Measurement and Analysis of Physical Environmental Load during Handling and Distribution of Domestic Fruits -Focused on Seongju Korean Melon

  • The proportion of agricultural products handled through the Agricultural Products Processing Center (APC) is also steadily increasing every year, and in the case of Seongju Korean melon, a total of 10 APCs of Nonghyup and farming association corporations are in operation, and the distribution ratio is about 60% based on total production. In this study, Seongju Korean melon was selected as a target to analyze the environment load during carrying (production farm ~ APC) in the production area and the transport environment load during distribution of domestic fruits, and to analyze the environmental load for handling at APC. The vertical average vibration intensity (overall Grms of 1~250 Hz) of truck transport measured at three transport routes from Seongju Korean melon producer ~ APC, Seongju ~ Seoul and Seongju ~ Jeju was about three times larger than that in the lateral direction and 4.5 times larger than that in the longitudinal direction, respectively. The frequency of occurrence of high-amplitude events (G) in the vertical direction compared to the measuring time was deeply related to pavement conditions in the order of unpaved farm-roads, concretepaved farm-roads, and asphalt-paved main-roads, but overall Grms for the entire frequency band is believed to have a greater impact on vehicle traveling speed than road conditions. On the other hand, the difference in the size and direction of the vibration intensity measured by the forklift truck's main-body and the attachment (fork carrier) during handling at Seongju Korean melon APC was clear, and the vibration intensity of the forklift truck's main-body was largely affected by the stiffness of the fork and the mast according to the handling weight. Based on the field-data of the transport environment during domestic distribution measured through this study, it is believed that it is possible to develop a lab-based simulation protocol for appropriate packaging design.

Analysis of Acrylamide in Processed Foods Obtained from Korean Markets

  • 본 연구는 우리나라 사람이 일상적으글 섭취하는 식품 중에서 아크릴아마이드 잔류량을 조사하여 위해도 평가를 위한 자료로 제공함은 물론 아크릴아마이드가 가장 많이 검출되는 가공식품에서 아크릴아마이드를 기술적으로 저감화 시킬 수 있는 방법을 연구하기 위한 기초 데이터로 활용하고자 수행하였다. 밥, 곡류 가공품, 포테이토칩 등을 포함한 190 가지 시판제품에 잔류하는 아크릴아마이드 함량을 LC-MS/MS 분석법으로 측정하였다. 아크릴아마이드는 여러 가지 가공식품에서 매우 다양한 수준으로 검출되었고 감자칩에서 $470\∼3,572{\mu}g/kg$로 가장 많이 검출되었다. 일반적으로 스낵류에서는 감자를 함유한 제품이 감자를 함유하지 않은 제품보다 상대적으로 높게 검출되었으며, 이때 각각의 중간값은 448과 $133{\mu}g/kg$었다. 한국 사람들이 주식으로 섭취하는 밥에서는 불검출$\∼96{\mu}g/kg$까지 검출되었다. 끊이는 식품 중의 하나인 곰탕에서도 $48\∼61{\mu}g/kg$가 검출되었고, 불고기 양념에서는 불검출$\∼57{\mu}g/kg$까지 검출되었다.

골절 발생에 따른 돈육 반막모양근의 품질변화 (Influence of bone fracture incidence on the quality of pork semimembranous muscle)

  • This study was conducted to investigate the incidence of bone-fracture from pig carcass slaughtered in eight processing plants located in Daejeon and Chungnam area, Korea, during the year 2013 and 2014, and to evaluate the quality of semimembranous muscle from bone-fractured carcasses. Twenty semimembranous muscles were collected from bone-fractured carcasses and none bone-fractured (control) ones, respectively, after storage of pig carcass at $5^{\circ}C$ for 24 h. The pH, cooking loss, and color of semimembranous muscle were measured as quality parameters. In total 4,865,502 of pig carcasses, the occurrence of bone fracture was 0.328% (15,975 heads) and scored the highest defect (26.31%) in total abnormal carcasses. The pH and cooking loss of semimembranous muscle from bone-fractured carcasses were significantly lower than those of control (p<0.05). $L^*$ and $a^*$ values of semimembranous muscle were not significantly different between bone-fractured carcass and control whereas that of $b^*$ values was significantly higher in bone-fractured carcass than control (p<0.05). Eight out of twenty semimembranous muscle collected from bone-fractured carcasses were confirmed as PSE whereas only one in control. In conclusion, the incidence of bone-fracture pre- and during slaughter of pig may cause serious defects in final meat quality. Therefore, the proper handling and treatment should be implicated to avoid and/or decrease the incidence of bone-fracture of pigs.

시중에 유통되고 있는 산수유 음료의 Morroniside, Loganin 및 Cornin 함량과 이화학적 특성 (Morroniside, Loganin, and Cornin Contents and Physicochemical Properties of Commercial Sansuyu (Corni fructus) Retort Drink)

  • 본 연구는 산수유 음료 개발에 기초자료로 활용하고자 시중에 유통 중인 산수유 파우치 형태 액상제품 18종의 제품을 수거하여 기능성 성분 함량 및 이화학적 품질특성을 조사하였다. 가장 많이 함유되어 있는 유효물질은 morroniside였으며, 다음으로 loganin, cornin 순이었다. 구례 지역 생산 산수유 제품의 1 2차 평균 유효물질 morroniside, loganin 및 cornin의 함량이 각각 89.55, 66.04, 12.91 mg/100 g으로 전체 평균 77.22, 45.51, 8.16 mg/100 g보다 유의적으로 높게 측정되었다. Morroniside가 전체 평균보다 높은 제품은 각각 7개 및 7개였으며, loganin은 6개 및 4개, cornin은 8개 및 1개였다. 또한, cornin이 전혀 검출되지 않은 제품도 1차 및 2차에서 각각 1개 및 4개 있었다. 지역별 유효성분 차이는 구례지역이 타 지역에 비해 morroniside 함량 2차 분석을 제외하고 모든 유효성분 함량이 높았다. 그러나 대부분 제품의 유효물질 함량이 유의적인 차이를 나타내었다(P<0.05). 이상의 결과를 종합해보면 품질이 우수한 산수유 음료를 생산하기 위해서는 원료의 표준화와 추출조건과 같은 추출공정의 표준화 연구가 필요할 것으로 판단된다.

Postmortem Aging of Beef with a Special Reference to the Dry Aging

  • Animal muscles are stored for specific period (aging) at refrigerated temperatures, during and after which the living muscles start to convert into meat and thus, attain certain superior properties in the final product. Proteolysis, lipolysis, and oxidation are the major biochemical processes involved during the postmortem aging of meat that affect the tenderness, juiciness, and flavor, as well as sometimes may introduce certain undesirable traits. This review analyzes the role of pre- and post-mortem factors that are important for aging and their effect on the chemical and physical changes in the “dry- and wet-aged meat.” Thus, if the meat processing manufacturers optimize the effects of aging for specific muscles, the palatability, color, and the shelf life of the aged meat products could be significantly enhanced.

An Overview of Meat Industry in Sri Lanka: A Comprehensive Review

  • Livestock is considered as one of the most important segments in agriculture since animal husbandry was practiced for centuries as a backyard system by rural families. Livestock plays as a powerful tool in rural development where meat industry contributes a dominant part. Meat and meat products become a vital component in the diet, which had been one of the main protein sources traditionally as well. The development in the livestock and meat industry of Sri Lanka basically depends upon religious, cultural, and economic factors. There is a growing demand for processed meat products in Sri Lankan urban culture and several large scale processors entered the business during the past few decades. The consumption of meat and meat products shows an upward trend in Sri Lanka during the last decade and is anticipated to increase further in future. The growth potential of the local meat industry is considerably high owing to the improvement of the market and consumer perception. The present status, trends, and future prospects for the Sri Lankan meat industry with respect to production, consumption, processing, marketing, and improvement are discussed in this review.

농산물우수관리제도(GAP system) 적용을 위한 깻잎의 수확 후 관리시설(APC)에 대한 미생물학적 안전성 평가 (Microbiological Safety Assessment of a Perilla Leaf Postharvest Facility for Application of a Good Agricultural Practices (GAP) System)

  • 깻잎을 생산하는 APC 시설을 대상으로 GAP system을 도입하기 위해서 각 공정별 용수 및 세척수, 작업자 및 작업장 환경, 각 공정별 깻잎 그리고 공중낙하균을 대상으로 미생물학적 위해 분석을 실시하였다. E. coli, E. coli O157 그리고 L. monocytogenes를 제외한 위생지표세균(일반세균과 대장균군)과 병원성 미생물(B. cereus와 S. aureus)이 세척수, 작업자 장갑 및 작업복 그리고 포장대 등 대부분의 항목에서 비교적 높은 수준으로 검출되었다. 특히 직접적인 교차오염의 위험이 있는 세척수와 작업자 장갑의 경우, 일반세균수는 각각 0.91-3.36과 3.31-4.29 log CFU/ (mL, 100 $cm^2$), 대장균군은 0.00-1.86과 1.16-2.06 log CFU/(mL, 100 $cm^2$)의 비교적 높은 수준으로 검출되었다. 또한 입고된 원재료에서 포장공정에 이르기까지 깻잎에서 일반세균과 대장균군이 각각 4.82-5.93과 2.82-3.49 log CFU/leaf 수준으로 분리되어 유의적인 세척효과는 없는 것으로 나타나(p${\geq}$0.05) 식중독 사고를 방지하기 위해 더욱 향상된 세척공정이 절실히 요구된다. 이와 같이 현재 APC 시설은 미생물학적 안전성을 확보하기보다는 선별 및 저장의 기능에만 초점을 맞춰 운영되기 때문에 위생적인 개념이 포함된 새로운 개념의 관리체계가 필요한 실정이다. 따라서 신선하고 안전성이 확보된 깻잎을 생산 공급하기 위해 사전예방적 안전체제인 HACCP system을 기초로 한 GAP system을 제 시함으로써 미생물학적 위해요소 관리가 도입된 새로운 개념의 농식품의 안전관리제도를 제시하였다.

MODIS 대기자료를 활용한 남북한 기상관측소에서의 냉방도일 추정 (The use of MODIS atmospheric products to estimate cooling degree days at weather stations in South and North Korea)

  • 적산 온도는 작물 재배 의사결정 지원을 위해 대상지역 주변 기상 관측소의 자료를 활용하여 산정되어 왔다. 한편 Moderate Resolution Imaging Spectroradiometer (MODIS) 자료로부터 공간적인 온도 자료를 바탕으로 특정 지점의 적산 온도 자료를 생산할 수 있다. 본 연구의 목적은 MODIS 자료를 처리하는 도구를 개발하고 이를 바탕으로 작물의 고온 피해도 및 시설의 냉방 요구도 분석에 활용될 수 있는 냉방도일을 계산하고자 하였다. R 스크립트를 사용하여 특정지역의 MODIS 기온자료를 생성하는 모듈들을 작성하였다. 해당 스크립트들은 격자자료의 좌표계 변환과 자료들의 공간적인 통합 기능들을 가지고 있었다. 온도 수직 분포 자료로부터 지표 기압에 해당하는 온도를 추출하는 기능은 rgdal과 RcppArmadillo등의 패키지를 활용하여 구현되었다. 또한 냉방도일 및 일평균온도 추정을 위해 MODIS 기온 자료, day of year, 및 위도를 입력 자료로 사용하는 random forest (RF) 모형을 남한 지역의 24개 지점에 대하여 훈련하였다. 인공위성 자료 별로 훈련된 RF 모형을 사용하여 한반도 지역의 일별 냉방도일을 계산하였다. 특히, 북한지역에 24개 지점에 대해 검증한 결과, MODIS 자료를 바탕으로 추정된 지역별 평균 연간 냉방도일은 관측값 변이의 96%를 설명할 수 있었다. 이러한 결과는 MODIS 자료로부터 유효적산온도 및 난방도일 등 다른 농림 기상 모형의 입력자료 생산을 지원할 수 있다는 것을 암시하였다.

RFID/USN 기반 농업분야 u-IT 적용을 위한 u-Farm 정보 아키텍처 및 정보 관리기술 개발 (Development of u-Farm Information Architecture and Information Management Technology based on RFID/USN for the Agricultural Sector)

  • Generally, because individual agricultural product possesses its own distinctive characteristics and shows different characteristics at each stage of the agricultural supply chain, it is necessary to develop a proper enterprise architecture for managing information system. In this paper, we propose an enterprise architecture based on RFID/USN technology that can be used as a reference enterprise architecture for u-IT application in the agriculture sectors, which is called the u-Farm enterprise architecture with taking heterogeneous characteristics of agricultural products into account for. In addition, we also developed the RFID/USN middleware platform as a core infrastructure technology. Fo evaluation of the performance of the proposed u-Farm architecture and the RFID/USN middleware platform, the field-trial evaluation at the apple Agricultural Processing Center (APC) has been executed and the results shows that the proposed architecture and platform perform well in terms of information integration over the whole SCM process from the farming stage to delivering statge to the customers. It is expected that the proposed u-Farm enterprise architecture can be utilized as a standard information architecture, and the RFID/USN middleware platform can be a infrastructure platform for future u-IT based information technology applications and services in the agricultural environment.

Effects of high-pressure processing on taste-related ATP breakdown compounds and aroma volatiles in grass-fed beef during vacuum aging

  • Objective: This study aimed to observe whether high-pressure processing (HPP) affected aroma development and the degradation rate of umami taste-related ATP breakdown products, specifically inosinic acid in grass-fed beef during vacuum aging. Methods: Strip loin (longissimus lumborum) cuts obtained from six grass-fed Friesian Holstein steers (32 months old) on day 4 post slaughter were vacuum-packed and subjected to pressurization at 300 and 500 MPa for 180 s at $15^{\circ}C{\pm}2^{\circ}C$. The samples were then stored for 4 weeks at $5^{\circ}C{\pm}0.5^{\circ}C$ under vacuum and compared with the control (0.1 MPa). Results: HPP increased the shear force value, promoted moisture loss and lipid oxidation, induced surface paleness, stabilized pH during aging, and reduced bacterial load and growth. The shear force value of 500 MPa-treated samples remained higher than the control after aging, while no significant differences were found between the control and 300 MPa-treated samples. Degradation of inosinic acid and inosine occurred during pressurization, resulting in an increase in hypoxanthine content. However, the degradation rate in HPP-treated samples during aging was slower; therefore, inosinic acid and inosine content remained higher than in control samples. No significant differences were found in hypoxanthine content at the end of aging. HPP intensified the levels of hexanal, octanal, 2-methylbutanal, 3-methylbutanal, benzaldehyde, and 2,5-dimethylpyrazine in cooked-aged beef samples. Conclusion: HPP induced aroma development and delayed the degradation of inosinic acid. However, it also reduced the postmortem tenderization rate.
