Comparative studies on Tenderness and Characteristics of Protein Obtained from Various Carcass grade in Korean native Cow (도체등급별 한우육의 연도와 단백질특성에 대한 비교연구)

  • This study was conducted to investigate the effects of carcass grade on the hardness, myofibrillar fragmentations index, protein extractability and Mg-ATPase activity of myofibril and actomyosin obtained from 1, 2, 3 and D carcass grade)subgrade) in Korean native cow. Proximate component, hardness, chewiness, myofibril fragmentation index, protein extractability and Mg-ATPase activity if myofibril or actomyosin were not significantly different between 1st and 2nd carcass grade loin. The hardness and chewiness of 2nd carcass grade loin's were significantly lower than 3th grade loin's, but the myofibril fragmentation index, sarcoplasmic protein extractability and Mg-ATPase activity of myofibril were higher. The myofibrillar protein extractability and Mg-ATPase activity of actomyosin obtained from 3th carcase grade loin's were significantly higher than D grade loin's, but the hardness, chewiness and stroma protein extractability were lower. In conclusion, the degree of toughness in Korean native cow's loin was not significantly different between 1st and 2nd grade, but 3rd and D carcass grade were significantly higher, regardless of before and after aging.

Age Related Increase of Platelet Activation

  • Platelets clearly play an important role in inflammatory responses. In this study, we aimed to evaluate the relationship between aging and platelet activation. A total number of 799 persons (383 males and 416 females), who were apparently healthy and aged more than 20 years were recruited by a health promotion center in a community-based hospital in Seoul, Korea. We collected material data about their medical history and health behavior. Platelet parameters including mean platelet component (MPC), mean platelet volume (MPV), and platelet component distribution width (PCDW) were determined within 1 hour after blood collection using the ADVIA 120 automated hematology analyzer. The MPC of the women ($27.2{\pm}1.2$) was significantly love. than that of the men ($27.5{\pm}1.3$). The MPC of all participants was found to decrease with increasing age (P<0.01). Study participants in their twenties had the highest MPC ($27.7{\pm}1.1$), followed by those in their thirties ($27.6{\pm}1.1$), forties ($27.4{\pm}1.3$), fifties ($27.2{\pm}1.3$), sixties ($27.2{\pm}1.2$) and seventies ($27.1{\pm}1.2$). Multiple regression analysis showed that aging and gender were related with MPC after adjusting for confounding factors, including age, gender, smoking habit, hypertension, diabetes, body mass index and total cholesterol level. The this study shows that aging is related to platelet activation. Future research will need to determine the implications of increased platelet activation with aging, especially regarding the increased incidence of cardiovascular diseases and related mortalities that occur in older age groups.

Antioxidative Properties of Brown Algae Polyphenolics and Their Perspectives as Chemopreventive Agents Against Vascular Risk Factors

  • Several polyphenolic compounds and complex mixtures were isolated from brown algae species. The 1,1-diphenyl-2-picryhydarzyl (DPPH) radical scavenging activity and ferric reducing antioxidant power (FRAP) of these compounds were evaluated to determine their physiological usefulness as antioxidants for vascular protection. The antioxidative protection of low-density lipoprotein (LDL) was also evaluated and compared with that of catechin, because the generation of oxidized LDL is one of the most active and specific risk factors contributing to atherogenesis. Oral administration to rats of a commercially available sample ($VNP^{TM}$) containing 30% of these polyphenolic compounds and 70% dietary fiber revealed that the serum reducing capacity measured in terms of FRAP value was significantly elevated 30 min after the treatment, but declined rather quickly thereafter, indicating the good oral absorption of the compounds and their fast binding to the lumenal surface of the blood vessels. An eight-week, human, clinical trial (n=31) of $VNP^{TM}$ showed significant improvement in erectile function measured by IIEF (international index of erectile function) score. These results collectively demonstrated the usefulness of these polyphenolic compounds as fundamental chemopreventive agents against vascular risk factors originating from oxidative stress.

Inhibition Effects of Frankincense Oil on Skin Aging (I) : Focussed on Gross Examination (프랑킨센스 오일의 피부노화 억제 효과 (I) - 육안적 관찰을 중심으로 -)

  • The purpose of this study was to investigate the effects of frankincense oil in a skin aging animal model. Skin aging was induced by both the irradiation of UVB and the application of squalene monohydroperoxide (Sq-OOH) to the back of experimental animals for 4 weeks. And at the same time experimental materials were applied topically. Six to seven weeks female SHR-1 hairless mice were divided into five groups including normal (N: saline), control (C: UVB+Sq-OOH+saline), vehicle control (VC: UVB+Sq-OOH+jojoba oil), positive control (PC: UVB+Sq-OOH+0.01% retinoic acid) and experimental (E: UVB+Sq-OOH+3% Frankincense oil) groups, five animals each group. The skin erythema index for the PC and E groups were lower than that of the C group. Whereas, both the lipid and water capacities for the PC and E groups were higher than those of the C group. Wrinkles for the C group were formed as a pattern of deep furrows and thick crests. Whereas, wrinkles for the PC and E groups were formed as a pattern of shallow furrows and thin crests which were similar to that of the N group. As for the both absolute and relative weight of the spleen, the PC group were significantly higher than the other groups. In conclusion, frankincense oil can be used practically for the prevention or improvement of skin aging in terms of health promotion and beauty for the people.

Evaluation of the physicochemical, metabolomic, and sensory characteristics of Chikso and Hanwoo beef during wet aging

  • Objective: This study aimed to evaluate the physicochemical, metabolomic, and sensory qualities of Chikso and Hanwoo beef during 28 days of wet aging. Methods: Rump and loins from Hanwoo and Chikso were obtained and wet-aged for 28 days at 4℃. The samples were collected at 7-day interval (n = 3 for each period). Physicochemical qualities including pH, meat color, shear force value, and myofibrillar fragmentation index, metabolomic profiles, and sensory attributes (volatile organic compounds and relative taste intensities) were measured. Results: Chikso showed a significantly higher shear force value than Hanwoo on day 0; however, no differences between breeds were found after day 14, regardless of the cuts. Overall, Chikso had more abundant metabolites than Hanwoo, especially L-carnitine and tyrosine. Among the volatiles, the ketone ratio was higher in the Chikso rump than the Hanwoo rump; however, Chikso had fewer alcohols and aldehydes than Hanwoo. Chikso rump showed higher taste intensities than the Hanwoo rump on day 0, and sourness decreased in Chikso, but increased in the Hanwoo rump on day 14. Wet aging for 14 days intensified the taste of Chikso loin but reduced the umami intensity of Hanwoo loin. Conclusion: Chikso had different metabolomic and sensory characteristics compared to Hanwoo cattle, and 14 days of wet aging could improve its tenderness and flavor traits.

Characteristics of Obstructive Sleep Apnea Syndrome Patients Proven with Nocturnal Polysomnography as Correlates of Age and Gender (야간 수면다원 기록으로 확진된 폐쇄성 수면무호흡증 환자의 특성: 연령과 성별에 따른 차이)

  • Objectives: The purpose of this study was to assess the clinical and polysomnographic characteristics of Korean patients with obstructive sleep apnea syndrome (OSAS), especially in relation to differences due to age and gender. Methods: All subjects were consecutive patients who were proven to have OSAS with nocturnal polysomnography. They were interviewed with a structured interview format including sociodemographic information, past medical history, medication, and sleep-related history. Simultaneously, they were also given Pittsburgh Sleep Quality Index (PSQI) and Epworth Sleepiness Scale (ESS) to answer in order to check subjective sleep quality and subjective sleepiness. Results: Mean age of the 308 subjects was $49.5{\pm}$13.3 years, with 77.6% of the subjects being males and 22.4% of the subjects being females. The aging effects on the sleep architecture in Korean OSAS corresponded with normal aging, but with the effect of OSAS itself superimposed, the extent of aging effects was more marked than that of normal aging. The severity of Korean patients of OSAS was not correlated with age. When divided into age subgroups, significant correlation was found between RDI and BMI in patients of each subgroup of those in the 4th to 7th decades. The oldest subgroup (>70 years) described their subjective sleep quality as poorer than any other age subgroups, despite of less subjective drowsiness. The severity of OSAS and the change of sleep architecture of male subjects turned out to be severer than those of female ones. The female/male ratio of the subjects tended to increase with aging. Conclusions: The aging effect on the sleep architecture in Korean OSAS seems to be a mixture of the changes by normal aging and sleep disorder per se. The severity of OSAS was not correlated with age, but highly correlated with BMI. The severity of OSAS and the change of sleep architecture of male patients were severer than those of female ones.

A Research of characteristics of left/right pulse wave and blood vessel using Korean medicine pulse diagnosis (맥진기를 이용한 좌우 맥파 및 혈관 특성 연구)

  • Objectives: The pulse diagnosis to identify the symptoms has been considered important in Korean medicine. The position and character of disease would be confirmed by pulse diagnosis of left and right radial artery. This paper is to analyze the characteristics and differences of left and right blood vessels. Methods: In this study, left and right radial artery and dorsalis pedis artery was measured and analyzed by using condenser typed pulse analyzer. Commercially available pulse analyzer was used to measure the radial artery. The pulse wave was measured in 20 laboratory healthy men and women. The blood vessel aging degree and index of augmentation of blood vessel was obtained from the measured pulse wave graph and the characteristics and differences of the left and right blood vessel was analyzed. Results: The significant difference of pulse transit time between the right handed and non-right handed was not found. The correlation of radial artery and dorsalis pedis artery had no significant difference. By obtaining the blood vessel aging index (AGI) and augmentation index (AI) of blood vessel at the left and right radial artery, the significant difference between right handed and non-right handed was not found. Conclusions: The result of this study would help to explain the characteristic of blood vessel with respect to the left and right handed. We suggest that research of pulse wave of the left and right blood vessel using pulse analyzer should be needed in further study.

Age-related Circulating Inflammatory Markers and Cardiovascular Disease Risk Factors in Korean Women (한국 성인 여성에서 연령에 따른 혈중 염증 표지자와 심혈관계 질환 위험 요인에 대한 연구)

  • The purpose of this study was to investigate the age-related changes of cardiovascular disease risk factors and inflammatory markers in non-obese Korean women. Subjects were 112 women over 20 years old with body mass index (BMI) less than $30 kg/m^2$ and were divided into 3 groups (< 40 years, $40{\sim}59$ years, ${\ge}60$ years). Mean weight and BMI in the oldest group were significantly higher than those in the other 2 younger groups (p < 0.05). Mean total cholesterol, triglyceride, LDL-cholesterol and apolipoprotein B/apolipoprotein A1 ratio (BAR) in the oldest group were significantly higher than those in the youngest group (p < 0.05), and mean HDL-cholesterol of the oldest group was significantly lower than that of the youngest group (p < 0.05). The older-aged group showed significantly higher mean values of atherogenic index (AI) and LDL/HDL ratio (p < 0.05) than the respective younger-aged group, and AI was significantly correlated with age, nitric oxide and thiobarbituric acid reactive substances (p < 0.01). In addition, mean vascular cell adhesion molecule-l (VCAM-1) tended to be higher in the older-aged group than the younger group. Tumor necrosis factor-${\alpha}$, a proinflammatory maker, was significantly positively correlated with serum homocysteine, a cardiovascular disease risk factor (p < 0.01). In addition, a significantly positive correlation was observed between C-reactive protein and BAR (p < 0.01). Overall results suggested that the aging might affect the increase of cardiovascular disease risk factors including the serum lipid profiles, weight and BMI, and age-related increases of weight and BMI might play a role in changes in certain biomarkers of inflammation. A Study of Intracranial Hemodynamic Change with Aging (노화에 따른 두개내 혈류의 혈류 동력학적 변화에 관한 연구)

  • The purpose of this study was to evaluate hemodynamics of intracranial blood flow for obtain clinically useful reference values and assess cerebral hemodynamics change with aging. 81 normal Korean subjects(age, 14$\thicksim\∼\thicksim$70 years) examined who han no history of neurologic disease and the subjects divided into group A(age, 14$\∼$39 years), group B(age, 40$\∼$59 years) and group C(age, 60$\∼$70 years). Transcranial doppler was use for measured the maximum velocity(Vmax), mean velocity(Vmean), pulsatility index(PI), resistive index(RI), stenosis index(SI) and depth of sample volume. Vmax was 99.1 1cm/s, Vmean was 63.57cm/s, PI was 0.85, RI was 0.56, SI was 31.94 and depth of sample volume was 52.35 in middle cerebral artery. Vmax was 85.54cm/s, Vmean was 52.52cm/s, PI was 0.82, RI was 0.55, SI was 34.48 and depth of sample volume was 73.62 in anterior cerebral artery. Vmax was 75.45cm/s, Vmean was 45.60cm/s, PI was 0.82, RI was 0.58, SI was 36.14 and depth of sample volume was 62.35 in posterior cerebral artery. Vmax was 70.44cm/s, Vmean was 47.07cm/s, PI was 0.87, RI was 0.58, SI was 29.83 and depth of sample volume was 75.23 in basilar artery Vmax was 63.92, Vmean was 42.42, PI was 0.89, RI was 0.58, SI was 29.89 and depth of sample volume was 66.65 in vertebral artery. Vmax and Vmean was significantly decreased with increasing age in middle cerebral artery, anterior cerebral artery, posterior cerebral artery, basilar artery and vertebral artery And PI and RI was significantly increased with increasing age in basilar artery and vertebral artery. And I suggest that transcranial doppler sonography can be used as one of useful clinical tool for detection of cerebral hemodynamics.

Relationship between Chromatic Characteristics, Chemical Components and Carbonization in Leaf Tobacco during Storage (저장중 원료 잎담배의 탄화발생과 색상 및 화학성분과의 관계)

  • This study was carried out to evaluate the correlations among degree of carbonization, chemical components and chromatic characteristics, and to establish the criterion of carbonizaion in leaf tobacco during aging storage. The flue-cured (B2O) and burley (B2T) leaf tobaccos were redried with conventional practices for each other type, and moisture contents of leaf tobaccos were adjusted to 13, 15, 17 and 19% after redrying. The leaf tobaccos were packed in carton box and stored for 8 months in the controlled-environment rooms($35^{\circ}C$, 65% R.H. and $40^{\circ}C$, 80% R.H.). Degree of carbonization, chemical components, and chromatic characteristics(L ; black-white, a ; red to green, b ; yellow to blue) were invetigated every month. Carbonization Index (C.I.) was established as (equation omitted) in accordance with degree of carbonization in two types. The C.I. value of flue-cured leaf(56.5) for slight carbonization was higher than that of burley leaf(48.0). C.I. and rate of usable leaf, L and b were positively correlated in two types. C.I. was significantly shown positive correlation with pH in two types. The correlations between the predicted and the observed values of slight carbonizating times(month after storage) using C.I. and pH were positive significant in two types. The results suggest that cabonization index may be useful to forecast and prevent the carbonization, and pH may be useful to estimate cabonization indirectly for flue-cured and burley leaves during aging storage.
