 Salmonella(S) isolated from pigs and cattle sources in Taegu, Gyeongbook and Gyeongnam during the period from 1984 to 1987. Also we were studied for restriction enzyme analysis of the plasmid DNA, and mouse infection, Sereny test and normal setum resistance test in guinea pig for S typhimurium and S enteritidis harbored or cured 60 megadalton(Md) plasmid and 36 Md plasmid, respectively. Of the 13 Salmonella isolated from cattle, 7 Salmonella harbored one or more plasmids and molecular sizes of the large plasmids were 60 Md for S typhimurium and 36 Md for S enteritidis. Of the 85 Salmonella isolated from pigs, 47 Salmonella were confirmed as being one or more plasmids, and all the S typimurium stains harbored 60 Md plasmid. In enzyme digestion with 8 types of restriction endonuclease for 60 Md plasmid DNA of S typhimurium, cleavage patterns were varied to enzymes, and the DNA was segmented into 4 to 15 fragments. In restriction enzyme analysis of 36 Md plasmid DNA obtained from four strains of S. enteritidis, the DNA showed the same cleavage patterns obtained with Eco RI, Hind III and Bam H I, and was segmented into 3 to 5 fragments. In virulence for mice by measuring the 50% lethal dose ($LD_{50}$), the $LD_{50}$ values obtained for 60 Md virulence-associated plasmid harbored strains of S typhimurium and 36 Md virulence-associated plasmid of S enteritidis were up to $10^4$-fold lower than the values obtained for the plasmid-cured strains of the same serotype. Only the plasmid harbored strains were resistant to the bactericidal activity of 90% guinea pig serum, and only they gave positive responses in sereny test. We suggested that their plasmid DNA might be associated with virulence for mice.

Study on the Activity Patterns of Masticatory Muscles according to the Levels of Occlusal Force (교합력 수준에 따른 저작근 근활성도에 관한 연구)

  • In order to evaluate muscular activity patterns of masticatory muscles and asymmetry patterns of muscular activity according to the levels of occlusal force, twenty-one individuals of age ranged from 23 to 27 years were examined. They were selected according to the following criteria : 1) no symptoms of temporomandibular disorder, 2) complete dentition except third molars, 3) normal or Angle's class I molar relationship and 4) no experience of dental treatment. The electromyographic amplitudes was measured for evaluation of muscular activity and asymmetric patterns of masseter and anterior temporal muscle during unilateral clenching at the levels of 10%, 20%, 40% and 50% of the maximum occlusal force by use of electromyogram and bite force meter. The obtained results were as follows : 1. The muscle activity indices of masticatory muscles of clenching side at the clenching levels of 10%, 20% and 30% of the maximum occlusal force were -19.12, -9.87, -0.49%, so that activity of anterior temporal muscle was dominant than that of masseter muscle. At the levels of 40%, 50% of the maximum occlusal force, muscle activity indices were 4.68%, 6.70%, so that activity of masseter was dominant at all level and as the levels of occlusal force was increased, muscular activity index was tend to decrease. 2. In masseter, asymmetry indices of muscular activity at the levels of 10%, 20% of maximum occlusal force were -10.34 and -1.24%, so that muscular activity of non-clenching side were dominant and at the levels of 30%, 40% and 50% each of maximum occlusal force, muscular activity was dominant on clenching side as 4.68, 7.18 and 10.9%. In anterior temporal muscle, asymmetry indices were 33.38%, 25.46, 2095, 10.23 and 15.45% at the levels of 10%, 20%, 30%, 40% and 50% each of maximum occlusal force, so that activity of clenching 15.45% at the levels of 10%, 20%, 30%, 40% and 50% each of maximum occlusal force, so that activity of clenching side was dominant than that of non-clenching side at all levels, but as the levels of occlusal force was increased, asymmetry indices of muscular activity was tend to decrease. 3. Between both sides, average electromyographic amplitudes of masseter and anterior temporal muscle were correlated, so that as the levels of occlusal force was increased, average electromyographic amplitudes of both side in same muscle were increased proportionally. But asymmetry indices between muscular activities of masseter and anterior temporal muscle were not correlated.

Molecular Sexing Using SRY and ZF Genes in Pigs (돼지 SRY와 ZF 유전자를 이용한 성판별 기법)

  • A method for sex determination of pigs was examined using polymerase chain reaction(PCR). Sex determining region Y(SRY) gene encoded on Y chromosome plays a key role for primary male development. Zinc finger X-Y(ZFX-ZFY) gene, one of the X-V homology gene group was found on the X and Y chromosomes, respectively, We tested for molecular sexing by amplification patterns of SRY and ZF genes. Genomic DNAs from various resources including porcine hairs and semen collected from domestic pig breeds and native pigs was used for PCR assay of each gene. The amplified products for porcine SRY gene were yielded only in males but not in females. On the other hand, two differential patterns were observed in amplification of ZF gene reflecting the chromosomal dimorphism by a length polymorphism between X and Y chromosomes. Of both, a common band was detected in all individuals tested so that this band might be amplified from ZFX gene as a PCR template, but another is specific for males indicated that from ZFY. The result of PCR assay provides identical information to that from investigation of phenotypic genders of the pigs tested. We suggest that this PCR strategy to determine porcine sexes using comparison of the amplification patterns of the SRY gene specific for Y chromosome and the dimorphic ZF gene between X and Y chromosomes may be a rapid and precise method for discrimination of two sexes and applied to DNA analysis of small samples such as embryonic blastomere, semen, and hairs.

The Consumption Patterns of Fast Food in Small Cities (소도시의 패스트푸드점 이용실태에 관한 연구 -김천, 상주지역을 중심으로-)

  • This study was to investigate the consumption patterns of fast food in small city. The survey was conducted by questionnaires from March to April in 1997. The object was 500 men and women who were in their teens through fifties and living in Kimchen and Sangju city. A total of 444 subjects(88.8%) excluding incomplete answer were analyzed, all statistical data analysis were conducted using the $SAS/PC^+$. 1. The reason why people go to fast food restaurants are quickness, a convenient place, good taste, low prices, good service, and good atmosphere. There was significant correlation with each element with one exception between taste and prices. 2. On the question about the fast food which was eaten most frequently, responded hamburger to 39.86%, noodles to 29.50%, chicken to 16.67%, pizza to 10.36% and the others to 3.60%. And female, teens and twenties ate hamburger more often and another groups ate noodles more often. 3. The standard of choosing fast food restaurants was taste, prices, sanitation, atmosphere and service. There was significant correlation with exception between taste and prices, sanitation and service, atmosphere and service. 4. About propriety of fast food serving size as one meal, it was not enough portion for female and 40s. 5. The awareness that eating foreign-made food was not right, was significant difference among age groups, but not sex. 6. Customers was discontented with sanitation, price and service. There was also significant correlation with each element. 7. The frequency of eating fast food was 1-2 times/a month(35.36%), 3-5 times/a month(31.31%), 5-10 times/a month(18.24%), hardly using(11.04%), 10-20 times/a month(2.70%), over 20 times/a month(1.35%). There was significant difference among sex and age groups.

Experience of vascular injuries at a military hospital in Korea

  • Purpose: Vascular injuries require immediate surgical treatment with standard vascular techniques. We aimed to identify pitfalls in vascular surgery for trauma team optimization and to suggest recommendations for trauma and vascular surgeons. Methods: We reviewed 28 victims and analyzed the patterns of injuries, methods of repair, and outcomes. Results: Ten patients had torso injuries, among whom three thoracic aorta injuries were repaired with thoracic endovascular aortic repair, one left hepatic artery pseudoaneurysm with embolization, and two inferior vena cava with venorrhaphy, three iliac arteries with patch angioplasty or embolization, and three common femoral arteries with bypass surgery or arterioplasty. Four patients had upper extremity injuries, among whom one brachial artery and vein was repaired with bypass surgery after temporary intravascular shunt perfusion, two radial arteries were repaired with anastomoses, and one ulnar artery was repaired with ligation. One radial artery under tension was occluded. Fourteen patients had lower extremity injuries, among whom one superficial femoral artery and vein was repaired with bypass and concomitant ligation of the deep femoral artery and vein, three superficial femoral arteries were repaired with bypass (two concomitant femoral veins with bypass or anastomosis), one deep femoral artery with embolization, two popliteal arteries with bypass or anastomosis, four infrapopliteal transected arteries, one arteriovenous fistula with ligation, and one pseudoaneurysm with bypass. However, one superficial femoral artery and all femoral veins were occluded. One leg replantation failed. Conclusions: There are potential complications of vascular access during resuscitative endovascular balloon occlusion of the aorta procedures. Vascular repair should be performed without tension or spasm. Preservation of the harvested vein in papaverine solution and blood while using a temporary intravascular shunt is a method of eliminating spasms.

Action of ${\alpha}$-Amylase and Acid on Resistant Starches Prepared from Normal Maize Starch

  • Effects of acid and ${\alpha}$-amylase on resistant starches including retrograded RS3 and cross-linked RS4 prepared from normal maize starch were investigated. Acid and ${\alpha}$-amylase hydrolytic patterns of RS3 were similar, while those of native starch and RS4 differed. Acid hydrolysis rate of RS3 was markedly higher at initial stage, then slowly decreased up to 20 days, whereas that of RS4 increased continuously. The sizes of acid- and ${\alpha}$-amylase-treated RS3 residues decreased, but those of RS4 remained unchanged. X-ray patterns of all treated residues did not change; however, the peak intensities increased. Swelling power of RS3 increased to 150% at $95^{\circ}C$, whereas that of RS4 differed depending on the treatment condition. Swelling power of acid-treated RS4 residue increased markedly, but that of ${\alpha}$-amylase-treated one remained constant. Gel filtration chromatography profiles of untreated RS3 and RS4 residues were similar, whereas that of acid-treated RS4 residue was different from them. RS showed different hydrolytic behavior by acid and ${\alpha}$-amylase depending on the type, and susceptibility of RS3 was higher than that of RS4.

Development of patterns for comfortable wrap-one-piece style dance sport practice wear in daily life for middle-aged women with abdominal obesity (중년기 복부 비만 여성의 생활형 랩 원피스 스타일 댄스 스포츠 연습복 패턴 개발)

  • This study aims to develop a life-friendly, wrap-one-piece style dance sports practice wear considering the physical characteristics of middle-aged, abdominally obese women. These types of practice wear allow people to enjoy exercise easily and to wear these garments as daily wear while meeting the requirements for dance sports wear. The three participants selected for this study were all women with five or more years of dance sports experience and were all average sized on Korea's abdominal obesity scale. In the first phase of the study, practice wear was created in a total of nine styles with three different styles of neckline depths for three different styles of dress skirt lengths. In the second phase of the study, the practice wear was created in 15 styles with five different styles of sleeve lengths for three different styles of waistline heights. After analyzing the design preferences of the participants, the fit preferences of the designs were evaluated and the final appearance was analyzed in order to suggest a pattern. The results of the subjects' first and second preference evaluations showed a preference for a 10 centimeter neckline depth, for high waistlines, and for elbow to wrist-length sleeves. The implementation of this research is expected to be extensive, as its results can be used as basic data for making lifestyle dance sports practice wear that covers the physical insecurities of middle-aged, abdominally obese women and enables them to enjoy their leisure time.
