버섯폐배지의 발생량 조사 및 새송이, 느타리, 팽이 버섯 폐배지의 버섯종류별과 재배방식별의 물리화학적 특성 평가 (Yield and Physicochemical Characteristics of Spent Mushroom (Pleurotus ryngii, Pleurotus osteratus and Ammulina velutipes) Substrates According to Mushroom Species and Cultivation Types)

  • 본 연구에서는 폐배지의 동물 사료로의 효율적 이용을 위하여 국내에서 발생되는 폐배지의 최소한의 발생량을 버섯종류와 버섯재배 방식에 따라 산출하고, 느타리, 새송이, 팽이 버섯폐배지의 물리화학적 특성을 버섯종류별과 재배방식별로 평가하고자 실시하였다. 2004년도 우리나라 폐배지 총 발생량은 1,670,182M/T이었다. 사료로의 이용가능성이 상대적으로 높을 것으로 예상되는 새송이버섯, 팽이버섯, 느타리버섯 폐배지는 전체 발생량의 58.2%인 972,141 M/T이 발생되었으며, 이중 재배방식별로는 병재배에 의해 67%, 균상재배에 의해 20%, 봉지재배에 의해 13%가 발생되었으며, 버섯 종류별로는 느타리버섯 폐배지가 46%, 팽이버섯 폐배지가 32%, 새송이버섯 폐배지가 22% 발생되었다. 버섯 재배방식별 폐배지의 물리화학적 특성에 있어서 균상재배 폐배지는 병재배와 봉지재배 폐배지 보다 NDF 함량(65.2%)이 낮고, NFC 함량(12.7%)이 높은 특징이 있어서(P<0.05), 사료적 가치가 상대적으로 높을 것으로 사료되었다. 폐배지의 화학적 성분 변이도는 병 또는 봉지재배 방식보다 균상재배 방식에서 높은 편이었으며, 전반적으로 섬유소(NDF) 함량의 변이도는 예상보다 낮은 편이었다. 결과적으로 폐배지를 동물 사료로 이용 시 버섯종류에 따라 분류하는 것보다는 재배방식에 따라 분류하여 사용하는 것이 바람직하였으며, 사료영양적 측면에서 가치가 높은 균상재배 폐배지의 우선적 이용이 권장된다.

  • Burkholderia pyrrocinia CAB08106-4은 Sclereotium cepivorum과 Sclereotium sp. 균주에 의해 발생하는 마늘 흑색 썩음균핵병에 대한 항박테리아 효능을 가지고 있다. 이는 Sclereotium cepivorum과 Sclereotium sp.에 의해 발생하는 마늘 흑색썩음 균핵병을 포함한 다양한 식물병원체를 관리하고 예방하기 위하여 개발중인 친환경적인 미생물 제품이다. 본 연구에서는 마늘 흑색 썩음균핵병의 방제재로 개발중인 Bukholderia pyrrocinia CAB08106-4 원제($1.0{\times}10^9cfu/mL$)가 잉어와 물벼룩에 미치는 영향을 평가하였으며, 그 결과 $6.67{\times}10^4cfu/mL$의 농도에서는 독성이 관찰되지 않았다. 따라서 Burkholderia pyrrocinia CAB08106-4 원제는 담수어류 및 담수무척추동물에 영향이 낮을 것으로 기대된다.

Inhibitory Activity of Garlic Fermented by Pediococcus pentosaceus KACC 91419 against Antibiotic-resistant Pathogens

  • The aim of this study was to screen lactic acid bacteria for the fermentation of garlic and to assess the increase in inhibitory activity of garlic fermented against antibiotic-resistant pathogens for use as an animal feed supplement. We screened 45 strains of lactobacillus for the fermentation of garlic. Of these strains, 23 showed similar growth rates with or without allicin. Cultures of the 23 strains were mixed with an equivalent amount of garlic juice and incubated overnight at $37^{\circ}C$. The three strains with the lowest pH values were Lactobacillus paracasei KCTC 3169, L5 strain, and L. reuteri SW. Garlic juice fermented by the L5 strain more strongly inhibited antibiotic-resistant pathogenic bacteria than L. paracasei KCTC 3169, L. reuteri SW, or garlic juice itself. By examining carbohydrate utilization, morphologic properties and 16S rRNA gene sequences, we identified the L5 strain as Pediococcus pentosaceus and deposited it in the name of P. pentosaceus KACC 91419 into the Korea Agricultural Culture Collection. To identify the antimicrobial compound from the garlic filtrate fermented by P. pentosaceus KACC 91419, we fractionated P. pentosaceus KACC 91419 culture on a C18 column and checked the antimicrobial activity of fractions A6 to A10. Only fraction A9 showed inhibitory activity on Staphylococcus aureus. Comparing the mass spectra of the fractions with and without antimicrobial activity, we observed a single dominant product ion (m/z 157.99) from the fraction showing antimicrobial activity. Its molecular mass (157.99) was 2 atomic mass units less than that of allicin (162.02). This suggests that allicin might be converted to its derivative, which has antimicrobial activity, during fermentation by P. pentosaceus KACC 91419.

얼갈이배추의 재배기간 중 Chlorothalonil, Indoxacarb, Lufenuron, Metalaxyl 및 Methomyl의 잔류량 변화 (Residual Pattern of Chlorothalonil, Indoxacarb, Lufenuron, Metalaxyl and Methomyl during the Cultivation Periods in Chinese Cabbage)

  • 국립농산물 품질관리원 출하 전 농산물 검사시 얼갈이배추에서 검출빈도가 높은 chlorothalonil, indoxacarb, lufenuron, metalaxyl 및 methomyl 등 농약 5종에 대하여 수확 10일전에 대상약제를 살포하고 생산기간중의 경시적인 잔류량 변화를 조사하고 이를 토대로 반감기를 산출하였다. 얼갈이배추의 생산기간동안 표준량 살포 처리구에서 chlorothalonil의 잔류량은 55.58 mg/kg(0 day)에서 20.08 mg/kg(10 day)로 감소하고, 반감기는 7.45일 이었으며, indoxacarb는 7.85 mg/kg(0 day)에서 1.46 mg/kg(10 day)로 감소하고 반감기는 4.2일 이었으며, lufenuron는 1.57 mg/kg(0 day)에서 0.49 mg/kg(10 day)로 감소하고 반감기는 5.85일 이었으며, metalaxyl은 8.12 mg/kg(0 y)에서 0.10 mg/kg(10 day)로 감소하고 반감기는 1.75일 이었고 methomyl은 11.51 mg/kg(0 day)에서 0.80 mg/kg(10 day)로 감소하고 반감기는 2.42일 이었다. 또한 배량 처리구에서의 반감기는 chlorothalonil 9.05일, indoxacarb 7.09일, lufenuron 8.82일, metalaxyl 3.32일, methomyl 2.72일 이었다.

고추장 산업의 현황과 세계화 제안 (Present status of Kochujang, a fermented hot pepper soybean paste, and its globalization)

  • Kochujang, a fermented hot pepper soybean paste, is a spicy condiment mixed with red pepper, boiled rice and mold fermented soybean (as koji) which is then fermented for several months. It has unique taste of hot, sweet, salty and savory flavor by all mixed ingredients by fermentation, and is one of most famous Korean traditional foods. The scale of the kochujang industry is about 200 billion won in Korea, and 7.8 million dollars and 4,500 tons in exports. Although it is still not a large part of the food industry in Korea, the scale of soy products will increase because it is a major subsidiary food in our dietary life and has grown from a homemade to a mass produced product. Kochujang has the largest market in the scale of sales among fermented soybean products and has merit because of its domestic base and its ability to grow to an international market due to its unique fermented taste. In order to make kochujang an international food, it Is necessary to study the scientific development of kochujang and the diversity of products using kochujang that are fitted to the taste of people around the world. In addition, participation in various exhibitions and food fairs supported by the government should help to promote kochujang throughout the world. In addition, these should be actively supported by the related businesses. Red pepper, a major ingredient in kochujang, has been widely studied and shown to have a positive effect on the reduction of fat, on the strengthening of the immune system, and on active biological functions. A fermented spice like kochujang has been shown to be beneficial for the body due to the process of fermentation rather than from the red pepper itself. If we prove the various biological functions of kochujang with a particular taste and flavor, it will energize a new market. It is necessary for business to make a continuous effort supported fly the scientific world and by government policy, in order to introduce this traditional food to the world. In the present day, the kochujang market is now on a firm basis and has been activated in the field of its study. Now, it is possible to achieve the birth of a secondary international market by concentrating on these efforts.

유색 식물을 이용한 약초부각용 발효찹쌀풀의 당, 산도, 점도 및 색도 변화 (Changes in Sugar Level, Acidity, Viscosity, and Color of Lactic Acid Bacteria- Fermented Waxy Rice Paste Containing Colored Agro-food Products)

  • 천연색소를 함유한 유색식물체 분말(울금, 복분자, 백련초, 홍피망, 녹차, 단호박, 뽕잎)과 찹쌀분말에 1, 3, 5% 첨가하여 호화시켜 L. lactis 젖산균으로 배양한 약초부각용 발효 찹쌀풀의 품질특성을 조사하였다. 총당과 환원당은 젖산균으로 발효시킨 발효찹쌀풀이 대조구인 생찹쌀풀에 비하여 높은 경향이었다. 총산도는 유색식물체 분말농도를 증가시킨 젖산균 발효풀에서 점진적으로 증가되었는데, 단호박($1.02{\sim}1.56%$), 홍피망($0.96{\sim}1.87%$)에서 $3{\sim}4$배 크게 나타났다. 점도는 젖산균으로 발효시킨 찹쌀풀에서 모든 비발효 찹쌀풀에 비하여 아주 낮은 값을 나타내었는데, 울금과 백년초의 분말을 이용한 비발효풀의 점도는 $100{\sim}160{\times}10^4mPa{\cdot}s$ 범위로 매우 높은 값을 나타내었으나, 복분자와 녹차는 $40{\times}10^4mPa{\cdot}s$ 이하로 낮은 값을 나타내었다. 색차계 색도의 명도(L)는 대조구인 비발효 찹쌀풀에 비하여 발효찹쌀풀은 약간씩 감소되었고, 황색도(b)는 울금과 단호박이 가장 높았으며 젖산균 발효에 따라서 대부분의 색소분말은 황색도가 약간씩 증가하였다. 그리고 복분자 분말을 첨가하여 발효시킨 찹쌀풀은 대조구에 비하여 기공의 형태가 일정하며 기공의 수가 많았다. 발효약초부각은 시판되는 해조류 부각보다 부드럽고 형태와 색상이 개선된 잠재적 기능성부각으로 판단된다.

홍삼추출물과 글루코사민 복합제제의 관절염에 미치는 영향 (Anti-arthritic Effect of a New Diet-Supplement Containing Red Ginseng Extract and Glucosamine Complex)

  • We evaluated the anti-arthritic effect of a new diet-supplement product containing red ginseng, glucosamine, shark cartilage, ascorbic acid and manganese chloride for the relieving arthritic symptoms. Anti-inflammatory activities of the aqueous extract of red ginseng (250 and 500 mg/kg), glucosamine (240 mg/kg) and shark cartilage (240 mg/kg) were tested individually on vascular permeability and carrageenan-induced paw edema. Glucosamine and shark cartilage showed the inhibition of vascular permeability by 29.6 and 32.9%, respectively. Red ginseng (500 mg/kg) and shark cartilage showed the inhibition of carrageenan-induced paw edema at 0.5, 1, 2 and 3 hr. The supplement (red ginseng mixture: RGM) composed of red ginseng (43.5%), glucosamine (25.0%), shark cartilage (25.0%), ascorbic acid (5.0%) and manganese chloride (1.5%) was prepared and its inhibitory activities including vascular permeability and carrageenan-induced paw edema were comparable to anti-inflammatory drugs such as diclofenac and ibuprofen. It was also tested on adjuvant-induced arthritis in rats as one of chronic arthritic tests and Randall-Selitto assay as an analgesic test. RGM showed the inhibition against the swelling of rat paws induced by Mycobacterium tuberculosis at a dose of 1,500 mg/kg. Determination of cytokines of the sera sampled from arthritis-induced animals indicated that RGM increased the levels of $interferon-{\gamma}$ and interleukin-6, representing the immunostimulatory effect by red ginseng. RGM treatment moderately reduced the production of NO in RAW 264.7 cells in a dose-dependent manner. Taken together, these results support that RGM can be applicable for the improvement of arthritic as a new diet-supplement.

Performance, Digestibility and Carcass Characteristics of Growing/Finishing Pigs Fed Barley-Based Diets Supplemented with an Extruded or Unextruded Blend of Peas and Canola Seed or Meal

  • Seventy-two crossbred pigs weighing an average of 41.5 kg were assigned on the basis of sex, weight and litter to one of four dietary treatments in a factorial (4 treatments${\times}$2 sexes) arrangement. The control diet was based on barley and soybean meal while the experimental treatments consisted of diets in which a portion of the dietary protein was supplied by 20% of a 50:50 blend of extruded ($130^{\circ}C$ for 20 to 25 sec) peas and full-fat canola seed, 20% of a 50:50 blend of unextruded peas and full-fat canola seed or a diet containing 10% peas, 6% canola meal and 4% canola oil (to equal the level of canola oil provided by 10% whole canola seed). Digestibility coefficients for dry matter, crude protein and gross energy were significantly higher (p<0.05) for the control diet than for the other three diets. Extrusion produced no beneficial effects (p>0.05) on nutrient digestibility and there were no differences in digestibility between the diet based on intact canola seed compared with the diet containing canola meal and oil. Choice of protein supplement had no significant effects on gain, feed intake or feed conversion during the grower or finisher phases and over the entire experimental period. Extrusion of the pea-canola blend produced no beneficial effects on pig performance as the performance of pigs fed either the extruded or unextruded blend of peas and canola seed was similar. In addition, the performance of pigs fed diets containing intact canola seed was similar to that of pigs fed canola meal and oil. Castrates gained faster and consumed more feed than gilts (p<0.05). However, their feed conversion was poorer than that of the gilts during the finisher period. There were no significant differences in carcass traits between pigs fed the control and any of the experimental treatments. Extrusion had no effect on carcass traits and the carcasses of pigs fed canola meal and oil did not differ from those of pigs fed whole canola seed. Castrates had a significantly lower dressing percentage, lower estimated lean yield but greater loin fat depth than gilts (p<0.05). The results of this experiment indicate that peas in combination with canola seed or canola meal are an acceptable alternative to soybean meal as a protein supplement for use in growing-finishing swine diets. Extrusion did not appear to have any beneficial effects on the nutritional value of the canola seed-pea blend as nutrient digestibility, growth performance and carcass traits were similar for pigs fed the unextruded blend of peas and canola seed compared with the extruded product. Since the process adds to the cost of the raw products, its use is unlikely to be economical.

농산부산물인 옥피, 대두피, 왕겨, 소맥피를 이용한 산화생분해 바이오플라스틱 필름 개발 (Development of Oxo-biodegradable Bio-plastics Film Using Agricultural By-product such as Corn Husk, Soybean Husk, Rice Husk and Wheat Husk)

  • 식물로부터 유래하는 바이오매스를 25% 이상 함유하는 바이오 베이스 플라스틱은 탄소배출을 억제하는 효과가 있고, 한정된 자원인 석유의 소비량을 줄일 수 있으며, 산화생분해 첨가제를 추가 적용하면 폐기 후에는 미생물에 의해 생분해(Biodegradable)되기 때문에 친환경적인 소재이다. 본 연구에서는 폴리에틸렌에 산화생분해 첨가제, 4종류 식물체 바이오매스, 불포화 지방산, 구연산을 첨가하여 생분해성 및 물성변화를 관찰하였다. 초기 신장율과 인장강도 등의 물성이 우수한 자연에 분해되는 바이오 플라스틱 필름을 제조하여 식품포장재로서의 제품 안전성을 시험하였다. 옥피, 대두피, 왕겨, 소맥피의 식물체를 Air classifying mill로 분체한 후, 저밀도 폴리에틸렌, 선형저밀도 폴리에틸렌, 기타 첨가제를 고속혼합기에서 혼합한 후, 호퍼에 투입한 다음 용융혼합하면서 다이스로 압출하여 4 가지 다른 형태의 두께 $50{\mu}m$의 바이오 필름을 제조하였다. 기계적 물성으로 인장강도 및 신장율을 측정하였으며, 생분해 실험을 실시하였다. 옥피, 대두피, 왕겨, 소맥피로 제조된 필름 중 소맥피로 제조된 필름의 인장강도 및 신장율이 가장 좋은 것으로 나타났다. 또한 산화생분해 시험방법에 의해 45일간 생분해 테스트를 한 결과 표준물질인 셀룰로오스 분말 대비 51.5%의 생분해를 나타내었다.

Structure-Activity Relationships of Polyhydroxyursane-type Triterpenoids on the Cytoprotective and Anti-inflammatory Effects

  • Eleven polyhydroxyursane triterpenoids (PHUTs) were tested to determine their cytoprotective, immunosuppressive and anti-inflammatory effects. To compare the bioactivities of $19{\alpha}$-hydroxyursane-type triterpenoids {23-hydroxytormentic acid (6), its methyl ester (7), tormentic acid (8), niga-ichigoside $F_1$ (9),euscaphic acid (10) and kaji-ichigoside $F_1$ (11)} of the Rosaceae crude drugs (Rubi Fructus and Rosa rugosae Radix) with PHUTs possessing no $19{\alpha}-hydroxyl$ of Centella asiatica (Umbelliferae), the four PHUTs, asiaticoside (1), madecassoside (2), asiatic acid (3), and madecassic acid (4) were isolated from C. asiatica and 23-hydroxyursolic acid (5) from Cussonia bancoensis. Cytoprotective effects were assessed by measuring cell viabilities against cisplatin-induced cytotoxocity in $LLC-PK_1$, cells (proximal tubule, pig kidney) to determine whether these agents have protective effects against nephrotoxicity caused by cisplatin. The inhibitory effect of 11 PHUTS on nitric oxide (NO) and prostaglandin $E_2\;(PGE_2)$ were evaluated by measuring nitrite accumulation in lipopolysaccharide (LPS)-induced macrophage RAW 264.7 cells, and their anti-inflammatory effects were tested in 12-O-tetradecanoylphorbol-13-acetate (TPA)-induced mouse ear edema model. Six MHUTs (compounds 1, 2, 4, 6, 10, and 11) exhibited higher cell viabilities during cisplatin-induced cytotoxicity testing even at a concentration of $200\;{\mu}g/ml$ than cisplatin only-treated group, suggesting that ese compounds have the potentcytoprotective efffcts. Compounds 1 and 3 of the C. asiatica and niga-ichigoside $F_1$ exhibited no inhibitory effect on NO and/or $PGE_2$ production whereas other PHUTs produced mild to significant NO and/or $PGE_2$ production.The four compounds (2, 5, 9, and 10) potently inhibited mouse ear edema induced by TPA whereas two compounds (1 and 3) had no activity in this test. These results suggest that many PHUTs are potentchemopreventives. Structure-activity relationship (SAR) was also discussed in each assay with regard to the significant role of OHs at the position of 2, 3, 6, 19, and 23 and to the glycoside linkage at the 28-carboxyl.
