The influence of ultrasound and adenosine 5'-monophosphate marination on tenderness and structure of myofibrillar proteins of beef

  • Objective: The aim was to investigate the influence of ultrasound and adenosine 5'-monophosphate (AMP) marination (UAMP) on tenderness and structure of myofibrillar proteins of beef. Methods: Five groups, the untreated meat (Control), deionized water marination (DW), ultrasound followed by DW (UDW), AMP marination (AMP), and ultrasound followed by AMP (UAMP) were studied. Myofibrillar fragmentation, cooking loss, shear force, thermograms, histological observation of meats and myofibrillar proteins properties were investigated in these different treatments. Results: The results showed that UAMP significantly increased myofibrillar fragmentation index from 152 (Control), 231 (AMP), and 307 (UDW) to 355 (p<0.05), respectively. The lowest cooking loss, shear force and peak denaturation temperature were observed in UAMP. In histological observation, UDW and UAMP had more fragmented muscular bundles than the others. Furthermore, a drastic increase in ${\alpha}$-helix and decrease in ${\beta}$-sheet of myofibrillar proteins was observed in UAMP, implying the disaggregation of protein samples. The synchronous fluorescence spectra of myofibrillar proteins in UAMP suggested the combination of ultrasound and AMP could accelerate the unfolding molecular structure and destroying hydrophobic interactions. The results of circular dichroism and synchronous fluorescence spectra for myofibrillar proteins coincided with the microstructures of beef. Conclusion: The results indicate that ultrasound combined with AMP improved meat tenderness not only by disruption in muscle integrity, increasing water retention, but also altering their spatial structure of myofibrillar proteins.

Development of Microbial Inoculant Using By-product of Oriental Herbal Medicine (한약재박을 이용한 미생물제제의 개발)

  • The development of microbial inoculant was conducted using a by-product of oriental herbal medicine. The constituent of the by-product, which was high in organic matter, was 11.3% of crude protein, 5.1% of crude lipid, 49.7% of NDF (neutral detergent fiber), and 33.8% of ADF (acid detergent fiber). Microorganisms isolated from the by-product of oriental herbal medicine were 35 species. Among them, 6 bacterial species, 4 fungal species, 2 actnomycetes species, and 1 yeast species were effective in the utilization of the by-products. The 13 strains screened were tested for the plant growth-promoting effect in soybean seedling. BL-333 strain was found to increase the soybean yield by about 23% as compared with control. The strain BL-333 was identified as Paenibacillus marcerans. P. marcerans BL-333 showed high anti-fungal activities against virulent fungi, especially Fusarium sp. and Collectotrichum sp. Yields of plants which were inoculated with microbial inoculant prepared with P. marcerans BL-333 and by-product of oriental herbal medicine were found to be higher than control by $3{\sim}24%$. The yield was especially promoted in lettuce, radish, chinese cabbage and cucumber plants.

  • There still exist adhesives that have toxic compounds or consist of those materials in both our life and lots of industries. For instance, formaldehyde adhesive had been still used for woodworking and some medical adhesives had been considered as toxicity problems. In this situation, natural adhesives from raw materials have been suggested as an one of considerable interests. Natural adhesives in recent have been reported fabrication methods via biological materials such as proteins, celluloses, and starches. By-products derived from agricultural something have them richly and each has additional special properties. Using these properties to make natural adhesives, unique adhesives would be attained. In particular, rice-based adhesive is such a good example. Rice-based by-product adhesives have interestingly some pros pertaining to high adhesive strength, excellent water resistance and could dramatically be reduced a formaldehyde a harmful component of plywood. Hence, rice-based adhesive like glues could be applied to lots of industries including agricultural and biological technology. This review paper highlighted some recent development on natural adhesives as a promising biomaterial for agricultural and biological technology fields.   • Recently, agricultural product of inferior qualify and cheap is imported form china, so domestic farmhouses go through difficulty. Moreover, consumption decreasing because of a new about carcinogen detect of chinese agricultural product. Information through certification system construction of domestic agricultural product is offered to customers for distinguish from chinese, and certain inspection standard for importation restriction should be ready to solve this problem. In this paper, we designed and implementation of AIGT system through adopting GAP of international standard for safety inspection of agricultural product and traceability. Also, we building of AIGT system through introduce of monitoring system and guidance as well as management system for offered to information by customer and helped farm management by producer.

A Multi-step Time Series Forecasting Model for Mid-to-Long Term Agricultural Price Prediction

  • In this paper, we propose an optimal model for mid to long-term price prediction of agricultural products using LGBM, MLP, LSTM, and GRU to compare and analyze the three strategies of the Multi-Step Time Series. The proposed model is designed to find the optimal combination between the models by selecting methods from various angles. Prior agricultural product price prediction studies have mainly adopted traditional econometric models such as ARIMA and LSTM-type models. In contrast, agricultural product price prediction studies related to Multi-Step Time Series were minimal. In this study, the experiment was conducted by dividing it into two periods according to the degree of volatility of agricultural product prices. As a result of the mid-to-long-term price prediction of three strategies, namely direct, hybrid, and multiple outputs, the hybrid approach showed relatively superior performance. This study academically and practically contributes to mid-to-long term daily price prediction by proposing an effective alternative.

Developing a Web-based System for Computing Pre-Harvest Residue Limits (PHRLs)

  • This study describes the development of a web-based system that collects all data generated in the research conducted to set pre-harvest residue limits (PHRLs) for agricultural product safety control. These data, including concentrations of pesticide residues, limit of detection, limit of quantitation, recoveries, weather charts, and growth rates, are incorporated into a database, a regression analysis of the data is performed using statistical techniques, and the PHRL for an agricultural product is automatically computed. The development and establishment of this system increased the efficiency and improved the reliability of the research in this area by standardizing the data and maintaining its accuracy without temporal or spatial limitations. The system permits automatic computation of the PHRL and a quick review of the goodness of fit of the regression model. By building and analyzing a database, it also allows data accumulated over the last 10 years to be utilized.

Cultural characteristics of new oyster mushroom variety "Cheongsan" (느타리 신품종 "청산"의 재배 특성)

  • A new variety of oyster mushroom 'Choengsan' was developed with crossing between monokaryotic strains derived from Suhan and Wonhyoung #3. It was developed by Agriproduct Processing Experiment Station, Gangwon Agricultural Research & Extension Services in 2006. The optimum temperature of mycelial growth was around $27{\sim}28^{\circ}C$ and that of fruiting body was $14{\sim}17^{\circ}C$. The color of pileus was dark-gray color. The period of primordial occurrence was about 20 days in bed cultivation using cotton waste and the yields were $38kg/3.3m^2$.

Influences of Consumers' Subjective Knowledge and Brand Image on their Purchase of Environment-friendly Agricultural Products (소비자의 주관적 지식과 브랜드 이미지가 친환경농산물 구매에 미치는 영향)

  • This study aims to prepare a solution necessary for boosting the consumption of environment-friendly agricultural products, positively reflecting consumers' opinions that expect supplies of safe agricultural products to secure the domestic farms producing environment-friendly agricultural products and at the same time, to meet consumers' needs. As a result of the hypothesis testing, of the subjective knowledge in Hypothesis 1, product knowledge had an impact on attitude, while purchase knowledge and use knowledge after purchase were not significant. Of the subjective knowledge in Hypothesis 2, purchase knowledge and product knowledge had significant impacts on purchase intention. Brand image in Hypothesis 3 had a significant impact on attitude, while brand image in Hypothesis 4 had a significant impact on purchase intention. As a result of the mediated regression analysis of Hypothesis 5, all of the subjective knowledge, purchase knowledge, product knowledge and use knowledge after purchase had an impact on purchase intention, partially mediated by attitude, and brand image, too, had an impact on purchase intention, partially mediated by attitude.
